Abstract
The fatty acids profile has been playing a decisive role in recent years, thanks to technological, sensory and health demands from producers and consumers. The application of NIRS technique on fat tissues, could lead to more efficient, practical, and economical in the quality control. The study aim was to assess the accuracy of Fourier Transformed Near Infrared Spectroscopy technique to determine fatty acids composition in fat of 12 European local pig breeds. A total of 439 spectra of backfat were collected both in intact and minced tissue and then were analyzed using gas chromatographic analysis. Predictive equations were developed using the 80% of samples for the calibration, followed by full cross validation, and the remaining 20% for the external validation test. NIRS analysis of minced samples allowed a better response for fatty acid families, n6 PUFA, it is promising both for n3 PUFA quantification and for the screening (high, low value) of the major fatty acids. Intact fat prediction, although with a lower predictive ability, seems suitable for PUFA and n6 PUFA while for other families allows only a discrimination between high and low values.

Abstract
Simple Summary Pig castration is a common practice in the Iberian breed (boar and gilts), known for the quality of its products. This work studies the effect of pig castration (surgically castrated females and males, immunocastrated females and males and entire females) on the sensory expectations and acceptability of the meat. Attitudes and beliefs towards castration and immunocastration were also evaluated. The study was carried out in Madrid and Barcelona, where consumers (n = 252) evaluated meat from the five sex types in blind and informed conditions. Results showed that consumers could be classified into three groups as “Indifferent”, “Against castration and immunocastration” and “Against immunocastration”. Meat from castrated males had higher overall liking scores than the other types of meat. Information provided to the consumers, together with their expectations, affects the overall liking scores. Thus, this needs to be considered to determine the best marketing strategy according to the type of pork produced. Abstract A common practice in Iberian pigs is the castration of both males and females, and it can be carried out surgically or by immunization against gonadotropin-releasing factor (GnRF). The aim of this work was to determine consumers’ overall liking and expectations towards Iberian pork from five different sex types (castrated females, entire females, GnRF-vaccinated females, castrated males and GnRF-vaccinated males), as well as to know the attitudes and beliefs of consumers towards castration and immunocastration. Loins from 83 Iberian pigs were collected and evaluated by 252 consumers in Barcelona and Madrid. Consumers evaluated the five types of meat in three situations: blind condition (tasting the product), expectations (without tasting) and informed condition. Finally, attitudes and beliefs towards castration and immunocastration were also determined. Results distinguished three segments of consumers labeled as “Indifferent”, “Against castration and immunocastration” and “Against immunocastration”. Meat from castrated males had higher overall liking scores in the blind condition. Expectations towards pork depending on its sex type affect consumer-informed acceptability; thus, it is important to consider marketing strategies to avoid or direct the effect of the information provided on the acceptability of the pork.

Characterization and management of interaction risks between livestock and wild ungulates on outdoor pig farms in Spain. Porcine Health Manag 2022; 8:2. Abstract
Background To control the transmission of relevant shared diseases, such as animal tuberculosis (TB) and African swine fever (ASF), it is essential to reduce the risk of interaction between livestock and wild ungulates. In Eastern and Central Europe, the current spread of ASF virus affecting wild boar and domestic pigs (especially those raised outdoors and/or in backyards) has devastated the pig sector in affected regions and is seriously threatening other exporting countries. Here, we evaluated the risk of wildlife-livestock interactions on 45 outdoor pig farms in Spain, the second largest pork producer in the EU and then proposed biosecurity-related actions. An integrated, systematic wildlife risk mitigation protocol based on interviews, questionnaires and field audits was developed and applied on each farm. Results Most of the interaction risk points were associated with water sources (84.2%; 701/832), mainly springs and ponds, which accounted for almost all the specific points with high or very high risk scores. The risk of interaction at feeding points (6.9%; 57/832) and those associated with facilities for livestock and/or game management (8.9%; 74/832) were rated as low and very low risk, respectively. Wild boar were present and hunted on 69% of the farms. Supplementary feeding for wild ungulate species (mainly wild boar) was provided on almost half (48.9%; 22/45) the surveyed farms. Risk mitigation actions were categorised to target water access, waterers, food, other livestock species, grazing, wildlife, and offal disposal. Of the total number of actions (n = 2016), 82.7% were identified as priority actions while 17.3% represented alternative options which were identified less cost-effective. On average, 37.1 (median: 32; range 14–113) action proposals per study farm were made and 2.0 (median: 1; range 0–4) per risk point. The mean estimated cost of implementing the proposed priority actions was 14,780 €/farm (25.7 €/hectare and 799.4 €/risk point). Conclusions This study expands the knowledge of interaction risks between domestic pigs and wild ungulates in outdoor pig farming systems and highlights the importance of considering local risks and management practices when designing and prioritising adapted wildlife risk mitigation and biosecurity actions. This practical and feasible protocol developed for Mediterranean ecosystems is easily transferable to professionals and can be adapted to extensive (outdoor) production or epidemiological systems in other European regions. Abstract
This opinion describes outdoor farming of pigs in the EU, assesses the risk of African swine fewer (ASF) introduction and spread associated with outdoor pig farms and proposes biosecurity and control measures for outdoor pig farms in ASF-affected areas of the EU. Evidence was collected from Member States (MSs) veterinary authorities, farmers' associations, literature and legislative documents. An Expert knowledge elicitation (EKE) was carried out to group outdoor pig farms according to their risk of introduction and spread of ASF, to rank biosecurity measures regarding their effectiveness with regard to ASF and propose improvements of biosecurity for outdoor pig farming and accompanying control measures. Outdoor pig farming is common and various farm types are present throughout the EU. As there is no legislation at European level for categorising outdoor pig farms in the EU, information is limited, not harmonised and needs to be interpreted with care. The baseline risk of outdoor pig farms for ASFV introduction and its spread is high but with considerable uncertainty. The Panel is 66-90% certain that, if single solid or double fences were fully and properly implemented on all outdoor pig farms in areas of the EU where ASF is present in wild boar and in domestic pigs in indoor farms and outdoor farms (worst case scenario not considering different restriction zones or particular situations), without requiring any other outdoor-specific biosecurity measures or control measures, this would reduce the number of new ASF outbreaks occurring in these farms within a year by more than 50% compared to the baseline risk. The Panel concludes that the regular implementation of independent and objective on-farm biosecurity assessments using comprehensive standard protocols and approving outdoor pig farms on the basis of their biosecurity risk in an official system managed by competent authorities will further reduce the risk of ASF introduction and spread related to outdoor pig farms.

Abstract
Background Antimicrobial resistance (AMR) is a global public health threat consequence of antimicrobial use (AMU) in human and animal medicine. In food-producing animals factors such as management, husbandry or biosecurity may impact AMU. Organic and extensive Iberian swine productions are based on a more sustainable and eco-friendly management system, providing an excellent opportunity to evaluate how sustained differences in AMU impact the AMR in indicator bacteria. Here, we evaluate the usefulness of commensal Escherichia coli and Enterococcus spp. isolates as AMR bioindicators when comparing 37 Spanish pig farms from both intensive and organic-extensive production systems, considering the effect of AMU and biosecurity measures, the last only on intensive farms. Results The production system was the main factor contributing to explain the AMR differences in E. coli and Enterococcus spp. In both bacteria, the pansusceptible phenotype was more common (p < 0.001) on organic-extensive farms when compared to intensive herds. The microbiological resistance in commensal E. coli was, for most of the antimicrobials evaluated, significantly higher (p < 0.05) on intensive farms. In enterococci, the lincosamides usage revealed the association between AMR and AMU, with an increase in the AMR for erythromycin (p < 0.01), quinupristin-dalfopristin (p < 0.01) and the multidrug-resistant (MDR) phenotype (p < 0.05). The biosecurity measures implemented on intensive farms influenced the AMR of these bioindicators, with a slightly lower resistance to sulfamethoxazole (p < 0.01) and the MDR phenotype (p < 0.05) in E. coli isolated from farms with better cleaning and disinfection protocols. On these intensive farms, we also observed that larger herds had a higher biosecurity when compared to smaller farms (p < 0.01), with no significant associations between AMU and the biosecurity scores. Conclusions Overall, this study evidences that the production system and, to a lesser extent, the biosecurity measures, contribute to the AMR development in commensal E. coli and Enterococcus spp., with antimicrobial usage as the main differential factor, and demonstrates the potential value of these bacteria as bioindicators on pig farms in AMR surveillance programs.

Abstract
The aim of the present work was to study group size, group composition and habitat use of Iberian pigs along the year when reared outdoor. This consists of a regimen in which animals are reared free range from 2 months of age until at least 14 months of age. In a first stage, animals are supplemented with concentrates, and in a second, called montanera, pigs eat just natural resources in areas with no more than two pigs per hectare. In these systems, males are castrated to avoid boar taint and females spayed to avoid the attraction and mounting by wild boars. The study was carried out in five different farms allocated in the south-west of Spain during 2 consecutive years, from March 2012 to February 2014, under the montanera regimen, and with a total of 995 animals observed (498 males and 497 females). The data were analyzed with SAS by means of general models and proc mixed. Mean group size along the year was of 17 ± 12.9 individuals, but this was significantly lower (P < 0.05) during the montanera (12 ± 0.8) and at midday (13 ± 0.8). Groups were bigger (P < 0.05) when they were more than 50 m from a tree (23 ± 1.8), or <10 m from the shelter (25 ± 1.5), the feeding area (31 ± 3.1) and the water-bath area (25 ± 1.5). Nine percent of the groups were solitary animals, being higher (P = 0.0286) during the montanera (11%) than the rest of the year (8%) and being formed in 68% by males. Males were less involved in mixed groups than were females (75% vs. 91%), especially in spring, where the largest (P < 0.0001) male groups were found. Female groups were less frequent and smaller (P < 0.0001) than were male and mixed groups. In conclusion, although males were castrated at a very young age, they showed a different behavior than females, forming in bachelor groups during the spring and being less involved in mixed groups and with more solitary animals. During the montanera, when animals were feeding on acorns and other natural resources, groups were smaller and closer to the trees, solitary males reaching a maximum percent.

Abstract
Intensification of pig production in developing countries has resulted in increased number of animals per unit area leading to welfare and growth performance issues. This study was then performed to evaluate the effects of space allowance and dietary energy and amino acid content on growth performance and physiological parameters of piglets reared under tropical conditions. A total of 1280 piglets (castrated males and females) with initial body weight of 5.9 ± 0.4 kg were used. Animals were distributed in a 2 × 2 factorial arrangement composed by two space allowances (0.30 and 0.22 m2/animal) and two diets during 43 to 63 days of age (control and experimental diet with increased ME and AA content). The experimental period lasted 42 days subdivided into four phases according to the growth stage of the animals: pre-initial I (21 to 27 days of age), pre-initial II (28 to 34 days), initial I (35 to 42 days), and initial II (43 to 63 days). During pre-initial I and II, and initial I phases, pigs housed at a space allowance of 0.30 and 22 m2/animal had similar (P > 0.05) feed intake, weight gain, and feed conversion. During initial phase II, space allowance did not affect (P > 0.05) feed intake nor weight gain of the animals. Whereas, pigs fed the experimental diet had greater weight gain when compared to the control group (530 vs. 515 g/day, P = 0.03). According to our results, reducing space allowance from 0.30 to 22 m2/animal during the nursery phase (21 to 63 days of age) had negligible effects on piglet feed intake and weight gain, whereas feeding piglets with diets containing higher energy and amino levels resulted in greater weight gain.

Abstract
Autochthonous pig breeds provide products of differentiated quality, among which quality control is difficult to perform and insufficient for current market requirements. The present research evaluates the predictive ability of near-infrared (NIR) spectroscopy, combined with chemometric methods as a rapid and affordable tool to assure traceability and quality control. Thus, NIR technology was assessed for intact and minced muscle Longissimus thoracis et lumborum samples collected from 12 European autochthonous pig breeds for the quantification of lipid content and fatty acid composition. Different tests were performed using different numbers of samples for calibration and validation. The best predictive ability was found using minced presentation and set with 80% of the samples for the calibration and the remaining 20% for the external validation test for the following traits: lipid content and saturated and polyunsaturated fatty acids, which attained both the highest determination coefficients (0.89, 0.61, and 0.65, respectively) and the lowest root mean square errors in external validation (0.62, 1.82, and 1.36, respectively). Lower predictive ability was observed for intact muscles. These results could contribute to improve the management of autochthonous breeds and to ensure quality of their products by traditional meat industry chains.

Abstract
Simple Summary Understanding the natural behaviour of pigs in free-range conditions facilitates the interpretation of their behaviour in intensive conditions. The present study aims to study behavioural indicators of activity in the domestic pig, reared free-range and under two feeding regimes, with some help from humans with concentrates and without help, just eating natural resources. Results confirmed that exploratory behaviour was an important behaviour for pigs, but the same animals that dedicated 50% of their time to this activity when they were not fed by humans reduced this activity to 17.8% when they were fed with concentrates. In addition, few social contacts between animals were seen in extensive conditions, with a higher incidence of negative rather than positive social behaviour. It was concluded that: (1) the need for exploring the surroundings in natural environments is of less importance for pigs when they are fed by humans, and (2) bathing areas in outdoor conditions are important for pigs in the event of warm conditions. Overall, it is concluded that natural behaviour of pigs in free-range conditions, such as a reduced foraging behaviour when pigs are fed with concentrates, should be considered when interpreting behavioural needs in intensive conditions. Abstract Understanding the natural behaviour of pigs in free-range conditions facilitates interpretation of their behaviour in intensive conditions. Studying six different farms over two years at different seasons, with climatic and management variations, allowed for a general description of Iberian pig behaviour and which factors have an influence on it. The main activity found was resting (56.5% of the time observed), followed by exploratory behaviour. However, this exploratory behaviour was higher when animals were fed only with natural resources than when fed with concentrates (50% versus 17.8%, respectively). In addition, pigs used bathing areas in summer that were not visited in winter. Negative social behaviour was seen more frequently than positive social behaviour, accounting, in total, for 1% of the total activity of animals. Pigs situated at the centre of the groups tended to remain more relaxed, while the peripheral animals remained more alert and vigilant. Our results indicate that foraging behaviour accounts for a significant proportion of pigs’ active time, but this proportion is much more reduced when pigs are fed concentrates. Therefore, behavioural needs in pigs reared in intensive conditions should consider that exploratory behaviour is reduced when pigs are fed with concentrates.

Abstract
Pigs reared under extensive farming conditions are currently in high commercial demand because they are associated with high-quality products. Nevertheless, the risk of contact with different pathogens of animal and public health concern is also higher in extensive production systems. Toxoplasma gondii is a widely prevalent zoonotic pathogen and transmission by contaminated pork is likely one of the main routes of human toxoplasmosis. The aim of this study was to determine the seroprevalence, risk factors and spatial distribution of T. gondii on extensive Iberian pig herds in Spain. Sera from 2245 Iberian pigs from 114 herds were collected between 2015 and 2017 and analyzed using a commercial ELISA. The apparent individual prevalence of antibodies against T. gondii was 24.1 % (542/2245) and the estimated true seroprevalence was 24.3 % (CI95 %: 22.5-26.1). Seropositivity was detected in 86.0 % (98/114; CI95 %: 77.4-91.1) of 114 herds analyzed. A multi-level logistic regression model showed that T. gondii infection was significantly more frequent in sows than in fattening pigs (OR: 2.6; CI95 %: 1.5-4.8) and in herds with more than three cats compared to no cats (OR: 2.9; CI95 %: 1.1-8.7). Our results indicate a widespread but heterogenous distribution of T. gondii in extensively reared Iberian pig herds, which may have important implications for public health through the consumption of undercooked or improperly cured pork products.

Abstract
Simple Summary We studied different EU production standards and initiatives to determine whether there is still room or not for further animal welfare improvement, and which should be the best way to achieve it. Many of the adopted measures in these standards and initiatives are scientifically supported, but other aspects that are equally important for animal welfare are not included in any of them. Animal welfare improvement should consider, for each country, those aspects actually benefiting animals, but also the social expectations within each country. Economic constraints might explain the gap between what society demands, and what farm animals actually need. Abstract Information about animal welfare standards and initiatives from eight European countries was collected, grouped, and compared to EU welfare standards to detect those aspects beyond minimum welfare levels demanded by EU welfare legislation. Literature was reviewed to determine the scientific relevance of standards and initiatives, and those aspects going beyond minimum EU standards. Standards and initiatives were assessed to determine their strengths and weaknesses regarding animal welfare. Attitudes of stakeholders in the improvement of animal welfare were determined through a Policy Delphi exercise. Social perception of animal welfare, economic implications of upraising welfare levels, and differences between countries were considered. Literature review revealed that on-farm space allowance, climate control, and environmental enrichment are relevant for all animal categories. Experts’ assessment revealed that on-farm prevention of thermal stress, air quality, and races and passageways’ design were not sufficiently included. Stakeholders considered that housing conditions are particularly relevant regarding animal welfare, and that animal-based and farm-level indicators are fundamental to monitor the progress of animal welfare. The most notable differences between what society offers and what farm animals are likely to need are related to transportation and space availability, with economic constraints being the most plausible explanation.

Abstract
Ninety-one farms were visited over a 2-year period to assess the welfare of growing pigs in five different production systems found either in France or in Spain using the Welfare Quality® protocol. This study focused on animal-based measures as indicators of 'good feeding' and 'good housing'. Multiple Generalized Linear Mixed Models were performed for each measure to evaluate the differences between production systems and to detect possible causal factors. Pigs in the conventional system presented the lowest prevalence of poor body condition, whereas extensive Mallorcan Black pigs and extensive Iberian pigs were associated with a decreased prevalence of bursitis and pig dirtiness. The straw-bedded system presented a lower prevalence of bursitis, but poorer hygiene and more susceptibility of poor body condition than the conventional system. The age of the animals had a significant effect on the appearance of bursitis in the three intensive systems studied. The type of floor was a significant causal factor of bursitis and pig dirtiness in the conventional system and among intensive Iberian pigs. The feeding system was another causal factor of pig dirtiness on more than 50% of the body in the conventional system, whereas pig dirtiness on less than 50% of the body was influenced by the age of the animals. The prevalence of huddling animals in the conventional system was associated with the highest stocking densities and the lowest environmental temperatures. The results indicate that there were important differences between production systems based on animal-based indicators of the good feeding and housing principles. The recording of the age of the animals, type of floor, feeding system, stocking density and environmental temperature can be useful to predict the appearance of a given welfare measure of 'good housing' on a farm.
