Abstract
Gamma-ray irradiation is an effective and clean method of sterilization by inactivating microorganisms. It can also be applied to induce anti-oxidants for future application. In this study, the mung bean (Vigna radiata) was exposed to gamma-ray irradiation under the dose of 0, 5 or 10 kGy. With increasing irradiation doses, the concentrations of malondiadehyde decreased while the levels of total flavonoids and DPPH (1,1-diphenyl-2-picrylhydrazyl) radical scavenging activity increased. It has been shown that consuming flavonoids can provide protective effects. In addition, proteomic analysis identified several proteins having anti-oxidant activities in the 5 kGy irradiated group. These proteins are Apocytochrome f, Systemin receptor SR 160, DELLA protein DWARF8, DEAD-box ATP-dependent RNA helicase 9, ζ-carotene desaturase (ZDS), and Floral homeotic protein AGAMOUS. Our findings indicate that plants contain a variety of phytochemicals and antioxidant proteins which may effectively prevent oxidative stress caused by irradiated peroxidation.

Abstract
Phenolic compounds in cereal and legume seeds show numerous benefits to human health mainly because of their good antioxidant capacity. However, long-term storage and some improper preservation may reduce their antioxidant potential. It is necessary to retain or modify the phenolic antioxidants with improved technology before consumption. Radiation processing is usually applied as a physical method to extend the shelf life and retain the quality of plant produce. However, the effect of radiation processing on phenolic antioxidants in cereal and legume seeds is still not well understood. This review summarizes recent research on the effect of radiation, including ionizing and nonionizing radiation on the content and profile of phenolic compounds, and antioxidant activities in cereal and legume seeds, the influencing factors and possible mechanisms are also discussed. The article will improve the understanding of radiation effect on phenolic antioxidants, and promote the radiation modification of natural phenolic compounds in cereal and legume seeds and other sources.

Abstract
Fungal infection is inevitable in the cultivation and storage process of soybean. Gamma irradiation is an effective method to control fungal growth and inactivate mycotoxins. The effects of gamma irradiation and fungal damage on the number of fungi, aflatoxin B1 content, proximate composition of soybeans, and quality of soybean oil (acid value, peroxide value, iodine value, fatty acid profile, tocopherols content, and oxidation stability) were investigated in this work. Growth of fungi caused some changes in proximate composition of soybean and qualities of soybean oil. However, the changes depended on the damage extent of soybeans. No significant change was found for the soybeans incubated for 30 days (moderately fungi-damaged). Gamma irradiation could completely eliminate the fungi and greatly reduce the content of aflatoxin B1 in soybeans at 10 kGy. For soybeans incubated for 30 days, there were no significant changes in the quality attributes, tocopherols content and oxidation stability of oil when the gamma irradiation dose was less than 20 kGy. Gamma irradiation is a promising method to improve the safety and economy of moderately fungi-damaged soybean used for feedstuff.
