Abstract
Fatty acid profile, physicochemical composition, and carcass traits of 32 young Nellore bulls were assessed following the supplementation of Acacia mearnsii extract at levels of 0, 10, 30, and 50 g/kg of total dry matter (DM) in a completely randomized experiment with four treatments and eight replicates. Adding 50 g/kg DM of condensed tannins (CT) from Acacia mearnsii in the bulls' diet reduced DM intake, average daily gain, and meat lipid oxidation (P ≤ 0.05). The pH, centesimal composition, collagen, and meat color indexes of the longissimus muscle were not altered by the addition of Acacia mearnsii (P > 0.05). Cooling loss increased (P = 0.049) linearly. Including Acacia mearnsii in diet reduced the Warner-Bratzler shear force (WBSF, P = 0.018) of longissimus muscle of the bulls. The concentration of C16:0, C17:0, C24:0, t9,10,11,16-18:1, c9t11-18:2, C18:2n-6, C20:4n-6, 20:5n-3, 22:5n-3, and 22:6n-3 in the muscle increased due to the addition of Acacia in the diet (P ≤ 0.05), with the highest muscle concentrations caused by the addition of 10 to 30 g Acacia. c9-18:1 and t16-18:1 reduced linearly. ƩSFA, ƩBI, Ʃcis- and ƩMUFA, Ʃn-3, Ʃn-6, and ƩPUFA (P ≤ 0.05) quadratically increased at higher concentrations of addition of Acacia, above 30 g/kg DM. It is recommended to include Acacia mearnsii extract up to 30 g/kg total DM in diets for young bulls as it improves CLA, PUFA and TI and reduces lipid oxidation. Acacia mearnsii extract as source of CT at 50 g/kg DM negatively impacted the young bulls performance.

Abstract
The aim of this study was to evaluate the effects of a short-term supplementation with a polyphenol-rich extract from radiata pine bark (PBE) on animal performance, blood parameters, and fatty acid (FA) profiles in finishing lambs. Twenty-seven Suffolk lambs (4 months old) fed a finishing diet were randomly assigned to one of the following treatments: diet without PBE or diet supplemented with PBE on a 1 or 2% dry matter (DM) basis, for 35 d (14 d adaptation and 21 d of experimental period). Data were compared using Tukey's test and orthogonal and polynomial contrasts. The results indicated that the supplementation with PBE increased (p = 0.008) relative growth rate (RGR) and improved (p = 0.003) protein conversion (CPC), whereas weight gain, carcass characteristic, and blood parameters were unaffected (p ≥ 0.106). Total mono- and polyunsaturated FAs, conjugated linoleic acid (CLA), and vaccenic and oleic acids were linearly increased (p ≤ 0.016) by PBE supplementation. In contrast, total saturated FAs (ΣSFA), Σn-6/Σn-3 ratio, atherogenicity index (AI), thrombogenic index (TI), and the proportion of elaidic acid were linearly decreased (p ≤ 0.018). In conclusion, the supplementation with 1 or 2% DM of PBE improves subcutaneous FA profiles by increasing CLA and reducing ΣSFA, Σn-6/Σn-3 ratio, AI, and TI. Additionally, PBE supplementation has the potential to improve RGR and CPC, with unaffected intake, growth performance, blood parameters, or carcass characteristics.

Abstract
Sainfoin (Onobrychis viciifolia) is a forage legume with a medium content of proanthocyanidins (PAC), which may affect animal performance and product quality. The objective of the present study was to assess the effect of PAC from sainfoin fed to dams, using polyethylene glycol (PEG) as a blocking agent, on the performance and carcass and meat quality of their suckling male lambs. After lambing, twenty lactating dams were fed fresh sainfoin ad libitum plus 200 g per day of barley; ten were orally dosed with water (Sainfoin), and ten were dosed orally with a water dilution of 100 g PEG (Sainfoin + PEG). Their lambs (4.1 ± 0.64 kg at birth) suckled ad libitum until they reached the target slaughter weight of 10-12 kg. The presence of PAC in the dams' diet did not affect the growth, blood metabolites and carcass weight and fatness of the suckling lambs but decreased the lightness of caudal fat (p < 0.05) and increased the weight of the digestive compartments (p < 0.05). Regarding the meat characteristics, PAC only decreased polyphenols content (p < 0.05). In conclusion, the presence of PAC in the dams' diet had not significant effects on the performance and product quality of their suckling lambs.

Abstract
Simple Summary Feeding forage legumes containing condensed tannins (CT) to ruminants has the potential to reduce urinary nitrogen (N) excretion, which is considered a significant contributor to environmental pollution. However, there are also indications that CT in the diet can reduce the feed intake. Furthermore, the fate of CT during digestion is still unclear. In the present study, the effect of CT from birdsfoot trefoil (BT) on the N excretion pathway and the CT excretion of lambs fed diets with different dietary crude protein (CP) levels were investigated. Regardless of the crude protein content of the diet, the results show that the CT-containing rations were eaten less frequently. Nitrogen excretion via urine decreased with the feeding of CT, but only in absolute terms and not in relation to the N intake. The CT balance indicates that not all CT that are ingested are also excreted. It seems that the CT change their structure when passing through the digestive tract. Abstract Two experimental periods were employed to investigate the fate of ingested CT from BT and their effects on the intake, digestibility, and N balance in lambs fed diets differing in CP levels. In period 1, 24 lambs were fed a basal diet either treated with polyethylene glycol (PEG+) to deactivate CT or without polyethylene glycol (PEG−). In period 2, the same lambs were used in a 2 × 2 factorial design and fed either the basal diet (BP) or a high protein diet (HP), again treated with or without PEG. In both experimental periods, feeding lambs diets without PEG caused a reduction in the dry matter (DM) intake and an increase in the DM digestibility. Urinary and total N excretion decreased in lambs fed diets without PEG, but only in absolute terms and not in relation to the N intake. The total N intake, total N excretion, and body N retention were higher with a higher dietary CP level. Related to the CT intake, less soluble and protein-bound CT were excreted by lambs fed diets without PEG, and more protein-bound and fiber-bound CT were excreted by lambs fed BP diets. Regardless of the PEG treatment and CP level, not all CT that are ingested are also excreted. The effect of PEG treatment on the N excretion pathway was independent of the CP level.
