Abstract
BACKGROUND Texturized vegetable protein is currently a leading alternative to animal meat. This study examined the effects of soybean insoluble dietary fiber (SIDF) (0% to 20%) and CaCl2 (0% to 1%) on the structure and properties of extruded products made from a soybean protein isolate-wheat gluten (SPI-WG) composite. RESULTS The study showed that SIDF (4% to 8%) increased the viscosity of extruded products, enhanced their specific mechanical energy, and improved their rehydration rate and tensile strength compared with a control group. The rehydration rate of the extruded products reached a maximum value of 331.67% in the 8% SIDF, 0.5% CaCl2 groups. The addition of excess SIDF prevented the cross-linking of protein molecules to form a loose network structure. Analysis of the infrared spectrum and intermolecular forces showed that physical interactions between fibers and proteins were the dominant forces, with hydrophobic interactions and hydrogen bonds primarily maintaining the structure of the extruded products. The addition of CaCl2 (0.5%) led to protein aggregation and further improved the rehydration and tensile strength of extruded products. CONCLUSION Soybean insoluble dietary fiber can improve the rehydration rate and quality of extruded products. The addition of CaCl2 mitigated the weakening of the protein structure caused by excess SIDF. These results provide a basis for the improvement of the quality of low-moisture-extruded texturized vegetable protein products with a high dietary fiber concentration and a high rehydration rate. © 2024 Society of Chemical Industry.

Abstract
Aqueous inorganic salt solutions play a prominent role in both physiological and chemical experiments, and significant attention has been directed toward understanding the mechanisms underlying salt dissolution. In our effort to elucidate the hydration process of potassium chloride, we employed a comprehensive genetic algorithm to explore the structures of KCl(H2O)n (n = 1-10). A series of stable structures were identified by high-level ab initio optimization and single-point energy calculations with a zero-point energy correction. An analysis of the probability distribution of KCl(H2O)1-10 revealed that clusters with high probability at low temperatures exhibit reduced probabilities at higher temperatures, while others become more prevalent. When n = 1-9, the contact ion pair configurations or partially dissociated structures dominate in the system, and the probability distribution plot shows that the proportion of the solvent-separated ion pair (SSIP) structures of KCl(H2O)n is very small, while the SSIP configuration in KCl(H2O)10 becomes a stable structure with increasing temperature. The results from natural bond orbital analysis reveal a stronger interaction between chloride ions and water molecules. These findings provide valuable insights for a more comprehensive understanding of the intricacies of potassium chloride dissolution in water.

Abstract
In the marine environment, Na+ ions have been the focus of attention owing to their high content, which is one of the important factors causing marine corrosion. With reference to the content of macro ions in seawater, circular iron samples were semi-immersed in 0.04 M MgCl2 and 0.6 M NaCl solutions containing different proportions of ethanol. Unexpectedly, we observed more severe corrosion effects in the gas phase region and at the gas-liquid interface of metal samples semi-immersed in the MgCl2 solution. Although the concentration of the MgCl2 solution was only 1/15 of that of the NaCl solution, the iron corrosion induced by MgCl2 was significantly more severe than that caused by NaCl when the ethanol content was increased. Mg2+ ions outperform Na+ ions in metal gas phase corrosion. Especially in the oxygen content of the gas phase corrosion product, MgCl2 caused an increase by up to 52.7%, while NaCl only resulted in a 10.3% increase. Ethanol is normally regarded as a corrosion inhibitor and exists in the liquid phase. Interestingly, in the gas phase and at the gas-liquid interface, ethanol aggravated rather than reducing iron corrosion, particularly in the presence of Mg2+ ions. In addition, we observed that Ca2+ ions produced more severe corrosion effects.

Abstract
The interaction of MgCl2 with H2O is heavily involved in biological and chemical processes. In this work, freezing-induced hydrate formation from MgCl2 aqueous solution was monitored using terahertz time-domain spectroscopy. At low temperatures, two phase transitions from brine to hydrate formation could be clearly observed, and the formation of hydrate was accompanied by the emergence of new THz fingerprint peaks at 1.02, 1.56, and 1.84 THz, respectively. Integrating XRD and quantum chemical calculations, we attributed the absorption peaks to the vibrational modes of the formed MgCl2·12H2O. This demonstrates the potential of THz spectroscopy for application in the detection of biological processes in low-temperature environments, such as cell freezing.

Abstract
Basic studies on concentrated solutions are becoming more and more important due to the practical industrial and geological applications. The use in redox flow batteries is one of the most important applications of these solutions. Specifically, in this paper we investigated high-concentrated copper chloro-complexes solutions with different additives. The concentration of ligands and additives affects the physicochemical and electrochemical properties of 2 M solutions of Cu(I) and Cu(II). Solutions with calcium chloride and HCl as Cl− source were investigated with Cu:Cl ratios of 1:5 and 1:7, the 1:5 Cu:Cl ratio being the best performing. The substitution of calcium chloride with ammonium chloride increased the conductivity. However, while the effect on the positive electrode process was not very evident, the reversibility of the copper deposition–stripping process was greatly improved. Orthophosphoric acid could be a viable additive to decrease the complexation of calcium with chloride anions and to improve the stability of Cu(II) chloro-complexes. Absorption spectroscopy demonstrated that phosphate ions do not coordinate copper(II) but lead to a shift in the distribution of copper chloro-complexes toward more coordinated species. Electrochemically, the increased availability of chloride anions in solution stabilized the Cu(II)-rich solution and led to increased reversibility of the Cu(II)/Cu(I) redox process.

Abstract
The regulation of the ion selectivity by electric field and ion association on the Li+ selectivity of carboxyl functionalized graphene nanopores are investigated by molecular dynamics simulation. Carboxylate graphene nanopores of sub-2 nm exhibit excellent Li+ selectivity under the electric field of 1.0 V nm-1 . The results show that ion association inspired by electric field may be a key factor affecting ion selectivity of sub-2 nm nanopores. The ion association of Mg2+ and Cl- can be promoted obviously near the nanopores under the electric field of 1.0 V nm-1 . The migrating of Mg2+ can be retarded by stable clusters of Mg2+ and Cl- formed near nanopores. The degree of association of Li+ with Cl- is relatively low and the disassociation of the Li+ cluster is easier so that Li+ can more easily pass through the nanopores. These results gain insight into the effect of ion association inspired by electric field and nanoconfinement of graphene nanopore on Mg2+ /Li+ separation, and provide helpful information for the application of nanoporous materials in extraction of Li+ ion from salt-lake brine.

The
addition of a nonextractable salt has an important influence
on the solvent extraction of metal ions, but the underlying principles
are not completely understood yet. However, relating solute hydration
mechanisms to solvent extraction equilibria is key to understanding
the mechanism of solvent extraction of metal ions as a whole. We have
studied the speciation of Co(II), Zn(II), and Cu(II) in aqueous solutions
containing different chloride salts to understand their extraction
to the basic extractant methyltrioctylammonium chloride (TOMAC). This
includes the first speciation profile of Zn(II) in chloride media
with the three Zn(II) species [Zn(H2O)6]2+, [ZnCl3H2O]−, and
[ZnCl4]2–. The observed differences in
extraction efficiency for a given transition metal ion can be explained
by transition metal ion hydration due to ion–solvent interactions,
rather than by ion–solute interactions or by differences in
speciation. Chloride salting agents bearing a cation with a larger
hydration Gibbs free energy reduce the free water content more, resulting
in a lower hydration for the transition metal ion. This destabilizes
the transition metal chloro complex in the aqueous phase and increases
the extraction efficiency. Salting agents with di- and trivalent cations
reduce the transition metal chloro complex hydration less than expected,
resulting in a lower extraction efficiency. The cations of these salting
agents have a very large hydration Gibbs free energy, but the overall
hydration of these salts is reduced due to significant salt ion pair
formation. The general order of salting-out strength for the extraction
of metal ions from chloride salt solutions is Cs+ <
Rb+ < NH4+ ≈ K+ < Al3+ ≈ Mg2+ ≈ Ca2+ ≈ Na+ < Li+. These findings can
help in predicting the optimal conditions for metal separation by
solvent extraction and also contribute to a broader understanding
of the effects of dissolved salts on solutes. Addition of a nonextractable salt influences the stability
and solvent extraction efficiency of metal complexes. Cations of different
chloride salts reduce the solution free water content as a function
of their increasing hydration energy and decreasing tendency for ion
pair formation with chloride anions. These ion−solvent interactions
reduce the hydration of metal complexes, increasing their distribution
ratios. These effects influence aqueous transition metal complexes
more than direct ion−solute interactions and changes in complex
speciation.

Abstract
The molecular structure of growth units building crystals is a fundamental issue in the crystallization processes from aqueous solutions. In this work, a systematic investigation of pre-nucleation clusters and their hydration characteristics in aqueous CaSO4 solutions was performed using ab initio calculations and molecular dynamics (MD) simulations. The results of ab initio calculations and MD simulations indicate that the dominant species in aqueous CaSO4 solutions are monodentate ion-associated structures. Compared with charged ion clusters, neutral clusters are more likely to be present in an aqueous CaSO4 solution. Neutral (CaSO4)m clusters are probably the growth units involved in the pre-nucleation or crystallization processes. Meanwhile, hydration behavior around ion associated species in aqueous CaSO4 solutions plays an important role in related phase/polymorphism selections. Upon ion clustering, the residence of some water molecules around Ca2+ in ion-associated species is weakened while that of some bridging waters is enhanced due to dual interaction by Ca2+ and SO42-. Some phase/polymorphism selections can be achieved in aqueous CaSO4 solutions by controlling the hydration around pre-nucleation clusters. Moreover, the association trend between calcium and sulfate is found to be relatively strong, which hints at the low solubility of calcium sulfate in water.

Abstract
We investigate the dissociation of a Ca2+ -Cl- pair in water using classical molecular dynamics simulations with a polarizable interaction potential, parameterized from ab initio calculations. By computing the potential of mean force as a function not only of the interionic distance but also of the coordination numbers by water molecules, we show that it is necessary to use a collective variable describing the cation hydration in order to capture the dissociation mechanism. In the contact ion pair, the Ca2+ cation has a first coordination sphere containing 5 or 6 water molecules. The minimum free-energy path for dissociation involves a two-step process: First one or two additional water molecules enter the cation coordination shell, increasing the coordination number up to 7 with an almost fixed interionic distance. Then the dissociation of the ionic pair occurs at this fixed coordination number.
