Abstract
Mycosporine-like amino acids (MAAs) are the natural UV-absorbing compounds with antioxidant activity found in microalgae and macroalgae. We collected red algae Asparagopsis taxiformis, Meristotheca japonica, and Polysiphonia senticulosa from Nagasaki, where UV radiation is more intense than in Hokkaido, and investigated the effect of UV radiation on MAA content. It was suggested that A. taxiformis and M. japonica contained shinorine and palythine, while UV-absorbing compound in P. senticulosa could not be identified. The amounts of these MAAs were lower compared to those from Hokkaido. Despite an increase in UV radiation in both regions from February to April, MAA contents of red algae from Nagasaki slightly decreased while those from Hokkaido significantly decreased. This difference was suggested the amount of inorganic nitrogen in the ocean. Antioxidant activity of MAAs increased under alkaline conditions. The extract containing MAAs from P. senticulosa showed the highest antioxidant activity among 4 red algae.

Abstract
The aims of this study were to induce calli from the seeds of three rice varieties (Hommali 105, Munpu, and Niawdum) and investigate their anti-aging potential. First, rice seeds were cultured on a Murashige and Skoog medium (MS medium) supplemented with 2 mg/L of 2,4-Dichlorophenoxyacetic acid (2,4-D), 1 mg/L of 1-Naphthalene acetic acid (NAA), and 1 mg/L of 6-Benzylaminopurine (BAP). After three weeks, the calli were extracted with ethanol. Then, their phenolic contents were determined by spectrophotometer and the amino acids were identified by ultra-performance liquid chromatography (UPLC). Their cytotoxicity, anti-oxidant (potassium ferricyanide reducing power assay (PFRAP), DPPH radical scavenging assay (DPPH), lipid peroxidation inhibition (LPO), and superoxide dismutase activity (SOD)), and anti-aging (keratinocyte proliferation, anti-collagenase, anti-inflammation, and anti-tyrosinase) activities were also investigated. Munpu callus (385%) was obtained with a higher yield than Hommali (322%) and Niawdum (297%) calli. The results revealed that the phenolic and amino acid contents were enhanced in the calli. Moreover, the calli were rich in glutamic acid, alanine, and gamma aminobutyric acid (GABA). The callus extracts showed no cytotoxic effects at a concentration of equal to or lower than 0.25 mg/mL. The highest anti-oxidant activities (PFRAP (0.81 mg AAE/mL), DPPH (68.22%), LPO (52.21%), and SOD (67.16%)) was found in Munpu callus extract. This extract also had the highest keratinocyte proliferation (43.32%), anti-collagenase (53.83%), anti-inflammation (85.40%), and anti-tyrosinase (64.77%) activities. The experimental results suggest that the amounts of bioactive compounds and anti-aging activities of rice seeds can be enhanced by the induction of callus formation.

Abstract
We recently demonstrated the monthly variation and antioxidant activity of mycosporine-like amino acids (MAAs) from red alga dulse in Japan. The antioxidant activity of MAAs in acidic conditions was low compared to that in neutral and alkali conditions, but we found strong antioxidant activity from the heated crude MAA fraction in acidic conditions. In this study, we identified and characterized the key compounds involved in the antioxidant activity of this fraction. We first isolated two MAAs, palythine, and porphyra-334, from the fraction and evaluated the activities of the two MAAs when heated. MAAs possess absorption maxima at around 330 nm, while the heated MAAs lost this absorption. The heated MAAs showed a high ABTS radical scavenging activity at pH 5.8-8.0. We then determined the structure of heated palythine via ESI-MS and NMR analyses and speculated about the putative antioxidant mechanism. Finally, a suitable production condition of the heated compounds was determined at 120 °C for 30 min at pH 8.0. We revealed compounds from red algae with antioxidant activities at a wide range of pH values, and this information will be useful for the functional processing of food.

Abstract
Mycosporine-like amino acids (MAAs) are the ultraviolet (UV)-absorbable compounds, which are naturally produced by cyanobacteria and algae. Not only these algae but also marine organisms utilize MAAs to protect their DNA from UV-induced damage. On the other hand, the content of MAAs in algae was changed by the environmental condition and season. In addition to the UV-protected function, the antioxidant capacity of MAAs can apply to the cosmetic sunscreen materials and anti-cancer for human health. In this study, we developed the efficient extraction method of MAAs from red alga dulse in Usujiri (Hokkaido, Japan) and investigated the monthly variation. We also evaluated the antioxidant capacity. We employed the successive extraction method of water and then methanol extraction. Spectrophotometric and HPLC analyses revealed that the yield of MAAs by 6 h water extraction was the highest among the tested conditions, and the content of MAAs in the sample of February was the most (6.930 µmol g-1 dry weight) among the sample from January to May in 2019. Antioxidant capacity of MAAs such as crude MAAs, the purified palythine and porphyra-334 were determined by 2,2'-azinobis(3-ethylbenzothiazoline 6-sulfonic acid) (ABTS) radical scavenging and ferrous reducing power assays in various pH conditions, showing that the highest scavenging activity and reducing power were found at alkaline condition (pH 8.0).

Abstract
The goal of this study was to investigate phenolic contents and biological activities in leaves of Diplotaxis tenuifolia collected in Patagonia (Argentina). Anti-glycation activities were tested by bovine serum albumin-glucose (BSA-glu) and Maillard reaction models. Only in the case of water extract of dry matter, Maillard reaction could be 40 % inhibited. The remaining results do not allow make definitive conclusions. Water extracts exhibited higher polyphenol content than methanolic ones (1074.25 and 647.5 mg Gallic acid equivalent/100 g of dry matter, respectively). On the other hand, flavonoid content was comparable between the water and methanolic extracts (218.2 and 213.4 mg quercetin equivalent/100 g of dry matter, respectively). Regarding antioxidant properties, CUPRAC (Cupric reducing antioxidant capacity) showed values of 655.6 mg Trolox equivalent/100 g of dry matter and 749.6 mg ascorbic acid equivalent/100 g of dry matter for water extracts and 1045,2 mg Trolox equivalent/100 g of dry matter and 1203,9 mg ascorbic acid equivalent/100 g of dry matter for methanolic ones. DPPH (2,2-diphenyl-1-picrylhydrazyl) radical scavenging assay displayed values of 203,3 mg Trolox equivalent/100 g of dry matter and 180.0 mg ascorbic acid equivalent/100 g of dry matter for water extracts, and 97.7 mg Trolox equivalent/100 g of dry matter and 89,3 mg ascorbic acid equivalent/100 g of dry matter for methanolic ones. The results obtained highlight the antioxidative potential of D. tenuifolia collected in extreme regions like Patagonia. This edible plant is an antioxidant-rich source that should be considered as functional food, its consumption is recommendable to prevent cell damage by scavenging deleterious free radicals.

Abstract
Most wakame Undaria pinnatifida, a brown algae, products are made from the frond portion. In this study, the polysaccharide content and antioxidant property of aqueous extract solutions (AESs) of the four parts (frond: wakame, stem of the frond: kuki-wakame, sporophyll: mekabu, and kuki-mekabu) of wakame were investigated. Polysaccharide content was high in both the wakame and mekabu. Superoxide anion (O2-) radical-scavenging capacities were high in the mekabu. These AESs could be fermented by Lactobacillus plantarum Sanriku-SU7. The O2- radical-scavenging activity of the kuki-wakame, mekabu, and kuki-mekabu were increased by the fermentation. Fermented mekabu clearly showed a protective effect on human enterocyte-like HT-29-luc cells and in a mouse model of dextran sodium sulphate-induced inflammatory bowel disease (IBD). These results suggest that the mekabu fermented by L. plantarum Sanriku-SU7 has anti-IBD effect related to O2- radical-scavenging.

Abstract
The antioxidant and anti-glycation properties in aqueous extract solutions (AESs) of 11 dried algae products were investigated. AESs of brown algae Ecklonia kurome (kurome) and Ecklonia stolonifera (tsuruarame) showed a strong DPPH radical-scavenging capacity and Fe-reducing power with high total phenolic compound content. On the other hand, superoxide anion radical-scavenging capacities of Porphyra sp. (iwanori, red alga), sporophyll of Undaria pinnatifida (mekabu, brown alga), and Gelidiaceae sp. (tengusa, red alga) were also high. Anti-glycation activities in BSA-fructose and BSA-methylglyoxal glycation were also high in kurome, while iwanori showed high activity. Results of the BSA-fructose model agreed with those of superoxide anion radical-scavenging. On the other hand, those of the BSA-methylglyoxal model agreed with those of the phenolic content, DPPH radical-scavenging capacity, and Fe-reducing power. Anti-glycation activities of iwanori, U. pinnatifida (wakame), and mekabu in the BSA-fructose model were clearly increased by fermentation with Lactobacillus plantarum AN6.
