Abstract
This study aimed to assess the effect of coating based on nanochitosan-whey protein isolate (NCH-WPI) containing summer savory essential oil (SEO) combined with oxygen absorber (OA) packaging on Pseudomonas aeruginosa, Listeria monocytogenes, and Escherichia coli O157H7, inoculated to rainbow trout fillets stored under refrigeration. Except control and OA groups, L. monocytogenes decreased (0.49-1.82 log CFU/g) in all treatment groups until the eighth day, and then increased (0.39-0.68 log CFU/g). This indicates that the treatments were ineffective to inhibit the proliferation of this bacterium. Considering the forced aerobic nature of inoculated P. aeruginosa, the counts of these bacteria become undetectable in groups packed with OA after the fourth day of storage, while the other groups showed an increase (0.99-2.23 log CFU/g) in this bacteria population during entire storage period. This growth rate was slower in the NCH-WPI + 1%SEO and NCH-WPI + 2%SEO groups. Regarding the inoculated E. coli, its count was decreased (1.48-2.41 log CFU/g) during storage, and this reduction (2.24-2.41 log CFU/g) was the highest in NCH-WPI + 1%SEO + OA and NCH-WPI + 2%SEO + OA groups. In conclusion, NCH-WPI treatments delayed the growth of all pathogenic bacteria, but the ternary treatment (NCH-WPI + SEO + OA) was the most effective treatment in this regard.

Abstract
We present an electrochemical platform designed to reduce time of Escherichia coli bacteria detection from 24 to 48-h to 30 min. The presented approach is based on a system which includes gallium-indium (eGaIn) alloy to provide conductivity and a hydrogel system to preserve bacteria and their metabolic species during the analysis. The work is dedicated to accurate and fast detection of Escherichia coli bacteria in different environments with the supply of machine learning methods. Electrochemical data obtained during the analysis is processed via multilayer perceptron model to identify i.e. predict bacterial concentration in the samples. The performed approach provides the effectiveness of bacteria identification in the range of 102-109 colony forming units per ml with the average accuracy of 97%. The proposed bioelectrochemical system combined with machine learning model is prospective for food analysis, agriculture, biomedicine.

Abstract
There is a pressing need to enhance early detection methods of E. coli O157:H7 to mitigate the occurrence and consequences of pathogenic contamination and associated outbreaks. This study highlights the efficacy of a portable electrochemical sensing platform that operates without faradaic processes towards detecting and quantifying E. coli O157:H7. It is specifically tailored for quick identification in potable water. The assay processing time is approximately 5 min, addressing the need for swift and efficient pathogen detection. The sensing platform was constructed utilizing specific, monoclonal E. coli antibodies, based on single-capture, non-faradaic, electrochemical immunoassay principles. The E. coli sensor assay underwent testing over a wide concentration range, spanning from 10 to 105 CFU/mL, and a limit of detection (LoD) of 1 CFU/mL was demonstrated. Significantly, the sensor's performance remained consistent across studies, with both inter- and intra-study coefficients of variation consistently below 20%. To evaluate real-world feasibility, a comparative examination was performed between laboratory-based benchtop data and data obtained from the portable device. The proposed sensing platform exhibited remarkable sensitivity and selectivity, enabling the detection of minimal E. coli concentrations in potable water. This successful advancement positions it as a promising solution for prompt on-site detection, characterized by its portability and user-friendly operation. This study presents electrochemical-based sensors as significant contributors to ensuring food safety and public health. They play a crucial role in preventing the occurrence of epidemics and enhancing the supervision of water quality.

Abstract
Escherichia coli (E. coli) is a prevalent enteric bacterium and a necessary organism to monitor for food safety and environmental purposes. Developing efficient and specific methods is critical for detecting and monitoring viable E. coli due to its high prevalence. Conventional culture methods are often laborious and time-consuming, and they offer limited capability in detecting potentially harmful viable but non-culturable E. coli in the tested sample, which highlights the need for improved approaches. Hence, there is a growing demand for accurate and sensitive methods to determine the presence of viable E. coli. This paper scrutinizes various methods for detecting viable E. coli, including culture-based methods, molecular methods that target DNAs and RNAs, bacteriophage-based methods, biosensors, and other emerging technologies. The review serves as a guide for researchers seeking additional methodological options and aiding in the development of rapid and precise assays. Moving forward, it is anticipated that methods for detecting E. coli will become more stable and robust, ultimately contributing significantly to the improvement of food safety and public health.

Abstract
Salmonella is a common intestinal pathogen that can cause food poisoning and intestinal disease. The high prevalence of Salmonella necessitates efficient and sensitive methods for its identification, detection, and monitoring, especially of viable Salmonella. Conventional culture methods need to be more laborious and time-consuming. And they are relatively limited in their ability to detect Salmonella in the viable but non-culturable status if present in the sample to be tested. As a result, there is an increasing need for rapid and accurate techniques to detect viable Salmonella spp. This paper reviewed the status and progress of various methods reported in recent years that can be used to detect viable Salmonella, such as culture-based methods, molecular methods targeting RNAs and DNAs, phage-based methods, biosensors, and some techniques that have the potential for future application. This review can provide researchers with a reference for additional method options and help facilitate the development of rapid and accurate assays. In the future, viable Salmonella detection approaches will become more stable, sensitive, and fast and are expected to play a more significant role in food safety and public health.

Abstract
Microbial contaminants are responsible for several infectious diseases, and they have been introduced as important potential food- and water-borne risk factors. They become a global burden due to their health and safety threats. In addition, their tendency to undergo mutations that result in antimicrobial resistance makes them difficult to treat. In this respect, rapid and reliable detection of microbial contaminants carries great significance, and this research area is explored as a rich subject within a dynamic state. Optical sensing serving as analytical devices enables simple usage, low-cost, rapid, and sensitive detection with the advantage of their miniaturization. From the point of view of microbial contaminants, on-site detection plays a crucial role, and portable, easy-applicable, and effective point-of-care (POC) devices offer high specificity and sensitivity. They serve as advanced on-site detection tools and are pioneers in next-generation sensing platforms. In this review, recent trends and advances in optical sensing to detect microbial contaminants were mainly discussed. The most innovative and popular optical sensing approaches were highlighted, and different optical sensing methodologies were explained by emphasizing their advantages and limitations. Consequently, the challenges and future perspectives were considered.

Abstract
Pathogenic bacterial infection is one of the principal causes affecting human health and ecosystems. The accurate identification of bacteria in food and water samples is of significant interests to maintain safety and health for humans. Culture-based tests are practically tedious and may produce false-positive results, while viable but non-culturable microorganisms (NCMs) cannot be retrieved. Thus, it requires fast, reliable, and low-cost detection strategies for on-field analysis and point-of-care (POC) monitoring. The standard detection methods such as nucleic acid analysis (RT-PCR) and enzyme-linked immunosorbent assays (ELISA) are still challenging in POC practice due to their time-consuming (several hours to days) and expensive laboratory operations. The optical (surface plasmon resonance (SPR), fluorescence, and surface-enhanced Raman scattering (SERS)) and electrochemical-based detection of microbes (early stage of infective diseases) have been considered as alternative routes in the emerging world of nanostructured biosensing since they can attain a faster and concurrent screening of several pathogens in real samples. Moreover, optical and electrochemical detection strategies are opening a new route for the ability of detecting pathogens through the integration of cellphones, which is well fitted for POC analysis. This review article covers the current state of sensitive mechanistic approaches for the screening and detection of Escherichia coli O157:H7 (E. coli) pathogens in food and water samples, which can be potentially applied in clinical and environmental monitoring.

Abstract
Rapid detection of foodborne pathogens such as E. coli O157 is essential in reducing the prevalence of foodborne illness and subsequent complications. Due to their unique colorimetric properties, gold nanoparticles (GNPs) can be applied in biosensor development for affordability and accessibility. In this work, a GNP biosensor was designed for visual differentiation between target (E. coli O157:H7) and non-target DNA samples. Results of DNA extracted from pure cultures indicate high specificity and sensitivity to as little as 2.5 ng/µL E. coli O157 DNA. Further, the biosensor successfully identified DNA extracted from flour contaminated with E. coli O157, with no false positives for flour contaminated with non-target bacteria. After genomic extraction, this assay can be performed in as little as 30 min. In addition, food sample testing was successful at detecting approximately 103 CFU/mL of E. coli O157 magnetically extracted from flour after only a 4 h incubation step. As a proof of concept, these results demonstrate the capabilities of this GNP biosensor for low-cost and rapid foodborne pathogen detection.
