Conformation characteristics of suckling lambs carcasses from the Spanish local breeds Churra and Castellana and the non-native breed Assaf determined using digital photographs

Transcriptome analysis of perirenal fat from Spanish Assaf suckling lamb carcasses showing different levels of kidney knob and channel fat

Introduction

Suckling lamb meat is highly appreciated in European Mediterranean countries because of its mild flavor and soft texture. In suckling lamb carcasses, perirenal and pelvic fat depots account for a large fraction of carcass fat accumulation, and their proportions are used as an indicator of carcass quality.

Material and Methods

This study aimed to characterize the genetic mechanisms that regulate fat deposition in suckling lambs by evaluating the transcriptomic differences between Spanish Assaf lambs with significantly different proportions of kidney knob and channel fat (KKCF) depots in their carcasses (4 High-KKCF lambs vs. 4 Low-KKCF lambs).

Results

The analyzed fat tissue showed overall dominant expression of white adipose tissue gene markers, although due to the young age of the animals (17-36 days), the expression of some brown adipose tissue gene markers (e.g., UCP1, CIDEA) was still identified. The transcriptomic comparison between the High-KKCF and Low-KKCF groups revealed a total of 80 differentially expressed genes (DEGs). The enrichment analysis of the 49 DEGs with increased expression levels in the Low-KKCF lambs identified significant terms linked to the biosynthesis of lipids and thermogenesis, which may be related to the higher expression of the UCP1 gene in this group. In contrast, the enrichment analysis of the 31 DEGs with increased expression in the High-KKCF lambs highlighted angiogenesis as a key biological process supported by the higher expression of some genes, such as VEGF-A and THBS1, which encode a major angiogenic factor and a large adhesive extracellular matrix glycoprotein, respectively.

Discussion

The increased expression of sestrins, which are negative regulators of the mTOR complex, suggests that the preadipocyte differentiation stage is being inhibited in the High-KKCF group in favor of adipose tissue expansion, in which vasculogenesis is an essential process. All of these results suggest that the fat depots of the High-KKCF animals are in a later stage of development than those of the Low-KKCF lambs. Further genomic studies based on larger sample sizes and complementary analyses, such as the identification of polymorphisms in the DEGs, should be designed to confirm these results and achieve a deeper understanding of the genetic mechanisms underlying fat deposition in suckling lambs.

Growth performance and carcass traits of purebred and crossbred fattening lambs from Ghezel ram with Grey Shirazi ewe

In this investigation, performance, feed efficiency, and carcass traits of 48 weaned crossbred Grey Shirazi × Ghezel and purbred Grey Shirazi fattening lambs (mean live weight (LW), 28.5 ± 0.5 kg and age, 115 ± 5 days) were evaluated. Lambs were divided into 4 groups contain the GM group (12 purebred male lambs of Grey Shirazi ewe × Grey Shirazi ram), the GF group (12 purebred female lambs of Grey Shirazi ewe × Grey Shirazi ram), the CM group (12 crossbred male lambs of Grey Shirazi ewe × Ghezel ram), and the CF group (12 crossbred female lambs of Grey Shirazi ewe × Ghezel ram). The dry matter intakes (DMIs), average daily gain (ADG), and carcass traits in the lambs were determined. The DMI was greater in CF lambs compared to GF lambs (P < 0.001). Feed conversion ratio (FCR) was higher in male lambs comparing to female lambs (P = 0.001). The final body weight (FBW), ADG, live weight at the slaughtering, and hot carcass weight (HCW) were lower in GF lambs compared to another lambs (P < 0.0005, P = 0.002, and P = 0.0007, respectively). Cold carcass weight (CCW) in CM lambs was higher than in other groups. The Longissimus lumborum (LL) area was higher in crossbreed male lambs (P = 0.001). Crossbreeding improved grow performance (FBW and ADG) in male and female lambs. Carcass trait was improved by crossbreeding especially in male lambs. Sex effect on growth performance and carcass traits was noticeable and male lambs had superior growth.

Assessing the Feasibility of Using Kinect 3D Images to Predict Light Lamb Carcasses Composition from Leg Volume

This study aimed to evaluate the accuracy of the leg volume obtained by the Microsoft Kinect sensor to predict the composition of light lamb carcasses. The trial was performed on carcasses of twenty-two male lambs (17.6 ± 1.8 kg, body weight). The carcasses were split into eight cuts, divided into three groups according to their commercial value: high-value, medium value, and low-value group. Linear, area, and volume of leg measurements were obtained to predict carcass and cuts composition. The leg volume was acquired by two different methodologies: 3D image reconstruction using a Microsoft Kinect sensor and Archimedes principle. The correlation between these two leg measurements was significant (r = 0.815, p < 0.01). The models to predict cuts and carcass traits that include leg Kinect 3D sensor volume are very good in predicting the weight of the medium value and leg cuts (R² of 0.763 and 0.829, respectively). Furthermore, the model, which includes the Kinect leg volume, explained 85% of its variation for the carcass muscle. The results of this study confirm the good ability to estimate cuts and carcass traits of light lamb carcasses with leg volume obtained with the Kinect 3D sensor.

Evaluation of the meat traits of lambs of Polish native breeds

The research was performed on 136 male lambs, at an average slaughter weight of 32 to 42 kg, of the following Polish native breeds: Uhruska (UHR), Pomeranian (Pomorska, POM), Blackheaded (Czarnogłówka, CZGŁ), Podhale Zackel (Cakiel Podhalański, CKP), Wrzosówka (WRZOS), Świniarka (SWIN), Wielkopolska (WLP) and Polish Merino old type (MST). The longissimus lumborum muscle was tested to establish its basic chemical composition, physical and chemical traits as well as sensory traits. The meat quality of tested breeds was high, especially in terms of sensory traits. However, high variability of studied traits was observed depending on the breed, e.g. the average pH24 ranged between 5.58 (WLP) and 5.77 (WRZOS), intramuscular fat content ranged between 1.98% (CZGŁ) and 4.12% (WLP), meat tenderness varied from 4.2 points (POM) to 4.64 points (UHR). Somewhat dark meat colour was observed in all breeds which is worth noticing (L* from 34.86 to 38.50). According to the general estimation of tested quality traits the following breeds were on the top of the ranking: SWIN, UHR, WLP and WRZOS. Further down in the ranking the following breeds were placed: POM, MST and CKP.

Fatty Acid Profile and Antioxidative Properties of Peptides Isolated from Fermented Lamb Loin Treated with Fermented Milk

This study evaluated the impact of fermented milk maceration on fermented lamb loin without nitrate to obtain peptides with high activity against oxidative changes (ABTS, DPPH, reducing power) as well as a favorable fatty acid profile, including CLA content. Additionally, an attempt was made to evaluate the influence of the lamb breed on the assessed properties. Raw loins (m. Longissimus dorsi) obtained from sheep of three polish breeds—Wrzosówka, Uhruska, and Świniarka—and fermented products were tested. The fermented loins obtained after 14 days of processing were characterized by pH and water activity values in the ranges, respectively, 4.76–5.12 and 0.902–0.915. The maceration of meat in a fermented milk has caused greater acidification of the meat during fermentation. Statistical analysis indicated that treatment was the factor with significant effect on peptide content; no effect of animal breed was found. The peptide content isolated from raw meat ranged from 2.90 to 4.31 mg g⁻¹ of sample, while in fermented meat products it was significant higher (11.59–16.37 mg g⁻¹ of product). The antioxidant properties of peptides were positively correlated with peptides content. The maceration in fermented milk resulted in a statistically significant increase of ABTS value in case of fermented lamb loin of Świniarka breed. The raw meat and fermented meat products form the Świniarka lamb breed were characterized by the highest content of the total CLA isomers. The main CLA isomer found was cis9-trans11 (rumenic acid), followed by cis9-cis11, trans9-trans11, and trans10-cis12. The rumenic acid content was higher than, respectively, 87% and 80–88% of total CLA isomers in case of raw meat and fermented lamb loins of three breeds.

[Nutrition, gastronomy and health in the community of Castilla y León]

Introduction

Introduction: gastronomy and eating habits are key factors that determine a population's health and nutritional status. The geographical and climatic peculiarities of Castilla y León (CyL) contribute to the development of its cultural and gastronomic wealth. Objectives: to evaluate the gastronomic characteristics of CyL and assess the population's health and nutritional needs. Methods: this study is a narrative review. Results: in CyL there are more than 50 foods with various figures of quality, from vegetables, meats, cheeses and fruits to pasties and sweets. CyL has also the highest ratio of dining options from Spain. The caloric profile analysis reveals the trend towards an unbalanced diet with excess intake of lipids and proteins to the detriment of the consumption of complex carbohydrates. The assessment of food consumption shows higher values than the average national in all the food groups, with special attention to the meat and derivatives, milk and derived, eggs, cereals and legumes. With regard to lifestyle, best values in indicators of sedentarism, physical activity and obesity are observed in comparison with the rest of Spain. Conclusions: the region of Castilla y León has its own geographical and cultural characteristics that make it a region of reference at the national level in relation to the production and marketing of local products of quality. Eating habits are associated with gastronomy and contribute to the promotion of a good nutritional status and standard of living of the population.
