Abstract
Six new pyrazolylamidino Cu(II) complexes are synthesized directly from the reactions of Cu(X)2 salts (X = ClO4-, BF4-, or Cl-) and pyrazole (pzH) in nitrile solution (RCN, R = Me or Et) at 298 K via the metal-mediated coupling of RCN with pzH: [Cu(HNC(R)pz)2(X)2] (X = ClO4- or BF4-, R = Me, 1 or 7 and Et, 2 or 8, respectively) and dichloro Cu(II) complexes [Cu2Cl2(μ-Cl)2(HNC(Me)pz)2] (3) and [CuCl2(HNC(Et)pz)] (4). Four more new complexes, [Cu2(μ-Cl)2(HNC(Me)pz)2(pzH)2][X]2 (X = ClO4-, 5 and BF4-, 9) and [Cu2(μ-Cl)2(HNC(Et)pz)2(pzH)2(X)2] (X = ClO4-, 6 and BF4-, 10), are obtained indirectly from the anion substitution reaction with Cl- ions in 1 and 7, and 2 and 8, respectively. All complexes are characterized by EA, FTIR, UV-vis and EPR spectroscopy and X-ray crystallographic analyses. HNC(Et)pz or pzH is unobserved in both the nitrile-exchange reaction of 2 to d6-1 and the anion-substitution reaction of 2 to d6-5 in the CD3CN solution. The 1H NMR results reveal that the pzH-RCN coupling is intramolecular and reversible on a Cu(II) center. The crystal structures of these complexes show diverse supramolecular assemblies through imino NH⋯anion hydrogen bonds and pyrazolylamidino pz-pz (π⋯π) and pz-Cu(II) (π⋯metal) interactions. EPR results suggest weak magnetic couplings between Cu(II) centers in the polynuclear Cu(II) complexes. The yield and rate of the formation of 1 are higher in the reaction of Cu(ClO4)2 with a 4-fold molar excess of pzH compared with a 2-fold excess, indicating that [Cu(pzH)4]2+ is the more active species for pzH-RCN coupling. The highest rate for the formation of 1 is achieved when [Cu(pzH)4(ClO4)2] is used in MeCN solution. Thus, a plausible synthetic path for synthesizing pyrazolylamidino Cu(II) complexes is established. An intermediate species, [Cu(HNC(Me)pz)2(pzH)2][ClO4]2 (1a), is proposed for the synthetic process based on spectroscopic studies and DFT calculations. The reaction of [Cu(pzH)4X2] (X = ClO4-, Cl-, NO3-, or BF4-) in MeCN solution suggests that the lability of coordinated anions upon nitrile substitution affects the rate of the formation of bis-pyrazolylamidino Cu(II) complexes.

Abstract
Hexavalent uranium is ubiquitous in the environment. In view of the chemical and radiochemical toxicity of uranium(VI), a good knowledge of its possible interactions in the environment is crucial. The aim of this work was to identify typical binding and sorption characteristics of uranium(VI) with both the pure bovine milk protein β-casein and diverse related protein mixtures (caseins, whey proteins). For comparison, selected model peptides representing the amino acid sequence 13-16 of β-casein and dephosphorylated β-casein were also studied. Complexation studies using potentiometric titration and time-resolved laser-induced fluorescence spectroscopy revealed that the phosphoryl-containing proteins form uranium(VI) complexes of higher stability than the structure-analog phosphoryl-free proteins. That is in agreement with the sorption experiments showing a significantly higher affinity of caseins toward uranium(VI) in comparison to whey proteins. On the other hand, the total sorption capacity of caseins is lower than that of whey proteins. The discussed binding behavior of milk proteins to uranium(VI) might open up interesting perspectives for sustainable techniques of uranium(VI) removal from aqueous solutions. This was further demonstrated by batch experiments on the removal of uranium(VI) from mineral water samples.

Abstract
Single crystals are typically brittle, inelastic materials. Such mechanical responses limit their use in practical applications, particularly in flexible electronics and optical devices. Here we describe single crystals of a well-known coordination compound-copper(II) acetylacetonate-that are flexible enough to be reversibly tied into a knot. Mechanical measurements indicate that the crystals exhibit an elasticity similar to that of soft materials such as nylon, and thus display properties normally associated with both hard and soft matter. Using microfocused synchrotron radiation, we mapped the changes in crystal structure that occur on bending, and determined the mechanism that allows this flexibility with atomic precision. We show that, under strain, the molecules in the crystal reversibly rotate, and thus reorganize to allow the mechanical compression and expansion required for elasticity and still maintain the integrity of the crystal structure.

Abstract
It is well established that a wide range of reductones is formed in the course of the Maillard reaction and that these substances contribute to the oxidative stability of food. The aim of this study was to analyze 12 important heterocyclic intermediates with and without reductone structure as well as structurally related substances under equal conditions to compare their antioxidant properties in detail. For this purpose, five methods were selected including photometrical methods such as the trolox equivalent antioxidant capacity assay and an electron paramagnetic resonance spectroscopic method. Reductones with furan-3-one structure and 2,3-dihydro-3,5-dihydroxy-6-methyl-4H-pyran-4-one were reducing in all assays, whereas isomaltol and maltol did not react in assays based on the reduction of metal ions because of their complexing abilities. The introduction of protecting groups to the free hydroxyl functions of selected reductones could nearly eliminate their reducing abilities. In addition, the oxidation products of the different reductive heterocycles were compared after treatment with iodine. Mainly short-chained organic acids such as lactic, glycolic, and glyceric acid are formed as result of the degradation, which indicates 1,3-dicarbonyl cleavage reactions of corresponding tricarbonyl compounds as intermediates of the oxidation.

A mixed valent heterometallic CuII/NaI coordination polymer (1) is generated by the reaction of a Schiff base ligand, (6,6′-(1E,1′E)-(2-hydroxypropane-1,3-diyl)bis(azan-1-yl-1-ylidene)bis(methan-1-yl-1-ylidene)bis(2-methoxyphenol)) with copper(ii) acetate and sodium perchlorate.

Abstract
The L-lysine- and L-arginine-derived Amadori and Heyns products consisting of N-(1-deoxy-d-fructos-1-yl)amino acid and N-(2-deoxy-d-glucos-2-yl)amino acid were prepared by reaction of d-fructose and d-glucose with l-lysine hydrochloride and l-arginine hydrochloride using commercial zinc powder as deprotonating reagent and also as catalyst precursor in a simple synthetic route in high yield. These compounds were screened for angiotensin I-converting enzyme (ACE) inhibitory activity using a high-throughput colorimetric assay (utilizing porcine kidney ACE). The IC(50) values fall in the range of 1030-1175 μM, with N(α)-(1-deoxy-d-fructos-1-yl)arginine showing the best IC(50) value (1030 ± 38 μM). This study demonstrates an improved synthetic method for simple Amadori and Heyns products and their moderate ACE inhibitor activity.
