Effect of water content on thermal and dynamic mechanical properties of xanthan powder: A comparison between standard and novel techniques

Hydration effects on thermal transitions and molecular mobility in Xanthan gum polysaccharides

In this work, the xanthan gum (XG) polysaccharide is studied over a wide range of temperatures and water fractions 0 ≤ hw ≤ 0.70 (on a wet basis) by employing differential scanning calorimetry (DSC) and broadband dielectric spectroscopy (BDS). The investigation reveals that the critical water fraction for ice formation is about 0.35. Glass transition temperature (Tg) was determined through calorimetry experiments for all the samples studied. Water acts as a strong plasticizer, i.e., decreasing Tg, for water fractions up to about 0.35. A secondary (local) relaxation process is recorded in both dry and hydrated samples, which is sensitive to the presence of water molecules. This fact indicates that this process originates due to the orientation of small polar groups of the side chain, or/and due to the local main chain dynamics. Two types of long-range charge transport processes were resolved. The first is related to the conductive paths being formed via bulk-like ice structures (at high hydration levels), whereas the second can be attributed to proton mobility via the hydrogen bond (HB) network of non-freezing water existing in XG. Interestingly, this process is exactly the same in all the hydrated samples with hw > 0.25. With respect to the sample with hw = 0.27, a Vogel-Tammann-Fulcher (VTF)-like polarization process has also been recorded which seems to be related to long-range charge mobility via interconnected water clusters. As far as we are aware, this is the first time that XG is studied in terms of glass transition and molecular mobility over a wide range of hydration levels combining DSC and BDS techniques.

Immersion mode material pocket dynamic mechanical analysis (IMP-DMA): a novel tool to study gelatinisation of purified starches and starch-containing plant materials

There is a clear need for improved methods for the study of the physical changes that occur in slurries and sol-gel systems that have significant water content. In this paper a novel immersion mode material pocket form of dynamic mechanical analysis (IMP-DMA) has been designed, combining material pocket technology to provide physical support to a powdered sample within an immersion bath. IMP-DMA allows the mechanical response of a powder during heating to be monitored in excess water. IMP-DMA was evaluated using a range of starch samples loaded as a slurry into a solid steel pocket, the mechanical responses of these samples were monitored as a function of temperature, and values for modulus and tanδ peaks were found to correspond well with events occurring at both the onset and peak gelatinisation temperatures as measured by differential scanning calorimetry (DSC) (e.g. wheat starch has an onset and peak DSC temperature of 49.3 °C and 57.2 °C, respectively, and shows a peak in tanδ at 52.8 °C and a modulus peak at 57.7 °C). Some limitations were found in the ability of DMA to detect transitions in starches with low or high amylose contents. IMP-DMA was shown to be an effective tool for monitoring the changes in starch structure that occur during gelatinisation, both in purified starches and in more complex starch-containing food materials. Thus, a new hyphenated form of DMA is now available that permits the thermally induced transitions of particle water dispersions to be characterised.

Semi-interpenetrating polymer networks containing polysaccharides. II. Xanthan/lignin networks: a spectral and thermal characterization

Polysaccharides are important materials in food, pharmaceutical, cosmetic and related biomedical applications. Xanthan gum is a microbial polysaccharide of great commercial significance. Lignin possesses antioxidant, antimicrobial and stabilizer properties. The aim of this study was to investigate by UV-Vis and infrared spectroscopy, wide angle X-ray scattering, differential scanning calorimetry and thermogravimetric studies, the characteristics of biodegradable superabsorbant hydrogels with high swelling rate in aqueous mediums. These were obtained by crosslinking reaction between xanthan gum and different types of lignin (aspen wood lignin, annual fibre crops lignin and lignin epoxy-modified resin) using epichlorhydrine as crosslinking agent. It is expected an increased in thermal stability, hydrophilicity, biocompatibility of hydrogel-films by lignin incorporation. Applications in the food and medical field were also found.
