Abstract
One of the most consumed foods is milk and milk products, and guaranteeing the suitability of these products is one of the major concerns in our society. This has led to the development of numerous sensors to enhance quality controls in the food chain. However, this is not a simple task, because it is necessary to establish the parameters to be analyzed and often, not only one compound is responsible for food contamination or degradation. To attempt to address this problem, a multiplex analysis together with a non-directed (e.g., general parameters such as pH) analysis are the most relevant alternatives to identifying the safety of dairy food. In recent years, the use of new technologies in the development of devices/platforms with optical or electrochemical signals has accelerated and intensified the pursuit of systems that provide a simple, rapid, cost-effective, and/or multiparametric response to the presence of contaminants, markers of various diseases, and/or indicators of safety levels. However, achieving the simultaneous determination of two or more analytes in situ, in a single measurement, and in real time, using only one working 'real sensor', remains one of the most daunting challenges, primarily due to the complexity of the sample matrix. To address these requirements, different approaches have been explored. The state of the art on food safety sensors will be summarized in this review including optical, electrochemical, and other sensor-based detection methods such as magnetoelastic or mass-based sensors.

Abstract
Polydiacetylene (PDA) is very suited for sensitively detecting large biomolecules, and its unique chromatic properties enable visual read-out. However, application to the selective detection of small molecules remains challenging. Here, bifunctional ligands are studied to amplify the color change of PDA for biorecognition of small molecules for the smartphone-based detection of diethylstilbestrol (DES). PDA is decorated with streptavidin (PDA-SA, blue), and biotin-modified DES (bio-DES) is prepared as a bifunctional ligand to couple with PDA-SA and DES antibody. Since multiple bio-DES can bind to a single SA, then multiple SAs on PDA lead to an increased surface coverage of the vesicle. In samples without DES, PDA-SA-bio-DES-DES antibody complexes will form, leading to a color transition (blue to red); this color transition is greatly amplified by antibody-induced aggregation of the complexes. When DES is present, aggregation is inhibited due to competition for the antibody and PDA-SA-bio-DES retains its blue color. A linear relationship (0.4-1250 ng mL-1) is found between the colorimetric response and the logarithmic DES concentration, with adequate selectivity, accuracy (82.24-118.64%), and precision (below 8.24%). Finally, a paper-based DES PDA biosensor is developed with visual and smartphone-based detection limits of 10 ng mL-1 and 0.85 ng mL-1 in water, respectively.

Abstract
There is an increasing need for fast and accurate assessment of various health conditions, where polydiacetylenes (PDA), having unique stress-sensitive optical properties, have great potential. When the conjugated backbone of PDA is disturbed by steric repulsion between the receptor-target complexes formed at the PDA surface via specific recognition events, the bandgap of PDA increases and produces color change and fluorescent emission as a dual sensory signal. However, this detection mechanism suggests an intrinsic sensitivity limit of PDA platform because unless adjacent receptors are occupied by target molecules no signal is anticipated. A novel approach to improve the sensitivity and limit of detection of PDA sensors has been developed by preoccupying the surface of PDA liposomes with an optimized amount of artificial target molecules named as dummy molecules. The sensitivity and limit of detection (LOD) showed large improvement by the surface-bound dummy molecules. In addition, the dummy strategy was synergically integrated with another sensitivity enhancing method with a different working mechanism in a PDA sensor for Neomycin detection. When optimized, the LOD of the PDA sensor was improved to 7 nM from 80 nM of the control and the signal intensity increased consistently throughout the entire tested concentration range of the target Neomycin. Finally, the general applicability of the dummy strategy to other target molecules was successfully confirmed by implementing the dummy strategy in a PDA sensor for Surfactin detection.

Abstract
Polydiacetylene (PDA) is a versatile polymer that has been studied in numerous fields because of its unique optical properties derived from alternating multiple bonds in the polymer backbone. The conjugated structure in the polymer backbone enables PDA to possess the ability of blue-red colorimetric transition when π-π interactions in the PDA backbone chain are disturbed by the external environment. The chromatic property of PDA disturbed by external stimuli can also emit fluorescence in the red region. Owing to the unique characteristics of PDA, it has been widely studied in facile and label-free sensing applications based on colorimetric or fluorescence signals for several decades. Among the various PDA structures, membrane structures assembled by amphiphilic molecules are widely used as a versatile platform because facile modification of the synthetic membrane provides extensive applications, such as receptor-ligand interactions, resulting in potent biosensors. To use PDA as a sensory material, several methods have been studied to endow the specificity to PDA molecules and to amplify the signal from PDA supramolecules. This is because selective and sensitive detection of target materials is required at an appropriate level corresponding to each material for applicable sensor applications. This review focuses on factors that affect the sensitivity of PDA composites and several strategies to enhance the sensitivity of the PDA sensor to various structures. Owing to these strategies, the PDA sensor system has achieved a higher level of sensitivity and selectivity, enabling it to detect multiple target materials for a full field of application.

Abstract
Diacetylene derivatives exhibit solid-state polymerization to polydiacetylene initiated by UV light or γ-ray irradiation. The activation of the photopolymerization relies on the monomer diynes arrangement. Recently, it has been demonstrated that the first mechanoresponsive bisamide substituted diacetylenes (DAs) show dramatic switching from light-inert to light-reactive states at a given pressure. The origin of this unique phenomenon was apparently related to the pressure-sensitive crystalline transition in DAs, but the molecular mechanism remains elusive. To obtain more insight, herein a series of DAs with varying terminal alkyl spacer length is presented, and their molecular structural effect on the intermolecular hydrogen bonding and steric repulsion is examined. In pristine states, even-parity DAs were inactive upon UV irradiation (λ=254 nm) unless external pressure was applied. By contrast, odd-parity DAs were easily polymerized upon UV irradiation without pressure application. However, the pressure-induced crystalline phase transition exhibiting photopolymerization was valid for all DAs regardless of their alkyl spacer length. A systematic investigation revealed that the terminal alkyl spacer length, especially its odd/even parity plays a key role in determining the intrinsic intermolecular hydrogen-bonding nature of DA crystals and the resultant molecular packing. In addition, the relevant thermochromic behavior was also observed from photopolymerized polydiacetylenes.

Abstract
Quantitative and anisotropic mechanochromism of polydiacetylene over nanoscale distances remains unaddressed even after 50 years of extensive research. This is because its anisotropic structure on substrates necessitates the application of both vertical and lateral forces (shear forces) to characterize it, whereas atomic force microscopy, which is the usual technique used to investigate nanoscale forces, is only capable of quantifying vertical forces. In this study, we address this lacuna by utilizing quantitative friction force microscopy that measures lateral forces. Our data confirm that polydiacetylene reacts only to lateral forces, F//, and disprove the previously claimed hypothesis that the edges of the polymer crystals exhibit higher force sensitivity than the rest of the crystal. In addition, we report a correlation between mechanochromism and thermochromism, which can be attributed to the fact that both work and heat are different means of providing the same transition energy.

Abstract
Layered materials, alternate stackings of two or more components, are found in a wide range of scales. Chemists can design and synthesize layered structures containing functional units. The soft-type layered materials exhibit characteristic dynamic functions originating from two-dimensional (2D) anisotropy and structure flexibility. This feature article focuses on "intercalation" and "flexibility" as two new perspectives for designing soft layered materials. Intercalation of guests is a characteristic approach for design of layered structures. Flexibility is an important factor to control the dynamic functions of the layered structures. As a model case, the intercalation-induced tunable stimuli-responsive color-change properties of layered polydiacetylene (PDA) are introduced to study the impact of the intercalation and flexibility on the dynamic functions. Recently, layered materials have drastically expanded the research area from conventional rigid inorganic compounds to new self-assembled nanostructures consisting of organic components, such as polymers, metal-organic frameworks, and covalent-organic frameworks. These new layered architectures have potentials for exhibiting dynamic functions originating from the structure flexibility beyond the static properties originating from classical intercalation and host-guest chemistries. Therefore, intercalation and flexibility chemistries of soft layered materials are regarded as new perspectives for design of advanced dynamic functional materials.

Abstract
Emergence of thermoresponsive and reversible color changes at low temperature is a challenging target. In general, it is not easy to induce sufficient dynamic motion of rigid molecules including chromophore at a lower temperature. The present work shows unusually low-temperature color-change properties originating from the dynamic motion of rigid conjugated polymer in solid state. The layered composites of polydiacetylene (PDA) and guest l-arginine (L-Arg) (PDA-(L-Arg)) exhibit temperature-responsive gradual color changes with reversibility in the range of 123-333 K in solid crystalline state. The dynamic properties are induced by gradual and reversible distortion of the π-conjugated main chain in response to temperature. The tuned flexibility of the layered structure facilitates motion of the rigid π-conjugated molecule at low temperature. The PDA-(L-Arg)-coated substrates are applied to visualization and quantification of 2D and 3D temperature distributions generated by cooling with liquid nitrogen. These thermographic devices afford to image lower temperature range than typical infrared thermography. The present work indicates potentials of layered architectures with tunable flexibility for emergence of dynamic properties.

Abstract
Visualization and quantification of invisible lights, such as microwaves, are significant for their safe use. In general, a sensitizer material combined with a transistor is used as electronic devices for the measurement. Here, we developed a thermoresponsive color-change hydrogel of poly(N-isopropylacrylamide) (PNIPAAm) cross-linked by a layered organic composite based on polydiacetylene (PDA) for visualization and colorimetric quantification of microwaves. The layered PDA in the PNIPAAm hydrogel showed the temperature-dependent gradual color change with heating. Irradiation of microwaves induced the color change of PDA through heating of water in the hydrogel and subsequent volume shrinkage. The color of the gel was applied to visualize the temperature distribution with increasing irradiation time of microwaves. Moreover, the power of the irradiated microwave was quantified by time to the complete color change of the gel. The results indicate that the stimulus conversion process has potentials for development of a variety of imaging and quantification devices based on the layered PDA.

Abstract
A phase-segregated composite of polystyrene (PSt) and layered polydiacetylene (PDA) was formed through simultaneous polymerization and crystallization. As the motion of PSt chains with glass transition is transferred to that of PDA, the color change was achieved by the shortening of the conjugation length with deformation of the layered structure.

Abstract
The cation-directed self-assembly process has emerged as a fascinating approach for constructing supramolecular architectures and manifested a diverse range of assembly related applications. Herein, we synthesized a macrocyclic structure containing bis-amidopyridine and photopolymerizable diacetylene template, PyMCDA. Owing to the metal coordination affinity of bis-amidopyridine and the π-π stacking characteristic of diacetylene template and complementary to the cyclic molecular framework, Cs+-directed organic nanotubes are generated via unidirectional self-assembly of PyMCDA. The monomeric PyMCDA nanotubes are transformed into the covalently cross-linked chromogenic polydiacetylene nanotubes (PyMCPDA-Cs+) by UV-promoted topochemical polymerization. The result of a metal-ligand coordination characteristic, geometric parameters in solid-state assemblies, and topochemical polymerization behavior reveals a generation of Cs+ ion inserted nanotubes. Interestingly, PyMCDA-Cs+ nanotubes display thermochromic property with a brilliant blue-to-red color transition.

Abstract
Visualization and quantitative detection of external stimuli are significant challenges in materials science. Quantitative detection of friction force, a mechanical stress, is not easily achieved using conventional stimuli-responsive materials. Here, the quantitative detection of friction force is reported, such as the strength and accumulated ammount, from the visible color of organic layered composites consisting of polydiacetylene (PDA) and organic amines without an excitation light source. The composites of the layered diacetylene monomer crystal and interlayer organic amine are synthesized through self-organization from the precursor solution. After topochemical polymerization, the layered composites based on PDA show tunable temperature-responsive and mechanoresponsive color-change properties depending on the types of interlayer amines. The layered composites are homogeneously coated on a filter paper. The change in color of the paper is quantitatively used to visualize the strength and accumulated amount of the applied friction force. Furthermore, writing pressure is measured by friction force using the paper device.

Abstract
In this study, polydiacetylene (PDA) is embedded in electrospun polyvinylidene fluoride (PVDF) nanofibers for the preparation of mats with dual colorimetric and piezoelectric responses. The diacetylene monomers are self-assembled during the electrospinning process. The PDA-embedded PVDF nanofibers in the blue phase are obtained via photo-polymerization upon UV-light irradiation. The colorimetric transition of the nanofibers is studied as a function of temperature using a spectrophotometer. The morphology and crystal polymorphism of the nanofibers are investigated. The results show that the addition of PDA increases the diameter of the nanofibers due to the increase in the electrospinning solution viscosity. The results of Fourier transform infrared and wide angle X-ray diffraction demonstrate that PDA has the effect of inhibiting the growth of non-polar α-phase crystals, while promoting the growth of the polar β-phase. However, the red phase of PDA-embedded PVDF exhibits a lower intensity of the β-phase in comparison to that of the blue phase. In fact, the blue-to-red color transition of the PDA-embedded electrospun PVDF nanofibers is accompanied by the variation of piezoelectric signaling caused by variations in the β-phase. This phenomenon creates great potential in commercial detection sensors in addition to their colorimetric detection properties.

Abstract
A bolaamphiphile with diacteylene mesogen unit and l-glutamic acid as the terminal group was newly designed and its self-assembly was investigated. The compound formed hydrogels with water upon heating and cooling. The as-formed gel could be switched to a dispersion upon mechanical shaking. Both the gel and the water dispersion undergo polymerization upon UV irradiation. However, the gel turned to blue and then purple red color, while the dispersion turned red directly. Using AFM and SEM observations, it was found that nanohelix was formed in the as-prepared gel and polymerized blue gels, while nanobelt was formed from the water dispersion. The blue nanohelix was stable but showed selective response to certain amino acids and nucleobases. It was found that the blue gel underwent shrinkage when reacting with charged amino acids such as Glu, Asp, Lys, Arg and His. In the shrunk gel, the solution phase further turned pink in the case of His and Arg. In addition, the blue gel showed also shrinkage and color change when reacting with cytosine.
