Compare the nutritional status of essential minerals in milk of different cattle and humans: Estimated daily intake for children

Zearalenone, an estrogenic component, in bovine milk, amount and detection method; A systematic review and meta-analysis

Zearalenone (ZEN) and its metabolites are a potent component with estrogenic potential that can enter milk. ZEN and its metabolites have the ability to disturb the function of endocrine glands. The aim of this systematic review was to estimate the level of ZEN and its metabolites in milk. This study was performed with these keywords; zearalenone, ZEN, bovine milk, ruminant milk, milk, dairy products, and milk product in various databases. 946 manuscripts were collected from databases and at the end, 17 manuscripts were reviewed according to the inclusion criteria. ZEN was identified in 59 % of studies. The most common methods of analysis were UHPLC, HPLC and ELISA. Meta-analysis was performed with CMA (Comprehensive Meta-Analysis) software. No publication bias was observed in meta- analysis. But, heterogeneity was recorded between studies. The measurement method was identified as one of the sources of heterogeneity through meta-regression tests and subgroup analysis. Furthermore, in meta- analysis test, the total estimate of milk contamination with this mycotoxin was 0.036±0.017 µg/L. So far, the permissible limit for this compound in milk has not been announced, but these compounds have the ability to disturb the endocrine glands in low amounts. Therefore, it is necessary to regularly measure and control this mycotoxin and its metabolite in milk with valid methods.

Application of Near-Infrared Spectroscopy and Fuzzy Improved Null Linear Discriminant Analysis for Rapid Discrimination of Milk Brands

The quality of milk is tightly linked to its brand. A famous brand of milk always has good quality. Therefore, this study seeks to design a new fuzzy feature extraction method, called fuzzy improved null linear discriminant analysis (FiNLDA), to cluster the spectra of collected milk for identifying milk brands. To elevate the classification accuracy, FiNLDA was applied to process the near-infrared (NIR) spectra of milk acquired by the portable near-infrared spectrometer. The principal component analysis and Savitzky-Golay (SG) filtering algorithm were employed to lower dimensionality and eliminate noise in this system, respectively. Thereafter, improved null linear discriminant analysis (iNLDA) and FiNLDA were applied to attain the discriminant information of the NIR spectra. At last, the K-nearest neighbor classifier was utilized for assessing the performance of the identification system. The results indicated that the maximum classification accuracies of LDA, iNLDA and FiNLDA were 74.7%, 88% and 94.67%, respectively. Accordingly, the portable NIR spectrometer in combination with FiNLDA can classify milk brands correctly and effectively.

Risk Assessment of Macronutrients and Minerals by Processed, Street, and Restaurant Traditional Pakistani Foods: a Case Study

The current work is aimed to assess the impact of macronutrient and mineral contents in food products of packaged food, restaurant food, and street food in Hyderabad. The estimated daily intake of macronutrients and minerals, followed by the toxic risk assessment of microminerals by consuming studied food dishes, was also conducted. The collected products were freeze-dried and standard procedures for measuring macronutrients were followed. At the same time, the acid digestion method was used to prepare the solution for detecting minerals by atomic absorption spectrometry. The resulting data indicated that all the food dishes supplied 134-454 kcals/100 g. The chicken/meat and pulse food dishes of all three categories were enriched with protein except bhindi masala. All the food dishes have a massive variation in fat contents and differ based on the used quantity of hydrogenated oil during their preparations. A significant difference in the macro- and microminerals in studied food products was observed. However, all food dishes are a good supplementary source of fundamental nutrients, supplying the recommended daily allowances for adults. The estimated hazardous index (I_h) of microminerals in some street and restaurant food products (based on a survey) showed possible toxicity risk, especially for the workers of automechanic workshops (I_h > 1.00). Thus, it is concluded that the contaminated (cheap) raw materials and unhygienic conditions for preparing street and restaurant foods and hawking places (atmospheric pollution) are the significant sources of micromineral contamination.
