Abstract
The contamination of feed and food by heavy metals represents a significant concern for the health of both animals and humans. This study investigates the impact of geographical location on heavy metal distribution in dairy cattle feeds sourced from Free State and Limpopo, South Africa (SA). A total of 70 feed samples (40 from Free State and 30 from Limpopo) were collected from 2018 to 2019 and analyzed for heavy metals, including cadmium (Cd), arsenic (As), copper (Cu), zinc (Zn), lead (Pb), and chromium (Cr), using inductively coupled plasma mass spectrometry (ICP-MS). Our findings revealed the presence of Cr, Cu, and Zn in the feeds, but at levels below the FAO/WHO permissible limits. Additionally, As, Cd, and Pb concentrations in the feeds were below the Limit of Detections (LODs). Generally, Cr concentrations (0.032-0.454 mg/kg) identified in the Free State samples were lower than those found in Limpopo (0.038-1.459 mg/kg), while the levels of Cu (0.092-4.898 mg/kg) and Zn (0.39-13.871 mg/kg) recorded in the Free State samples were higher than those from Limpopo [(0.126-3.467 mg/kg) and (0.244-13.767 mg/kg), respectively]. According to independent sample t-tests, Cu and Zn levels were substantially higher (p ≤ .05) in Free State feeds compared to Limpopo, while Limpopo feeds exhibited significantly higher (p ≤ .05) Cr concentrations than Free State feeds. Despite the low recorded heavy metal levels, regular monitoring of these elements in cow diets across all SA provinces is essential for ensuring the well-being of animals and humans.

Abstract
Previous studies have indicated that heavy metal levels in milk vary partly depending on environmental metal concentrations. Given the increasing consumption of milk in China, it is essential to pay attention to milk safety. We performed a systematic review of relevant published studies to evaluate the heavy metal levels in milk and dairy products and the associated health risks, discuss environmental sources of heavy metals, and propose future research directions. A literature search was implemented in the Web of Science Core Collection and PubMed using multiple keywords such as "metal," "milk," "dairy products," and "China". A total of 16 published studies that analyzed metal levels in milk and dairy products in 20 provincial administrative regions were included. Most studies detected toxic heavy metals in milk and dairy products samples, including mercury, lead, cadmium, chromium, and arsenic. The lead concentration in milk from these studies did not exceed the Chinese standard for milk. However, three studies detected relatively high lead levels in both commercial and raw milk, exceeding the European Commission standard. The polluted environment surrounding the farm, feed, and packaging materials are likely sources of metals in milk and dairy products. The hazard index for the 11 analyzed metal elements in milk and dairy products was lower than 1, indicating negligible non-carcinogenic health risks from exposure to these metals. Children are at a higher risk than adults. This review illustrates that research in this field is limited to China. More research should be conducted in the future, such as evaluating the contribution of each environmental source of metal in milk and dairy products.

Abstract
Simultaneous reduction in activity of fat destabilizing enzymes (lipase and lipoxygenase), contaminants heavy metals (As, Cd, Pb, and Hg), antinutrient phytic acid and hazardous coliforms in rice bran was investigated. Application of washing, soaking the washed sample at different pH values (2, 6 and 9) alone or in combination with ultrasonication were examined. While washing was beneficial, its low efficiency acquired further treatment, which was prevailed by application of acidic pH and ultrasound (28 kHz) treatments. Free fatty acids and peroxide value, as indicators of enzymes activity, implied the effectiveness of treatments with adverse impact of sonication on peroxide value. Remarkably, reduction of dominant heavy metals (As, Pb and Zn) and phytic acid were synergistically facilitated by sonication. Coliforms growth was inhibited at pH 2 even at the absence of ultrasonic treatment. Evidently, combination of acidic pH and ultrasound is a practical approach to improve rice bran stability and safety.

Abstract
Infant formula (IF) constitutes the sole source of mineral intake for infants who are only fed IF. The assurance of the amount of minerals declared on the label and the mineral levels and their chemical forms present a major concern related to providing a good amount of nutrients for absorption by these children. Thus, the objectives of this study were: (i) to evaluate several sample preparation methods for minerals in IF; (ii) to validate an analytical method using an ultrasonic bath for simultaneous determination of the Ca, Cu, Fe, K, Mg, Mn, Na, P and Zn contents in IF by ICP OES and (ii) to establish the optimum analytical conditions of the in vitro method to study the dialyzability of these minerals from IF. The ultrasound-assisted method was shown to conform to 'green chemistry principles', being simple, fast and low cost compared with reference methods. The results were similar to those obtained with reference methods (microwave-assisted acid digestion and dry ashing) with regard to selectivity, sensitivity and linearity (r2 > 0.999). The accuracy and the precision were verified using certified reference materials, with recoveries and coefficients of variation ranging from 91 to 105% and from 1.1 to 5.2%, respectively. For in vitro dialyzability, the conditions established in this study allowed including an overnight step between the gastric and gastrointestinal stages (accuracy and precision ranging from 81 to 108% and 0.4 to 6.3%, respectively), contributing to establishing an in vitro digestion method suitable for infant gastrointestinal conditions.

Abstract
Various industrial activities lead to environmental pollution by heavy metals. Toxic heavy metals enter the food chain of dairy cows through feed and water, then transferred into milk. This study investigated the correlations of heavy metal contents between individual cows' milk, water, silage and soil. The relationships between heavy metal contents in individual cows' milk with milk protein, fat, lactose, solid nonfat (SNF), and total solids (TS) were analysed. Concentrations of Pb, As, Cr, and Cd in milk, silage and water were measured by Inductively Coupled Plasma Mass Spectrometry (ICP-MS). Lead, Cr, and Cd in soil were measured by Atomic Absorption Spectrometry (AAS), and As was detected by Atomic Fluorescence Spectrometry (AFS). One-way non-parametric tests and Spearman correlation analyses were performed using SAS 9.4 software. Levels of Pb and Cd in milk from the unpolluted area were significantly lower (P < 0.01) than those from industrial area. Significantly higher (P < 0.01) As residue was recorded in milk from unpolluted area. Positive correlation of Pb was observed between milk and silage, and As in milk was positively correlated with As in water. Content of As in milk was slightly (r = 0.09) correlated with As in silage, even though strong positive correlation (r = 0.78) was observed between silage and water. Positive correlations were observed for Cr and Cd between milk and silage, as well as milk and soil. Positive correlations were observed in Pb-protein, Cr-protein, and Cd-lactose; other positive correlation coefficients were nearly equal to zero. The results suggest that industrial activities lead to possible Pb and Cd contamination in milk. Drinking water could be the main source of As contamination in cows. No clear relationship was found between milk composition and heavy metals contents in milk. Water and soil on the farm had a partial contribution to heavy metal contamination in milk.

Abstract
Heavy metals are a growing threat to human health due to the resulting damage to the ecology; the removal of heavy metals by lactic acid bacteria (LAB) has been a focus of many studies. In this study, 10 LAB strains were evaluated for their ability to absorb and tolerate lead. Lactobacillus plantarum YW11 was found to possess the strongest ability of lead absorbing and tolerance, with the rate of absorption as high as 99.9% and the minimum inhibitory concentration of lead on YW11 higher than 1000 mg/L. Based on the isobaric tags for relative and absolute quantitation (iTRAQ) proteomics analysis of YW11, a total of 2009 proteins were identified both in the lead-treated strain and the control without the lead treatment. Among these proteins, 44 different proteins were identified. The abundance of 25 proteins increased significantly, and 19 proteins decreased significantly in the treatment group. These significantly differential abundant proteins are involved in the biological processes of amino acid and lipid metabolism, energy metabolism, cell wall biosynthesis, and substance transport. This study contributed further understanding of the molecular mechanism of L. plantarum in the binding and removal of lead to explore its potential application in counteracting heavy metal pollution of environment, food, and other fields.

Abstract
Recently, ultrasound has been widely used in the researches in the food science and technology. Among the food materials, fruits, juices and dairy products are strongly sensitive to ultrasound-based techniques. In this review paper, applications of ultrasound in terms of high and low-power modes in processing, instrumentation and control of the industrial operations are studied in the fruit, juice and dairy sectors of the food science and technology by emphasizing the principles of these techniques and their physicochemical effects on the products. Also, a comprehensive analysis of these methods and important factors influencing their performance are presented, along with the advantages and the drawbacks of each ultrasound-assisted techniques. The solutions for better productivity of this technique would be presented and future trend of this technology would be outlined. By studying the latest researches and advances in the field of ultrasound applications, it has been confirmed that this technique can be helpful in accelerating processes, reducing energy requirements, increasing productivity, and producing better quality food materials in the fields of fruits, juices and dairy products. Notwithstanding, in order to solve the challenges ahead, and for potential applications of ultrasound technology, further researches need to be expanded in the areas mentioned. Also, with the advancement of technology, more advanced equipment, ultrasound transducers and instrumentations would be introduced that needs to be applied in this regard, to solve the current challenges.

Abstract
The biosorption of Pb(II) from aqueous solutions by lactic acid bacterium, Lactobacillus brevis, was studied. The effects of initial pH, contact time, initial Pb(II) concentration, bacterial concentration, rotation speed and temperature of biosorption of Pb(II) from aqueous solutions were investigated. The optimal condition for Pb2+ ions adsorption was observed at pH 6, with the rotational speed of 120 rpm.min-1, bacterial concentration of 3 g.L-1, temperature of 40 °C and contact time of 12 h. The correlation regression coefficients showed that the biosorption process can be well fitted with the Redlich-Peterson, Langmuir, Freundlich and Temkin isotherm models. The equilibrium adsorption capacity reached 53.632 mg.g-1. Binding energy value was 0.264 kJ/mol, which indicated that the adsorption process seemed to involve chemisorption and physisorption. Kinetics of adsorption was found to fit well with the pseudo-second-order and Elovich kinetic equations. Thermodynamic parameters revealed the feasibility, spontaneity and endothermic nature of adsorption.

Abstract
Efficient reconstitution followed by fermentation of nonfat (skimmed) dry milk is one of the most important aspects in manufacturing of various dairy products. As a first stage, dry milk is normally being reconstituted using conventional approaches such as heating and stirring the mixture. Nevertheless, we demonstrated, that low-frequency (22 ± 1.65 kHz) ultrasound can be used as an alternative to the traditional methods of milk recovery. Low-frequency ultrasound was applied during pre-fermentation stage to improve the dispersity of the resulting milk product and to create good conditions for a post-ultrasound bacterial fermentation of milk. The applied ultrasound power was set in the range of 60-120 W/L. For the fermentation process we used: kefir fungi, fermenter of direct inoculation for yogurt LYOBAC YOYO and mixed culture for kefir LAT LC K. The effectiveness of ultrasound treatment was evaluated based on the accumulation of exopolysaccharides (EPS), vitamin C content, as well as antioxidant activity of the resulting milk product. The effect of ultrasound on microflora and the role of the specific types of bacteria such as Lactobacillus on the accumulation of biologically active compounds in the fermented milk products was studied with use of electron microscopy and MALDI - to FMS method. Overall, our results showed that reconstitution of dry milk with use of ultrasound improves further accumulation of biologically active compounds and rises the nutritional quality of the fermented product.

Abstract
The aim of the present study was to explore the therapeutic effect of 20 kHz ultrasound (US) and microbubbles (MBs) on rabbit VX2 liver tumors by spiral computed tomography (CT) scanning. A total of 16 New Zealand rabbits with hepatic VX2 tumors were divided into four groups: Control, MB, low-frequency US and US + MB. The treatment effect was evaluated by spiral CT scanning prior to, during and following treatment (at 0 weeks and the end of 1 and 2 weeks). The tumor growth rate was recorded. The specimens of VX2 tumors were collected for histological examination and transmission electron microscopy (TEM). No significant differences were observed between tumor areas measured by CT and pathology after 2-week treatment (P>0.05). The mean tumor growth rates in the control, MB, US and US + MB groups after 2 weeks of treatment were 385±21, 353±12, 302±14 and 154±9%, respectively (P<0.05, US + MB vs. the other three groups). Hematoxylin and eosin staining in the US + MB group revealed coagulation necrosis, interstitial hemorrhage and intravascular thrombosis. In the control, MB and US groups, tumor cells exhibited clear nuclear hyperchromatism. TEM of US + MB revealed vascular endothelial cell wall rupture, widened endothelial cell gaps, interstitial erythrocyte leakage and microvascular thrombosis, while intact vascular endothelial cells and normal erythrocytes in the tumor vessels were observed in the control, MB and US groups. A combination of 20 kHz US and MBs may effectively inhibit rabbit VX2 tumors. Spiral CT scanning is an ideal method to evaluate the US treatment on rabbit tumors.

Abstract
The work explores the experimental and theoretical aspects of emulsification capability of ultrasound to deliver stable emulsions of sunflower oil in water and meat sausages. In order to determine optimal parameters for direct ultrasonic emulsification of food emulsions, a model was developed based on the stability of emulsion droplets in acoustic cavitation field. The study is further extended to investigate the ultrasound induced changes to the inherent properties of raw materials under the experimental conditions of sono-emulsification.
