A Choice Experiment Model for Honey Attributes: Italian Consumer Preferences and Socio-Demographic Profiles

Honey production is currently experiencing a great deal of media attention, with many positive attributes of this hive product emerging. The purpose of the study is to investigate consumer preference and what key information informs people's purchase of honey. This study is based on consumer surveys and experimental evaluation. First of all, the relative importance assigned by consumers to 12 honey product attributes was defined by using the best-worst scaling (BWS) methodology. Secondly, the latent class analysis (LCA) was used to identify different honey consumers based on preferences. The findings demonstrate that "health aspects" and "organoleptic compound" are the main categories of information that consumers tend to research. The sample segmentation defined four different consumer clusters: people who value health, sustainability, organic sourcing and quality. Additionally, socio-demographic characteristics such as age, education level and profession also played a part on consumer choice and the characterisation of each cluster. This study can contribute to fostering good nutrition and improving sustainability within communities.

Italian Consumer Preferences for Eucalyptus Honey: An Exploratory Study

The growing concern for environmental issues has underlined the need to promote sustainable consumption and production. Taking into consideration the three pillars of sustainability, honey should be seen as an important food from a sustainability perspective. Among honey varieties, the eucalyptus one is becoming increasingly popular with people for its aroma and the plant’s therapeutic properties. However, the beekeeping sector in Italy does not yet have sufficient knowledge and understanding of consumer needs with a view to increasing earnings. This paper aimed to analyze the drivers that make people pick eucalyptus honey and tries to investigate which extrinsic and intrinsic quality attributes affect consumer behavior. Data came from an online survey of 403 Italian honey consumers. An ordered Probit model was applied. The results show that consumers consider the taste, viscosity, therapeutic properties, brand reputation, variety, geographical indication, Italian origin, and organic certification of honey as the most important factors that drive the consumption of eucalyptus honey. The findings of the study should help the beekeepers and provide them with the right tools of communication, such as quality or sustainability labeling, thereby increasing their competitiveness.

Is Buying Local Food a Sustainable Practice? A Scoping Review of Consumers’ Preference for Local Food

Access to healthy food and the introduction of sustainable nutrition practices are two important issues today. The COVID-19 pandemic has brought new challenges to food security but it has also provided opportunities for local food production. The discussion on local food has been gaining attention in recent years, but there is still a lack of clear understanding of the term ‘local food’ in the literature. The relationship between local food and sustainability issues is still unclear and has various connotations. This discordance leads to further discussions on whether buying local food should be considered a sustainable behavior and whether consumer preference for local food can be perceived as a sustainable practice. A scoping literature review was conducted in order to fill this gap and to shed light on the main tendencies of the scientific literature regarding this topic. The outcomes of the research revealed three dimensions of ‘local food’ definitions in the literature: geographical, geopolitical, and organic; while the problem of a unified local food definition remains open. The studied literature did not show any sound evidence for sustainability attributes in the definition of local food and consumer perception of local food.

The Role of Local Seasonal Foods in Enhancing Sustainable Food Consumption: A Systematic Literature Review

This article aims to review the current literature pertaining to the effects of eating local seasonal food on sustainable consumption. To this end, we examined definitions of seasonal and local food, the methodological approaches adopted to study the impact of seasonal consumption on sustainability, and sustainability dimensions investigated in journal articles. Highlighting what seasonal and local means, it is crucial to evaluate the effect of the consumption of these foods on sustainability. A systematic review of the literature was conducted using Scopus and Clarivate’s Web of Science database in line with the recommendations from the Preferred Reporting Items for Systematic Reviews and Meta Analyses (PRISMA) guidelines. Our findings suggest that the concept of local seasonality provides relevant information to the study of sustainable consumption. However, for better use of this concept, it is crucial to define what is local. At this point, regulation of labels based on geographic proximity or political boundaries proves pertinent.

The antimicrobial activity of polyfloral honey and its awareness among urban consumers in Slovakia

The current interdisciplinary research studies the antimicrobial activity of selected polyfloral kinds of honey (n = 30) against three microorganisms (gram-positive bacteria Enterococcus faecalis, gram-negative bacteria Salmonella enterica, and one yeast Candida krusei) as well as investigates consumer behavior and awareness towards honey healing properties. Consumer research involved 617 honey consumers living in urban areas. T-test for Equality of means, non-parametric tests, and descriptive statistics were applied. Results showed that antimicrobial activity was found in all honey samples with a concentration of 50%. Nevertheless, better activity was obtained in honey samples from urban beekeepers compared to samples from retail stores. Results of consumer research showed that honey is mostly used as food (sweetener in beverages, ingredient in the recipe, or direct consumption) and as medicine mainly during the winter period. The consumer awareness towards honey healing effects was very high (97%), however, 1/3 of respondents were not able to list any specific examples, and only 11 % mentioned antibacterial activity. Furthermore, more than 70% of respondents did not know to explain the term “medical honey” and more than 50% of respondents are not aware of the maximum temperature used for heating honey without decreasing its biologically active compounds.

Factors Influencing the Sale of Local Products through Short Supply Chains: A Case of Family Dairy Farms in Slovakia

Increasing consumption of local products is a key factor for sustainable agriculture. This study deals with the factors that influence the sales of local products with a focus on value-added dairy products. The research involved 30 family businesses operating in the agro-sector. Primary data were obtained by a detailed online questionnaire survey. For deeper examination, five hypotheses were determined and statistically tested using the Friedman test and Nemenyi method. Using the acquired theoretical background and empirical research in a set of family farms, we can state that the goal of farmers is to sell their products through the shortest possible route directly to the consumer. The most commonly used tools of a short supply chain are on-farm sales and telephone order sales, on the other hand, farms rarely sell products in farmers’ markets, celebrations and anniversaries or e-shops, even though these tools all have great potential. The results show that farmers consider the product itself (quality, freshness, locality) to be the most important factor when selling local products, as well as customer recommendations and loyalty. Based on the results of the research, we propose to streamline sales support through new forms of marketing approaches to premium products, such as locally fresh products produced on family farms.
