Composition and properties of the family Enterobaeteriaceae

Foodborne pathogenic bacteria in prepackaged fresh retail portions of farmed rainbow trout and salmon stored at 3 degrees C

Twelve lots of fresh unskinned fillets of rainbow trout (Oncorhynchus mykiss) and 10 lots of fresh sliced salmon (Salmo salar) prepacked in trays wrapped with an oxygen-permeable film were obtained immediately after packing from two supermarkets having in-plant facilities for packaging wet fish. During storage at 3 degrees C, Listeria innocua was detected in eight lots of trout fillets after 4 days storage. L. monocytogenes was recovered from a single lot also contaminated with L. innocua. Initial numbers of aeromonads were significantly (p < 0.05) lower in trout fillets (3.35 +/- 0.62 log cfu g(-1)) than in salmon slices (4.20 +/- 0.89 log cfu g(-1)). In both fish products, these bacteria significantly (p < 0.05) increased up until spoilage. Most Aeromonas spp. isolates from trout fillets were assigned to A. veronii biovar sobria HG8 (hybridisation group 8), A. caviae HG4, A. eucrenophila HG6, A. hydrophila HG1 and A. veronii biovar veronii HG10. Strains of HG12 (A. schubertii), HG4 and HG8 formed the majority of aeromonads recovered from salmon slices.

Advances in the bacteriology of the coliform group: their suitability as markers of microbial water safety

Advances in the elaboration of novel genomic types of beta-galactosidase-positive Enterobacteriaceae and comprehensive studies of their habitats have resulted in an innovative approach to the assessment of the merits and shortcomings of the thermotrophic and fecal species Escherichia coli and all other coliforms as markers of the microbiological safety of water. As one of the consequences, it is recommended to abolish the "technical" designation fecal coliforms because their current method of detection will result in the isolation of thermotrophic organisms that have been demonstrated, beyond a doubt, to be of environmental, rather than uniquely enteric origin. Additional population studies have demonstrated that none of the coliforms can function as reliable markers for all enteric pathogens (index organisms sensu Ingram), nor be of use in validating adequate processing for safety of raw water, which represents the indicator function of markers, as defined by Ingram. Future studies along these lines will have to provide the data required to assess the suitability of additional markers for the reliable monitoring of drinking water for microbiological safety.

Oral and oropharyngeal prevalence of Enterobacteriaceae in humans: a review

Members of the Enterobacteriaceae family are widely distributed in nature and exhibit substantial diversity in ecology, host range and pathogenic potential for man. While wide discrepancies in methodology exist between epidemiological studies, the available data indicate an increased prevalence of oral and/or oropharyngeal Enterobacteriaceae carriage in patients with illnesses of varying severity compared with healthy subjects. This paper reviews the prevalence of Enterobacteriaceae in the oral and oropharyngeal region of healthy human subjects and those affected by different disease entities, and discusses the complexities associated with collating and interpreting such data. The effect of antimicrobials and antiseptics on oral and oropharyngeal Enterobacteriaceae has also been reviewed, while highlighting the gaps in knowledge and future research directions.

Some aspects of the gastrointestinal microflora of veal calves fed different rations: a pilot study

The gastrointestinal microflora of veal calves reared on different diets was studied because the nature of this microflora affects the quality of veal as a result of contamination of carcass surfaces with intestinal contents during slaughter. Diet A consisted of a milk substitute, diet B of milk substitute + straw pellets and diet C of milk substitute + straw pellets + concentrates. In the rumen fluid of calves reared on diet A significantly higher counts of Gram-negative bacteria but lower counts of thermotrophic enterobacteriaceae were found than in calves reared on diets B or C. As for the faecal flora, diets B and C seem to result in significantly lower counts of Gram-negative bacteria and thermotrophic enterobacteriaceae. In 46% of the faecal specimens and 62% of the specimens of rumen fluid from calves fed on milk substitute only, Pseudomonas aeruginosa was isolated in mean counts of 4.1 log cfu/g and 5.2 log cfu/g respectively. P. aeruginosa could not be isolated from any specimen from calves receiving straw pellets. These results indicate that the inclusion of straw pellets in the diet of veal calves may increase the bacteriological safety and keeping quality of veal.
