Abstract
The purpose of this quantitative review is to highlight the effects of feeding strategies using some mineral, vitamin, marine oil, and vegetable essential oil supplements and some agri-food by-products to reduce SCCs in the milk of sheep and goats. According to the results, only specific dietary factors at specific doses could reduce SCCs in the milk of dairy sheep and goats. The combination of Se and vitamin E in the diet was more effective in sheep than in goats, while the inclusion of polyphenols, which are also present in food matrices such as agro-industrial by-products, led to better results. Some essential oils can be conveniently used to modulate SCCs, although they can precipitate an off-flavoring problem. This work shows that SCCs are complex and cannot be determined using a single experimental factor, as intramammary inflammation, which is the main source of SC in milk, can manifest in a subclinical form without clinical signs. However, attention to mineral and vitamin supplementation, even in the most difficult cases, such as those of grazing animals, and the use of anti-inflammatory substances directly or through by-products, can improve the nutritional condition of animals and reduce their SCCs, offering undeniable benefits for the milk-processing sector as well.

Abstract
Rosemary extract (RE) has been used as an antioxidant in cosmetics and food additives, indicating its potential as a feed additive to improve adaptation in high-producing dairy cows. Here, we investigated the effects of RE supplementation on lactation performance and rumen fermentation in high-producing dairy cows. Thirty multiparous cows were blocked into 15 groups based on milk production and were randomly assigned to one of two treatments: 0 or 28 g/d of RE supplementation to the basic diet per cow. The experiment was conducted over a 74-day period, which included an initial two-week adaptation period. We observed significant increases in milk and milk lactose yields following RE supplementation. Somatic cell count tended to decrease by treatment. Additionally, superoxide dismutase concentration significantly increased and malonaldehyde level decreased after RE supplementation. Sequencing of 16S rRNA revealed that RE supplementation significantly affected the microbial composition and decreased the richness of the microbiota. Specifically, the abundance of the genus Prevotella was significantly decreased by RE supplementation and was correlated with volatile fatty acids in the Mantel test, whereas no significant correlation was found for other genera. Our findings provide fundamental information on the potential for RE as a feed additive for dairy cows to improve antioxidant status and enhance propionate generation.

Abstract
In the Mediterranean area, the by-products of medicinal and aromatic plant distillation became very attractive as additive and/or alternative feedstuff. Subsequently, the aim of the present study was to evaluate the effect of distilled rosemary (Rosmarinus officinalis L.) leaves (RDL) on digestion and ruminal aspects, metabolic statutes, and milk yield of the Tunisian native goat breed. Thirty-six adult goats were divided into three homogeneous groups (C, RDL20, and RDL40) receiving daily (per head) 0.5 kg of concentrate and 1 kg of roughage composed of 100% of oat hay for C group, 20% of RDL and 80% of oat hay for RDL20 group, and 40% of RDL and 60% of oat hay for RDL40 group. Milk yield and composition, and goats' and kids' BW were measured weekly; also measurement of the diet digestibility, nitrogen balance, rumen fermentation, and blood metabolites was carried out. Dry matter intake was significantly (P < 0.001) higher for the RDL40 group while the dry matter and crude protein digestibility was similar among groups. The goats' milk yield, milk composition, and blood metabolites were not affected by the dietary treatments. The results of this study indicate that RDL can partially substitute oat hay without negative effects on animal productivity.

Abstract
Simple Summary Sheep and goat milk, as well as dairy products, are considered good sources of high-quality nutrients, particularly proteins and fats. Many positive effects on human health have been attributed to the consumption of dairy containing specific fatty acids, including some compounds originating from the polyunsaturated FA (PUFA) biohydrogenation operated by rumen microbes. In this bibliographic review, several nutritional strategies able to improve the milk fatty acids (FA) profile, in terms of an increase in the concentration of fatty acids considered beneficial to human health, are presented and discussed, with special attention to the differences between the two species. Abstract This bibliographic review presents and discusses the nutritional strategies able to increase the concentration of beneficial fatty acids (FA) in sheep and goat milk, and dairy products, with a particular focus on the polyunsaturated FA (PUFA), and highlights differences between the two species. In fact, by adopting appropriate feeding strategies, it is possible to markedly vary the concentration of fat in milk and improve its FA composition. These strategies are based mostly on the utilization of herbage rich in PUFA, or on the inclusion of vegetable, marine, or essential oils in the diet of lactating animals. Sheep respond more effectively than goats to the utilization of fresh herbage and to nutritional approaches that improve the milk concentration of c9,t11-conjugated linoleic acid (c9,t11-CLA) and α-linolenic acid. Dietary polyphenols can influence milk FA profile, reducing or inhibiting the activity and growth of some strains of rumen microbes involved in the biohydrogenation of PUFA. Although the effectiveness of plant secondary compounds in improving milk FA composition is still controversial, an overall positive effect has been observed on the concentration of PUFA and RA, without marked differences between sheep and goats. On the other hand, the positive effect of dietary polyphenols on the oxidative stability of milk fat appears to be more consistent.

Abstract
Mastitis is the most common infection of dairy goats impairing milk production and quality, which is usually recognized by mammary gland visual inspection and palpation. Subclinical forms of the disease are also widely represented, which lack the typical signs of the clinical ones but are still associated with reduced production and safety for human consumption of milk, generally presenting a high bacterial count. In order to obtain novel analytical tools for rapid and non-invasive diagnosis of mastitis in goats, we analyzed milk samples from healthy, subclinical and clinical mastitic animals with a MALDI-TOF-MS-based peptidomic platform, generating disease group-specific spectral profiles whose signal intensity and mass values were analyzed by statistics. Peculiar spectral signatures of mastitis with respect to the control were identified, while no significant spectral differences were observed between clinical and subclinical milk samples. Discriminant signals were assigned to specific peptides through nanoLC-ESI-Q-Orbitrap-MS/MS experiments. Some of these molecules were predicted to have an antimicrobial activity based on their strong similarity with homolog bioactive compounds from other mammals. Through the definition of a panel of peptide biomarkers, this study provides a very rapid and low-cost method to routinely detect mastitic milk samples even though no evident clinical signs in the mammary gland are observed.

Abstract
Rosmarinus species are aromatic plants that mainly grow in the Mediterranean region. They are widely used in folk medicine, food, and flavor industries and represent a valuable source of biologically active compounds (e.g., terpenoids, flavonoids, and phenolic acids). The extraction of rosemary essential oil is being done using three main methods: carbon dioxide supercritical extraction, steam distillation, and hydrodistillation. Furthermore, interesting antioxidant, antibacterial, antifungal, antileishmanial, anthelmintic, anticancer, anti-inflammatory, antidepressant, and antiamnesic effects have also been broadly recognized for rosemary plant extracts. Thus the present review summarized data on economically important Rosmarinus officinalis species, including isolation, extraction techniques, chemical composition, pharmaceutical, and food applications.

Abstract
Simple Summary In the Mediterranean area, where dairy sheep and goats are widespread, the use of by-products in the diet of small ruminants is an ancient practice. Today the great availability of industrial by-products produced at the local level (e.g., grape, olive, tomato and myrtle residues), appears to be a promising strategy for reducing competition with human edible foods and the cost of off-farm produced feeds since they are imported worldwide. Moreover, these co-feeds can contribute to reducing the ecological and water footprint associated with crop cultivation. The presence of bioactive compounds, such as polyphenols, confers added value to these materials. Several positive aspects are apparent when such by-products are included in the diets of small dairy ruminants, in particular on ruminal metabolism, animal health, and the quality of derived products. Abstract Recently, the interest in industrial by-products produced at the local level in Mediterranean areas, resulting from fruit and vegetable processes, has increased because of their considerable amounts of bioactive compounds, including polyphenols. In this review, we analyze the most recent scientific results concerning the use of agro-industrial by-products, naturally rich in polyphenols (BPRP), in the diets of small dairy ruminants. Effects on milk production, milk and rumen liquor fatty acid profile, metabolic parameters, and methane production are reviewed. The feed intake and digestibility coefficients were generally depressed by BPRP, even though they were not always reflected in the milk yield. The main observed positive effects of BPRP were on quality of the milk’s FA profile, antioxidant activity in milk and blood, a reduction of rumen ammonia, and, consequently, a reduction of milk and blood urea. The expected beneficial effects of dietary polyphenols in small ruminants were not always observed because of their complex and variable matrices. However, owing to the large quantities of these products available at low prices, the use of BPRB in small ruminant nutrition offers a convenient solution to the valorization of residues arising from agricultural activities, reducing feed costs for farmers and conferring added value to dairy products at the local level, in a sustainable way.

Abstract
Traditional farming practices include the use of local agricultural by-products in the diet of ruminants. Artichoke harvesting and transformation yield high amounts of by-products that, if properly used, may reduce farming costs and the environmental impact of farming. The present study tests the inclusion of silages from artichoke by-products (plant and outer bracts) in the diet of dairy goats (0%, 12.5% and 25% inclusion) on the technological and sensory properties of milk during a five-month study. Milk composition, color, stability, coagulation and fermentation properties remained unaffected by diet changes. Panelists were not able to differentiate among yogurts obtained from those milks by discriminant triangular sensory tests. Silages of artichoke by-products can be included in isoproteic and isoenergetic diets for dairy goats, up to a 25% (feed dry matter), without negatively affecting milk technological and sensory properties whereas reducing feeding costs.

Abstract
Essential oils (EOs) from plant extracts have been reported to have an antibacterial activity against gram-negative and gram-positive bacteria. Several of the gram-positive bacteria are involved in ruminal biohydrogenation of fatty acids (FAs), thus suggesting that feeding EOs could lower biohydrogenation of FA because of a decrease in the number of bacteria involved in that process. As a result, milk FA profiles are expected to be modified. In addition, monensin was approved as an antibiotic to be fed in dairy cattle, and it was reported that dairy cows supplemented with monensin produced milk containing higher concentration of 18:1 t10 and 18:1 t11. The objective of this study was to evaluate the effects of two EOs (garlic and juniper berry oils) and monensin on FA profiles of milk fat. Four ruminally fistulated Holstein dairy cows were used in a 4 × 4 Latin square experiment. Cows were fed for ad libitum intake a total mixed ration without supplementation (control), or supplemented with monensin (330 mg/head per day), garlic oil (5 g/head per day), or juniper berry oil (2 g/head per day). The FA composition of saturated, monounsaturated, or polyunsaturated was not affected by supplementation of EO and monensin. However, proportion of conjugated linoleic acid trans 10, cis 12 (CLA t10, c12) was higher (P < 0.05) for cows fed EO or monensin than for control cows. Supplementation of monensin increased (P < 0.05) the proportion of total trans FA compared with the control. These results indicate that supplementation of the dairy cow diet with garlic or juniper berry EO or monensin had the potential to increase the proportion of CLA t10, c12 in milk fat with minimal overall effects on FA of milk fat. The results also confirm the increase of 18:1 t10 in milk fat by feeding monensin to dairy cows.

Abstract
Carnosic acid, quercetin and α-tocopherol are well-known antioxidants in many biological systems. However, their antioxidative effect during food digestion against lipid and protein oxidation is not well known. Therefore, in this study, an in vitro simulated gastric digestion model was used to investigate their stability during gastrointestinal conditions and their antioxidative properties during low pH digestion. In general, the stability of the antioxidants in the different steps of digestion was in the order of α-tocopherol > quercetin > carnosic acid. Salivary components, as well as the acidity of the gastric juice, were responsible for the reduction in antioxidants. Both α-tocopherol and quercetin were able to lower lipid oxidation during digestion, while the effect on protein oxidation was not clear. In contrast, carnosic acid did not have any effect on lipid oxidation and tended to stimulate protein oxidation. This study clearly demonstrated that the environmental conditions are of major importance to the properties of antioxidant compounds.

Abstract
The aim of this study was to evaluate the effect of feeding goats with distilled and non-distilled thyme leaves (Thymus zygis subsp. gracilis) on the physicochemical composition and technological properties of pasteurised goat milk, and on the physicochemical composition, phenolic content, oxidative stability, microbiology, sensory and texture profile of Murcia al Vino goat cheese. One group of goats was fed the basal diet (control), the second and third groups were fed with different levels of distilled (10 and 20%) or non-distilled (3·75 and 7·5%) thyme leaves. Goat milk physicochemical composition was significantly affected by the substitution of 7·5% of basal goat diet with non-distilled thyme leaves (increase in fat, protein, dry matter and PUFA content), while goat milk clotting time was increased significantly by the introduction of 20% distilled thyme leaves, which reduces its technological suitability. Microbiology, sensory and texture profiles were not affected by the introduction of distilled thyme leaves. The introduction of distilled and non-distilled thyme leaves as an alternative feed to diet can lead to an inhibition of lipids oxidation. The introduction of distilled and non-distilled thyme leaves into goat's diet can be successfully adopted as a strategy to reduce feeding costs and to take advantage of the waste from the production of essential oils, minimising waste removing costs and the environmental impact.
