Prediction of soluble solids content using near-infrared spectra and optical properties of intact apple and pulp applying PLSR and CNN

Quantification of antibiotics in food by octahedral gold-silver nanocages-based SERS sensor coupling multivariate calibration

The abuse of antibiotics has caused gradually increases drug-resistant bacterial strains that pose health risks. Herein, a sensitive SERS sensor coupled multivariate calibration was proposed for quantification of antibiotics in milk. Initially, octahedral gold-silver nanocages (Au@Ag MCs) were synthesized by Cu2O template etching method as SERS substrates, which enhanced the plasmonic effect through sharp edges and hollow nanostructures. Afterwards, five chemometric algorithms, like partial least square (PLS), uninformative variable elimination-PLS (UVE-PLS), competitive adaptive reweighted sampling-PLS (CARS-PLS), random frog-PLS (RF-PLS), and convolutional neural network (CNN) were applied for TTC and CAP. RF-PLS performed optimally for TTC and CAP (Rc = 0.9686, Rp = 0.9648, RPD = 3.79 for TTC and Rc = 0.9893, Rp = 0.9878, RPD = 5.88 for CAP). Furthermore, the detection limit of 0.0001 µg/mL for both TTC and CAP was obtained. Finally, satisfactory (p > 0.05) results were obtained with the standard HPLC method. Therefore, SERS combined RF-PLS could be applied for fast, nondestructive sensing of TTC and CAP in milk.

Combining ion mobility spectrometry and chemometrics for detecting synthetic colorants in black tea: A reliable and fast method

Black tea (Camellia sinensis) is a widely consumed beverage and is subjected to adulteration. In this study, the combination of ion mobility spectrometry and machine learning techniques was employed to detect synthetic colorants in black tea. To accomplish our objective, six synthetic colorants (carmine, carmoisine, indigo carmine, brilliant blue, sunset yellow, and tartrazine) were added to pure tea at different concentrations. A qualitative model was built using partial least squares discriminant analysis (PLS-DA) for the collected data and exhibited 100% accuracy in identifying synthetic colorants in black tea. For quantitative analysis, a PLS regression model was employed. The R2 values obtained for the test set ranged from 0.986 to 0.997. The method developed in this study has proven to be reliable and effective in detecting synthetic colorants in black tea. Also, this method is a simple, rapid, and trustworthy tool for identifying adulteration in black tea.

Simultaneous Quantitative Determination of Low-Concentration Preservatives and Heavy Metals in Tricholoma Matsutakes Based on SERS and FLU Spectral Data Fusion

As an ingredient of great economic value, Tricholoma matsutake has received widespread attention. However, heavy metal residues and preservatives in it will affect the quality of Tricholoma matsutake and endanger the health of consumers. Here, we present a method for the simultaneous detection of low concentrations of potassium sorbate and lead in Tricholoma matsutakes based on surface-enhanced Raman spectroscopy (SERS) and fluorescence (FLU) spectroscopy to test the safety of consumption. Data fusion strategies combined with multiple machine learning methods, including partial least-squares regression (PLSR), deep forest (DF) and convolutional neural networks (CNN) are used for model training. The results show that combined with reasonable band selection, the CNN prediction model based on decision-level fusion achieves the best performance, the correlation coefficients (R2) were increased to 0.9963 and 0.9934, and the root mean square errors (RMSE) were reduced to 0.0712 g·kg-1 and 0.0795 mg·kg-1, respectively. The method proposed in this paper accurately predicts preservatives and heavy metals remaining in Tricholoma matsutake and provides a reference for other food safety testing.
