Performance and Histological Responses of Internal Organs of Broiler Chickens Fed Raw, Dehulled, and Aqueous and Dry-Heated Kidney Bean Meals

The objective of the present study was to investigate the effect of raw and differently processed [aqueous heating, dehulled, and dry heating (toasted)] kidney bean meals on the performance, weights, and histology of internal organs of broiler chicken. The feeding trial lasted for 56 d. Two hundred twenty-five 1-d-old broiler chicks (Anak strain) were used for the study. There were 5 treatment groups of 3 replicates with 15 birds per replicate. Raw and processed kidney bean meals were used to replace 50% protein supplied by soybean in the control diet. Data collected were used to evaluate feed intake, weight gain, and efficiency of feed utilization. The weights of liver, pancreas, kidney, heart, and lungs were also recorded and tissue samples of each collected for histological examination. Average daily food intake, average daily gain, and efficiency of feed utilization were influenced by the dietary treatments. Average daily food intake and average daily gain in birds fed the control diet and heat-treated kidney bean meals were similar and significantly (P<0.05) higher than those fed raw or dehulled meals. Feed conversion ratio was significantly (P<0.05) higher in birds fed raw or dehulled meals compared with those fed the control diet. The relative weight of the pancreas was significantly (P<0.05) increased as a result of acinar hypertrophy. The kidney had severe congestion of glomeruli and distention of the capillary vessels with numerous thrombi in birds fed raw and dehulled kidney bean meals. The weight of the liver was significantly (P<0.05) reduced in birds fed raw and dehulled meals, and the liver was characterized by marked coagulative necrosis and degeneration of the hepatocytes. The structural alterations were attributed to intake of trypsin inhibitors and haemagglutinins in the processed seeds. In conclusion, aqueous heated kidney bean meal can be used to replace 50% protein supplied by soybean meal in broiler starter and finisher diets without any adverse effect on the performance and the internal organs.

Comparison of growth, nitrogen metabolism and organ weights in piglets and rats fed on diets containing Phaseolus vulgaris beans

The effects of lectins in the diet have been mainly studied in rats. An important question is whether results obtained in rats can be extrapolated to larger animals like the pig. Phaseolus vulgaris beans are rich in toxic lectins. Therefore a study was carried out to compare the effects of diets containing 200 g Phaseolus vulgaris beans (raw or toasted)/kg in rats and piglets. Live-weight gain, nitrogen digestibility and N balance were much lower in piglets than in rats fed on diets containing raw beans. Live-weight gain and N balance were slightly negative in the piglets. When toasted beans were given, live-weight gain and N balance values were reduced in piglets but hardly at all in rats. Giving raw beans caused hypertrophy of the pancreas in the rats but in piglets the weight of the pancreas was reduced. Spleen weight was depressed in the piglets but not in the rats. Weight of liver was not affected in either animal species. When toasted beans were given no effects on the weights of pancreas, spleen or liver were found in piglets or rats. It was concluded that the piglet is much more sensitive to antinutritional factors in the Phaseolus vulgaris bean than the rat.

Compositional evaluation of some cowpea varieties and some under-utilized edible legumes in Nigeria

The nutritive potentials of some cowpea varieties such as Ife Brown, Ife Bimpe, IT84E-124, K59 and TVX716 and some under-utilized edible legumes grown in Nigeria such as pigeon pea (Cajanus cajan), lima bean (Phaseolus lunatus), lablab bean (Dolichos lablab), mucuna bean (Mucuna sp.) and Sphenostilis sternocarpa have been evaluated with respect to their proximate chemical composition, mineral content and some endogenous toxic constituents. The cowpea varieties contained on the average 22.5 g crude protein (CP), 2.60 g crude fibre (CF), 5.89 g either extract (EE) and 3.36 g ash/100 g DM while the under-utilized legumes contained 21.7, 6.10, 2.86, and 3.56 g/100 g DM for CP, CF, EE and ash respectively. Distinct varietal differences were observed for EE values as indicated by the coefficients of variation (CV) of 102% for cowpea and 60.8% for the under-utilized legumes. The CF content of the under-utilized legumes were generally higher than those of the cowpea varieties. Potassium was the most abundant mineral in both the cowpea varieties and the under-utilized legumes with mean values of 1.45 and 1.66% respectively, while P was the least abundant with 13.1 and 8.50 ppm, respectively. There were marked intra-varietal differences in the P content as shown by the high CV of 84.0 and 73.9% for the cowpea varieties and the other legumes. The cowpea varieties generally had higher levels of thioglucosides, trypsin inhibitor activity (TIA) and lower haemagglutinating activity (mean values of thioglucosides: 3.86%, of TIA: 13.9 mg/g protein and of haemagglutinating activity: 13.0 HU/mg N respectively), than the under-utilized legumes with mean respective values of 1.22%, 9.84 mg/g protein and 22.7 HU/mg N. The nutritional implications of these anti-nutritional components were discussed and some reasons adduced for the under-utilization of some of these legumes inspite of their apparent similarity in nutritional quality to the more commonly consumed grain legumes.
