A new methodology to assess the solubility of fatty acids: Impact of food emulsifiers

In food formulations, lipids are normally incorporated as emulsions stabilized by different types of emulsifiers. The emulsifiers can affect fatty acid (FA) solubilization as they can interact with FA. The main purpose of the present work is the development of a methodology to evaluate the FA solubilization in an aqueous medium in the absence and presence of exogenous emulsifiers. To this end, a combination of turbidimetry, oiling off and dynamic light scattering (DLS) was used. The FA solubility, as well as its supramolecular assemblies, were determined by analyzing the changes in the turbidity profile and the corresponding size of particles obtained by DLS. Oleic acid (OA) was used as a model FA and a simulated intestinal fluid (SIF) as the aqueous phase. Emulsifiers of low (Tween 80) and high (protein and polysaccharide) molecular weight were tested. Tween 80 was the only emulsifier that improved OA solubilization, whereas the macromolecules only affected the supramolecular structure that OA adopted, being the structure of these assemblies governed by the emulsifier nature.

Algal Lipids as Biocollector for Recovery of Coal from Fine Coal Waste by Froth Flotation

Raw algal lipids (RALs) and their derivatives (fatty acid methyl esters; FAMEs) were investigated as biocollectors for the recovery of coal from ash-rich fine coal waste by froth flotation. Testing was done on fine coal discards from two South African sites—a high ash (50%), high sulphur (5.7%) sample and a lower ash (26%), low sulphur (0.91%) sample. The yield and recovery of combustibles on using biocollectors was similar to, or better than, with oleic acid, a polar collector demonstrated as a good collector in previous research. The RALs and FAMEs reduced the ash and sulphur content of the combustible fraction of the high ash-high sulphur sample to between 23–28% and 1.9–3.3%, respectively. The chemical modification of RALs to FAMEs provided potential for improving the selectivity of the recovery of combustibles. It also resulted in a change of the optimum operating pH, with RALs yielding better results at the natural pH of the sample (pH 2.7), while FAMEs performed best at pH 7.

CO2-Responsive Pickering Emulsions Stabilized by a Bio-based Rigid Surfactant with Nanosilica

A novel CO₂-responsive surfactant, maleopimaric acid glycidyl methacrylate ester 3-(dimethylamino)propylamine imide (MPAGN), based on sustainable resource of rosin was synthesized and used to prepare a kind of CO₂-responsive Pickering emulsions with nanosilica. MPAGN can be reversibly responsive to CO₂ and N₂ between active cationic (MPAGNH⁺) and inactive nonionic (MPAGN), leading to adsorb on or desorb from the surface of nanosilica, then stabilize or break emulsion. CO₂-responsive behavior of MPAGN was verified by cycle change of pH and conductivity with bubbling CO₂ and N₂ alternately. The type of adsorption of MPAGNH⁺ at the particle-water interface was explained according to the adsorption isotherms. The mechanisms of stabilization, destabilization, and restabilization of Pickering emulsion were analyzed according to zeta potentials and droplet size. This Pickering emulsion can be reversible between stable and unstable by bubbling CO₂ and N₂ alternately. Moreover, this emulsifier can be recycled when new oil was added after removing the initial oil. Therefore, it not only has economic benefits but also has an environmentally friendly property.

Controlling Foam Stability with the Ratio of Myristic Acid to Choline Hydroxide

The interfacial and foam properties of a model system based on the mixture between myristic acid and choline hydroxide have been investigated as a function of the molar ratio ( R) between these two components and temperature. The aim of this study was to obtain insight on the links between the self-assemblies in bulk and in the foam liquid channels, the surfactant packing at the interface, and the resulting foam properties and stability. A multiscale approach was used combining small angle neutron scattering, specular neutron reflectivity, surface tension measurements, and photography. We highlighted three regimes of foam stability in this system by modifying R: high foam stability for R < 1, intermediate at R ∼ 1, and low for R > 1. The different regimes come from the pH variations in bulk linked to R. The pH plays a crucial role at the molecular scale by setting the ionization state of the myristic acid molecules adsorbed at the gas-liquid interface, which in turn controls both the properties of the monolayer and the stability of the films separating the bubbles. The main requirement to obtain stable foams is to set the pH close to the p K_a in order to have a mixture of protonated and ionized molecules giving rise to intermolecular hydrogen bonds. As a result, a dense monolayer is formed at the interface with a low surface tension. R also modifies the structure of self-assembly in bulk and therefore within the foam, but such a morphological change has only a minor effect on the foam stability. This study confirms that foam stability in surfactant systems having a carboxylic acid as polar headgroup is mainly linked to the ionization state of the molecules at the interface.

Photoresponsive Foams Generated by a Rigid Surfactant Derived from Dehydroabietic Acid

Innovation in the structure of surfactants is crucial to the construction of a surfactant-based system with intriguing properties. With dehydroabietic acid as a starting material, a nearly totally rigid azobenzene surfactant (R-azo-Na) was synthesized. The trans-R-azo-Na formed stable foams with half-lives of 636, 656, 976, and 872 min for 0.3, 1, 2, and 4 mmol·L^-1 aqueous solutions, respectively. Under UV light irradiation, a fast collapse of the foams was observed, showing an in situ response. The excellent foam stability of trans-R-azo-Na leads to the extremely high photoresponsive efficiency. As revealed by dynamic surface tension and pulsed-field gradient NMR methods, an obvious energy barrier existed in the adsorption/desorption process of trans-R-azo-Na on the air/water interface. The foams formed by trans-R-azo-Na are thus stable against coarsening processes. The results reveal the unique photoresponsive behavior of a surfactant with a rigid hydrophobic skeleton and provide new insights into the structure causing aggregation of surfactants.
