Abstract
Mussels are an important source of the essential omega-3 polyunsaturated fatty acids (n-3 PUFAs), which play a critical role in human health, preventing a variety of diseases. This study aimed to evaluate, for the first time, the combined effect of glyphosate (Gly) and culturing temperature on the lipid content and fatty acid (FA) profile of the Mediterranean mussel M. galloprovincialis. In addition, a number of lipid nutritional quality indices (LNQIs) were applied as important tools to assess the nutritional value of food. Mussels were exposed for 4 days to two Gly concentrations (1 mg/L, 10 mg/L) and two temperatures (T°: 20-26 °C). Statistical analysis showed significant effects of T°C, Gly, and T°C × Gly interaction (p < 0.05) on the lipid and FA profiles of M. galloprovincialis. Mussels exposed to 10 mg/L Gly at 20 °C showed a decrease in eicosapentaenoic (EPA, from 14.6% to 12% of total FAs) and docosahexaenoic acids (DHA, from 10% to 6.4% of total FAs), compared to the control mussels. Both stressors caused a considerable decrease in n-3 PUFAs, which resulted in a less favorable n-6/n-3 PUFA ratio. Overall, this study demonstrated a decline in the nutritive values of mussels, most prominently in groups exposed to 10 mg/L Gly at a temperature of 20 °C and in those exposed to a temperature of 26 °C. This was confirmed by such LNQIs as EPA + DHA, PUFA/Saturated FAs, atherogenic and thrombogenic indices (AI and TI), the health promoting index (HPI), and the unsaturation index (UI). Further investigations into chronic exposure to both stressors are desirable to predict the impacts on aquatic ecosystems and food quality.

Abstract
Cooking effect (grilling - barbecue, oven-cooking, frying, boiling and microwaving) on lipid and fatty acids (FAs) in mussel Mytilus galloprovincialis and fish Trachurus trachurus was investigated. The levels of priority PAHs were also evaluated as well as the potential risk associated with their consumption. Cooking increased lipid content, reaching the highest value in fried product with 13.2 and 5.6 g/100 g in mussel and fish, respectively. The n-3/n-6 ranged from 0.15 to 5.31 in mussel and from 0.29 to 5.35 in mackerel. In both species, frying and oven-cooking negatively affected FAs composition as shown by the lipid quality indices. However, FAs profile exhibited by species after cooking remained beneficial for human health. Concerning PAHs, levels ranged from 31 to 78 μg/kg in M. galloprovincialis, and from 8.4 to 25 μg/kg in T. trachurus. The minimum and maximum values were found, respectively, in the raw product and after barbecue cooking with charcoal placed at 4 cm away from the seafood. The carcinogenic benzo[a]pyrene was detected only in mussels after barbecue cooking. Risk assessment of dietary exposure to PAHs, calculated by the Hazard Quotient and Cancer Risk, showed that the consumption of cooked seafood should not be a concern for human health.

Abstract
Lipid oxidation and the Maillard reaction are two of the most important reactions affecting the flavor of foods that have been heat-processed. To investigate the contribution of lipids to the mussel’s flavor, the mussel’s Maillard reaction products (MRPs) were prepared with polar lipids (mainly phospholipids) and nonpolar lipids (mainly glycerides), respectively. The effects of polar and nonpolar lipids on the flavor of the MRPs were investigated by sensory evaluation, electronic tongue, electronic nose, ultra-performance liquid chromatography-mass-spectrometry (UPLC-MS) and gas chromatography-mass-spectrometry (GC-MS). From the sensory evaluation results, the polar lipid MRPs had the highest scores. The tastes of polar lipid MRPs and nonpolar lipid MRPs were mainly umami, saltiness and sourness, and there were significant differences in their sour tastes. The flavor compounds in the MRPs were mainly inorganic sulfides, organic sulfides and nitrogen oxides. The odor of polar lipid MRPs was stronger than that of nonpolar lipid MRPs, and the seafood flavor was more obvious. A total of 37 volatile compounds were detected by GC-MS, mainly aldehydes, alcohols and ketones. The addition of polar lipids helped the MRPs to produce more volatile compounds. A total of 177 non-volatile compounds (including amino acids and their derivatives and oligopeptides, etc.) were detected in the samples using UPLC-MS. The non-volatile compounds contained in the no-lipid MRPs, polar lipid MRPs and nonpolar lipid MRPs were significantly different. This study provides a theoretical basis and technical support for the production of mussel MRPs.

Abstract
Steaming process is the most popular method for cooking mussels worldwide. The effect of this cooking process on some toxic (Cd, Ni, Pb), essential (Cr, Cu, Fe, Mn, Zn) elements, minerals (Na, K, Ca, Mg), total lipids, and fatty acid profiles in the Mediterranean mussels (Mytilus galloprovincialis) harvested from the Black Sea was studied. Different approaches to assess the benefits and risks (n‐6/n‐3, PUFA/SFA, AI, TI, h/H, EDI, THQ, HI, TR, and HQEFA) were employed. In general, steaming process significantly modified some essential elements and minerals concentrations as well as the fatty acid profiles. Compared to the raw samples, this culinary practice resulted in an increased concentration of Na, Mg, Zn, and saturated fatty acids and a decrease of polyunsaturated fatty acids. Significant changes in the lipid quality indices (PUFA/SFA, AI, TI, and h/H) from the raw samples were observed. No effect on the DHA content was found. However, the significant increase in the absolute content of EPA + DHA indicates that steaming does not compromise the nutritional quality of mussels. Target hazard quotients (THQs) and hazard index (HI) from elemental intake were below 1, indicating that the steamed M. galloprovincialis pose no hazard for the consumers. The target risk (TR) values for Pb, Cr, and Ni were calculated, evaluated, and showed acceptable or negligible levels. In addition, the benefit–risk ratio indicated that the steamed M. galloprovincialis are safe for human consumption.

Objectives
The paper evaluated the benefit and risk for human health associated with consumption of sea cucumber H. polii from Italian coasts (Central Mediterranean Sea).
Materials and Methods
body wall-BW, internal tunic-ITu, muscle bands-MB, alimentary canal-AC, gonad-Gd and respiratory tree-RT of H. polii were analyzed for proximate composition. Moreover, aminoacids, fatty acids and polycyclic aromatic hydrocarbons (PAHs) were determined with HPLC UV/Vis, GC-FID and GC-MS, respectively.
Results
Differences in the contents of Total Aminoacids (TAA) occurred based on tissue and sex, with AC and MB of female and Gd of male showing higher contents (range 47.8 -60.2 g/kg ww). Glycine and glutamic acid were the most abundant. Polyunsaturated (PUFA) was the major class of fatty acids and Arachidonic and Eicosapentaenoic (EPA) acids were the predominant PUFA. n-3 PUFA showed higher content in Gd, AC and RT indicating a higher quality. A favorable n-3/n-6 in the range 1.04-1.67 was observed. PAHs showed values ranged from 23 to 207 µg/kg ww with the highest levels in Gd-AC tissues and the lower in BW. Benzo[a]Pyrene, the most toxic compound, was detected in all tissues, of both sexes, at levels of 1.5-18 µg/Kg ww.
Conclusion
All tissues of H. polii, although with differences among them, are valuable food and can contribute for a healthy diet. Excess Cancer risk (CR) values for Gd and AC tissues, were above the considerable CR threshold of one in ten thousand established by USEPA, for high ingestion rate of these seafood.

Abstract
Fatty acids (FA) are among the most important natural biologically active compounds. A healthy diet involves the intake of different fatty acids especially from omega-3 (n-3) series. Seafood provides a very good source of polyunsaturated fatty acids (PUFAs), but in Bulgaria there is limited information regarding the n-3 PUFA contents in traditionally consumed seafood by the population. The aims of this study were to determine lipid content, omega-3 polyunsaturated fatty acids (EPA and DHA), and the recommended daily intake of eleven fish species, three bivalves, rapana, and shrimp harvested in the Western part of Black Sea, Bulgaria. Total lipids were extracted according to the method of Blight and Dyer and fatty acid composition was analyzed by GC/MS. Fatty acid profile showed differences among species. PUFA were found in high content among total lipids, especially in shellfish (60.67-68.9% of total lipids) compared to fish species (19.27-34.86% of total lipids). EPA was found in higher amounts in rapana (0.16 g/100 g ww) and two of pelagic species (up to 0.29 g/100 g ww), whereas DHA prevailed in demersal and the most of pelagic fish (0.16-1.92 g/100 g ww) and bivalves (0.16-1.92 g/100 g ww). The health beneficial n3/n6 and PUFA/SFA ratios were found in all analyzed species. The lower values of the lipid nutritional quality indices (AI < 1, TI < 1) and higher for h/H index (0.8-1.78 for fish and 1.52 to 4.67 for bivalves and shrimp) confirm that the commonly consumed Black Sea fish and shellfish may provide health benefits for local populations. This study shows the seafood amounts that can provide the minimum recommended intake of omega-3 polyunsaturated fatty acids.

Abstract
The unique, closed ecosystem of the Black Sea is of significant global importance. The levels and health risk of some trace elements (As, Cd, Cr, Cu, Fe, Ni, Pb and Zn) in wild and farmed mussels (Mytilus galloprovincialis) collected from the Bulgarian part of the Black Sea were determined and using different approaches such as Estimated Daily Intake (EDI), Target Hazard Quotient (THQ), Hazard Index (HI), Target risk (TR), human health risk levels were assessed. The mean maximum concentrations of the elements Cd, Cr, Cu, Fe, Ni, Pb and Zn in all mussel samples were below the maximum permissible limits (MPLs) except that which exceeded the limit of 2.00 mg/kg ww. Eicosapentaenoic (EPA, 20:5n-3) and docosahexaenoic acid (DHA, 22:6n-3) were the major polyunsaturated fatty acids. The fatty acids profile studied mussels showed that the farmed mussels had higher PUFA/SFA ratios, DHA and EPA + DHA content and lower SFA, AI and TI values. The target risk (TR) values for Pb, Cr, Ni and As were calculated, evaluated and showed acceptable or negligible levels. Target hazard quotients (THQs) and hazard index (HI) from elemental intake were below 1 indicated no hazard from consumption. The benefit-risk ratio indicated that wild and cultured M. galloprovincialis are safe for human consumption.

Abstract
The study aimed to evaluate trace elements (Cd, Cr, Cu, Fe, Ni, Pb and Zn) concentrations and fatty acids of three Black Sea bivalve species - Donax trunculus, Mytilus galloprovincialis and Chamelea gallina as well as human health risk and benefit-risk ratio based on n-3 LC-PUFA vs. toxic/essential elements. The results showed variations in the element concentrations among the analysed species. D. trunculus generally contained higher levels of the essential elements Cu and Zn, while C. gallina - higher Cr and Fe. Toxic elements content did not exceed the international standards for mollusks. D. trunculus and C. gallina were better dietary sources of n-3 LC-PUFA, with approximately two-fold higher EPA + DHA content than M. galloprovincialis. Health risks for most toxic and essential elements exposed from bivalve consumption were safe based on THQ, HI and TR indices. The benefit-risk ratio indicated that studied species are safe for human consumption, except one case.

Abstract
The effect of cooking (barbecue-grilling, boiling, microwaving, oven cooking and frying) on lipids, fatty acids (FAs) and lipid quality indices of the mussel Mytilus galloprovincialis was investigated. In general, all processing methods significantly (p < 0.05) modified the fatty acid profiles of mussels, although with major changes in fried samples, which exhibited the lowest saturated fatty acids and n-3 and highest polyunsaturated (PUFA) and n-6 FAs content. A significant decrease in the n-3 PUFA from the raw sample to five cooking methods was observed. The n-3/n-6 ratio decreased from raw (6.01) to cooked mussels, exhibiting the lowest value in fried ones (0.15). C20:5 n-3 and C22:6 n-3 significantly decreased during all cooking processes, and overall in fried mussels. It can be concluded that cooking does not compromise the nutritional quality of mussels except with frying, although it resulted in a decrease of the atherogenic and thrombogenic indices.

Abstract
The collective migration of cells is a complex integrated process that represents a common theme joining morphogenesis, tissue regeneration, and tumor biology. It is known that a remarkable amount of secondary metabolites produced by aquatic invertebrates displays active pharmacological properties against a variety of diseases. The aim of this review is to pick up selected studies that report the extraction and identification of crude extracts or isolated compounds that exert a modulatory effect on collective cell locomotion and/or skin tissue reconstitution and recapitulate the molecular, biochemical, and/or physiological aspects, where available, which are associated to the substances under examination, grouping the producing species according to their taxonomic hierarchy. Taken all of the collected data into account, marine invertebrates emerge as a still poorly-exploited valuable resource of natural products that may significantly improve the process of skin regeneration and restrain tumor cell migration, as documented by in vitro and in vivo studies. Therefore, the identification of the most promising invertebrate-derived extracts/molecules for the utilization as new targets for biomedical translation merits further and more detailed investigations.
