Abstract
Viscosity is one of the most important parameters of liquid foods and shows significant change during food spoilage. It is also an important component of the cell microenvironment and is closely associated with the development of liver injury. In this work, a viscosity-sensitive fluorescent probe named WZ-V based on the twisted intramolecular charge transfer (TICT) mechanism was successfully designed. WZ-V had a large Stokes shift, long wavelength emission, and the fluorescence intensity shows 290-fold enhancement in high viscosity. Probe WZ-V successfully detected viscosity changes caused by food thickeners, as well as in milk, orange juice, and lemonade spoilage processes. This provides a new tool for regulating the viscosity of liquid foods and monitoring viscosity changes during food spoilage. In addition, WZ-V has been successfully applied to image viscosity changes in liver injury, which provides an important reference for the study of liver diseases.

Abstract
A FRET-based ratiometric dual-response fluorescent probe, CQI, constructed by combining quinolinium-indole as the acceptor and coumarin as the donor, was developed for sensing HSO3-/SO32- and viscosity. After the interaction of probe CQI with the analyte, we achieved a green channel for the response to HSO3-/SO32- and an orange channel for the response to viscosity. We comprehensively evaluated the ability of CQI to detect SO2 derivatives and viscosity using fluorescence spectroscopy. Probe CQI exhibited a large Stokes shift (196 nm), a high energy transfer efficiency (99.6 %) and a wide detection range (0-250 μM). The fluorescence intensity of the probe increased up to 14-fold with increasing viscosity, and CQI could detect the viscosity of food thickeners. More importantly, probe CQI could not only successfully monitor SO2 derivatives in various food and water samples, but also be prepared as bisulfite test strips.

Abstract
The viscosity and crowding of biological environment are considered vital for the correct cellular function, and alterations in these parameters are known to underly a number of pathologies including diabetes, malaria, cancer and neurodegenerative diseases, to name a few. Over the last decades, fluorescent molecular probes termed molecular rotors proved extremely useful for exploring viscosity, crowding, and underlying molecular interactions in biologically relevant settings. In this review, we will discuss the basic principles underpinning the functionality of these probes and will review advances in their use as sensors for lipid order, protein crowding and conformation, temperature and non-canonical nucleic acid structures in live cells and other relevant biological settings.

Abstract
Various starch synthesis and tailoring processes involve prevailing adjustments in the degree of polymerization (DP) of linear α-D-1,4-glucan chains (LGCs) for the improved functional performances. Previous studies indicated that LGCs might hinder the twisted relaxation of 9-(2-carboxy-2-cyanovinyl)-julolidine (CCVJ, a hydrophilic molecular rotor), highlighting CCVJ as a potential in-situ structural probe for LGC. In this study, glucose and its α-D-1,4 oligomers and polymers with molecular weights ranging from 0.18 kDa to 70.00 kDa were prepared as the model molecules (MM). The fluorescent emission behavior of CCVJ in various concentrations (1-5 g/L) of MM solutions or dispersions were analyzed. Results showed that for the low-DP MMs (≤ 3.98 kDa) with good aqueous stability, CCVJ emission increased by about 20 times with the DP of MMs. In contrast, CCVJ generally emitted weak DP-relevant but glucan content-dependent fluorescence in response to the interaction with high-DP MMs (> 3.98 kDa). Furthermore, a double-logarithmic linear relationship was found between the emission intensity of CCVJ and the molar-based molecular weight of glucan. The result combined with the molecular dynamic simulation suggested that CCVJ underwent surface-to-surface interaction with MMs. This study may contribute to the real-time analysis of the DP of α-D-1,4 oligoglucosides in maltodextrin and starch syrup.

Abstract
Food safety is a global concern that deeply affects human health. To ensure the profitability of the food industry and consumer safety, there is an urgent need to develop rapid, sensitive, accurate, and cost-effective detection methods for food contaminants. Recently, the Aggregation-Induced Emission (AIE) has been successfully used to detect food contaminants. AIEgens, fluorescent dyes that cause AIE, have several valuable properties including high quantum yields, photostability, and large Stokes shifts. This review provides a detailed introduction to the principles and advantages of AIE-triggered detection, followed by a focus on the past five years' applications of AIE in detecting various food contaminants including pesticides, veterinary drugs, mycotoxins, food additives, ions, pathogens, and biogenic amines. Each detection principle and component is comprehensively covered and explained. Moreover, the similarities and differences among different types of food contaminants are summarized, aiming to inspire future researchers. Finally, this review concludes with a discussion of the prospects for incorporating AIEgens more effectively into the detection of food contaminants.
