Abstract
The current study investigates the feasibility of preparing Arabic bread from wheat flour, sweet potato flour, or peeled sweet potatoes based on the nutritional values, technological characteristics, and sensory properties of the final products. First, we analyzed the proximate, elemental, total and individual phytochemical compositions of the raw materials and bread samples. The analysis showed that potassium, calcium, and phosphorus were higher in peels than pulp, in the same manner to the total phenolics, flavonoids, and anti-radical scavenging activities. Phenolic acids and flavonols were quantified, where p-coumaric, feruloyl-D-glucose, eucomic, gallic, and ferulic acids were measured as major phenolic acids in either peels or pulp flours, and their quantities were higher in the peels. Furthermore, we evaluated the effects of wheat substitution on the properties of the dough blends and their final bakery. The results indicated that the fortified samples' nutritional and rheological properties were significantly improved, while their sensory qualities were comparable to those of the control. Thereby, the fortified dough blends presented higher dough stabilities, indicating a wider range of applications. Additionally, after the heat treatment, the fortified breads maintained significantly higher total phenolic, flavonoid, anthocyanin, and carotenoid contents, and total antioxidant activities, implying their accessibility for humans upon consumption.

Abstract
BACKGROUND Demands for foods conducive to eye health have been on the increase in the global healthcare sector. Marigold powder as a major source of lutein was utilized to produce lutein-fortified breads for ocular health. The physicochemical characteristics of the doughs and breads were investigated in terms of rheology, water mobility, and protein secondary structures. RESULTS The incorporation of marigold powder decreased the water absorption of doughs without significantly altering thermomechanical properties. With a range of fortification levels (1-3%), marigold powder led to decreased storage and loss modulus of doughs by weakening their gluten network, which was supported by their T2 relaxation times. The resistance of the doughs weakened with increasing levels of marigold powder, while their extensibilities significantly incremented. Fourier transform infrared spectral deconvolution revealed the changes in wheat protein structures upon marigold powder incorporation, in which the proportion of β-turn increased at the expense of β-sheet ratio. The breads with marigold powder displayed increased specific volume from 4.034 to 4.368 mL g-1 , accompanied by softer textures. The baking process led to heat-induced losses in lutein concentration of less than 10% within the crumb and approximately 30% in the crust. CONCLUSION The use of marigold powder induced changes in protein secondary structure and extensional features of doughs, contributing to increased loaf volume and softer texture. Overall, this study provides fundamental information on the rheological and structural effects of marigold powder in a wheat bread system, consequently encouraging the food industry to utilize marigold power as a functional food ingredient. © 2023 Society of Chemical Industry.

Abstract
The fermentation of sweet potato (Ipomoea batatas L.) with a strain of Lactobacillus plantarum leads to an increase in its exopolysaccharides (EPS) content which is useful for enhancing the functional properties of flour. The objective of this study was to develop healthy and nutritious meal-based biscuits from fermented sweet potato (FSP) flour supplemented with mackerel flour. Eleven formulations containing wheat flour, FSP flour, nonfermented sweet potato (NFSP) flour, and mackerel flour at different proportions defined following a mixture design were used to prepare biscuits. Physicochemical, microbiological, and sensory analyses of the different biscuits were performed. Biscuits prepared with FSP at 100% scored the lowest lipid (
) and the highest sugar (
) contents. The incorporation of mackerel flour in the formulation led to a significant (
) increase in the protein and mineral contents of biscuits thus conferring an immune-boosting property to these latters. All the biscuits were of good microbiological quality independent of the formulation. The highest DPPH free radicals scavenging activity (IC50 of 1.90 and 3.41 μg/mL for ethanolic and methanolic extracts, respectively) were observed with biscuits prepared with FSP flour at 100%. The sensorial characteristics of biscuits prepared with equal proportions of wheat and FSP flours were highly appreciated by the panelists with scores close to the ones prepared with wheat flour at 100%. The results of this study demonstrate the potential of FSP flour as a substitute for wheat flour in biscuits preparation. It also suggests biscuits prepared with FSP flour supplemented with mackerel flour as a functional and immune-boosting food.

Abstract
Bread is a commonly consumed staple and could be a viable medium to deliver plant-based ingredients that demonstrate health effects. This review brings together published evidence on the bioactive properties of bread formulated with plant-based ingredients. Health effects associated with the consumption of bread formulated with plant-based functional ingredients was also reviewed. Bioactive properties demonstrated by the functional ingredients fruits and vegetables, legumes, nuts and tea incorporated into bread include increased phenolic and polyphenolic content, increased antioxidant activity, and extension of bread shelf-life by impairment of lipid and protein oxidation. Acute health effects reported included appetite suppression, reduced diastolic blood pressure, improvements in glycaemia, insulinaemia and satiety effect. These metabolic effects are mainly short lived and not enough for a health claim. Longer term studies or comparison of those who consume and those who do not are needed. The incorporation of plant-based functional ingredients in bread could enhance the health-promoting effects of bread.

Abstract
The indigenous fruit Strychnos madagascariensis is usually processed to flour, called nfuma, being highly consumed during staple food shortage. This study aimed to evaluate the nutritional composition of nfuma and its nutrient adequacy. Flours from four districts of Mozambique were analyzed using AOAC methods for proximate composition, HPLC for sugar, amino acids (AA), vitamin E and carotenoids and ICP-MS and FAAS for minerals. The results showed that nfuma stands out for its high content of fat (26.3–27.8%), mainly oleic acid, fiber (>6%), vitamin E (6.7 to 8.0 mg/100 g) and carotenes (2.2 to 2.6 mg/100 g). The main amino acids of nfuma protein were Arg, Asp and Glu, and Lys was the limiting one. The mineral composition reveals K (~1200 to 1700 mg/100 g) as the main macromineral followed by Mg > Ca > Na. The main trace element was Mn (~4 mg/100 g) followed by Fe > Zn > Cu > Cr > Co. Aluminum (~3 mg/100 g) was the main non-essential element and Rb, Ni, Sr, Ba, V, Cd were also quantified. Assuming the daily consumption of 50 g, nfuma provides 82% of Vitamin A dietary reference value for toddlers, while the consumption of 100 g contributes to 132% and 60% of Mn and vitamin A DRV for adults, respectively. Despite the nutritional advantages of nfuma, this flour can be a source of Ni, highlighting the importance of the study of good practices in its preparation to decrease the exposure to non-essential elements.

Abstract
<b>Background and Objective:</b> Vitamin A Deficiency (VAD) is a critical public health problem that affects the health of kids worldwide and may induce anemia and oxidative stress. The current study aimed to pre-clinically assess the effect of a cupcake, prepared to be served for primary school children, on vitamin A deficiency and related anemia and oxidative stress in rats. <b>Materials and Methods:</b> Flour of flash orange sweet potatoes, as a rich source of pro-vitamin A, was used to prepare the cupcake. The chemical composition, amino acids and sensory evaluation of the cupcake were done. The biological evaluation was carried out using 18 weaning rats in three groups (control group, vitamin A-deficient group and vitamin A-deficient group fed on a diet fortified with 20% of the prepared cupcake for two months). <b>Results:</b> The results indicated the high value of vitamin A in the prepared cupcake. Excellent sensory characteristics were noticed. Feeding on the VDA diet fortified with the prepared cupcake suppressed the reduction in Retinol-Binding Protein (RBP), hemoglobin and iron. Total Iron Binding Capacity (TIBC) increased in the VAD group. Also, feeding on the prepared cupcake suppressed the reduction in Superoxide Dismutase (SOD) and Glutathione Peroxidase (GPx) and the elevation of Malondialdehyde (MDA). <b>Conclusion:</b> It can be suggested that the prepared cupcake is promising in preventing of vitamin A deficiency and related anemia and oxidative stress. Thus, the prepared cupcake may be efficient for children to prevent vitamin A deficiency.

Abstract
Anchote (Coccinia abyssinica (Lam.) Cogn.) is an indigenous underutilized but valuable root crop solely consumed in Ethiopia. It is commonly used as occasional food during holidays and as therapeutic food to treat fractured bone or develop strong bone. So far, different studies conducted related to its variety development, nutrition, and anti-nutrition contents. In this study, attempts were made to investigate the effect of predrying treatments and drying temperature on nutritional composition and thermophysical properties of its flour. A general full factorial experiment with two factors each at three levels used to run the experiment. The proximate compositions, thermophysical properties, and mineral contents were determined using AOAC standard methods; well-developed model equations; and atomic absorption spectrophotometry, respectively. The ranges of nutrients in mg/100 g DB were as follows: moisture content (MC) 7.37-10.10; protein 3.26-4.80; total fiber (TF) 7.24- 10.76; ether extract (EE) 0.49-0.70, ash 2.96-4.74, total carbohydrate (TC) 80.01-83.66; calcium (Ca) 357.07-482.89; magnesium (Mg) 138.87-222.38; iron (Fe) 10.87-16.00; zinc(Zn) 2.07-2.80; and copper(Cu) 1.90-2.25. The bulk density, specific heat capacity, thermal conductivity, and thermal diffusivity of the flours ranged in 0.72-0.82 (g/cm3), 1.710-1.780 KJ/kg°C, 0.263-0.273 W/m2°C, and 1.88 x 10-4- 2.12 × 10-4 m2/s, respectively. The predrying treatment and drying temperature significantly affected (p < .05) MC, protein, TF, EE, ash, TC, Ca, Fe, and Zn contents. The thermophysical properties were also affected by the same factors. The flour made from raw anchote dried at 100°C was better in preserving the nutrients and improving its cooking property.
