Comparison of lipid profiles of male and female silkworm (Bombyx mori) pupae through high-resolution mass spectrometry-based lipidomics and chemometrics

Silkworm (Bombyx mori) pupae lipid profiles were analyzed using high-resolution mass spectrometry-based lipidomics. A total of 241 lipid molecular species were annotated with high confidence in male and female silkworm pupae. Triacylglycerol (TG), phosphoethanolamine (PE) and phosphocholine (PC) were the main lipid subclasses of silkworm pupae, accounting for 63, 41 and 38 lipid molecular species, respectively. No unique lipid molecular species were identified, but there were differences in the abundance of lipid molecular species between male and female silkworm pupae. Therefore, the differences in the lipid abundance of male and female silkworm pupae were analyzed by chemometrics. As a result, 8 lipid molecular species were screened for differential lipids. Hierarchical clustering analysis (HCA) showed that male and female silkworm pupae samples formed two distinct branches, indicating that these differential lipids could potentially be used as biomarkers to distinguish between male and female silkworm pupae.

Effects of other people's facial emotional expression on consumers' perceptions of chocolate chip cookies containing cricket protein

Edible insects are recognized as a potential alternative and sustainable source of high-quality protein for the human diet. Entomophagy is highly related to negative emotions that may cause reluctance to adopt insects as food in Western countries. During human interaction, a person's facial emotional expression (FEE) may influence other people's emotional responses. A person's emotional state may affect his/her food preference and food choice. Understanding how other people's FEE would affect consumers' emotional profiles, liking, and subsequent willingness to try (WTT) and purchase intent (PI) toward insect-containing food products may help increase the acceptance of entomophagy. This study identified emotional responses toward chocolate chip cookies containing cricket protein using valence and arousal scales in order to explore the effects of other people's FEE (positive, negative, and/or sensation seeking) and to find the correlation between consumers' emotional and overall liking (OL) responses for cricket-containing chocolate chip cookies. Predicting PI for such cookies was also performed. For consumers who perceived positive emotion from other people's FEE after watching a short video clip, their emotional feeling was raised on both valence and arousal dimensions, while negative FEE stimulus imparted the opposite effects. The OL scores and emotional intensities after watching the three FEE videos were highly related to consumers' PI. Males compared to females rated the cricket-containing cookies higher on positive emotion intensity, OL, and PI. Among the three FEEs evaluated, the positive emotional stimulus would be beneficial in increasing acceptance, WTT, and PI of insect-containing foods. PRACTICAL APPLICATION: Edible insects are potentially alternative and sustainable sources of high-quality protein for the human diet. Nutritional Composition of Bombyx mori Pupae: A Systematic Review

The mulberry silkworm (Bombyx mori) is a domesticated insect traditionally reared to produce silk. Its pupae are historically eaten in Asian countries and are obtained as waste products from the silk reeling industry. Pupae are a promising novel food in Western countries as well as a source of proteins, lipids, and minerals. Several varied results are reported in the literature regarding the nutrient composition of silkworm pupa, and several factors must be considered when comparing the research. Some of the variables that could affect the pupal nutritional content include rearing techniques, diets, silkworm strains, killing, and drying techniques. This literature systematic review identifies the most important research areas and aids authorities and producers in the evaluation and development of silkworm pupae for novel uses.

Abstract

As insects have started to enter the eating habits of Western countries, an increasing amount of literature regarding the mulberry silkworm (Bombyx mori) prospective application as food has been published. Despite this growing interest, there is currently no systematic review of silkworm nutritional composition available. In this paper, we performed a systematic review of the recent available literature on the nutrient composition of mulberry silkworm pupae. After screening the titles and abstracts of 14,008 studies retrieved from three scientific databases, data about nutrients was extracted from 29 selected papers, together with their related variables. This systematic review provides an overview of the variety of data reported in the literature and highlights that many elements contribute to hindering a sound comparison of the different nutritional values reported for silkworm pupae. The observed variability of the composition data reported could be due to differences in diet, strains, pretreatments, and origin of the silkworm analyzed. However, all these variables were not always available and should be reported in future studies to simplify the data comparison.

Application of Aqueous Saline Process to Extract Silkworm Pupae Oil (Bombyx mori): Process Optimization and Composition Analysis

Silkworm pupae, a waste product from the silk production industry, can be an alternative source of edible oil, thus reducing the industry's waste. In the present work, frozen silkworm pupae were used as raw material to extract oil via an aqueous saline process. The Box-Behnken design (BBD) and response surface methodology (RSM) were used to optimize the extraction process. The extraction conditions with the highest oil yield and a low peroxide value were obtained when using a saline solution concentration of 1.7% w/v, a ratio of aqueous liquid to silkworm pupae of 3.3 mL/g, and a 119 min stirring time at the stirring speed of 100 rpm. Under these conditions, silkworm oil with a yield of 3.32%, peroxide values of approximately 1.55 mM, and an acid value of 0.67 mg KOH/g oil was obtained. The extracted oil contained omega-3 acids (α-linolenic acid), which constituted around 25% of the total fatty acids, with approximate cholesterol levels of 109 mg/100 g oil. The amounts of β-carotene and α-tocopherol were approximately 785 and 9434 μg/100 g oil, respectively. Overall, the results demonstrated that oil extracted from silkworm pupae has good quality parameters and thus can be used as a new valuable source of edible lipids.

Effect of Disclosed Information on Product Liking, Emotional Profile, and Purchase Intent: A Case of Chocolate Brownies Containing Edible-Cricket Protein

Edible insects, a sustainable and nutritious alternative to conventionally derived proteins, are unfamiliar to Westerners and often associated with negative sentiments. Edible-cricket protein (ECP) added to chocolate brownies (CB) [0% ECP = CBWO (without) vs. 6% w/w ECP = CBW (with)], and disclosed information [no ECP added = (−) vs. ECP with benefits = (+), ECP− and ECP+, respectively] yielded four CB treatments (CBWO−, CBWO+, CBW−, and CBW+). Subjects (n = 112 female and n = 98 male) rated liking, selected emotions before- and after-tasting, and determined consumption (CI) and purchase intent (PI) after tasting. Likings were analyzed with mixed-effects ANOVA and post hoc Tukey’s HSD test. Emotions were evaluated with Cochran’s-Q test and correspondence analysis. Emotions driving or inhibiting overall liking (OL) were assessed with penalty-lift analyses using two-sample t-tests. A random forest algorithm was used to predict PI and estimate variables’ importance. Female’s and male’s expected OL were higher for CBWO− than for CBWO+. Females’ actual OL was higher for CBWO than for CBW regardless of the disclosed information but males’ actual OL was the same across treatments. Females exhibited negative-liking disconfirmation for CBW−. In both tasting conditions, the disclosed information affected treatments’ emotional profiles more than formulation. After-tasting emotions “happy” and “satisfied” were critical predictors of PI.
