Abstract
This work investigates the quality change of date palm fruits after hydration treatment which is commonly applied to enhance the hard textured 'Deglet Nour' fruits that are unacceptable for consumption. Date palm fruits were treated at 60-62 °C with saturated steam for 4 h in three different processing units (DPU). Mid Infrared Spectroscopy (MIR) giving a global spectral evaluation discriminates samples from the three DPUs and highlights date palm fruits of the first DPU regarding hydration treatment. Treatment led to a decrease of fruit firmness, skin lightness, and of sucrose and malic acid contents whereas citric acid and procyanidins contents and procyanidins 'degree of polymerization increased. Thermal treatment had no effect on glucose and fructose contents, on cell wall content and composition and on minor phenolic groups. Significant differences existed on dates from the three DPUs, discriminating dates presenting high firmness. Hydration treatment improve dates texture as expected while nutritional parameters were quite stable, confirming that is very promising and could be highly recommended to valorise fruit that are currently not commercialized. However, optimisation is needed for the very hard-type dates.

Abstract
Valorization of fruit by-products is a crucial area of research for the development of innovative bio-based products. This study investigated the physicochemical properties and health-promoting benefits of date syrup waste, both fermented by Pichia cecembensis or Pichia kudriavzevii (FDSW), and unfermented (CDSW). Metabolomics profiles of these samples were identified post in vitro digestion. FDSW exhibited 42 volatile compounds, including 9 new ones, and contained (-)-epicatechin, tyrosol, and gallic acid. Bioaccessible fractions of FDSW demonstrated substantial α-amylase inhibition, with percentages of 40.7 % and 53.9 %, respectively. FDSW displayed superior cytotoxicity against Caco2 and MCF-7 cancer cell lines, with an average of ∼75 % and 56 %, respectively. Untargeted metabolomics analysis revealed an increase in secondary metabolites, totaling 27 metabolites. LC-QTOF analysis of bioaccessible carbohydrate metabolites in FDSW identified two phytochemical groups, alkaloids, and terpenoids. This study underscores the potential of FDSW for producing value-added bio-based products with desirable characteristics and health benefits.

Abstract
The popularity and demand for high-quality date palm fruits (Phoenix dactylifera L.) have been growing, and their quality largely depends on the type of handling, storage, and processing methods. The current methods of geometric evaluation and classification of date palm fruits are characterised by high labour intensity and are usually performed mechanically, which may cause additional damage and reduce the quality and value of the product. Therefore, non-contact methods are being sought based on image analysis, with digital solutions controlling the evaluation and classification processes. The main objective of this paper is to develop an automatic classification model for varieties of date palm fruits using a convolutional neural network (CNN) based on two fundamental criteria, i.e., colour difference and evaluation of geometric parameters of dates. A CNN with a fixed architecture was built, marked as DateNET, consisting of a system of five alternating Conv2D, MaxPooling2D, and Dropout classes. The validation accuracy of the model presented in this study depended on the selection of classification criteria. It was 85.24% for fruit colour-based classification and 87.62% for the geometric parameters only; however, it increased considerably to 93.41% when both the colour and geometry of dates were considered.

Abstract
This study examines the attributes of date palm fruits that influence consumer purchasing decisions and measures the attributes' relative importance weights for understanding consumption patterns relative to the cultivation areas. A case study was conducted for a selected date fruit, Khalas, which is cultivated in Saudi Arabia and ranked first in the world in exported dates. Our empirical investigation is based on utilizing a proposed quantitative analysis that integrated the entropy weighting method and binary logit models. With this survey design, 486 questionnaires were collected. Analysis results revealed a ranking list of preferred attributes, with size, mellowness, price, and color being the most valued. However, this ranking list fluctuates when different cultivated types of Khalas dates are available. The results also showed that consumption patterns may change in terms of preference index and shopping location. The paper concludes with a discussion of managerial implications, limitations, and future research directions.

Abstract
The study analysed polysaccharides and phenolic compounds in widely consumed but little studied date fruits varieties such as Sukkari, Ajwa, Segae, Barrny and Khalas harvested at Tamr stage. The total phenols were in similar amount in the five varieties and ranged from 20 to 50 mg/100 g DW. The decoction and successive centrifugation made it possible to collect two main polysaccharide fractions for all the selected fruits. For each variety the first fraction was more abundant, with a lower swelling capacity and a higher amount of galacturonic acid (28.3% to 40.1%). The second fraction was only soluble in alkaline solution, with an average galacturonic acid content of only 17%. The different structure of the two polysaccharide fractions was also confirmed by the composition in neutral sugars and the degrees of methylation and acetylation. The proposed extraction procedure could be applied for larger scale extraction of the date fruit polysaccharides.
