Assessment of Stress by Serum Biomarkers in Calves and Their Relationship to Ultimate pH as an Indicator of Meat Quality

The routine handling of cattle during the rearing period and during antemortem events is an inevitable source of animal stress that can have negative impacts on the quality of meat, resulting in economic losses for the meat industry. This study assesses the breed, the farm management system, and the pre-mortem handling of animals and their impact on serum stress biomarkers, as well as their relationship with pH_u. The findings indicate that breed, together with farm management, had the highest impact; cortisol, lactate, and serum amyloid A were identified as potential stress biomarkers in relation to pH_u. We believe that these findings might help in the assessment of stress in cattle at the stage prior to slaughter.

Abstract

Seventy-eight calves from Asturiana de los Valles, Retinta, and Rubia Gallega breeds, under extensive and intensive farm systems and animal mixing and non-mixing conditions, and during the transport and lairage in slaughterhouses, were studied. This research aimed to study the effect of breed, farm system and mixing conditions on serum biomarkers (cortisol, lactate, glucose, serum amyloid A, haptoglobin, and C-reactive protein) and their relationship with pH_u at slaughter time, and to evaluate the response of the serum biomarkers of calves throughout fattening period. Moreover, this study aims to evaluate the response of the biomarkers in each breed during the fattening period. At slaughter time, cortisol and lactate were affected by BreedxFarm; Retinta showed the opposite pattern to the others and revealed the highest glucose in extensive farm systems. Rubia Gallega in mixing revealed the highest Amyloid A and haptoglobin. Extensive calves in mixing conditions showed the highest glucose. There was a relationship among the variables cortisol, lactate, Amyloid A, and pH_u. Slaughter time was a major stressor, and the stress response was mainly affected by breed. At slaughter, several biomarkers should be considered.

Environmental Factors and Genetic Parameters of Beef Traits in Fleckvieh Cattle Using Field and Station Testing

Meat production plays an important role in the efficiency of rearing dual-purpose breeds of cattle in Europe. It is generally known and accepted that most of the beef produced in the EU is produced from dairy herds. This fact provided the motivation for analyzing the influence of genetic and environmental factors on the indicators of meat production from Fleckvieh (known also as dairy Simmental) cattle in the Czech Republic and the interrelationships between these factors. The analysis included evaluating the statistical relationship between the degree of fatness, the heritability and genetic correlation with other traits and also the relationship with exterior muscularity. Together with this analysis, the normal indicators, which are usually evaluated in the population, were also analyzed. The results of our study indicate that meat yield traits are positively related to the live weight of the animal. These findings create possibilities for application in breeding strategies of dual-purpose cattle.

Abstract

The goal of this study was to analyze the genetic and environmental factors of selected meat yield indicators in Fleckvieh cattle in the Czech Republic, through the application of station (S) and field (F) testing methods. Data collected from fattened bulls were analyzed for F (n = 9378) and for S (n = 6346). In the F method and the S method, the values of the main meat yield indicators were as follows: carcass weight 402.91 kg (F), 339.37 kg (S); carcass daily gain 626.05 g/day (F), 609.74 g/day (S); SEUROP carcass classification 2.73 (F), 2.19 (S). Environmental factors were found to have a significant impact on the selected meat yield indicators; their heritability ranged from 0.14 (SEUROP classification) to 0.33 (dressing percentage). The genetic trend was significantly positive only in relation to those meat yield traits, which had a positive link to the size or weight of the animal. The genetic correlation between observations obtained in the S and F methods of testing was very high in relation to the carcass daily gain (0.8351) and carcass weight (0.8244), while slightly lower correlations were calculated for the SEUROP classification. A genetic evaluation of the degree of fatness is not routinely performed in Fleckvieh populations, and the newly established heritability for this trait ranges between 0.17–0.20. The genetic correlation between beef yield indicators and the exterior trait of muscularity was also established, and shows a strong link to the net daily gain, the SEUROP classification and body weight (0.79–0.97). The aim of the study was to evaluate the genetic and environmental effects on meat yield and also estimate genetic parameters for new traits. We can also state, based on the results, that a strong positive genetic trend is confirmed, especially in traits related to the size or weight of animals. This result can be used in breeding programs of dual-purpose cattle, where we can genetically improve the meat and milk yield through the body size.

Beef production from yearling calves under conventional or organic management

The objective of this research was to compare yearling beef calf production (bodyweight – BW gains and carcass characteristics) under organic and conventional (semi-extensive) management. The study comprised three production cycles (from weaning to slaughter) with a total of 67 calves. For the grazing periods, three replicates (1.6-ha paddocks with Lolium perenne–Trifolium repens pasture) per treatment were established, and 4–5 animals per paddock were managed. Conventional paddocks were fertilised with synthetic NPK, whereas manure was used in the organic ones. During finishing, conventional feeding consisted of concentrate ad libitum with straw (CC). Under organic regulation, pasture grazing (PG), herbage silage (HS) and maize silage (MS), all supplemented with organic concentrate, were tested. Results showed similar individual performances before finishing in both treatments. Daily BW gain per unit area during spring was greater in conventional than in organic system (5.62 vs 4.27 kg/ha; P < 0.01), propitiating greater final production in the former, a result of greater herbage production allowing higher stocking rates managed on conventional pastures. During finishing, CC yearlings had greater (P < 0.001) BW gains (1340 g/day) compared with organic feeding systems, although MS feeding enhanced the gains (1116 g/day) over those achieved in PG or HS (average 709 g/day). There were no differences among feeding systems in carcass weight and conformation, while the rib dissection revealed greater fat contents in CC and MS relative to PG and HS (10.2 vs 7.5%; P < 0.05). Feeding with maize silage during finishing could be a good option to achieve organic beef production levels close to the conventional ones. However, the high price of organic concentrate raised feeding costs during finishing in a way that organic beef fattening was 36% less efficient than the conventional system in terms of product sales (applying the same price per kg carcass weight) minus feeding costs per unit of land area.

Effect of sex and genotype on carcase composition and nutritional characteristics of chicken meat

1. The aim of this study was to examine the effect of sex and genotype on carcase composition and nutritional and sensory characteristics of chicken meat. The "Geline de Touraine" (GT) characterised by high carcase fatness was compared with an experimental crossbreed (EC) and "Label rouge" (LR) genotype. 2. Females compared with males, and GT chickens compared with LR and EC chickens were characterised by increased carcase fatness and an increased lipid level in thigh meat. 3. In both breast and thigh meat, the percentage of monounsaturated fatty acids was increased and the percentage of polyunsaturated fatty acids was decreased. However, these effects did not affect sensory characteristics of meat particularly those of roasted breast fillets containing very low lipid level by comparison with thigh meat. 4. Finally, in our study, high carcase fatness was related to high intermuscular fatness affecting the nutritional characteristics of meat but not its sensory attributes.

Effect of breed body size and the muscular hypertrophy gene in the production and carcass traits of concentrate-finished yearling bulls

To examine the extent of the effect of muscular hypertrophy character in beef of northern-Spanish breeds, animal performance and carcass characteristics of 152 finishing steers from 5 genotypes were studied: 32 yearling bulls from a rustic Asturiana de la Montaña (AM) breed, 96 yearling bulls from Asturiana de los Valles (AV) breed, divided in 3 groups depending on the presence of the gene responsible for double-muscling (i.e., 32 AV mh/mh, 32 AV mh/+, 32 AV +/+), and 24 yearling bulls from AM x AV cross were used. Each genotype was composed of 8 animals per year (4 animals per pen) for 4 yr, except for the AM x AV genotype, which was only evaluated in the last 3 yr of the experiment. All animals were fed indoors with concentrate meal and barley straw ad libitum. Average daily gains in AV animals (1.41 kg/d) were greater (P < 0.01) than in AM (1.12 kg/d), whereas AM x AV were intermediate (1.29 kg/d) to these. No significant differences (P = 0.604) in ADG were found among the 3 AV genotypes. Longer fattening periods (P < 0.001) were taken for AM animals to reach acceptable BW at slaughter. Double-muscled animals (AV mh/mh) were found to have the best feed efficiencies when expressed as G:F (P < 0.001). However, residual feed intake calculated on a daily basis showed a greater efficiency in AV mh/mh and AM than in other genotypes. Carcasses from double-muscled animals had greater BW, yield, conformation and compactness index, and less fat cover than the other genotypes (P < 0.001). Carcasses from AM breed were the lightest and had the worst conformation, whereas those from AM x AV generally presented intermediate characteristics between AV and AM. Double-muscled animals had the greatest LM weight and area. The sixth-rib dissection revealed a greater percentage of muscle (84.6%) and decreased percentages of subcutaneous fat (1.1%), intermuscular fat (4.7%), bone (8.5%), and other tissues (1.2%) in AV mh/mh compared with other genotypes. Water-holding capacity was greatest in AM and least in AV mh/mh. In conclusion, double-muscled AV bulls would provide the greatest economic returns at intensive feeding systems because of their greater efficiency, reduced feeding costs, greater carcass weight and conformation, and greater lean yields, though some LM characteristics (reduced fat content and water-holding capacity) could negatively affect the sensory attributes of the meat compared with other genotypes with greater fatness.
