Abstract
Low wholegrain food consumption is a leading dietary risk for avoidable morbidity and mortality globally, with limited sensory acceptability suggested to be a challenge for changing behaviour. This study aimed to evaluate the sensory acceptability of both wholegrain (brown) and refined (white) rice in common preparations. Four brown- and white-rice-containing dishes (Garlic Rice, Rice and Beans, Jollof Rice, and Rice Pudding) were tested. Quantitative (five-point scales) and qualitative (open question responses) sensory information were collected for dish appearance, aroma, taste, and texture. All four characteristics were scored equally acceptable in Rice and Beans and Rice Pudding (p > 0.05) between paired comparisons for brown and white rice. Scores were significantly lower for all characteristics for Jollof Rice (p ≤ 0.002), and lower for Aroma (median (lower quartile-upper quartile)) for brown (3.5 (3-4)) vs. white rice (4 (4-5)), p = 0.006). Appearance (brown (3 (3-4)) vs. white rice (4 (3.25-5)), p = 0.012), and Texture (brown 3 (2.25-4) vs. white rice (4 (4-5)), p < 0.001) for Garlic Rice. Familiarity and appealingness were qualitative themes aligned with the higher acceptability of white-rice-containing dishes. Certain dishes appear to mask key negative sensory attributes of wholegrain foods, possibly representing a means to increase wholegrain ingredient acceptability, thereby potentially improving individual/population-level intake.

Abstract
Against the backdrop of continuous socio-economic development, there is a growing concern among people about food quality and safety. Individuals are increasingly realizing the critical importance of healthy eating for bodily health; hence the continuous rise in demand for detecting food pollution. Simultaneously, the rapid expansion of global food trade has made people's pursuit of high-quality food more urgent. However, traditional methods of food analysis have certain limitations, mainly manifested in the high degree of reliance on personal subjective judgment for assessing food quality. In this context, the emergence of artificial intelligence and biosensors has provided new possibilities for the evaluation of food quality. This paper proposes a comprehensive approach that involves aggregating data relevant to food quality indices and developing corresponding evaluation models to highlight the effectiveness and comprehensiveness of artificial intelligence and biosensors in food quality evaluation. The potential prospects and challenges of this method in the field of food safety are comprehensively discussed, aiming to provide valuable references for future research and practice.

Abstract
Commercial cocoa and hazelnut-based sweet spreads typically present a poor nutribiochemical level due to their ingredients and recipes, while nowadays, there is the need of developing sustainable food products addressing both an improved nutritional and environmental profile. The aim of this work was then to develop an innovative hazelnut/carob-based spread with potential high sustainability and nutritional profile, including the exploitation of grape-processing residues (grape skin flour and grapeseed oil) and carob pulp as cocoa surrogate. Rheological (rotational/oscillatory), oxidative, and thermal features of the spread were assessed and compared with two commercial nut-cocoa-based products. Tribology was used to mimic and evaluate the spreads' behavior during oral consumption, and sensory profile (by quantitative descriptive analysis) was also assessed. All products exhibited a pseudoplastic behavior, with the elastic component prevailing over the viscous one. The innovative product showed the highest lubricity from both rheological and sensory analysis, thus well correlating to the obtained lowest viscosity and friction factor trends. Grapeseed oil provided a better nutritional profile, but the largest amount of unsaturated fatty acids promoted oxidation, despite the higher total phenolic content and antioxidant capacity coming from the use of carob and grape skin powders. The sensory perception investigation revealed a characteristic mouthfeel/flavor for the new spread identified having a more fluid consistency and a bitter/sour taste, together with a greater stickiness and a poorer smoothness due to a higher fiber content and solid fat absence.

Abstract
Introduction The raspberry (Rubus idaeus) fruit is characterized by good taste and high acceptability by consumers. Thus, the impact on the quality attributes and metabolites related to raspberry taste should be evaluated in crop alternatives such as the protected soilless culture. This study aimed to evaluate the metabolic changes during fruit development and postharvest of raspberry grown in open field and protected soilless culture and their relationship with quality parameters and sensory perception. Methods In this study, the quality parameters and polar metabolites -sugar and amino acids- content were evaluated during raspberry ripening. In addition, ripe fruit was stored at 1 °C for five days, followed by one day of shelf life at 20 °C. Results The physiological and quality parameters showed typical changes during ripening in both growing conditions: a constant production of CO2, a drastic loss of firmness, an increase in weight and soluble solids content, loss of acidity, and a turning to red color from the green to fully ripe fruit stages in both growing conditions. Fruit from the protected soilless culture had significantly higher weight but a lower soluble solids content. The metabolic analysis showed differences in primary metabolites content during ripening and storage at 1 °C between both growing conditions. The raspberries grown in the open field showed higher contents of sugars such as D-glucose and D-fructose. On the contrary, the fruit from the protected soilless culture showed higher contents of some amino acids such as L-alanine, L-serine and L-valine, among others. The sensorial panel showed significant differences in the perception of the sweetness, acidity, color and firmness of ripe fruit from both growing conditions. Discussion The present study provides interesting and useful results with direct commercial application for this alternative growing system, mainly in areas where soil and water scarcity are a reality.

Abstract
Lipids in foods are sensitive to various environmental conditions. Under light or high temperatures, free radicals could be formed due to lipid oxidation, leading to the formation of unstable food system. Proteins are sensitive to free radicals, which could cause protein oxidation and aggregation. Protein aggregation significantly affects protein physicochemical characteristics and biological functions, such as digestibility, foaming characteristics, and bioavailability, further reducing the edible and storage quality of food. This review provided an overview of lipid oxidation in foods; its implications on protein oxidation; and the assessment methods of lipid oxidation, protein oxidation, and protein aggregation. Protein functions before and after aggregation in foods were compared, and a discussion for future research on lipid or protein oxidation in foods was presented.

Abstract
Nutritional supplements produced from soy and being rich in protein, fat and many other valuable substances have become a promising source of fortification of bakery products. This study aimed to develop a technology for producing wheat bread enriched with a protein-vitamin-mineral ingredient (PVMI) obtained from germinated soybeans. When kneading the dough, PVMI was added together with wheat flour and other dry components. Mathematical modeling of the wheat bread sensory evaluation showed the optimal content of PVMI in the recipe was 20% of the weight of wheat flour. As a result of the correlation-regression analysis, the most rational production characteristics for obtaining bread enriched with BVMI have been established. The amount of protein in the bread sample increased by 71.9%, dietary fiber - by 40.9%, vitamin E - by 34.7%, vitamin B1 - by 190%, vitamin B2 - by 80%, choline - by 186%. The fat quantity was 4.1 times more. At the same time, the total carbohydrate content decreased by 18.1% compared to the control sample. The improved chemical composition makes it possible to classify wheat bread with PVMI as an enriched food product.

Abstract
The school meal promotes healthy eating habits through nutritionally adequate preparations. Consequently, it prevents obesity and malnutrition, favoring learning. This systematic review aimed at investigating the methods for evaluating the acceptance of school menus offered by school feeding programs (SFPs) around the world. Specific search strategies were conducted on PubMed, Lilacs, Web of Science, Scopus, Embase, Google Scholar, and ProQuest Global. The methodological quality of the included studies was assessed using the Meta-Analysis Statistical Assessment and Review Instrument. A total of 89 studies were included. The countries with the highest number of studies were Brazil (n = 42), South Korea (n = 13), and the United States (n = 12). The most used methods (69.66%) were numerical scales, with a higher prevalence for the 5-point scale (50.56%). Other methods included questionnaires and/or interviews with objective and/or subjective questions (44.94%); and mathematical formulas and/or visual estimates evaluating the consumption of food and leftovers (40.45%). The prevalent use of the 5-point hedonic scale may be due to its low cost, simplicity, ease of elaboration, application speed, and student understanding. Mathematical formulas and/or visual estimation were used by about 40% of the studies, but it is difficult to compare studies.

Abstract
Brandy is a unique alcoholic beverage obtained from wine distillates. Numerous studies have been published on its physicochemical traits and the effect of certain elaboration variables on them, but not many studies have been carried out from a sensory point of view or that have followed standardized methods applicable to this discipline. This study intends to determine the effect that certain production variables have on the sensory characteristics of brandy. These variables are the following: The use of sulphur dioxide during the fermentation of the base wine, the subsequent distillation system, the alcohol content during aging, the botanical origin of the aging casks, and their toasting degree. For this purpose, the guidelines provided by the ISO standards for sensory analysis have been followed, and chromatic parameters have also been determined. Heavy extractions from Quercus petraea casks resulted in brandies with widely varying colors, although these were hard to distinguish using the olfactory and gustatory properties associated with the factors under study. Conversely, those brandies aged in Quercus alba casks presented very consistent greenish shades that are not traditionally associated with aged brandy. This lower extraction could explain why the aromatic traits that are found in the fresh spirit are better preserved when this type of oak is used. The spirit obtained through the distillation of SO2-free wines aged in Quercus robur presented average sensory characteristics: Good color, smooth in the mouth, and medium-intensity oak notes. The distillates that were aged at 55% ABV were later perceived as more aromatically intense with a greater oak note on the palate. On the other hand, the brandies obtained from wines without SO2 added were perceived as less alcoholic, sweeter, and more balanced, with a softer oak note.

Abstract
The objective of this study was to assess the sensory profile, consumer acceptance, and internal and extrinsic factors influencing the acceptability of beef sausages made at varying levels of pigeon pea protein (2, 4, and 6% w/w) as a binder. Sausages prepared without binders (CNB) and sausages made with a chemical phosphate binder served as controls (PoB). A panel of 12 trained panelists performed descriptive analysis using the quantitative descriptive analysis (QDA) approach on a 9-point line scale, while 70 consumers participated in a consumer test utilizing a 9-point hedonic scale. Preference mapping was done by linking descriptive sensory and hedonic data using partial least squares regression analysis (PLSR) and the conjoint analysis was conducted by 90 panelists using a 9-point scale. The 6% pea protein sausages had the significantly lowest (p < 0.05) mean hardness, aroma, and color intensity but statistically similar (p > 0.05) highest moistness intensity to the phosphate sausages. Phosphate sausages had the highest mean color and saltiness intensity (p < 0.05) compared to the lowest mean values in 6% pea protein sausages. The phosphate sausages were the most accepted by consumers (p < 0.05), followed by the 6% pea protein sausages, with aroma, saltiness, moistness, and firmness being the key drivers in consumer acceptability of sausages. Furthermore, formulation and price had a significant (p < 0.05) effect on consumer acceptability. In conclusion, employing pea protein as a binder in sausage formulations improves sensory profiles and increases consumer acceptance, making it a possible food industry alternative. Further studies to determine the optimal amount of pea protein binder that will perform better than phosphate binder are recommended.

Abstract
Fermented foods and beverages have become a part of daily diets in several societies around the world. Emitted volatile organic compounds play an important role in the determination of the chemical composition and other information of fermented foods and beverages. Electronic nose (E-nose) technologies enable non-destructive measurement and fast analysis, have low operating costs and simplicity, and have been employed for this purpose over the past decades. In this work, a comprehensive review of the recent progress in E-noses is presented according to the end products of the main fermentation types, including alcohol fermentation, lactic acid fermentation, acetic acid fermentation and alkaline fermentation. The benefits, research directions, limitations and challenges of current E-nose systems are investigated and highlighted for fermented foods and beverage applications.

Lipid oxidation is the most crucial quality parameter in foods. Many methods were developed to determine the level of oxidation and antioxidant activity. This review compares the methods used to determine lipid oxidation and antioxidant capacity in foods. Lipid oxidation methods developed are based on the direct or indirect measurement of produced primary or secondary oxidation substances. Peroxide values and conjugated diene methods determine the primary oxidative products of lipid oxidation and are commonly used for plant oils and high-fat products. 2-Thiobarbituric acid-reactive substances and chromatographic methods are used to determine the secondary products of oxidation and are suitable for meat and meat-based products. The fluorometric and sensory analyses are indirect methods. The antioxidant capacity of additives is determined indirectly using the lipid oxidation methods mentioned above or directly based on the free-radical scavenging activity of the antioxidant compounds. Each lipid oxidation and antioxidant capacity methods use different approaches, and one method cannot be used for all foods. Therefore, selecting proper methods for specific foods is essential for accurately evaluating lipid oxidation or antioxidant capacity.

Abstract
BACKGROUND: Instant rice bran milk is an innovation product made from rice bran with the addition of emulgator and flavor.
AIM: The purpose of this study was to determine the level of preference of instant rice bran milk products through hedonic testing in accordance with pre-determined sensory properties and determine the acceptability of instant rice bran milk products.
METHOD: The research method is an experiment with sensory tests and hedonic tests on five kinds of flavors, namely chocolate, vanilla, orange, melon and original flavors. Sensory attributes that are referred by panelists include shape, color, aroma, taste, texture, and overall impression.
RESULTS: Overall panelist assessment of instant rice bran milk products shows that rice bran milk that uses melon flavoring has the highest score (3.69) and the lowest is using orange flavoring (2.63). The most preferred product is milk that uses melon flavoring. There were differences in the average results of the panelist assessment of each product based on color, odor, and overall rating (p < 0.05), while based on taste and texture, there is no difference (p > 0.05).
CONCLUSION: Instant rice bran products favored both in terms of shape, color, aroma, taste, texture, and overall impression were very positively accepted as dairy product innovation and the most preferred product is one that uses melon flavorings.
