Abstract
The demand for rapid and accurate detection methods for Salmonella Enteritidis necessitates the development of highly sensitive and specific biosensors to ensure proper monitoring of food safety and quality requirements in the food sector and to secure human health. This study focused on development of a polyaniline/zinc oxide (PANI/ZnO) nanocomposite film on a gold electrode conductometric immunosensor for detection of Salmonella Enteritidis. The sensor was modified with monoclonal anti-Salmonella Enteritidis antibodies as biorecognition elements. The fabricated sensor was able to detect and quantify the target pathogen within 30 min and showed a good detection range from 101 to 105 colony-forming units (CFU)/mL for Salmonella Enteritidis and a minimum detection limit of 6.44 CFU/mL in 0.1% peptone water. Additionally, the fabricated sensor showed good selectivity and detection limit toward the target bacterium and successfully determined Salmonella Enteritidis content in ultrahigh heat-treated skim milk samples without pretreatment of the food sample.

Abstract
Nowadays, the increasing number of foodborne disease outbreaks around the globe has aroused the wide attention of the food industry and regulators. During food production, processing, storage, and transportation, microorganisms may grow and secrete toxins as well as other harmful substances. These kinds of food contamination from microbiological and chemical sources can seriously endanger human health. The traditional detection methods such as cell culture and colony counting cannot meet the requirements of rapid detection due to some intrinsic shortcomings, such as being time-consuming, laborious, and requiring expensive instrumentation or a central laboratory. In the past decade, efforts have been made to develop rapid, sensitive, and easy-to-use detection platforms for on-site food safety regulation. Herein, we review one type of promising biosensing platform that may revolutionize the current food surveillance approaches, the giant magnetoresistance (GMR) biosensors. Benefiting from the advances of nanotechnology, hundreds to thousands of GMR biosensors can be integrated into a fingernail-sized area, allowing the higher throughput screening of food samples at a lower cost. In addition, combined with on-chip microfluidic channels and filtration function, this type of GMR biosensing system can be fully automatic, and less operator training is required. Furthermore, the compact-sized GMR biosensor platforms could be further extended to related food contamination and the field screening of other pathogen targets.

Abstract
Surface-enhanced Raman spectroscopy (SERS) is being considered as a powerful technique in the area of food safety due to its rapidity, sensitivity, portability, and non-destructive features. This review aims to provide a comprehensive understanding of SERS applications in fast detection of toxic and harmful substances in food matrix. The enhancement mechanism of SERS, classification of active substrates, detection methods, and their advantages and disadvantages are briefly discussed in the review. The latest research progress of fast SERS detection of food-borne pathogens, mycotoxins, shellfish toxins, illegal food additives, and drug residues are highlighted in sections of the review. According to the current status of SERS detection of food-derived toxic and harmful substances, the review comes up with certain problems to be urgently resolved in SERS and brings up the perspectives on the future directions of SERS based biosensors.

Abstract
Listeria monocytogenes (L. monocytogenes) has been recognized as one of the extremely hazardous and potentially life-threatening food-borne pathogens, its real-time monitoring is of great importance to human health. Herein, a simple and effective method based on platinum sensitized tin dioxide semiconductor gas sensors has been proposed for selective and rapid detection of L. monocytogenes. Pt doped SnO2 nanospheres with particular mesoporous hollow structure have been synthesized successfully through a robust and template-free approach and used for the detection of 3-hydroxy-2-butanone biomarker of L. monocytogenes. The steady crystal structure, unique micromorphology, good monodispersit, and large specific surface area of the obtained materials have been confirmed by X-ray diffraction (XRD), Raman spectroscopy, Scanning Electron Microscopy (SEM), Transmission Electron Microscopy (TEM), X-ray Photoelectron Spectroscopy (XPS), Brunauer-Emmett-Teller (BET), and Photoluminescence spectra (PL). Pt doped SnO2 mesoporous hollow nanosphere sensors reach the maximum response of 3-hydroxy-2-butanone at 250°C. Remarkably, sensors based on SnO2 mesoporous hollow nanospheres with 0.16 wt% Pt dopant exhibit excellent sensitivity (Rair/Rgas = 48.69) and short response/recovery time (11/20 s, respectively) to 10 ppm 3-hydroxy-2-butanone at the optimum working temperature. Moreover, 0.16 wt% Pt doped SnO2 gas sensors also present particularly low limit of detection (LOD = 0.5 ppm), superb long-term stability and prominent selectivity to 3-hydroxy-2-butanone. Such a gas sensor with high sensing performance foresees its tremendous application prospects for accurate and efficient detection of foodborne pathogens for the food security and public health.

Abstract
Microbial food safety is a persistent and exacting global issue due to the multiplicity and complexity of foods and food production systems. Foodborne illnesses caused by foodborne bacterial pathogens frequently occur, thus endangering the safety and health of human beings. Factors such as pretreatments, that is, culturing, enrichment, amplification make the traditional routine identification and enumeration of large numbers of bacteria in a complex microbial consortium complex, expensive, and time-consuming. Therefore, the need for rapid point-of-use detection systems for foodborne bacterial pathogens with high sensitivity and specificity is crucial in food safety control. Hyperspectral imaging (HSI) as a powerful testing technology provides a rapid, nondestructive approach for pathogen detection. This article reviews some fundamental information about HSI, including instrumentation, data acquisition, image processing, and data analysis-the current application of HSI for the detection, classification, and discrimination of various foodborne pathogens. The merits and demerits of HSI for pathogen detection as well as current and future trends are discussed. Therefore, the purpose of this review is to provide a brief overview of HSI, and further lay emphasis on the emerging trend and importance of this technique for foodborne pathogen detection.

Abstract
Reliable early-stage detection of foodborne pathogens is a global public health challenge that requires new and improved sensing strategies. Here, we demonstrate that dynamically reconfigurable fluorescent double emulsions can function as highly responsive optical sensors for the rapid detection of carbohydrates fructose, glucose, mannose, and mannan, which are involved in many biological and pathogenic phenomena. The proposed detection strategy relies on reversible reactions between boronic acid surfactants and carbohydrates at the hydrocarbon/water interface leading to a dynamic reconfiguration of the droplet morphology, which alters the angular distribution of the droplet's fluorescent light emission. We exploit this unique chemical-morphological-optical coupling to detect Salmonella enterica, a type of bacteria with a well-known binding affinity for mannose. We further demonstrate an oriented immobilization of antibodies at the droplet interface to permit higher selectivity. Our demonstrations yield a new, inexpensive, robust, and generalizable sensing strategy that can help to facilitate the early detection of foodborne pathogens.

Abstract
A mannose-functionalized poly (p-phenylene ethynylene) was rationally designed to achieve selective detection of bacteria. The polymer was constructed as a signaling unit and was modified by attaching aminoethyl mannose using the carboxylic acid group at the end of the linker. Incubation of Escherichia coli with the polymer yielded fluorescent bacteria aggregates through polyvalent interactions. The utility of the mannose functionalized polymer to detect E. coli expressing functional FimH mannose-specific lectin on their surface was also demonstrated. The sugar units displayed on the surface of the polymer retained their functional ability to interact with mannose-binding lectin. To determine the optimum binding time, we measured the fluorescence intensity of the polymer-bacteria suspension at intervals. Our results showed that binding in this system will reach an optimum level within 30 min of incubation. The polymer’s affinity for bacteria has been demonstrated and bacteria with a concentration of 103 CFU mL−1 can be detected by this system.
