Abstract
Molecularly imprinted polymers (MIPs) as artificial synthetic receptors are in high demand for food analysis due to their inherent molecular recognition abilities. It is common practice to employ functional monomers with basic or acidic groups that can interact with analyte molecules via hydrogen bonds, covalent bonds, and other interactions (π-π, dipole-ion, hydrophobic, and Van der Waals). Therefore, selecting the appropriate functional monomer and cross-linker is crucial for determining how precisely they interact with the template and developing the polymeric network's three-dimensional structure. This study summarizes the advancements made in MIP's functional monomers and cross-linkers for food analysis from 2018 to 2023. The subsequent computational design of MIP has been thoroughly explained. The discussion has concluded with a look at the difficulties and prospects for MIP in food analysis.

Abstract
The typical phenolic profile in grapes is characterized by its complexity both in terms of number of diverse chemical structures and their variation during ripening. Besides, the specific phenolic composition of grapes directly influences the presence of those components in the resulting wine. In this contribution, a new method based on the application of comprehensive two-dimensional liquid chromatography coupled to a diode array detector and tandem mass spectrometry has been developed to obtain the typical phenolic profile of Malbec grapes cultivated in Brazil. Moreover, the method has been demonstrated to be useful to study how the phenolic composition in grapes evolved during a 10-week ripening period. Main detected compounds in grapes and in the wine derived from them were anthocyanins, although a good number of polymeric flavan-3-ols were also tentatively identified, among other compounds. Results show how the amount of anthocyanins present in grapes was increased during ripening up to 5-6 weeks and then decreased towards week 9. The two-dimensional approach applied was demonstrated to be useful for the characterization of the complex phenolic profile of these samples, involving more than 40 different structures and has the potential to be further applied to the study of this important fraction is different grapes and wines systematically.

Determination of the polyphenolic content of berry juices using focusing-modulated comprehensive two-dimensional liquid chromatography coupled to mass spectrometry detection. Abstract
In this work, a comprehensive two-dimensional liquid chromatography system, comprised of a ZIC-HILIC and C18 columns in the first and second dimensions, respectively, was tuned and employed for attaining high resolution profiles of the polyphenolic pattern in seven commercial berry juices. The developed HILIC × RP-LC method was validated in terms of linearity range, correlation coefficients, limit of detection, limit of quantification, precision (intra- and inter-day), and recovery. A total of 104 polyphenolic compounds belonging to different chemical classes (hydroxybenzoic and cinnamic acid derivatives, flavone glycosides, flavonols, flavonol glycosides, dihydroflavonols, and anthocyanin glycosides) have been characterized and quantified in the juices investigated. Despite the constituents being similar, a notable quantitative variation among the analyzed berry species was observed. Elderberry contained the highest amount of polyphenols (918 ± 1.10 mg 100 mL-1), followed by chokeberry (516 ± 0.08 mg 100 mL-1). On the other hand, raspberry contained the lowest amount (104 ± 1.21 mg 100 mL-1). Further, total phenolic, flavonoid, and anthocyanin contents were determined spectrophotometrically, yielding consistent results. The free-radical scavenging activity (DPPH test) and reducing power of the juices, expressed as IC50 (μL mL-1) and mg ASE mL-1, varied from 2.79 ± 0.03 (honeyberry) to 31.66 ± 0.02 (blueberry) and from 1.71 ± 0.01 (blueberry) to 8.89 ± 0.12 (chokeberry), respectively. Such a ZIC-HILIC × C18 platform based on focusing modulation, never employed so far for berry juices, showed a remarkable separation capability with high values of corrected peak capacity (up to 1372) and orthogonality (Ao up to 0.80), thus providing a great applicability to be advantageously employed for other complex food samples.

Abstract
Rhus coriaria L. (Anacardiaceae), commonly known as sumac, has been used since ancient times for many different applications, and nowadays is used mostly as a spice obtained from its in the Mediterranean and the Middle ground fruits and employed for flavoring and garnishing food, predominantly Eastern regions. Traditionally, sumac has been also used in popular medicine for the treatment of many ailments including hemorrhoids, wound healing, diarrhea, ulcers, and eye inflammation. Sumac drupes are indeed rich in various classes of phytochemicals including organic acids, flavonoids, tannins, and others, which are responsible of their powerful antioxidant capacity, from which treatment of many common diseases such as cardiovascular disease, diabetes, and cancer could benefit. In this work we evaluated the influence of fruit ripeness, conservation, and processing. To this aim, a phytochemical characterization of six different samples of Rhus coriaria L. was carried out. Specifically, headspace solid-phase micro extraction gas chromatography coupled to mass spectrometry and comprehensive two-dimensional liquid chromatography coupled to photodiode array and mass spectrometry detection, were employed. A total of 263 volatile compounds, including terpene hydrocarbons, acids, and aldehydes, as well as 83 polyphenolic compounds, mainly gallic acid derivatives, were positively identified. All samples showed a significant antioxidant activity by means of oxygen radical absorbance capacity, in line with their polyphenolic content and composition. Such findings set a solid ground to support the utilization of this plant as an attractive target for novel nutraceutical approaches and for drug discovery.

Abstract
The efforts to reveal, in detail, the molecular and intramolecular structures of one of the main lipid classes, namely, triacyl-sn-glycerols, which are now known to affect their specific and important role in all living organisms, are briefly overviewed. Some milestones of significance in the gradual but continuous development and improvement of the analytical methodology to identify the triacylglycerol regio- and stereoisomers in complex lipid samples are traced throughout the years: the use of chromatography based on different separation principles; the improvements in the chromatographic technique; the development and use of different detection techniques; the attempts to simplify and automatize the analysis without losing the accuracy of identification. The spectacular recent achievements of two- and multidimensional methods used as tools in lipidomics are presented.

Abstract
Foodomics is the discipline aimed at studying the prevention of diseases by food, identifying chemical, biological and biochemical food contaminants, determining changes in genetically modified foods, identifying biomarkers able to confirm the authenticity and quality of foods or studying the safety, quality and traceability of foods, among other issues. It is mainly based on the use of genomic, transcriptomic, proteomic and metabolomic tools, among others, in order to understand the effect of food on animals and humans at the level of genes, messenger ribonucleic acid, proteins and metabolites. Since the first definition of Foodomics, a reasonable number of works have shown the extremely high possibilities of this discipline, which is highly based on the use of advanced analytical hyphenated techniques - especially for proteomics and metabolomics. This book chapter aims at providing a general description of the role of chromatographic and electromigration techniques that are currently being applied to achieve the main objectives of Foodomics, particularly in the proteomic and metabolomic fields, since most published works have been focused on these approaches, and to highlight relevant applications.

Abstract
Comprehensive two-dimensional liquid chromatography is a well-established method for the unraveling of very complex real-world samples. With regard to food and natural products such a technique turned out to be a very promising approach due to its high resolving power and improved identification capability, especially in combination with mass spectrometry. In this context, polyphenols comprise a particular complex class of bioactive compounds, due to their nature and content in commonly consumed foodstuffs, making their analysis challenging. The present contribution shows an overview of the two commonly employed approaches used for polyphenol analysis, viz. RP-LC × RP-LC and HILIC × RP-LC. Furthermore, the latest implementations as well as limitations and future perspectives are critically reported.

Abstract
Electrocoagulation (EC) approach was developed to allow fast sample cleanup step prior to selective analysis of non- and mono-hydroxylated phenolic acids in red wine samples with high performance liquid chromatography hyphenated with UV detection (HPLC-UV). EC system with the wine in KCl(aq) electrolyte (1.5 mol L-1) was employed removing the polymeric pigments with good recovery of 39 peaks from 64 peaks. The mechanisms mainly involve enrichment induced aggregation and reduction of the pigments at the cathode and the adsorption onto the EC sludge. The EC was further miniaturized employing two intercalated stainless steel spring electrodes at 9.0 V which allowed removal of >99% interference peak area from the pigments within 5 s. The recoveries of the target phenolic acids (p-hydroxybenzoic acid, vanillic acid, syringic acid and ferulic acid) were within the range of 86-102%. The repeated analysis of these standards revealed <2 and ≤10% RSD of the intra-day and inter-day precisions, respectively. The linearities of their calibration curves were observed with R 2 > 0.99. Their method detection limits were within the range of 0.02-0.20 mg L-1.

Abstract
In an ongoing effort to better understand the underlying mechanisms of band broadening in particle-packed reversed-phase liquid chromatography columns, new models for intra-particle diffusion, representing an adsorption- and partition-type retention behavior, are proposed. These models assume the mesoporous zone inside the particles is subdivided in four distinct regions: a fraction f1 filled with bulk mobile phase, a fraction f2 enriched in pure organic modifier extending outside the stationary phase layer, a fraction f3 comprising the liquid surrounding the alkyl chains and a fraction f4 consisting of the stationary phase alkyl chains. Intra-particle diffusion is calculated as a residence time weighted average of the diffusion in these different regions. Experimental procedures and models are proposed to determine the volumes of these four regions and applied to three reversed-phase liquid chromatography columns with different pore sizes (80 Å versus 300 Å) and different stationary phase types (C18 versus C8). The newly proposed models are then applied to predict the intra-particle diffusion of butyrophenone across a wide range of retention factors (1 ≤ k" ≤ 40) in each of these columns. These predictions are compared to experimental data that are extracted from the effective diffusion coefficients of butyrophenone obtained via peak parking experiments. It is demonstrated that both adsorption- and partition-type models for intra-particle diffusion model the actual behavior of the test compound well, and require the determination of only one (partition) or two (adsorption) fitting factors: the obstruction to free movement the analytes experience from the alkyl chains in the retained state (partition and adsorption) and in the unretained state (adsorption). Finally, it is demonstrated that the major contributor to the intra-particle diffusion of retained compounds (k" > 2) is the diffusion these analytes undergo when retained in the organic-modifier enriched zone surrounding the alkyl chains (partition model) or when adsorbed onto the alkyl chains (adsorption model), confirming that surface diffusion plays an important role in the mass transfer of retained compounds in reversed-phase liquid chromatography columns.

Abstract
The humankind is pretty dependent on food to control several biological processes into the organism. As the world population increases, the demand for foodstuffs follows the same trend claiming for a high food production situation. For this reason, a substantial amount of chemicals is used in agriculture and livestock husbandries every year, enhancing the likelihood of contaminated foodstuffs being commercialized. This outlook becomes a public health concern; thus, the governmental regulatory agencies impose laws to control the residues and contaminants in food matrices. Currently, one of the most important analytical techniques to perform it is LC. Despite its already recognized effectiveness, it is often time consuming and requires significant volumes of reagents, which are transformed into toxic waste. In this context, miniaturized LC modes emerge as a greener and more effective analytical technique. They have remarkable advantages, including higher sensitivity, lower sample amount, solvent and stationary phase requirements, and more natural coupling to MS. In this review, most of the critical characteristics of them are discussed, focusing on the benchtop instruments and their related analytical columns. Additionally, a discussion regarding the last 10 years of publications reporting miniaturized LC application for the analysis of natural and industrial food samples is categorized. The main chemical classes as applied in the crops are highlighted, including pesticides, veterinary drugs, and mycotoxins.

Abstract
Plant-based foods are characterized by significant amounts of bioactive molecules with desirable health benefits beyond basic nutrition. The Brassicaceae (Cruciferae) family consists of 350 genera; among them, Brassica is the most important one, which includes some crops and species of great worldwide economic importance. In this work, the metabolite content of three different cultivars of Brassica juncea, namely ISCI Top, “Broad-leaf,” and ISCI 99, was determined using comprehensive two-dimensional liquid chromatography coupled with a photodiode array and mass spectrometry detection. The analyses were carried out under reversed-phase conditions in both dimensions, using a combination of a 250-mm microbore cyano column and a 50-mm RP-Amide column in the first and second dimension (2D), respectively. A multi (three-step) segmented-in-fraction gradient for the 2D separation was advantageously investigated here for the first time, leading to the identification of 37 metabolites. In terms of resolving power, orthogonality values ranged from 62% to 69%, whereas the corrected peak capacity values were the highest for B. juncea ISCI Top (639), followed by B. juncea “Broad-leaf” (502). Regarding quantification, B. juncea cv. “Broad-leaf” presented the highest flavonoid content (1962.61 mg/kg) followed by B. juncea cv. ISCI Top (1002.03 mg/kg) and B. juncea cv. ISCI 99 (211.37 mg/kg).

Abstract
Chloramphenicol- (CAP-) restricted access media-molecularly imprinted polymers (CAP-RAM-MIPs) were prepared by precipitation polymerization using CAP as a template molecule, 2-diethylaminoethyl methacrylate (DEAEM) as a functional monomer, ethylene glycol dimethyl acrylate (EDMA) as a crosslinking agent, glycidyl methacrylate (GMA) as an outer hydrophilic functional monomer, and acetonitrile as a pore former and solvent. The CAP-RAM-MIPs were successfully characterized by Fourier-transform infrared spectroscopy, scanning electron microscopy, and thermogravimetric analysis. The adsorption performance was investigated in detail using static, dynamic, and selective adsorption experiments. Adsorption equilibrium could be reached within 11 min. The CAP-RAM-MIPs had a high adsorption rate and good specific adsorption properties. Scatchard fitting curves indicated there were two binding sites for CAP-RAM-MIPs. Adsorption was Freundlich multilayer adsorption and consistent with the quasi-second kinetic model. Using CAP-RAM-MIPs for selective separation and enrichment CAP in bovine serum in combination with high-performance liquid chromatography (HPLC), CAP recovery ranged from 94.1 to 97.9% with relative standard deviations of 0.7-1.5%. This material has broad application prospects in enrichment and separation.

Abstract
The high-performance liquid chromatography-quadrupole time-of-flight tandem mass spectrometry (HPLC-QTOF-MS/MS) technique is a powerful tool for compound identification in complex natural products. However, untargeted MS/MS data analysis needs skillful experience and sometimes neglects minor compounds, which are co-eluted with major ones or overshadowed by the matrix. Flavonoids are the main bioactive components in Scutellaria barbata, and the total flavonoid content is 47.02 ± 3.23 mg QE/g DW. Although some flavonoid aglycones and their O-glycosides have been found in S. barbata, comprehensive profiling of flavonoids is unknown. Therefore, we report a flavonoid aglycone-oriented data-mining strategy for efficient and targeted profiling of flavonoids in S. barbata. The strategy includes four steps: (1) HPLC-QTOF-MS analysis of S. barbata; (2) construction of a flavonoid aglycone-based database according to biosynthetic pathway analysis and reported data; (3) extraction of through flavonoid aglycone-based ion chromatography; (4) identification of targeted flavonoids by MS/MS analysis. As a result, 45 flavonoids, including 24 flavones, 1 flavonol, 13 flavanones, and 7 flavanonols, were unambiguously or tentatively identified, while 20 of them were reported in S. barbata for the first time. Moreover, 14 available flavonoids were sensitively, precisely, and accurately determined by standard calibration curves, with limit of detection at 0.06 to 1.55 μg/g, limit of quantification at 0.16 to 3.70 μg/g, relative standard deviation (RSD) less than 9.0% for intra- and inter-day variations, and recovery at 92.6-108.1%. The matrix did not obviously suppress or enhance the ionization of 14 flavonoids, and finally their contents ranging from 0.04 to 4.49 mg/g in S. barbata were successfully achieved. Collectively, our results demonstrate that an efficient, reliable, and valuable strategy has been provided to rapidly and sensitively screen, profile, and quantify chemical components of complex natural products. Abstract
Transfer RNAs (tRNAs) are the most abundant class in small non-coding RNAs which have been proved to be pharmacologically active. In the present study, we evaluated the potential anticancer activities of tRNAs from Escherichia coli MRE 600 to investigate the relationship between non-pathogenic Escherichia coli strain and colorectal cancer. To purify individual tRNAs, we firstly developed a two-dimensional liquid chromatography (2D-LC) and successfully obtained two pure tRNAs. Nuclease mediated base-specific digestions coupled with UHPLC-MS/MS techniques led to an identification of these two tRNAs as tRNA-Val(UAC) and tRNA-Leu(CAG) with typical cloverleaf-like secondary structure. MTT assay demonstrated that both tRNA-1 and tRNA-2 exhibit strong cytotoxicity with IC50 of 113.0 nM and 124.8 nM on HCT-8 cells in a dose-dependent manner. Further clonogenic assay revealed that the purified tRNAs exhibit significant inhibition in colony formation with survival percentage of 79.0 ± 1.6 and 71.2 ± 2.2 at the concentration of 100 nM. These findings provided evidences of anticancer activities of tRNAs from non-pathogenic Escherichia coli strain, indicating that the pharmacological effects of these neglected biomacromolecules from microorganisms should be emphasized. This study put new insights into the therapeutic effects of intestinal microorganism on human diseases, therefore broadened our knowledge of the biological functions of gut microbiota.

Abstract
The performance of a suspect screening method to detect diverse small-molecule trace organic contaminants (TOCs) was systematically evaluated using a set of 39 model compounds. Experiments showed that ionization efficiency, ion transfer parameters, and chromatography could affect the detection of TOCs. As expected, compounds with low ionization yields and poorly retained compounds in chromatographic columns are more difficult to identify in the samples at environmental concentrations. Similarly, TOCs with large deviations from the average mass of the compounds screened were not transmitted efficiently in the mass spectrometer thus negatively affecting their detection. The suspect screening method was validated in terms of recovery and limits of identification of the model compounds using three different types of solid-phase extraction cartridges (reversed phase with polar groups, mixed-mode anion exchange, and mixed mode cation exchange). Experiments showed that more than two-thirds of the model compounds had recoveries >75% with each of the three cartridges, and comparison of limits of identification showed that more than one-half of the model compounds could be identified at concentrations between 6 and 100 ng L−1. However, it was observed that the amount of co-extracted compounds was higher in mixed-mode ion exchangers compared with the reversed-phase cartridge. Application of the suspect screening method using the three different cartridges to surface water samples showed that between 0 to 3% of the positive matches found by the peak identification algorithm were classified as probable structures. Solutions to improve suspect screening of TOCs are proposed and discussed.

Abstract
The application of proteomic and peptidomic technologies for food-derived bioactive peptides is an emerging field in food sciences. These technologies include the use of separation tools coupled to a high-resolution spectrometric and bioinformatic tools for prediction, identification, sequencing, and characterization of peptides. To a large extent, one-dimensional separation technologies have been extensively used as a continuous tool under different optimized conditions for the identification and analysis of food peptides. However, most one-dimensional separation technologies are fraught with significant bottlenecks such as insufficient sensitivity and specificity limits for complex samples. To address this limitation, separation systems based on orthogonal, multidimensional principles, which allow for the coupling of more than one analytical separation tool with different operational principles, provide a higher separation power than one-dimensional separation tools. This review describes the structure-informed separation and purification of protein hydrolyzates to obtain peptides with desirable bioactivities. PRACTICAL APPLICATIONS: Application of bioactive peptides in the formulation of functional foods, nutraceuticals, and therapeutic agents have increasingly gained scholarly and industrial attention. The bioactive peptides exist originally in protein sources and are only active after hydrolysis of the parent protein. Currently, several tools can be configured in one-dimensional or multidimensional systems for the separation and purification of protein hydrolyzates. The separations are informed by the structural properties such as the molecular weight, charge, hydrophobicity or hydrophilicity, and the solubility of peptides. This review provides a concise discussion on the commonly used analytical tools, their configurations, advantages and challenges in peptide separation. Emphasis is placed on how the structural properties of peptides assist in the separation and purification processes and the concomitant effect of the separation on peptide bioactivity.

Abstract
The methodology described in this article will significantly reduce the time required for understanding the relations between chromatographic data and bioactivity assays. The methodology is a hybrid of hypothesis-based and data-driven scientific approaches. In this work, a novel chromatographic data segmentation method is proposed, which demonstrates the capability of finding what volatile substances are responsible for antiviral and cytotoxic effects in the medicinal plant extracts. Up until now, the full potential of the separation methods has not been exploited in the life sciences. This was due to the lack of data ordering methods capable of adequately preparing the chromatographic information. Furthermore, the data analysis methods suffer from multidimensionality, requiring a large number of investigated data points. A new method is described for processing any chromatographic information into a vector. The obtained vectors of highly complex and different origin samples can be compared mathematically. The proposed method, efficient with relatively small sized data sets, does not suffer from multidimensionality. In this novel analytical approach, the samples did not need fractionation and purification, which is typically used in hypothesis-based scientific research. All investigations were performed using crude extracts possessing hundreds of phyto-substances. The antiviral properties of medicinal plant extracts were investigated using gas chromatography-mass spectrometry, antiviral tests, and proposed data analysis methods. The findings suggested that (i) β- cis-caryophyllene, linalool, and eucalyptol possess antiviral activity, while (ii) thujones do not, and (iii) α-thujone, β-thujone, cis- p-menthan-3-one, and estragole show cytotoxic effects.

Abstract
Nowadays, there is an increasing attention for nutraceuticals and, in general, bioactive compounds naturally present in food. Indeed, the possibility of preserving human health and preventing disease (e.g., cardiovascular diseases, cancer etc.) by the intake of healthy food is attractive for both consumers and food industries. In turn, research in this field was also prompted significantly, with the aim of characterizing these bioactive compounds and ascribe to them a specific activity. The bioactive compounds can belong to several chemical classes. However, their chemical diversity and presence in complex matrices, such as food, make it challenging both their isolation and characterization. To tackle this issue, efficient separation systems are needed, which are mainly based on chromatography. In this context, this mini-review aims to provide the reader with an overview of the most relevant and recent approaches for the separation of the most common bioactive compounds in food, in particular polyphenols, phenols, carotenoids, and peptides, by liquid chromatography approaches.

Abstract
Automated on-line two-dimensional high-performance liquid chromatography method (2D-HPLC) is proposed to determine Ochratoxin A (OTA) in food samples as an alternative to OTA immunoaffinity column (IAC). An on-line 2D-HPLC system is designed for the analysis of OTA using an affinity-based monolithic column in the first dimension and reversed-phase C18 column in the second dimension. Initially, optimal OTA separation efficiency is determined through traditional HPLC system consisting of a P(HEMAPA) monolithic column coupled with HPLC system. Secondly, after providing optimum conditions, OTA determination was investigated through the 2D-HPLC system. According to results, 2D-HPLC system showed good linearity in the range 0.5 to 20 ng/mL with limit of detection (LOD) and limit of quantification (LOQ) values of 21.2 pg/mL and 64.3 pg/mL, respectively. The P(HEMAPA)-4 monolithic column displayed good recovery of OTA ranging from 104.34% to 107.33%. Relative standard deviations (RSD) varied in the range 0.21% to 1.31% thus indicating the efficiency of P(HEMAPA)-4 monolithic column developed for OTA.

Abstract
Metabolic profiling of Glycyrrhiza glabra using comprehensive two-dimensional liquid chromatography (LC × LC) coupled with photodiode array (PDA) and mass spectrometry (MS) detection is described. The separation was conducted under reversed-phase conditions, using a combination of first dimension (1 D) 150 mm microbore cyano column utilising 2.7 μm diameter (dp ) particles, and second dimension (2 D) 50 mm superficially porous octadecylsilica column with 2.7 μm dp particles. A multi-segmented shift gradient (MSG) for the 2 D separation was developed, and the orthogonality achieved was compared with other modes of gradients, such as full in-fraction, and shift gradient systems. Results demonstrated a significant expansion of metabolic coverage using MSG in 2 D, providing the highest measure of orthogonality compared to other gradient modes. Compound identifications were performed by employing complementary data from PDA and MS detection, with reference to structural group-type distribution in 2D space. A total of ca. 120 compounds were detected, and among them 37 were tentatively identified, distributed over the chemical families of glycosylated flavanones, triterpene saponins, and others. In comparison with one-dimensional LC, the total number of compounds detected was ca. 2-fold greater when LC × LC was employed. To the best of our knowledge, this is the first demonstration of the MSG mode in LC × LC, representing a powerful strategy to expand the metabolic coverage for analysis of plant-derived extracts, containing a multitude of different phytochemical classes.

Abstract
Rapid and accurate analysis of food produce is essential to screen for species that may cause significant health risks like bacteria, pesticides and other toxins. Considerable developments in analytical techniques and instrumentation, for example chromatography, have enabled the analyses and quantitation of these contaminants. However, these traditional technologies are constrained by high cost, delayed analysis times, expensive and laborious sample preparation stages and the need for highly-trained personnel. Therefore, emerging, alternative technologies, for example biosensors may provide viable alternatives. Rapid advances in electrochemical biosensors have enabled significant gains in quantitative detection and screening and show incredible potential as a means of countering such limitations. Apart from demonstrating high specificity towards the analyte, these biosensors also address the challenge of the multifactorial food industry of providing high analytical accuracy amidst complex food matrices, while also overcoming differing densities, pH and temperatures. This (public and Industry) demand for faster, reliable and cost-efficient analysis of food samples, has driven investment into biosensor design. Here, we discuss some of the recent work in this area and critique the role and contributions biosensors play in the food industry. We also appraise the challenges we believe biosensors need to overcome to become the industry standard.
