Effect of potato peel, pumpkin seed, and quinoa flours on sensory and chemical characteristics of gluten-free breads

Drying kinetics and sensory characteristics of dehydrated pumpkin seeds (Cucurbita moschata) obtained by refractance window drying

The current importance of pumpkin (Cucurbita moschata) in national food security has progressively encouraged research on this fruit. This is how pumpkin seeds constitute a potential raw material to obtain dehydrated products for direct consumption. In this research, we compared the drying kinetics, effective diffusivity (D_ef) and sensory perception in a non-trained panel of dehydrated pumpkin seeds through refractance window drying (RW) and convective air drying (CA). RW drying was carried out in a laboratory-scale hydro-dryer and CA drying was carried out in a dryer with hot air circulation; both at 80 ± 2 °C. Sensory acceptability (appearance, aroma, taste and texture) was evaluated by an affective test on a hedonic scale from 1 to 5 with 60 panelists. The drying curves (MR vs t) were fitted to four kinetic models: Newton, Logarithmic, Page and Midilli et al. D_ef was determined by the second Fick’s Law solution. The best model for RW drying was logarithmic, and D_ef was 6.60 × 10⁻¹⁰ m²/s (R² = 0.9927); while for CA, it was Midilli et al., with the D_ef found through this method being 9.60 × 10⁻¹⁰ m²/s (R² = 0.9928). Dry seeds by RW obtained a general acceptance of 3.82, compared to 3.63 by CA. Results allow us to conclude that among the drying methods evaluated, there is not statistically significant differences, in terms of dehydration characteristics and sensory acceptability, constituting RW drying as an alternative method for obtaining dehydrate pumpkins seeds for direct consumption.

Unveiling the Bioactive Potential of Fresh Fruit and Vegetable Waste in Human Health from a Consumer Perspective

Food supply disruption and shortage verified during the current pandemic events are a scenario that many anticipate for the near future. The impact of climate changes on food production, the continuous decrease in arable land, and the exponential growth of the human population are important drivers for this problem. In this context, adding value to food waste is an obvious strategy to mitigate food shortages, but there is a long way to go in this field. Globally, it is estimated that one-third of all food produced is lost. This is certainly due to many different factors, but the lack of awareness of the consumer about the nutritional value of certain foods parts, namely peels and seeds, is certainly among them. In this review, we will unveil the nutritional and bioactive value of the waste discarded from the most important fresh fruit and vegetables consumed worldwide as a strategy to decrease food waste. This will span the characterization of the bioactive composition of selected waste from fruits and vegetables, particularly their seeds and peels, and their possible uses, whether in our diet or recycled to other ends.

Evaluation of By-Products of Potato Peel as Food Additive

Abstract:

The potato plant is an important food source produced all over the world and it provides a significant portion of daily energy intake in nourishment. In addition, a significant rate of vitamins, fibre, mineral matters, protein, and fat can be obtained by consuming potato. In this study, the production, consumption, and usage areas of potato, a crucial source of our diet, and the possibilities of using it as food additives with the nutritional properties of its peel have been investigated. Generally, potato is consumed after its peel is removed in the homes and industrial areas and many of these peels are disposed off as wastes. Studies show that potato peel has a high content of dietary fibre, protein, carbohydrate, mineral matters, vitamin, phenolic, and antioxidant. The use of potato peel as food additives have also been discussed in this study.
