Abstract
Benthivorous fish disturbance and density-dependent competition from adjacent macrophytes are two important biotic factors that significantly impact the growth of submerged macrophyte pioneer species, which is crucial for the success of eutrophication lake restoration. We conducted an outdoor mesocosm experiment to explore the individual and combined effects of these two factors on water quality and the growth of Vallisneria natans. The experiment involved two levels of fish (Misgurnus anguillicaudatus) disturbance crossed with two levels of Hydrilla verticillata vegetative propagule (shoot) intensity. The results showed that fish disturbance significantly increased the water column total nitrogen (TN), ammonia nitrogen (N-NH4), total phosphorus (TP), and phosphate‑phosphorus (P-PO4). V. natans exhibited restricted plant height elongation and decreased soluble carbohydrate (SC) and starch concentration in fish treatments. Fish disturbance inhibited the growth advantage of V. natans by increasing the extinction coefficient of the water column. There was no statistical significance in total biomass between the two macrophytes in increased vegetative propagule and fish treatments. H. verticillata exhibited a higher relative growth rate (RGR) and summed dominance ratio (SDR3) than V. natans in four treatments and the treatment with three shoots of H. verticillata and one M anguillicaudatus, respectively. Fish disturbance and vegetative propagules showed cumulative effects that negatively affected the RGR_V.H (V. natans relative to H. verticillata). Our findings indicated that benthivorous fish disturbance and vegetative propagules could individually and cumulatively reduce the growth advantage of the pioneer species, V. natans. Our study sheds light on the accumulated effects of multiple disturbances that simultaneously occur in lakes, which holds theoretical and practical importance for lake restoration efforts.

Abstract
In this study, regulation mechanism of magnetic field on pectinase was investigated and it was preliminarily applied in postharvest sapodilla. Results indicated pectinase activity decreased by 44 % when treated by magnetic field (3 mT, 0.5 h) with kinetic parameters Vmax/Km decreasing from 0.799 to 0.366 min. The optimal temperature (48 °C) and pH (4.8) of pectinase was not altered by magnetic field but Ca2+ at 0.05 mol/L strengthened its regulation effect. Ultraviolet and fluorescence spectra suggested tyrosine and tryptophan residues in treated pectinase became more hydrophobic while opposite in phenylalanine. CO, CNH, COO- groups in pectinase were also influenced, resulting in decreased β-sheet (from 53 % to 49 %), increased random coil (from 20 % to 22 %) and β-turn content (from 27 % to 29 %). More importantly, the firmness of treated sapodilla remained 45 % of maximum at 12 days' storage. Our findings provided new insights to illustrate the role of magnetic field in fruit preservation.

Abstract
Loach, rich in nutrients, such as proteins, amino acids, and mineral elements, is being gradually favored by consumers. Therefore, in this study, the antioxidant activity and structural characteristics of loach peptides were comprehensively analyzed. The loach protein (LAP) with a molecular weight between 150 and 3000 Da was graded by ultrafiltration and nanofiltration processes, which exhibited excellent scavenging activity against DPPH radical (IC50 2.91 ± 0.02 mg/mL), hydroxyl radical (IC50 9.95 ± 0.03 mg/mL), and superoxide anion radical (IC50 13.67 ± 0.33 mg/mL). Additionally, LAP was purified by gel filtration chromatography, and two principal components (named as LAP-I and LAP-II) were isolated. A total of 582 and 672 peptides were identified in LAP-I and LAP-II, respectively, through structural analysis. The XRD results revealed that LAP-I and LAP-II had an irregular amorphous structure. The 2D-NMR spectroscopy results suggested that LAP-I had a compact stretch conformation in the D2O solution, while LAP-II had a folded conformation. Overall, the study results suggested that loach peptide could be a potential antioxidant agent and might provide valuable information for chain conformation and antioxidant mechanism research further.

Abstract
Misgurnus anguillicaudatus (loach) is a widely distributed benthic fish in Asia. In this study, the alkaline protease was used to hydrolyze loach, and the hydrolysate products of different molecular weights were obtained by membrane separation. In vitro antioxidant assays showed that the <3 kDa fraction (SLH-1) exhibited the strongest antioxidant activity (DPPH, hydroxyl radical and superoxide radical scavenging ability, and reducing power), while SLH-1 was purified by gel filtration chromatography, and peptide sequences were identified by LC-MS/MS. A total of six peptides with antioxidant activity were identified, namely SERDPSNIKWGDAGAQ (D-1), TVDGPSGKLWR (D-2), NDHFVKL (D-3), AFRVPTP (D-4), DAGAGIAL (D-5), and VSVVDLTVR (D-6). In vitro angiotensin-converting enzyme (ACE) inhibition assay and pancreatic cholesterol esterase (CE) inhibition assay, peptide D-4 (IC50 95.07 μg/mL, 0.12 mM) and D-2 inhibited ACE, and peptide D-2 (IC50 3.19 mg/mL, 2.62 mM), D-3, and D-6 acted as pancreatic CE inhibitors. The inhibitory mechanisms of these peptides were investigated by molecular docking. The results showed that the peptides acted by binding to the key amino acids of the catalytic domain of enzymes. These results could provide the basis for the nutritional value and promote the type of healthy products from hydrolyzed loach.

Changes in Quality and Collagen Properties of Cattle Rumen Smooth Muscle Subjected to Repeated Freeze-Thaw Cycles. Foods 2022; 11:foods11213338. Abstract
This study revealed changes in the quality, structural and functional collagen properties of cattle rumen smooth muscle (CSM) during F-T cycles. The results showed that thawing loss, pressing loss, β-galactosidase, β-glucuronidase activity, β-sheet content, emulsifying activity index (EAI), emulsion stability index (ESI), surface hydrophobicity, and turbidity of samples were significantly (p < 0.05) increased by 108.12%, 78.33%, 66.57%, 76.60%, 118.63%, 119.57%, 57.37%, 99.14%, and 82.35%, respectively, with increasing F-T cycles. Meanwhile, the shear force, pH, collagen content, α-helix content, thermal denaturation temperature (Tmax), and enthalpy value were significantly (p < 0.05) decreased by 30.88%, 3.19%, 33.23%, 35.92%, 10.34% and 46.51%, respectively. Scanning electron microscopy (SEM) and SDS-PAGE results indicated that F-T cycles induced an increase in disruption of CSM muscle microstructure and degradation of collagen. Thus, repeated F-T cycles promoted collagen degradation and structural disorder in CSM, while reducing the quality of CSM, but improving the functional collagen properties of CSM. These findings provide new data support for the development, processing, and quality control of CSM.
