Abstract
The poultry industry generates a lot of waste, including dead birds, manure, and poultry litter. Poultry waste should never be disposed of improperly because it can seriously harm the environment. The waste can be recycled as a feedstock for use in poultry feed by composting the litter and deceased birds. The compositional profile and organoleptic properties of the meat of growing Japanese quail were examined over the course of a 4-week trial to ascertain the effect of adding compost to the diet. In a completely randomized design (CRD), 1200 newly hatched quail chicks (Coturnix coturnix japonica) were divided into five treatment groups (diets with 0, 2.5, 5, 7.5, and 10% compost), each consisting of 40 birds with six replicates. The addition of compost to the diet had no noticeable effects on the organoleptic qualities of appearance, color, aroma, taste, texture, juiciness, tenderness, and acceptability (P>0.05). The compositional profile characteristics for chicks given compost at any level compared to chicks fed the control diet showed no differences (P>0.05). These findings suggest that the sensory characteristics and compositional profile of growing meat quails can be maintained when fed diets including up to 10% compost.

Abstract
Large amounts of waste, including dead birds, manure, and poultry litter, are produced by the poultry industry. Poultry waste should be disposed of properly to avoid major pollution and health risks. Composting litter and dead birds could be an option to recycle the waste and use in poultry feed. A study was conducted to investigate the effects of feeding composted poultry waste on the organoleptic qualities and compositional profile of the meat of broiler chickens. A total of 300 day-old broiler chicks (500-Cobb) were randomly allocated to five treatment groups replicated six times with 10 birds each, under a completely randomized design (CRD). Five iso-caloric and iso-nitrogenous diets including composted poultry byproducts at concentrations of 0, 2.5, 5, 7.5, and 10% were fed ad libitum to the birds from day 0 to day 35. The sensory grading and meat composition profile of 500 Cobb broiler chickens were tested at 35 days of age. The findings showed that there were no variations in the sensory profiles of the meat from birds given various diets (P>0.05). Although the results were somewhat lower for the chicks fed compost-containing diets than for the control group, this difference was deemed to be insignificant (P>0.05). Similarly, there were no variations in the compositional profile values of the meat between meat from birds fed various diets (P>0.05). These findings imply that broiler chickens may be raised on diets containing up to 10% poultry byproduct compost without any negative impacts on the meat's sensory quality or composition. Additionally, using compost into broiler diets may help to lower the cost of feed.

Abstract
In this study, the effects of the Arginine/Lysine (Arg/Lys) ratio in low- and high-methionine (Met) diets on the sarcoplasmic protein profile of breast muscles from turkeys reared under optimal or challenge (Clostridium perfringens infection) conditions were determined. One-day-old Hybrid Converter female turkey poults (216 in total) obtained from a commercial hatchery on hatching day, and on the basis of their average initial body weight were randomly allocated to 12 pens (4 m2 each; 2.0 m × 2.0 m) containing litter bedding and were reared over a 42-day experimental period. Diets with high levels of Lys contained approximately 1.80% and 1.65% Lys and were offered in two successive feeding periods (days 1–28 and days 29–42). The supplemental levels of Lys were consistent with the nutritional specifications for birds at their respective ages as established in the Management Guidelines for Raising Commercial Turkeys. The experiment was based on a completely randomized 3 × 2 × 2 factorial design with three levels of Arg (90%, 100% and 110%) relative to the content of dietary Met (30 or 45%) and without (−) or with (+) C. perfringens challenge at 34, 36, or 37 d of age. Meat samples were investigated in terms of pH, color, and sarcoplasmic protein profile. The experimental factors did not influence meat quality but the dietary Arg content affected meat color. The sarcoplasmic protein profile was influenced by all studied factors, and glycolytic enzymes were the most abundant. This study evidenced strong association between the challenge conditions and the involvement of glycolytic enzymes in cell metabolism, particularly in inflammatory processes, and DNA replication and maintenance in turkeys. The results showed an effect of C. perfringens infection and feeding with different doses of Arg and Met may lead to significant consequences in cell metabolism.

Correlations between first order echotextural characteristics and chemical composition of pectoralis major muscles in broiler chickens receiving different dietary fat supplements. Abstract
This study examined the quantitative relationships among ultrasonographic image attributes and chemical composition of the pectoralis major muscles in broiler chickens that received four different dietary fat supplements (Group SO: soybean oil; Group FO: flaxseed oil; Group SO+FO: soybean oil+flaxseed oil; and Group BT: beef tallow; n=10 birds/group). Ultrasonograms of birds’ pectoral muscles, in a transverse (T) and longitudinal (L) plane, were obtained just before slaughter at 6 weeks of age and were subjected to digital image analyses to determine mean pixel intensity (MPI) and pixel heterogeneity values (standard deviation of numerical pixel values; MPH; a.k.a first order echotextural characteristics). Thirty-eight chemical characteristics of the muscles were determined post-mortem (crude fat, protein, and dry matter as well as fatty acid profiles) and were analyzed for correlations with the echotextural variables. A total of 12 (L-MPI: 7; L-MPH: 4; and T-MPH: 1 correlation), 5 (L-MPI: 2; L-MPH: 2; and T-MPI: 1 correlation), 15 (L-MPI: 10; T-MPI: 4; and T-MPH: 1 correlation) and 8 (L-MPI: 2; L-MPH: 1; and TMPH: 5 correlations) significant correlations were recorded in Groups SO, FO, SO+FO and BT, respectively. When the data were pooled for all 40 birds studied, significant correlations with echotextural attributes were recorded for eighteen different chemical constituents, with the strongest overall correlation found between crude fat content and T-MPI (r=0.52, P=0.0005). In conclusion, there exists a potential application for ultrasonographic imaging in situ combined with computerized image analysis to estimate certain chemical constituents of pectoralis major muscles in broiler chickens. However, the existence and strength of correlations among ultrasonographic image attributes and muscle composition are affected by the source of dietary fat and relative abundance (“threshold concentrations”) of individual chemical components.

Abstract
Essential oils are potential antimicrobial alternatives and their applications in animal feeds are limited due to their fast absorption in the upper gastrointestinal tract. This study investigated the effects of encapsulated cinnamaldehyde (CIN) at 50 mg/kg or 100 mg/kg on the growth performance, organ weights, meat quality, intestinal morphology, jejunal gene expression, nutrient digestibility, and ileal and cecal microbiota. A total of 320 male day-old broiler Cobb-500 chicks were randomly allocated to four treatments with eight pens per treatment (10 birds per pen): 1) basal diet (negative control, NC); 2) basal diet supplemented with 30 mg/kg avilamycin premix (positive control, PC); 3) basal diet with 50 mg/kg encapsulated CIN (EOL); 4) basal diet with 100 mg/kg encapsulated CIN (EOH). Despite birds fed EOH tended to increase (P = 0.05) meat pH at 24 h, all pH values were normal. Similar to PC group, meats from birds fed EOL and EOH showed a reduced (P < 0.05) Warner-Bratzler force shear (WBFS) compared to the NC group. The highest villus to crypt ratios (VH/CD; P < 0.05) were observed in broilers fed either EOL or EOH, with an average of 14.67% and 15.13% in the duodenum and 15.13% and 13.58% in the jejunum, respectively. For jejunal gene expressions, only six out of the 11 studied genes showed statistically significant differences among the dietary treatments. Gene expressions of cationic amino acid transporter 1 (CAT-1) and neutral amino acid transporter 1 (B0AT-1) were upregulated in EOH-fed birds compared to PC and NC-fed birds (P < 0.05), respectively; while the expression of proliferating cell nuclear antigen (PCNA) was downregulated in EOL-fed birds when compared to NC birds (P < 0.05). Nonetheless, the expressions of cadherin 1 (CDH-1), zonula occludens 1 (ZO-1), and maltase-glucoamylase (MG) were all upregulated (P < 0.05) in EOH-fed birds compared to PC-fed birds. The apparent ileal digestibility (AID) of dry matter, crude protein, crude fat and of all 18 tested amino acids increased in EOL-fed birds (P < 0.01). Additionally, relative abundances (%) of ileal Proteobacteria decreased, while ileal and cecal Lactobacillus increased in EOH-fed birds (P < 0.05). In conclusion, dietary encapsulated CIN improved meat quality and gut health by reducing meat WBFS, increasing VH/CD in intestines, jejunal gene expressions, AID of nutrients and beneficial ileal and cecal microbiota composition.

Abstract
Day-old chick quality is an essential element for the overall profitability of the broiler productive cycle and has been associated with the growth performance and feed conversion rate. An effect on the development of the immune system was also reported, which could likely account for reduced susceptibility to infectious diseases and improved animal welfare parameters. Besides direct cost reduction, lower antimicrobial use and improved animal welfare are crucial in the directive of European Union legislation and are at the forefront of customer choices. Several factors contribute to determining the chick quality. Breeder flocks genetics, health, and management affect the egg features, quality, and bacterial load. However, hatchery practices play a pivotal role, since adequate hygiene and handling are fundamental in reducing egg contamination and cross-contamination. The presence of rotten eggs is often regarded as a major risk, since the internal bacterial load can contaminate the needle used for in-ovo vaccination, the nearby eggs, and the whole incubator/hatching room when broken. In the present multicentric study, representative of 40 hatcheries located in 11 European countries, a remarkable impact of the rotten egg percentage on the hatchery productive parameters, representative of the hatchability, embryo mortality, and level of contamination, was demonstrated. Efficient rotten egg removal and the application of appropriate detection and removal tools should thus provide remarkable benefits for hatchery performance and indirectly for downstream poultry production.

To evaluate the utility of transect sampling for assessing animal welfare in large chicken flocks, we quantified relationships between environmental inputs, welfare problems detected using transect sampling, and production outcomes. We hypothesised that environmental inputs including environmental complexity (i.e. number of environmental enrichment types provided), space allowance, underfloor heating (presence or absence), and photoperiod regimen (18 h continuous vs 16 h intermittent) would correspond to variations in welfare assessment findings, which would predict production outcomes. We conducted on-farm welfare assessment of Norwegian broiler flocks at approximately 28 days of age. We sampled four transects (rows between feeder and drinker lines) per flock to determine litter quality and the proportions of chickens with compromised welfare as indicated by visual signs of walking difficulties, illness, skin wounds and small bird size. Production outcome measures included mortality, reasons for carcass rejection at slaughter, footpad dermatitis, growth rate, feed conversion and an integrated production index. Greater environmental complexity was associated with a reduction in skin wounds and total welfare problems on the farm, lower mortality, fewer rejections due to wounds and underweight birds, and fewer rejections overall. Higher space allowances within levels of environmental complexity were associated with fewer walking difficulties and welfare problems overall, a reduction in rejections due to wounds, and a higher growth rate and production index. Underfloor heating was associated with a reduction in rejections due to leg deformity, and intermittent light was associated with lower illness and skin wound rates on the farm, and lower mortality. Furthermore, fewer welfare problems and better litter quality on the farm were associated with fewer carcass rejections at slaughter. Thus, data from transect sampling varied with environmental inputs and production outcomes, supporting the validity of transect sampling for practical, animal-based on-farm welfare assessment.

Abstract
The potential of the transect method was tested for early detection of welfare problems associated with bird age and genetic line, litter quality, and transect location. On-farm welfare impairment and its consequences on slaughter outcomes were evaluated to test the method's predictive ability. A total of 31 commercial Ross, Cobb, and mixed RC broiler flocks were evaluated at 3, 5, and 6 wk of age. Two observers evaluated 3 transects each, simultaneously and in the same house by detecting welfare indicators including lame, immobile, sick, small, dirty, tail wounds, other wounds (head and back wounds), featherless, terminally ill, and dead birds. Increasing lame, immobile, sick, and terminally ill birds according to bird age (P < 0.001) was detected. Higher incidences of small and sick birds were detected in C and RC (P < 0.001) as compared to R flocks, whereas more dead and tail wounded were observed in RC compared to R and C flocks at week 5 (P < 0.001). Dirty incidence increased as litter quality deteriorated (P < 0.001). A higher incidence of immobile, small, sick, dirty, and dead was registered near house walls (P < 0.001). Differences across observers were detected for lame, immobile, and terminally ill birds (P < 0.001). For the observer by bird age interaction, differences were detected for dirty, tail wounds, and other wounds (P < 0.05). Pearson correlations between welfare indicators at week 3 and those at final weeks of age (P < 0.05) ranged between r values of -0.2 and 0.654 (P < 0.05). Correlations between welfare indicators and slaughter outcomes showed a relationship between flock mortality and dead on arrival, footpad dermatitis, leg problems, and illness (P < 0.05). Litter quality positively correlated with downgrades (P < 0.001). This study showed the potential of transects to detect differences in welfare indicators according to factors that effects were previously reported. It demonstrated the transect potential for detecting and predicting the consequences of welfare impairment on slaughter outcomes. This would make the transect method a useful tool for notifying and rectifying welfare deterioration as early as at 3 wk of age.

Abstract
This experiment was conducted to observe the effects of varying swimming times (ST) of Muscovy ducks, raised in an open-sided house, in alleviating the deleterious effects of high temperature in hotter times of the day in the summer season on growth performance (body weight, average daily gain, feed consumption, and feed conversion ratio), carcass characteristics, body temperature, and some health aspects. We hypothesized that swimming times during the hottest periods of the day would show different performances. To test this hypothesis a total of 180 Muscovy ducklings were randomly distributed into 4 equal groups in a completely randomized design experiment. All groups were raised under similar housing conditions. Birds of the first group (C) were raised in the indoor system and had no access to a swimming pond. While all birds of the second, third, and fourth groups (T1, T2, and T3) had access to a swimming pond during 10:00 to 12:00 h, 12:00 to 14:00 h, and 14:00 to 16:00 h, respectively. The swimming pond (dimensions of 30 m length × 10 m width × 3 m depth with cement floor) was located in the front of the house. Vaccination and medical programs were undertaken according to the different ages under supervision of a licensed veterinarian. The obtained results indicated that swimming during 12:00 to 14:00 h improved (P < 0.05) growth performance, dressed carcass, meat tenderness, lymphocyte, heterophils/lymphocytes ratio, body temperature, and mortality rate of Muscovy ducks. However, bone measurement, plumage conditions, foot pad dermatitis, hock discoloration, breast blisters score, and blood hematocrit values were insignificantly better in the group with access to the swimming pond during 12:00 to 14:00 h. In conclusion, raising ducks during hot conditions in an open-sided house with access to a swimming pond at 12:00 to 14:00 h is highly recommended due to the high BW, better immunity, decreased mortality rate, and low body temperature of ducks which was positively reflected in the health condition.

Abstract
ABSTRACT The aim of this study was to determine and compare the quality parameters of broiler chicken meat from free-range and industrial poultry system. Proximate composition, color, pH, shear force, microbial quality and sensory characteristics were evaluated. Both free-range and industrial chicken meat presented PSE (pale, soft and exudative) anomaly (L* > 53). An inverse correlation between lightness, pH and shear force was observed. The free range broiler meat had higher yellow color (b* 11.56) and shear force (2.75 kgf) and lower red color (a* 1.65) and pH (5.75) in comparison to the industrial broiler meat, due intensive physical activity on growing phase and influence of the pre-slaughter stress on the rigor mortis. The thigh cut from free range broiler meat showed higher protein levels (18.00%), while to the thigh and drumstick cuts of industrial broiler meat showed higher total fat levels (3.4 and 5.0%, respectively). In general, each strain and chickens producing methods gave the peculiar characteristics to meat (chemical, physical, microbiological and sensorial). GRAPHICAL ABSTRACT

Abstract
ResumoObjetivou-se avaliar as características de qualidade da carne de frango de corte tipo caipira em diferentes tempos de jejum alimentar. Aves, machos, da linhagem “pesadão vermelho”, criadas até 85 dias de idade em sistema semiextensivo, foram submetidas aos tempos de zero, três, seis, nove e 12 horas de jejum alimentar. Obteve-se o peso vivo, peso da carcaça, o rendimento de carcaça fria, o peso do trato gastrintestinal das aves. Foram avaliados o pH24h, a luminosidade (L*), o teor de vermelho (a*), o teor de amarelo (b*), a capacidade de retenção de água, a perda de peso por cocção e a força de cisalhamento na carne do peito, da coxa e da sobrecoxa. Menor valor de rendimento de carcaça foi observado no tempo zero hora (74,54%), e o maior (82,43%) às nove horas de jejum alimentar. Maior peso para o trato gastrintestinal (540,8g) foi observado no tempo zero e o menor (229,33g) às 12 horas de jejum alimentar. Não foi observado efeito dos diferentes tempos de jejum alimentar nas características de qualidade da carne das aves. Houve diferença no pH24h, na luminosidade (L*), no teor de vermelho (a*), no teor de amarelo (b*) e na capacidade de retenção de água quando se comparou os cortes da carne do peito, da coxa e da sobrecoxa das aves de corte tipo caipira. Recomendam-se os períodos de jejum de nove ou 12 horas, nos quais houve maior rendimento de carcaça fria.

Abstract
The objective of the experiment was to verify the effect of different feed additives in nutrition of Cobb 500 broiler chickens on the sensory quality of breast and thigh muscle modified by baking at temperature 200 ºC for 60 minutes. The experiment included 250 one-day-old Cobb 500 hybrid chickens, which were divided into 5 groups (n=50): control (I) and experimental groups (E1 with Agolin Poultry at doses of 100 mg.kg-1, E2 with Agolin Tannin Plus at doses of 500 mg.kg-1, E3 with Biostrong 510+FortiBac at doses of 1000 mg.kg-1 and E4 with Agolin Acid at doses of 1000 mg.kg-1). The chickens were fed during 42 days of age by ad libitum system with feed mixtures: BR1 starter feed mixture (until the of 10th day of age), BR2 growth feed mixture (from 11th to 20th day of age), BR3 growth feed mixture (from 21st to 35th days of age) and BR4 final feed mixture (from 36th to 42nd days of age). Feed mixtures were produced with coccidiostats in powder form. Panellists evaluate aroma, juiciness, taste and tenderness on 5 point hedonic scale where 1 (the worst) and 5 (the best) were the extremes of each characteristic. Significant differences were found between control and experimental group E3 in juiciness and tenderness of breast muscles and between control and experimental group E2 in smell of thigh muscles. Sensory evaluation of breast and thigh muscles in Cobb 500 chickens after application of different feed additives indicated that these additives have not worsened the quality of meat. The highest sensory score was obtained in experimental group E4 (with addition of Agolin Acid at the dose of 1000 mg.kg-1).

Abstract
1. Quality properties of breast and drumstick muscles of female broiler chickens reared under different light sources were evaluated using a total of 480 female chicks (Ross 308). 2. After hatch, the chicks were randomly divided into three lighting treatment groups: control (daylight; mini incandescent lamps), G-B lighting group (green light monochromatic (MC) lamps for first 3 weeks switching to blue MC lamps for remaining 3 weeks), G-GB mixed lighting group (Green MC light for first 3 weeks, switching to Green MC light + Blue MC light mixture for remaining 3 weeks). 3. Feed consumption, body weight and total muscle weight values of the muscles from G-B and G-GB mix lighting groups were significantly higher than those of incandescent (control) lighting groups. 4. The breast and drumstick muscles from control lighting groups had a lower pH and water-holding capacity, but higher cooking loss values than those from G-B and G-GB mix lighting groups. The muscles from G-GB mix lighting groups exhibited the softer structure than those from other lighting groups. 5. We suggest that G-B or G-GB mix lighting during the rearing period of female broilers would improve body and muscle growth and then meat quality properties.
