Food sensory characteristics: their unconsidered roles in the feeding behaviour of domestic ruminants

The use of taste agents to regulate the grazing behavior of livestock is a new attempt in pasture management, but the effects on grassland plant communities are not clear at present. Therefore, the following scientific questions need to be addressed: (1) how do different taste agents affected plant community structure by changing feed intake? (2) What was the mechanism of this effect? We proposed the following hypotheses: (1) Salt and sweetener increased feed intake of livestock and decreased the biomass of plant community, while bitters did the opposite. (2) Taste agents can regulate the relationship between plant species, and different taste agents can enhance or weaken the competitiveness of the different plants. In order to test the hypothesis, a grazing experiment with yaks was conducted in the alpine meadows of the Tibetan Plateau. Denatonium benzoate (Bitterant), NaCl (Salt), and sodium cyclamate (Sweetener) were sprayed onto the meadows twice a year, along with a control treatment of tap water. The results showed that (1) Salt increased the feed intake of yak significantly; bitterant decreased the feed intake of livestock and increased the biomass of plant community. (2) Salt increased the Pielou index of the plant community significantly. (3) The stability of plant community ranking from high to low is as follows: Control > Bitterant > Sweetener > Salt. (4) Bitterant and salt improved grazing tolerance of grassland and salt reduced the edibility of grassland. (5) The use of taste agents reduced the correlation between dominant species and led to the fragmentation of the relationship chain. The results of this study will provide a theoretical basis for using taste agents to regulate the community, species biodiversity management, restoration of degraded grassland, promoting utilization of grassland though controlling livestock selectivity.

Diet Preference, Feed Efficiency and Expression of the Sodium-Dependent Glucose Transporter Isoform 1 and Sweet Taste Receptors in the Jejunum of Lambs Supplemented with Different Flavours

This study investigated the effect of dietary flavour supplements on the preference, feed efficiency and expression of the sweet taste receptor family 1 members 2 and 3 (T1R2 + T1R3), and sodium-glucose linked transporter 1 (SGLT1) genes in the lambs' small intestines. Eight, five-month-old, Israeli crossbred Assaf lambs were offered 16 different non-nutritive commercial flavours in rolled barley and ground corn. Capsicum and sucram were the most preferred non-aroma flavours (p = 0.020), while milky (p < 0.001) was the most preferred powder-aroma flavour. For the metabolic and relative gene expression study, eight lambs were randomly assigned to either sucram, capsicum, a mix containing sucram and capsicum at 1:1 ratio or no flavour for control in a 4 × 2 cross-over design. The total collection of urine (females only), faeces and refusals was carried out, and T1R2, T1R3 and SGLT1 relative gene expression evaluated from the proximal jejunum biopsies. Flavour had no significant effect on the feed intake (p = 0.934), but capsicum increased the average daily weight gain per metabolic body weight (p = 0.049). The T1R3 gene was expressed highest in the mix treatment (1.7; p = 0.005). Collectively, our findings indicate that flavours can be used to motivate feed acceptance and improve the weight gain in lambs.

Selection of Forage Resources by Juvenile Goats in a Cafeteria Trial: Effect of Browsing Experience, Nutrient and Secondary Compound Content

Grazing/browsing goats ingest a diverse diet selected from the forage resources available in the range/paddock intending to meet their nutritional requirements. Intake and selection of any given forage can be modified by several factors, such as its nutrient content, including secondary compounds, as well as its biomass availability in the environment. The animal’s previous browsing experience can also be an important factor driving intake and selection. Therefore, the present study evaluated all these factors as well as their interaction. The results showed that the goats’ browsing experience guided the selection and intake towards those forage resources of better nutritional quality when there was no restriction in forage supply, as is the case for cafeteria trials. Goats with browsing experience showed their ability to limit secondary compounds and optimize their selection and intake for plants with better digestibility. This cafeteria protocol made it possible to identify the selection and consumption pattern of plant species with limited availability in the natural vegetation. This methodology could help identifying the forage resources that may be useful for small ruminant feeding, versus those resources that are not consumed by goats despite having a suitable chemical composition and in vitro digestibility or a high abundance.

Abstract

We evaluated the effect of browsing experience, nutritional quality and secondary compounds of forage resources, and the interaction between these factors on the selection and intake of goats in a cafeteria trial. Twelve juvenile Criollo goats from 7 to 9 months of age, weighing 22 ± 3 kg, were divided into two groups: (a) browser goats group (n = 6, BG), and (b) naïve goats group (n = 6, NG), formed according to their previous browsing experience (with and without, respectively). Animals were housed in individual pens. The cafeteria experiment lasted 21 days considering pen adaptation, foliage adaptation, and measurements, which included the selection index (SI) of experimental forage resources (Chesson’s alpha) and their dry matter intake (DMI/Kg^0.75), using a multiple Latin square design. Furthermore, correlation and regression analyses were used to assess the relationship between the aforementioned factors. The NG did not show any selection pattern, while the BG selected Piscidia piscipula and Senegalia gaumeri (p = 0.0002). The BG consumed smaller amounts of secondary compounds compared to NG (p = 0.0001). In the BG, the flavonoids affected negatively their selection (R² = 97.51, p = 0.0001), while the DMI was affected by in vitro DM digestibility and flavonoids (R² = 99.85; p = 0.0001). For the NG, the crude protein and organic matter contents were associated with DMI, but none had a significant relationship with SI. The BG selected and consumed forages with suitable nutritional quality avoiding those with high content of secondary compounds such as flavonoids. Conversely, NG did not show a clear pattern for their selection or intake.

Pellets Inoculated with Bacillus amyloliquefaciens H57 Modulates Diet Preference and Rumen Factors Associated with Appetite Regulation in Steers

The probiotic Bacillus amyloliquefaciens strain H57 (H57) may reinforce preferential feeding behaviour by changing ruminal fermentation parameters. Four rumen-fistulated steers were offered feedlot pellets, with (H57) or without (Control, C) the H57 probiotic. Half of the pellets were added to the rumen, at time zero, and half were offered for oral consumption over the next six hours, to make four feeding treatments. Each steer was offered each treatment over time. Each offering was over six days, with rumen fluid sampled over the last three days for a six-hour period per day. A five-minute preference test was performed at the end of each rumen sampling period by simultaneously offering the steers 4 kg of H57 and C pellets. The steers preferred the H57 over the C pellets but the route of offering (rumen versus oral) had no effect on preference. Ruminal pH and molar proportions of iso-butyrate and iso-valerate were higher and ammonia concentrations tended to be greater for H57 compared to C. However, since the route of offering had no effect on preference, the hypothesis, that ruminal fermentation changes take precedence over oral (taste) sensations in driving preference, was not supported.

Abstract

This study examined whether the probiotic Bacillus amyloliquefaciens strain H57 (H57) affects ruminal fermentation parameters that exercise post-ingestive feedback appetite control mechanisms. A 4 × 4 Latin square design was used to separate pre- and post-ingestive effects of H57 in four rumen-fistulated steers. The steers were offered a set amount of feedlot pellets, inoculated with H57 or without H57 (control, C). Half of the total amount of pellets fed were introduced intra-ruminally (r), and then the remaining pellets were orally consumed (o) to make four feeding treatments: H57r/H57o, H57r/Co, Cr/H57o and Cr/Co. Rumen fluid was sampled at 2, 4 and 6 h after feeding. Preference behaviour was tested immediately after the 6 h rumen fluid sampling by simultaneously offering the steers 4 kg of each of H57 and C pellets in adjacent troughs for 5 min. Steers preferred the pellets with added H57 over the C pellets (56:44; p < 0.001) and their preferences were not affected by the treatment protocol imposed to separate post- from pre-ingestive effects (p > 0.05). Steers fed H57 pellets had higher ruminal pH, molar proportions of iso-butyrate and iso-valerate (p < 0.05) and tended to have greater ruminal ammonia concentrations compared to those fed C pellets (p < 0.1). However, post-ingestive signals did not affect diet preference more than pre-ingestive signals.

Feed Preference Response of Weaner Bull Calves to Bacillus amyloliquefaciens H57 Probiotic and Associated Volatile Organic Compounds in High Concentrate Feed Pellets

The aim of this work was to confirm that a new probiotic (Bacillus amyloliquefaciens, H57) in stock-feed pellets make cattle want to eat them faster and that H57 increased preference by reducing the rate of microbial spoilage in stored pellets thereby changing the odour of the pellets. Odour was manipulated by manufacturing standard pellets with or without added H57 and then storing half of each for 4 months either in a chiller or at room temperature to make 4 different batches. These were offered, per day for 4 weeks, across 8 automated feed bunks, 1 pellet batch per 2 bunks, in amounts enough to satisfy the daily needs of a single group of 16 young bulls. A given bull could have chosen any of 4 feed batches to eat. The feed batches in the bunks that were emptied the fastest were considered to contain the most preferred batch. The H57 was found to improve preference for pellets but only when they were stored at room temperature and not if they were stored in a chiller. The most preferred pellets had the least concentration of microbial volatile organic compounds. This was consistent with our expectation that H57 inhibits microbial spoilage in feed pellets to improve shelf life.

Abstract

This study tested the hypothesis that Bacillus amyloliquefaciens strain H57 (H57) improves preference by reducing the development of microbial volatile organic compounds (mVOCs) in feed pellets. Sixteen bull calves were, for 4 weeks, provided equal access to a panel of 8 automated feed bunks in a single paddock with some hay. Each bunk contained pellets with (H57) or without (Control) the H57, each aged for 4 months at either ambient or chiller temperature. Each treatment was changed to a new bunk pair position weekly. Relative preference was determined according to weight of pellets remaining per hour per treatment bunk pair per 24 h. Pellets were analysed for volatile organic compounds (VOCs) and the concentrations tested for correlation with relative preference. Calves showed the lowest preference (p < 0.0001) for the Control/Ambient treatment whereas preference for all other treatments (H57/Ambient; H57/Chiller; Control/Chiller) was similar. The Control/Ambient treatment odour profile grouped differently to the other 3 treatments which grouped similarly to each other. Up to 16 mVOCs were determined to have potential as pre-ingestive signals for the extent of microbial spoilage. Further studies are required to find which combination of these mVOCs, when added to pellets, results in feed aversion.

How Can We Assess Positive Welfare in Ruminants?

Until now, most research has focused on the development of indicators of negative welfare, and relatively few studies provide information on valid, reliable, and feasible indicators addressing positive aspects of animal welfare. However, a lack of suffering does not guarantee that animals are experiencing a positive welfare state. The aim of the present review is to identify promising valid and reliable animal-based indicators for the assessment of positive welfare that might be included in welfare assessment protocols for ruminants, and to discuss them in the light of the five domains model, highlighting possible gaps to be filled by future research. Based on the existing literature in the main databases, each indicator was evaluated in terms of its validity, reliability, and on-farm feasibility. Some valid indicators were identified, but a lot of the validity evidence is based on their absence when a negative situation is present; furthermore, only a few indicators are available in the domains of Nutrition and Health. Reliability has been seldom addressed. On-farm feasibility could be increased by developing specific sampling strategies and/or relying on the use of video- or automatic-recording devices. In conclusion, several indicators are potentially available (e.g., synchronisation of lying and feeding, coat or fleece condition, qualitative behaviour assessment), but further research is required.

Chicken or the Egg: The Reciprocal Association Between Feeding Behavior and Animal Welfare and Their Impact on Productivity in Dairy Cows

Feeding behavior in dairy cattle has a significant impact on feed efficiency, which is important for increasing the profitability of livestock and, at the same time, reducing the environmental impact. Feeding behavior can be measured by feeding time, meal duration, meal frequency, feeding rate, and rumination time. Higher feed intake is related to lower feed efficiency; whereas, an increase in feeding time facilitates chewing, reduces feed particle size and increases its digestibility. More frequent and shorter meals are usually associated with a more efficient use of feed due to improvement of feed digestibility. Rumination time is positively associated with milk production. Impaired health is associated with variations in feeding behavior, which can be used to identify and predict some diseases such as ketosis, mastitis, or lameness. Changes in rumination time are also a reliable indicator of mastitis, lameness, ketosis, abomasal displacement, and the onset of calving. In addition to the cause-effect relationship between disease and changes in feeding behavior, there are also some cases in which changes in feeding behavior may lead to an increased risk of disease, as exemplified by the relationship of feeding rate with sub-acute ruminal acidosis. Feeding behavior is regulated by internal and external factors and some of them are relevant for animal welfare. The main welfare-associated factors influencing feeding behavior are social behavior and temperament, and environmental effects. Cattle are social animals and hierarchy has a notable impact on feeding behavior, especially when access to feed is limited. Competition for feed causes a reduction in the average feeding time but increases feeding rate. Excitable animals visit the feeder more often and spend less time per meal. High environmental temperature affects feeding behavior, as heat-stressed cattle change their feeding pattern by concentrating the feeding events in crepuscular hours, leading to an increased risk of sub-acute ruminal acidosis. In conclusion, feeding behavior is a determinant feature for improving efficiency, productivity and welfare of dairy cattle. Routine assessment of feeding behavior allows monitoring of health and production status of dairy cattle at the individual and farm level, which is a useful tool to optimize the management of livestock.

Dairy cattle welfare as a result of human-animal relationship – a review

Despite the various concepts of human-animal relationship, the welfarist approach to this problem is one of the most often considered in theory and used in practice. When dealing with issues related to dairy cattle welfare (DCW), it is necessary to take into account both the reality characteristic for animals used to obtain milk (e.g. the problem of automatic milking of cows) and for slaughter cattle (e.g. slaughter of culled animals). It is not surprising, therefore, that issues related to DCW are the focus of the attention of the public, researchers, breeders as well as the dairy and meat industries. The aim of this article was to possibly most comprehensively cover the above-mentioned issues, although due to its huge scope it was obviously necessary to limit the article to what I think are currently most important issues. That is why in the review I (1) characterized the issues related to the division of human responsibility for DCW; (2) discussed the importance of technology to human-animal relationship; (3) elaborated the matter of stress, emotionality of animals and their cognitive abilities in the aspect of “negative” and “positive” DCW; (4) considered the possibilities of non-invasive assessment of animal welfare in the future and (5) discussed topics related to improving the conditions of the slaughter of animals. In summary, it was proposed paying more attention than has been paid until now, to the assessment of positive DCW in scientific research and breeding practice. I also drew attention to the necessity of reliable information flow on the line of the breeder/milk producer - industry - consumer, as negligence in this area is one of the reasons for public disinformation regarding the level of animal welfare.

How goats avoid ingesting noxious insects while feeding

As mammalian herbivores feed, they often encounter noxious insects on plants. It is unknown how they handle such insects. We experimentally examined the behavioural responses of goats to the noxious spring-webworm (Ocnogyna loewii), and manipulated their sensory perception to reveal the process of insect detection. Goats did not avoid plants with webworms, demonstrating a remarkable ability to sort them apart from the plant (98% of webworms survived). Initial detection of webworms involved tactile stimulation, done by repeatedly touching the leaves with the muzzle. This enabled them to pick webworm-free leaves. If the goats picked up leaves with a webworm, they shook or discarded the leaf. They spat out webworms that entered their mouths, after detecting them by touch and taste. By using their keen senses and efficient behaviours, goats are able to feed while accurately excluding insects. These findings highlight the importance of direct interactions between mammalian herbivores and insects.

Liquid residue of cassava as a replacement for corn in the diets of sheep

The effect of the replacement of corn with the liquid residue of cassava was evaluated at levels of 0, 25, 50, 75, and 100% in the diets of sheep on the intake and nutrient digestibility, weight gain, and carcass characteristics. Forty non-castrated crossbred Santa Ines sheep at 4 months of age and an initial body weight of 19.5 ± 2.5 kg were slaughtered after 90 days at the feedlot. A quadratic effect was found for intake of dry matter (DM), organic matter (OM), non-fiber carbohydrates (NFC), and digestible OM, with estimated values of 1130, 1080, 558, and 777 g/day at 11.2, 11.9, 30.8, and 2.18% of replacing corn with liquid residue of cassava, respectively. However, the intake of crude protein (CP) and neutral detergent fiber (NDF) decreased linearly around 105 to 45.3 g CP/day and 413 to 284 g NDF/day. The same effect was found for digestibility of DM (715 to 649 g/kg), OM (725 to 669 g/kg), CP (801 to 759 g/kg), and NDF (486 to 379 g/kg), which decreased linearly as the dietary liquid residue of cassava increased. The maximum average daily gain (174 g/day) was estimated with a 22.4% replacement level. Liquid residue of cassava can replace up to 25% of the corn in the diets of sheep, since it was possible to obtain a gain above 100 g/day, which is considered to be satisfactory.

Feeding behaviour in ruminants: a consequence of interactions between a reward system and the regulation of metabolic homeostasis

Feeding behaviour, through both diet selection and food intake, is the predominant way that an animal attempts to fulfil its metabolic requirements and achieve homeostasis. In domestic herbivores across the wide range of production practices, voluntary feed intake is arguably the most important factor in animal production, and a better understanding of systems involved in intake regulation can have important practical implications in terms of performance, health and welfare. In this review, we provide a conceptual framework that highlights the critical involvement and interconnections of two major regulatory systems of feeding behaviour: the reward and the homeostatic systems. A review of the literature on ruminants and rodents provides evidence that feeding behaviour is not only shaped by homeostatic needs but also by hedonic and motivational incentives associated with foods through experiences and expectations of rewards. The different brain structures and neuronal/hormonal pathways involved in these two regulatory systems is evidence of their different influences on feeding behaviours that help explain deviation from behaviour based solely on satisfying nutritional needs, and offers opportunities to influence feeding motivation to meet applied goals in livestock production. This review further highlights the key contribution of experience in the short (behavioural learning) and long term (metabolic learning), including the critical role of fetal environment in shaping feeding behaviour both directly by food cue–consequence pairings and indirectly via modifications of metabolic functioning, with cascading effects on energy balance and body reserves and, consequently, on feeding motivation.

The effect of palatability of protein source on dietary selection in dairy calves

Evidence has shown that soybean meal is perceived as more palatable than canola meal by dairy calves in short-term preference tests. This study evaluated the effect of protein source on longer-term dietary selection of dairy calves. In experiment 1, 40 Holstein bull calves (11.4 ± 4.3 d of age) were randomly assigned to 1 of 2 choice diets for 6 wk: base starter pellet (S; 12% crude protein; CP) and high-protein pellet (40% CP) containing either (1) soybean meal (SB) or (2) canola meal (CM). In wk 7 to 8, all calves were offered a single pelleted diet containing the protein source to which they were previously exposed. In experiment 2, 22 Holstein bull calves (9.9 ± 4.6d of age) were offered, for 6 wk, a choice of 2 mixed pelleted diets: (1) 70% S and 30% SB (SB mix), or (2) 70% S and 30% CM (CM mix). In wk 7 to 8, calves were randomly assigned to 1 of 2 choice diets, as in experiment 1: (1) SB + S, or (2) CM + S. All feeds were provided ad libitum. Calves received 6 L/d of milk replacer [0.75 kg/d of dry matter (DM)] for the duration of both experiments. Feed intake was recorded daily and calves were weighed every 14 d. Feeds were sampled weekly to analyze DM and nutrient intake. Mixed diets in experiment 2 were analyzed for CP in wk 4 and 6 to assess feed sorting (calculated as actual CP intake as a percentage of predicted intake). In experiment 1, calves offered SB + S in wk 1 to 6 consumed more high-protein pellet than calves offered CM + S [73 vs. 42% of DM intake (DMI)] and, consequently, more CP (168 vs. 117 g/d). Solid feed DMI and average daily gain were similar between treatments. When offered a single diet in wk 7 to 8, calves offered starter containing soybean meal increased intake to a greater extent than calves offered the starter containing canola meal. In experiment 2, calves preferred the SB mix to CM mix (preference ratio: 0.7). Calves consumed more CP than predicted from SB mix in wk 4 and 6 (108 ± 2.0%), indicating that they were sorting in favor of SB. In contrast, calves consumed less CP than predicted from CM mix in wk 4 (81.48 ± 4.1%), indicating that they were sorting against CM. When assigned to choice treatments in wk 7 to 8 of experiment 2, calves offered SB + S consumed more protein pellet than calves offered CM + S (81 vs. 31% DMI) and consumed more CP (378 vs. 196 g/d). Average daily gain was greater for calves offered SB + S but DMI was similar. Overall, these results suggest that dietary selection was influenced by innate feed preferences, and milk-fed calves may not be sensitive to protein imbalances in their diet.
