Abstract
1. This experiment was conducted to evaluate the effect of organic and inorganic trace minerals in diets fed to 1872, one-day-old male Ross 708 broiler chicks. Two sources of supplemental trace minerals (inorganic or organic) and four trace minerals levels (12.5%, 25.0%, 37.5% or 50.0%) plus a positive control containing inorganic minerals at 100% of recommended levels according to Brazilian industry standards, were used in the diets. 2. When analysed with mineral source as the main factor, broilers fed diets containing organic minerals had better feed conversion (FCR) throughout the trial, until 48 d of age (1.754 organic vs. 1.783 inorganic; P < 0.05), improved liveability at 48 d (95.8% organic vs. 93.6% inorganic; P < 0.05) and higher weight gain at 48 d (3.941 kg organic vs. 3.881 kg inorganic; P < 0.05) compared to the inorganic trace mineral diets. At lower dietary inclusion levels (12.5% and 25%) the organic mineral-fed birds had a four-point improvement in FCR (P < 0.05). 3. Feeding organic minerals improved tibial ash at 48 d from 49.5% to 51.25% (P < 0.05). The P and Ca in the tibia at 48 d were significantly (P < 0.05) higher for the birds fed organic minerals (Ca: 17.4% vs. 18.7%; P: 8.8% vs. 9.4%, respectively). The lower levels of trace minerals in feed reduced the mineral concentration of Zn, Cu and Mn in the faeces and, hence, in the litter (P < 0.05). 4. Feeding organic minerals promoted a small, but statistically significant, drop in pH of breast meat compared to inorganic minerals at 48 d (5.83 vs. 5.86, respectively; P < 0.05). The organic mineral diets reduced drip loss in breast meat compared to inorganic trace mineral supplementation at 32 d of age, but not in older birds (2.46% vs. 3.77%, respectively; P < 0.05). 5. Oxidation status, measured by superoxide dismutase activity in breast muscle at 48 d of age, significantly increased with mineral inclusion levels (P < 0.001), irrespective of source. 6. It was concluded that the use of organic minerals, even at low levels in the diet, is beneficial for broiler performance and reduces the excretion of minerals in litter.

Abstract
The study was carried out to investigate the effect of dietary selenium (Se) and vitamin E (VE) supplementation on mRNA level of heat shock proteins, selenoproteins, and antioxidant enzyme activities in the breast meat of broilers under summer heat stress conditions. A total of 200 male broilers (Ross 308) of 1 day age were randomly separated into 4 groups in a complete randomized design and were given a basal diet (Control, 0.08 mg Se/kg diet) or basal diet supplemented with VE (250 mg/kg VE), sodium selenite (0.2 mg/kg Se), or Se + VE (0.2 mg/kg Se + 250 mg/kg VE) to investigate the expression of key antioxidant and heat shock protein (HSP) genes under high temperature stress. Dietary Se, VE and Se + VE significantly enhanced the activities and mRNA levels of catalase as well as superoxide dismutase (SOD) but decreased the mRNA levels of HSP70 and HSP90. Se alone or combined with VE increased the concentration of selenoprotein P and selenoproteins mRNA level and decreased the expression of HSP60. In addition, Se and Se + VE significantly enhanced the glutathione peroxidase (GPx) activity and the expression of GPx1 and GPx4 in breast muscle tissues. It is noteworthy that all the treatments significantly decreased malondialdehyde (MDA) level in the breast meat. Overall results showed that Se in combination with VE has maximal effects to mitigate heat stress. Based on given results it can be recommended that Se + VE are a suitable dietary supplement for broilers to ameliorate the negative effects of summer heat stress conditions.

Abstract
The objective of this study was to determine if a diet supplemented simultaneously with vitamins C and E would alleviate the negative effects of heat stress, applied between 28 and 42 days of age, on performance, carcass and meat quality traits of broiler chickens. A total of 384 male broiler chickens were assigned to a completely randomized design, with a 2×3 factorial arrangement (diet with or without vitamin supplementation and two ambient temperatures plus a pair-feeding group) and 16 replicates. Chickens were kept in thermoneutral conditions up to 28 days of age. They were then housed in groups of four per cage, in three environmentally controlled chambers: two thermoneutral (22.5 and 22.6°C) and one for heat stress (32°C). Half the chickens were fed a diet supplemented with vitamins C (257 to 288 mg/kg) and E (93 to 109 mg/kg). In the thermoneutral chambers, half of the chickens were pair-fed to heat stressed chickens, receiving each day the average feed intake recorded in the heat stress chamber in the previous day. Meat physical quality analyses were performed on the pectoralis major muscle. No ambient temperature×diet supplementation interaction effects were detected on performance, carcass, or meat quality traits. The supplemented diet resulted in lower growth performance, attributed either to a carry-over effect of the lower initial BW, or to a possible catabolic effect of vitamins C and E when supplemented simultaneously at high levels. Heat stress reduced slaughter and carcass weights, average daily gain and feed intake, and increased feed conversion. Growth performance of pair-fed chickens was similar to that of heat stressed chickens. Exposure to heat stress increased carcass and abdominal fat percentages, but reduced breast, liver and heart percentages. Pair-fed chickens showed the lowest fat percentage and their breast percentage was similar to controls. Heat stress increased meat pH and negatively affected meat color and cooking loss. In pair-fed chickens, meat color was similar to the heat stressed group. Shear force was not influenced by heat stress, but pair-fed chickens showed the tenderest meat. In conclusion, reduction in growth performance and negative changes in meat color in heat stressed chickens were attributed to depression in feed intake, whereas negative changes in body composition, higher meat pH and cooking loss were credited to high ambient temperature per se. Diet supplementation with vitamins C and E as antioxidants did not mitigate any of these negative effects.

Abstract
This study was conducted to evaluate the effects of adding vitamin C (VC), oregano essential oil (OR), or their combination in diet, on growth performance, and blood parameters of broiler chicks reared under heat stress (HS) condition (38 °C). One-day-old 240 male broilers were randomly assigned to four treatment groups, six replicates of ten birds each. The birds were fed with either a basal diet or a basal diet supplemented with either 200 mg L-ascorbic acid/kg of diet, 250 mg of oregano essential oil/kg of diet, or 200 mg L-ascorbic acid plus 250 mg of oregano essential oil/kg of diet. Average daily feed intake (ADFI), average daily gain (ADG), and feed conversion ratio (FCR) were obtained for 42 days of age and at the end of the experiment (day 42); birds were bled to determine some blood parameters and weighted for final body weight (BW). Feeding birds with diets supplemented with oregano essential oil and vitamin C in a single or combined form increased ADG (P > 0.05). Also BW increased and feed efficiency decreased (P < 0.05) in the birds fed with diets including VC and OR (in a single or combined form), compared to those fed the basal diet. ADFI was not significantly influenced by dietary oregano essential oil and vitamin C (P > 0.05). Supplemental oregano essential oil and vitamin C in a combined form decreased the serum concentration of corticosterone, triglycerides, glucose, and MDA (P < 0.05) compared with other groups. An increase in the serum concentrations of vitamin C were seen in broiler chicks supplemented with vitamin C. From the results of the present experiment, it can be concluded that diet supplementation by combined oregano essential oil and vitamin C could have beneficial effects on some blood parameters of broiler chicks reared under heat stress condition.

Abstract
This experiment was conducted to evaluate the effects of dietary vitamin E, selenium (Se), and a combination of the two, on the performance, serum metabolites and oxidative stability of skeletal muscle of broilers during heat stress. The broilers raised in either a thermoneutral (23.9°C constant) or heat stress (23.9°C to 37°C cycling) environment were assigned to 6 dietary treatments (0, 0.5, or 1 mg/kg Se; 125 and 250 mg/kg vitamin E; or 0.5 mg/kg Se plus 125 mg/kg vitamin E) from 1 to 49 days of age. At the end of the experiment, blood samples were collected from chicks, the chicks sacrificed, and pectoralis superficialis muscle was used for measurement of malondialdehyde (MDA) concentration and enzyme activities of glutathione peroxidase (GPx) and superoxide dismutase (SOD). The heat-stressed chicks consumed less feed, gained less weight, and had higher feed conversion ratio when compared to thermoneutral chicks (P<0.05). Serum concentrations of iron (Fe) and zinc (Zn) were decreased by heat stress (P<0.05), whereas the serum concentrations of copper (Cu), glucose, and uric acid were significantly increased under heat stress (P<0.05). The chicks that received supplemental of vitamin E exhibited significantly higher serum concentrations of Zn (P<0.05) and significantly lower concentrations of Cu, glucose, and uric acid (P<0.05) when exposed to heat stress. Dietary Se also caused a significant decrease in serum glucose, uric acid, and Cu concentrations of heat-stressed broilers (P<0.05), but had no significant effect on Zn concentration (P>0.05). The GPx activity remained relatively constant (P>0.05), though SOD activity and MDA levels in skeletal muscle were enhanced on exposure to heat stress (P<0.05). The heat-stressed chicks that received the combined supplementary level of vitamin E and Se had the lowest concentration of MDA and the highest activity of SOD in the skeletal muscle (P<0.05). Dietary Se also caused a significant increase in enzyme activity of GPx in the skeletal muscle (P<0.05). These results indicate that the derangement of blood parameters and oxidative stability in broilers under heat stress are improved by supplemental vitamin E and Se.

Abstract
Meat colour and lipid stability are important sensory properties. Myoglobin oxidation is correlated with lipid oxidation, and one can exacerbate the occurrence of the other. Approaches to reduce both oxidative processes could focus on minimising oxidising agents in meat. In on-farm practices, dietary supplementation of antioxidants is a useful approach for improving lipid stability and then meat colour stability, and further improvement could be a combination of using hydrophobic and hydrophilic antioxidants. Genetic variations in the endogenous antioxidant systems could be identified for the development of a breeding strategy to bring a long-term benefit to the meat industry. To have a better understanding of oxidative stress and oxidation of long chain unsaturated fatty acids in live animals, the isoprostanes could be measured as an effective marker in vivo.

Abstract
This study investigated the effect of different levels of dietary supplementation with alpha-tocopherol or Se, or both, on growth performance and meat quality of broiler chickens. A total of 270 broiler chickens were assigned to 6 dietary treatments (0, 50, 100, or 200 IU of supplemental alpha-tocopherol; 0.3 ppm supplemental Se; or 100 IU of alpha-tocopherol plus 0.3 ppm Se) with 3 replicates of 15 chickens per pen. Growth performance was recorded at 1 and 35 d. At the end of this experiment, 10 broilers per pen were slaughtered, and thigh muscle was dissected from each carcass and stored at 4 degrees C for 1, 3, 7, and 10 d. During the experimental period, none of the experimental treatments significantly influenced the growth performance of broilers. Thigh muscle pH values of all treatments decreased over time. The pH values for 1, 3, and 10 d were not affected by all treatments, but a statistical difference among treatments was observed at 7 d. Thiobarbituric acid reactive substances and total plate counts in all treatments increased with increasing storage time. In TBA reactive substances values, there were significant differences (P < 0.05) among treatments during the storage period. Differences among treatments in total plate count were found at d 7 and 10. In all treatments, L* (lightness) and b* (yellowness) values decreased over time, and a* (redness) values increased with storage time. Significant differences in all treatments were found for L* values at 3 d and a* values at 7 and 10 d of storage. Overall, these data indicate that compared with other treatments, supplementation with 200 IU of alpha-tocopherol or 100 IU of alpha-tocopherol plus 0.3 ppm Se were most effective in increasing lipid oxidative stability and delaying microbial growth and these activities were not associated with pH.
