An evaluation of over-wintering feeding strategies prior to finishing at pasture for cull dairy cows on live animal performance, carcass and meat quality characteristics

A quantitative review of on-farm feeding practices to enhance the quality of grassland-based ruminant dairy and meat products

In the last decades, a large body of evidence has highlighted the major role of feeding management practices in improving specific nutritional, technological and sensory quality traits of ruminant products. However, results have been mostly obtained under controlled conditions, and have been rarely validated on-farm. Therefore, a quantitative review was conducted to quantify the effects of on-farm feeding management practices on carotenoids, fat-soluble vitamins, colour, fatty acids (FAs), terpenes and sensory properties in the main animal product categories (PCs): dairy products from cattle (DC), sheep (DS) and goat (DG), and meat from cattle (MC) and sheep (MS). Four feeding scenarios were selected according to the consistency of on-farm studies in the literature: (a) feeding "Fresh herbage" instead of conserved forages; (b) ban any form of silage ("Silage-free"); (c) ban maize silage ("Maize silage-free"); (d) feeding forages from permanent grasslands rich in species or plant secondary metabolites (PSMs) ("PSM-rich permanent grassland"). Feeding fresh herbage increased the concentration of carotenoids, fat-soluble vitamin, n-3 FA, rumenic acid, and branched chain FA (BCFA), and reduced the concentration of saturated FA, for all PC, with overall stronger effect for dairy products than for meat. The texture of meat and dairy products was marginally affected, whereas feeding fresh herbage decreased lactic and increased vegetal notes in DC. The "Silage-free" feeding scenario resulted in increased vaccenic acid, rumenic acid, BCFA, and C18:3n-3 in DC. The "Maize silage-free" feeding scenario lowered n-6 FA whereas increased n-3, rumenic acid and BCFA concentrations in DC. Feeding ruminants with forages from "PSM-rich permanent grasslands" increased monounsaturated FA, n-3 FA and rumenic acid and decreased n-6 FA in dairy products, and only marginally affected meat FA composition. The DC from "PSM-rich permanent grasslands" showed higher intense, spicy and animal notes. Overall, the differences between feeding management practices observed on farm were smaller than those observed under controlled trials. Several confounding factors, not controlled when operating under on-farm conditions, could be at the origin of these divergences (i.e. mixed diets, forage characteristics, animal-related factors). This review confirmed that farming practices may differently affect several quality traits of ruminant products. It also highlighted the uneven knowledge on the effect of feeding management depending on the PC: larger for milk than for meat and decreasing when moving from cattle to sheep and from sheep to goat.

Beef production from cull dairy cows: a review from culling to consumption

Although more than 3 million head of dairy cows enter the food supply chain in the U.S. every year, research on this topic remains limited and scarce. Meat production from dairy cows is a significant component of beef production, accounting for almost 10% of U.S. commercial beef production. Thus, the purpose of this review is to demonstrate the importance of dairy cows as a beef source, and to provide an overview on topics from farm to meat product-culling, marketing, transportation, welfare, body composition and its relationship with lactation particularities, carcass characteristics, meat quality, and traceability. Current scientific evidence has shown that culling a dairy cow at an appropriate time has beneficial effects on cow welfare and, consequently, cow value. During marketing the dairy cow is visually evaluated for health and factors associated with its expected carcass value; thus, marketing a well-conditioned cow will ensure that the animal is fit for transportation and provides high carcass yield. However, limitations such as low body condition score, lameness or mobility problems, and visual defects remain persistent. Even though beef harvest plants accommodate cows in all body composition states, the current carcass grade system does not reflect the mature cow industry needs. Therefore, improvement of the grading system could maximize carcass utilization and increase cow carcass value by recognizing subprimal cuts that could be merchandised as whole muscle cuts. Lastly, implementation of a traceability system would unify information from the farm to harvest assisting the industry in making further advancements.

Effects of Age and Rice Straw Inclusion Levels in the Diet of Yiling Cull Cows on Growth Performance, Meat Quality, and Antioxidant Status of Tissues

Simple Summary

Several negative attributes are associated with carcass and meat from cull cows, including lower carcass weights, inferior tenderness, etc. These undesirable characteristics are normally more distinct with increasing age. In addition, there are no recommended standards for forage levels in the diet of Chinese local cattle to produce high marbled beef. In the current study, we evaluated the effects of age and forage levels on the finishing performance of Yiling cull cows under high-energy ration conditions, and also investigated their antioxidant status related to age and diet. We found that younger age and adequate forage had better growth performance and carcass traits. Our findings highlight the importance of selecting according to age and providing adequate forage feed for Yiling cull cows. Moreover, our study also demonstrated the excellent capability of producing high marbled beef for Yiling cattle.

Abstract

The objectives of this study were to investigate the effects of age and dietary straw levels on growth performance, carcass and meat traits, as well as tissue antioxidant status of Yiling cull cows. Twenty-four Yiling cull cows were arranged in a 2 × 2 factorial design: two age classes consisting of younger cull cows (YCC; appearing with three or four pairs of permanent teeth) and older cull cows (OCC; worn out teeth); two dietary treatments consisting of lower and higher rice straw levels (LRS and HRS; providing 0.7 kg/d and 1.2 kg/d rice straw per head based on air-dry basis, respectively). Cows were fed twice a day. Straw was offered at half of the predetermined weight each meal; concentrate was separately supplied ad libitum. After 300 d of feeding, final body weight (BW), total BW gain, average daily gain and gain:feed intake were higher (p < 0.01) in the YCC group than in the OCC group. Total dry matter intake was higher (p = 0.03) in the HRS group than in the LRS group, but neutral detergent fiber apparent digestibility was negatively affected (p = 0.01) by increased straw levels. Decreased C15:0, C17:0, C20:5n3c, and saturated fatty acids (SFAs) proportion as well as increased C18:1n9c and monounsaturated fatty acids (MUFAs) proportion in meat from YCC with HRS diet were observed as compared to that in meat from YCC with LRS diet (p < 0.05). Meat from HRS group had higher (p = 0.04) C18:3n3c proportion than meat from LRS group. No significant differences (p > 0.05) were found for meat quality attributes except for cooking loss, which was higher (p = 0.02) in the HRS group than in the LRS group. Both YCC group and HRS group had higher (p < 0.05) cold carcass weight compared to OCC group and LRS group. Moreover, catalase activity of liver tissue was higher (p = 0.045) in YCC than in OCC, while superoxide dismutase activity of muscle tissue was higher (p = 0.01) in LRS than in HRS. Based on results, we concluded that younger age and feeding high-level straw can improve the finishing performance of Yiling cull cows.

Relationships Between Cull Beef Cow Characteristics, Finishing Practices and Meat Quality Traits of Longissimus thoracis and Rectus abdominis

The aim of study was to investigate the relationships between the characteristics of cull beef cows in the Rouge des Prés breed, finishing practices and physicochemical characteristics and sensory traits of Longissimus thoracis (LT) and Rectus abdominis (RA) muscles from 111 cows. On the basis of our surveys, which qualify at cow level the animal characteristics and finishing diet, clusters of cull cows and finishing practices are created and their effects tested on LT and RA meat quality. Old and heavy cows with good suckling ability (95 months, 466 kg and 7.1/10) are characterized by LT with larger fibers, and higher intramuscular fat content and fat-to-muscle ratio. Young and heavy cows with low suckling ability (54 months, 474 kg and 4.4/10) are characterized by LT and RA with lower MyHC IIx and higher MyHC IIa and MyHC I proportions. MyHC IIx and IIa proportions are lower and a* and b* color indices higher when cows are finished on pasture, probably related to grass diet and physical activity. The fat-to-muscle ratio is higher without any effect on the intramuscular fat content when cows are finished over a short period (107 days) with a high level of concentrate (9.7 kg/day). The opposite effect is observed over a long period (142 days) with a low level of concentrate (5.8 kg/day), confirming the interaction effect between finishing duration and amount of energy concentrate on the allotment of adipose tissue deposit.

Relationships between pre-slaughter rump flatness of Nelore cows and subsequent measures of carcass fatness

This study aimed to evaluate the relationship between the internal angle of the rump (IAR), as a measure of rump fatness, and both the visual degree of finishing (VDF) and the subcutaneous fat thickness (SFT) of Nelore cows. In this study, 836 Nelore cows were examined. The IAR of all live cows was measured using a goniometer, and then the VDF of all carcasses was evaluated. Additionally, the SFT of a subset of carcasses (n = 225) was measured. Carcasses were divided into three groups based on the VDF, as follows: Inadequate VDF (I) for carcasses with a degree of finishing of 1 and 2; Adequate VDF (A) for carcasses with a degree of finishing of 3 and 4; and Excessive VDF (E) for carcasses with a degree of finishing of 5. There was a positive linear relationship between VDF and IAR (y = 98.29 + 5.78 × x; R 2 = 0.53; P &lt; 0.001) and between VDF and SFT (y = 0.26 + 0.51× x; R 2 = 0.51; P &lt; 0.001). Cows classified as having an Excessive degree of fatness according to the Inadequate – Adequate – Excessive (IAE) scale had higher IAR and SFT than cows classified as Inadequate or Adequate (P &lt; 0.001). Similarly, cows classified as Adequate had higher IAR and SFT than cows classified as Inadequate (P &lt; 0.001). These results demonstrate that the measure of IAR of a live Nelore cow can provide a good indication of the level of fatness of its carcass.

Livestock greenhouse gas emissions and mitigation potential in Europe

The livestock sector contributes considerably to global greenhouse gas emissions (GHG). Here, for the year 2007 we examined GHG emissions in the EU27 livestock sector and estimated GHG emissions from production and consumption of livestock products; including imports, exports and wastage. We also reviewed available mitigation options and estimated their potential. The focus of this review is on the beef and dairy sector since these contribute 60% of all livestock production emissions. Particular attention is paid to the role of land use and land use change (LULUC) and carbon sequestration in grasslands. GHG emissions of all livestock products amount to between 630 and 863 Mt CO2 e, or 12-17% of total EU27 GHG emissions in 2007. The highest emissions aside from production, originate from LULUC, followed by emissions from wasted food. The total GHG mitigation potential from the livestock sector in Europe is between 101 and 377 Mt CO2 e equivalent to between 12 and 61% of total EU27 livestock sector emissions in 2007. A reduction in food waste and consumption of livestock products linked with reduced production, are the most effective mitigation options, and if encouraged, would also deliver environmental and human health benefits. Production of beef and dairy on grassland, as opposed to intensive grain fed production, can be associated with a reduction in GHG emissions depending on actual LULUC emissions. This could be promoted on rough grazing land where appropriate.
