Abstract
Local sheep breeds in the Italian eastern Alps passed from ex situ to in situ conservation. These breeds are mainly reared by smallholders in low-input farming systems. To allow the sustainable use of genetic resources, the economic sustainability of farmers must be supported through production guidelines. Analyzing meat and milk composition and fatty acid profile, we aimed to characterize their products based on breed and diet to identify tailormade sales strategies. Results showed that both meat and milk have good nutritional values and can benefit from a pasture-based diet, irrespective of the breed. These results support the redaction of production guidelines based on the peculiar characteristics of these breeds: being multi-purpose breeds adapted to mountain areas and to grazing, thus contributing to the conservation of cultural and landscape heritage.

Abstract
In Colombia, the beef production chain accounts for approximately 11.6 million cattle heads and annually produces 933 million kg of the beef carcass. There are no life cycle assessment (LCA) studies that have evaluated the environmental performance of Colombian beef systems. The present study aimed to estimate the carbon footprint (CF), non-renewable energy use, and land use of 251 cow-calf and 275 fattening farms in Colombia. The study also aimed to identify the main hotspots of adverse environmental impacts and propose possible mitigation options and their cost-effectiveness. The impact categories were estimated using the 2006 IPCC and the 2019 Refinement to 2006 IPCC guidelines, databases, and locally estimated emission factors. The functional units used were 1 kg fat and protein corrected milk (FPCM) and 1 kg live weight gain (LWG), leaving the farm gate. Three methods of allocating environmental burdens to meat and milk products were applied: economic, energy, and mass allocation. The adoption of improved pastures was considered a mitigation measure, and an economic assessment was performed to estimate the relative cost-effectiveness of its establishment. A principal component multivariate analysis and a Hierarchical Clustering on Principal Components were performed. The economic allocation method assigned a greater environmental burden to meat (83%), followed by energy content (80%) and mass production (73%). The largest sources of GHG emissions were enteric fermentation and manure deposited on pasture. Both cow-calf and fattening systems had a cluster of farms with better productivity, pasture and cattle management practices, and environmental performance. The CF for meat could be reduced by 33 to 56% for cow-calf and 21 to 25% for fattening farms, by adopting improved pastures. Therefore, our results suggest that GHG emissions can be reduced by adopting improved pastures, better agricultural management practices, efficient fertilizer usage, using the optimal stocking rate, and increasing productivity.

Abstract
Simple Summary Dairy herds in alpine areas usually adopt summer grazing, mainly to reduce feeding costs. This practice is related to the maintenance of local traditions and to the manufacturing of niche dairy products. However, it is important to assess the impact of this practice on cattle health. This case study investigated how milk-related health traits vary across extensive grazing during the summer period, using data collected in a dairy herd whose cows were repeatedly controlled for individual milk samples. Although the transition from barn farming to pasture led to a reduction in milk production, proper grazing management can make dairy cows more resilient in terms of udder health and metabolic efficiency. Findings of the present research report suggested that pasture can be adopted to maintain dairy herd sustainability without impairing animal health. Abstract Extensive summer grazing is a dairy herd management practice frequently adopted in mountainous areas. Nowadays, this activity is threatened by its high labour demand, but it is fundamental for environmental, touristic and economic implications, as well as for the preservation of social and cultural traditions. Scarce information on the effects of such low-input farming systems on cattle health is available. Therefore, the present case study aimed at investigating how grazing may affect the health status of dairy cows by using milk traits routinely available from the national milk recording scheme. The research involved a dairy herd of 52 Simmental and 19 Holstein × Simmental crossbred cows. The herd had access to the pasture according to a rotational grazing scheme from late spring up to the end of summer. A total of 616 test day records collected immediately before and during the grazing season were used. Individual milk yield was registered during the milking procedure. Milk samples were analysed for composition (fat, protein, casein and lactose contents) and health-related milk indicators (electrical conductivity, urea and β-hydroxybutyrate) using mid-infrared spectroscopy. Somatic cell count (SCC) and differential SCC were also determined. Data were analysed with a linear mixed model, which included the fixed effects of the period of sampling, cow breed, stage of lactation and parity, and the random effects of cow nested within breed and the residual. The transition from barn farming to pasture had a negative effect on milk yield, together with a small deterioration of fat and protein percentages. Health-related milk indicators showed a minor deterioration of the fat to protein ratio, differential SCC and electrical conductivity, particularly towards the end of the grazing season, whereas the somatic cell score and β-hydroxybutyrate were relatively constant. Overall, the study showed that, when properly managed, pasture grazing does not have detrimental effects on dairy cows in terms of udder health and efficiency. Therefore, the proper management of cows on pasture can be a valuable solution to preserve the economic, social and environmental sustainability of small dairy farms in the alpine regions, without impairing cows’ health.

Abstract
Recent studies on milk production have often focused on environmental impacts analysed using the Life Cycle Assessment (LCA) approach. In grassland-based livestock systems, soil carbon sequestration might be a potential sink to mitigate greenhouse gas (GHG) balance. Nevertheless, there is no commonly shared methodology. In this work, the GHG emissions of small-scale mountain dairy farms were assessed using the LCA approach. Two functional units, kg of Fat and Protein Corrected Milk (FPCM) and Utilizable Agricultural Land (UAL), and two different emissions allocations methods, no allocation and physical allocation, which accounts for the co-product beef, were considered. Two groups of small-scale dairy farms were identified based on the Livestock Units (LU) reared: <30 LU (LLU) and >30 LU (HLU). Before considering soil carbon sequestration in LCA, performing no allocation methods, LLU farms tended to have higher GHG emission than HLU farms per kg of FPCM (1.94 vs. 1.59 kg CO2-eq/kg FPCM, P ≤ 0.10), whereas the situation was reversed upon considering the m2 of UAL as a functional unit (0.29 vs. 0.89 kg CO2-eq/m2, P ≤ 0.05). Conversely, considering physical allocation, the difference between the two groups became less noticeable. When the contribution from soil carbon sequestration was included in the LCA and no allocation method was performed, LLU farms registered higher values of GHG emission per kg of FPCM than HLU farms (1.38 vs. 1.10 kg CO2-eq/kg FPCM, P ≤ 0.05), and the situation was likewise reversed in this case upon considering the m2 of UAL as a functional unit (0.22 vs. 0.73 kg CO2-eq/m2, P ≤ 0.05). To highlight how the presence of grasslands is crucial for the carbon footprint of small-scale farms, this study also applied a simulation for increasing the forage self-sufficiency of farms to 100%. In this case, an average reduction of GHG emission per kg of FPCM of farms was estimated both with no allocation and with physical allocation, reaching 27.0% and 28.8%, respectively.

Variation of milk coagulation properties, cheese yield, and nutrients recovery in curd of cows of different breeds before, during and after transhumance to highland summer pastures. Abstract
This paper aimed at evaluating the effect of summer transhumance to mountain pastures of dairy cows of different breeds on cheese-making ability of milk. Data were from 649 dairy cows of specialized (Holstein Friesian and Brown Swiss) dual purpose (Simmental) and local (mostly Rendena and Alpine Grey) breeds. The Fourier-Transform Infra-Red Spectra (FTIRS) of their milk samples were collected before and after transhumance in 109 permanent dairy farms, and during transhumance in 14 summer farms (with multi-breeds herds) of the Trento Province, north-eastern Italy. A variety of 18 traits describing milk coagulation, curd firming, cheese yield and nutrients recovery in curd/loss in whey were predicted on the basis of FTIRS collected at the individual cow level. Moving the cows to summer farms improved curd firming traits but reduced cheese yields because of an increase of water and fat lost in the whey. During summer grazing, most of cheese-making traits improved, often non-linearly. The milk from summer farms supplementing cows with more concentrates showed better curd firming and cheese yield, because of lower fat lost in the whey. The breed of cows affected almost all the traits with a worst cheese-making ability for milk samples of Holsteins through all the trial, and interacted with concentrate supplementation because increasing compound feed tended to improve cheese-making traits for all breed, with the exception of local breeds for coagulation time and of Brown Swiss for curd firming time. In general, summer transhumance caused a favourable effect on cheese-making aptitude of milk, even though with some difference according to parity, initial days in milk, breed and concentrate supplementation of cows.

Abstract
Summer transhumance of dairy cows to high Alpine pastures is still practiced in many mountainous areas. It is important for many permanent dairy farms because the use of highland pastures increases milk production and high-priced typical local dairy products often boost farm income. As traditional cheese- and ricotta-making procedures in Alpine pastures are central to this dairy system, the objective of this study was to characterize the quality and efficiency of products and their relationships with the quality and availability of grass during the grazing season. The milk from 148 cows from 12 permanent farms reared on a temporary farm located in Alpine pastures was processed every 2wk during the summer (7 cheesemakings from late June to early September). During each processing, 11 dairy products (4 types of milk, 2 by-products, 3 fresh products, and 2 ripened cheeses) were sampled and analyzed. In addition, 8 samples of fresh forage from the pasture used by the cows were collected and analyzed. At the beginning of the pasture season the cows were at 233±90d in milk, 2.4±1.7 parities, and produced 23.6±5.7kg/d of milk. The milk yield decreased with the move from permanent to temporary farms and during the entire summer transhumance, but partly recovered after the cows returned to the permanent farms. Similar trends were observed for the daily yields of fat, protein, casein, lactose, and energy, as we found no large variations in the quality of the milk, with the exception of the first period of Alpine pasture. The somatic cell counts of milk increased during transhumance, but this resulted from a concentration of cells in a lower quantity of milk rather than an increase in the total number of cells ejected daily from the udder. We noted a quadratic trend in availability of forage (fresh and dry matter weight per hectare), with a maximum in late July. The quality of forage also varied during the summer with a worsening of chemical composition. The evening milk (before and after natural creaming), the whole morning milk, and the mixed vat milk had different chemical compositions, traditional coagulation properties, and curd-firming modeling parameters. These variations over the pasture season were similar to the residual variations with respect to chemical composition, and much lower with respect to coagulation and curd-firming traits. Much larger variations were noted in cream, cheese, and ricotta yields, as well as in nutrient recoveries in curd during the pasture season. The protein content of forage was correlated with some of the coagulation and curd-firming traits, the ether extract of forage was positively correlated with milk fat content and cheese yields, and fiber fractions of forage were unfavorably correlated with some of the chemical and technological traits. Traditional cheese- and ricotta-making procedures showed average cream, cheese, and ricotta yields of 6.3, 14.2, and 4.9%, respectively, and an overall recovery of almost 100% of milk fat, 88% of milk protein, and 60% of total milk solids.

Abstract
The intensification process of the livestock sector has been characterized in recent decades by increasing output of product per hectare, increasing stocking rate, including more concentrated feed in the diet, and improving the genetic merit of the breeds. In dairy farming, the effects of intensification on the environmental impact of milk production are not completely clarified. The aim of the current study was to assess the environmental impacts of dairy production by a life cycle approach and to identify relations between farming intensity and environmental performances expressed on milk and land units. A group of 28 dairy farms located in northern Italy was involved in the study; data collected during personal interviews of farmers were analyzed to estimate emissions (global warming potential, acidification, and eutrophication potentials) and nonrenewable source consumption (energy and land use). The environmental impacts of milk production obtained from the life cycle assessment were similar to those of other recent studies and showed high variability among the farms. From a cluster analysis, 3 groups of farms were identified, characterized by different levels of production intensity. Clusters of farms showed similar environmental performances on product basis, despite important differences in terms of intensification level, management, and structural characteristics. Our study pointed out that, from a product perspective, the most environmentally friendly way to produce milk is not clearly identifiable. However, the principal component analysis showed that some characteristics related to farming intensification, such as milk production per cow, dairy efficiency, and stocking density, were negatively related to the impacts per kilogram of product, suggesting a role of these factors in the mitigation strategy of environmental burden of milk production on a global scale. Considering the environmental burden on a local perspective, the impacts per hectare were positively associated with the intensification level.

Abstract
Agriculture and animal husbandry are important contributors to global emissions of greenhouse (GHG) and acidifying gases. Moreover, they contribute to water pollution and to consumption of non-renewable natural resources such as land and energy. The Life Cycle Assessment (LCA) methodology allows evaluation of the environmental impact of a process from the production of inputs to the final product and to assess simultaneously several environmental impact categories among which GHG emissions, acidification, eutrophication, land use and energy use. The main purpose of this study was to evaluate, using the LCA methodology, the environmental impact of milk production in a sample of 41 intensive Italian dairy farms and to identify, among different farming strategies, those associated with the best environmental performances. The functional unit was 1 kg Fat and Protein Corrected Milk (FPCM). Farms showed characteristics of high production intensity: FPCM, expressed as tonnes per hectare, was 30·8±15·1. Total GHG emission per kg FPCM at farm gate was 1·30±0·19 kg CO2 eq. The main contributors to climate change potential were emissions from barns and manure storage (50·1%) and emissions for production and transportation of purchased feeds (21·2%). Average emission of gases causing acidification to produce 1 kg FPCM was 19·7±3·6 g of SO2 eq. Eutrophication potential was 9·01±1·78 ${\rm PO}_{\rm 4}^{{\rm 3} -} {\rm eq}.$ per kg FPCM on average. Farms from this study needed on average 5·97±1·32 MJ per kg FPCM from non-renewable energy sources. Energy consumption was mainly due to off-farm activities (58%) associated with purchased factors. Land use was 1·51±0·25 m2 per kg FPCM. The farming strategy based on high conversion efficiency at animal level was identified as the most effective to mitigate the environmental impact per kg milk at farm gate, especially in terms of GHG production and non-renewable energy use per kg FPCM.
