Portable and miniature sensors in supply chain for food authentication: a review

Food fraud, a pervasive issue in the global food industry, poses significant challenges to consumer health, trust, and economic stability, costing an estimated $10-15 billion annually. Therefore, there is a rising demand for developing portable and miniature sensors that facilitate food authentication throughout the supply chain. This review explores the recent advancements and applications of portable and miniature sensors, including portable/miniature near-infrared (NIR) spectroscopy, e-nose and colorimetric sensors based on nanozyme for food authentication within the supply chain. After briefly presenting the architecture and mechanism, this review discusses the application of these portable and miniature sensors in food authentication, addressing the challenges and opportunities in integrating and deploying these sensors to ensure authenticity. This review reveals the enhanced utility of portable/miniature NIR spectroscopy, e-nose, and nanozyme-based colorimetric sensors in ensuring food authenticity and enabling informed decision-making throughout the food supply chain.

Determinants of the willingness to buy products certified by omics technology: differences between regular and occasional consumers of organic food

Consumers' demand for organic food has increased in the last years, together with a growing request for food authentication and safety. Omics technologies represent a viable analytical strategy to respond to such needs, strengthen food safety information transmission between consumers and industry, and differentiate between organic and conventional products. However, little is known about consumers' perception of such a novel certification approach. The present research ought to provide insights into the perspectives of consumers, exploring the antecedents of their intention to purchase organic vegetables certified through omics technologies and differentiating between regular and occasional consumers of organic foods. Data were collected from a representative sample of 807 Italian respondents who completed a self-report questionnaire, and Structural Equation Modeling was performed to analyze the data. Results show that several factors influence consumers' approach to omics technology, among which trust in actors in the food industry, attitudes towards the technology and environmental food concerns. In addition, the study drew attention to the differential path impacting consumers with distinct eating habits. Indeed, the degree of importance attributed to food in one's life and the interest towards innovative food are significant predictors of the intention to adopt omics technology only for people consuming organic products with higher frequency. Also, trust in industry actors follows a different path for regular and occasional organic food consumers. The present study sheds light on consumers' perspective on omics technologies, a relatively unexplored topic. Moreover, it allowed to differentiate consumers based on their organic consumption habits, which has been rarely done in previous research. The evidence collected suggests the need for tailored communication programs to stimulate the adoption of omics technologies and foster consumers' confidence in novel food technologies.

The Application of Chemometrics in Metabolomic and Lipidomic Analysis Data Presentation for Halal Authentication of Meat Products

The halal status of meat products is an important factor being considered by many parties, especially Muslims. Analytical methods that have good specificity for the authentication of halal meat products are important as quality assurance to consumers. Metabolomic and lipidomic are two useful strategies in distinguishing halal and non-halal meat. Metabolomic and lipidomic analysis produce a large amount of data, thus chemometrics are needed to interpret and simplify the analytical data to ease understanding. This review explored the published literature indexed in PubMed, Scopus, and Google Scholar on the application of chemometrics as a tool in handling the large amount of data generated from metabolomic and lipidomic studies specifically in the halal authentication of meat products. The type of chemometric methods used is described and the efficiency of time in distinguishing the halal and non-halal meat products using chemometrics methods such as PCA, HCA, PLS-DA, and OPLS-DA is discussed.
