A Method to Reduce the Occurrence of Egg Translucency and Its Effect on Bacterial Invasion

Translucent egg consumption is low due to consumer acceptance and quality concerns, which is a problem that egg producers need to address. This study was performed to evaluate the reasons for the high occurrence of egg translucency in summer, as well as whether the addition of mono-dicalcium phosphate (MDCP) to the diet can relieve eggshell translucency and whether eggshell translucency is associated with the risk of bacterial invasion. A total of 72 laying hens that were 36 weeks old were randomly divided into control (CON) and MDCP groups and fed in the same environment. Results showed that the number of translucent eggs increases in July and August as the temperature and humidity increase. Compared with the CON group, in July, August, and October, the translucent egg grade (TEG) of the MDCP group was lower than that of the CON group (p < 0.05). TEG was correlated with mastoid space height (MSH), width (MSW), and area (MSA) (correlation coefficients 0.63, 0.59, and 0.68, respectively, p ≤ 0.05). There was no significant difference in the invasion rate of E. coli between translucent and non-translucent egg groups (47.2% vs. 39.33%), and translucent area and non-translucent area (13.49% vs. 15.08%). In conclusion, our results show that dietary MDCP may alleviate eggshell translucency and that eggshell translucency would not increase the probability of E. coli cross-shell penetration rate.

Effects of coated hatching eggs obtained from old broiler breeders with chitosan on embryonic growth, hatching results and chick quality

The aim of this research was to determine the effects of coating broiler hatching eggs with chitosan on egg quality, embryonic growth, hatching results and chick quality. Eggs obtained from old broiler breeder, aged 59 weeks, were used. Eggs were divided into two groups (coated with chitosan and uncoated) groups. Each group was divided into three groups according to the storage period. Eggs were stored for periods of 1, 4 and 7 days at 15°C and 80% humidity. Then, they were incubated. Storage period of eggs up to 7 days did not affect the egg quality, egg weight loss, embryo growth, chick properties and hatchability of fertile eggs. However, embryo development, relative residual yolk sac weight and relative chick weight were affected by coating eggs with chitosan. Interaction was not found between storage lengths and coating of eggs with chitosan for all examined parameters. The results of the present study suggested that hatching eggs obtained from old broiler breeder flocks were immersed into chitosan solution once and quickly have negative effect on the embryo weight, yolk sac absorption and relative chick weight. It has been observed that covering the hatching eggs with chitosan is not suitable in this respect even if immersion takes place once and in a short time.

Citric acid as a factor limiting changes in the quality of table eggs during their storage

The aim of the experiment was to evaluate the potential use of citric acid as a modifier of quality changes in table eggs during their storage. About 780 table hen eggs were collected on the same day. They were numbered individually and placed on trays 30 pcs on each. Control group (CA0) consisted of eggs unmodified with any additional substances. In experimental groups CA10 and CA15, eggshells were sprayed with the aqueous solution of citric acid (10 and 15% concentration, respectively). At the start of the experiment, only quality traits of eggs from the control group were analyzed. The remaining eggs were stored at 14°C and 70% RH (typical storage conditions). Their quality was evaluated after 7, 14, 21, and 28 d. The depth of the air cell, egg weight and specific gravity, traits of shell (permeability, strength, weight, thickness, density), and egg content (pH of yolk and albumen, Haugh units, yolk weight and color) were evaluated each time. The use of citric acid decreased the severity of qualitative changes. Citric acid–treated eggs demonstrated smaller weight loss, shallower air cell, higher structural albumen, less-intensive water diffusion from albumen to yolk indicating the improved resistance of the vitelline membrane. Owing to the fact that citric acid is accepted and recognized as a safe food preservative is a relatively cheap and available substance, it seems that it can be used to inhibit quality changes in table eggs during their storage.
