Abstract
Compensatory growth (CG) is a physiological response that accelerates growth following a period of nutrient limitation, with the potential to improve growth efficiency and meat quality in cattle. However, the underlying molecular mechanisms remain poorly understood. In this study, 60 Huaxi cattle were divided into one ad libitum feeding (ALF) group and two restricted feeding groups (75% restricted, RF75; 50% restricted, RF50) undergoing a short-term restriction period followed by evaluation of CG. Detailed comparisons of growth performance during the experimental period, as well as carcass and meat quality traits, were conducted, complemented by a comprehensive transcriptome analysis of the longissimus dorsi muscle using differential expression analysis, gene set enrichment analysis (GSEA), gene set variation analysis (GSVA), and weighted correlation network analysis (WGCNA). The results showed that irrespective of the restriction degree, the restricted animals exhibited CG, achieving final body weights comparable to the ALF group. Compensating animals showed differences in meat quality traits, such as pH, cooking loss, and fat content, compared to the ALF group. Transcriptomic analysis revealed 57 genes and 31 pathways differentially regulated during CG, covering immune response, acid-lipid metabolism, and protein synthesis. Notably, complement-coagulation-fibrinolytic system synergy was identified as potentially responsible for meat quality optimization in RF75. This study provides novel and valuable genetic insights into the regulatory mechanisms of CG in beef cattle.

Abstract
Fall-calving primiparous beef females [body weight (BW): 451 ± 28 (SD) kg; body condition score (BCS): 5.4 ± 0.7] were individually-fed 100% (control; CON; n = 13) or 70% (nutrient restricted; NR; n = 13) of estimated metabolizable energy and metabolizable protein requirements from day 160 of gestation to calving. Post-calving, all dams were individually-fed tall fescue hay supplemented to meet estimated nutrient requirements for maintenance, growth, and lactation in Calan gates until day 149 of lactation, which limited calves to milk only. From day 150 of lactation until weaning at day 243, dams and calves were group-fed in drylots. Dam BW and metabolic status were determined every 21 d, and BCS and backfat (BF) were determined every 42 d of lactation until weaning. Pre-weaning calf BW, size, and metabolic status were determined every 21 d. Data were analyzed with nutritional plane, calving date, and calf sex (when P < 0.25) as fixed effects. Circulating metabolites included day and nutritional plane × day as repeated measures. We previously reported that post-calving, NR dams were 64 kg and 2.0 BCS less than CON, but calf BW and size at birth were not affected. During the first 147 d of lactation, NR dams gained more (P < 0.01) BW than CON and increased (P < 0.01) BCS, while CON decreased (P ≤ 0.01) BCS and BF. Previously, NR dams had lower (P < 0.01) circulating triglycerides on day 1 of lactation, tended to have lower (P = 0.08) triglycerides on day 21, and had lower (P ≤ 0.04) non-esterified fatty acids (NEFA) on days 21 and 243 than CON. Maternal glucose and urea N were not affected (P ≥ 0.73). At weaning, NR dams weighed 17 kg less (P = 0.15), were 0.67 BCS lower (P < 0.01), and tended to have less (P = 0.06) BF. Calves born to NR dams weighed less (P = 0.02) than CON by day 42 of age and were 13% smaller (P < 0.01) at weaning. Calf girth measures diverged (P ≤ 0.05) by day 21 of age, and skeletal size measures were less (P ≤ 0.08) for calves born to NR dams at most timepoints after day 63 of age. Calves born to NR dams tended to have lower (P = 0.09) circulating urea N pre-weaning than CON, but glucose, triglycerides, and NEFA were not affected (P ≥ 0.16). In summary, first-parity beef females that were nutrient restricted during late gestation experienced compensatory growth and gained body condition during lactation but were still thinner at weaning. Nutrient restriction reduced pre-weaning calf growth, likely due to decreased milk production.

Abstract
Gastrointestinal nematode (GIN) infections are ubiquitous and often cause morbidity and reduced performance in livestock. Emerging anthelmintic resistance and increasing change in climate patterns require evaluation of alternatives to traditional treatment and management practices. Mathematical models of parasite transmission between hosts and the environment have contributed towards the design of appropriate control strategies in ruminants, but have yet to account for relationships between climate, infection pressure, immunity, resources, and growth. Here, we develop a new epidemiological model of GIN transmission in a herd of grazing cattle, including host tolerance (body weight and feed intake), parasite burden and acquisition of immunity, together with weather-dependent development of parasite free-living stages, and the influence of grass availability on parasite transmission. Dynamic host, parasite and environmental factors drive a variable rate of transmission. Using literature sources, the model was parametrised for Ostertagia ostertagi, the prevailing pathogenic GIN in grazing cattle populations in temperate climates. Model outputs were validated on published empirical studies from first season grazing cattle in northern Europe. These results show satisfactory qualitative and quantitative performance of the model; they also indicate the model may approximate the dynamics of grazing systems under co-infection by O. ostertagi and Cooperia oncophora, a second GIN species common in cattle. In addition, model behaviour was explored under illustrative anthelmintic treatment strategies, considering impacts on parasitological and performance variables. The model has potential for extension to explore altered infection dynamics as a result of management and climate change, and to optimise treatment strategies accordingly. As the first known mechanistic model to combine parasitic and free-living stages of GIN with host feed-intake and growth, it is well suited to predict complex system responses under non-stationary conditions. We discuss the implications, limitations and extensions of the model, and its potential to assist in the development of sustainable parasite control strategies.

Abstract
Body weight and chemical composition are important aspects of beef cattle nutrition and management; however, existing equations estimating relationships among empty body and carcass chemical components were developed over 40 years ago using different cattle genetics and production systems. The objective of this analysis was to evaluate existing equations in predicting empty body and carcass chemical composition and determine the effect of sex, breed type, and publication year. A dataset was developed from published literature that contained 388 treatment means from 46 studies published between 1970 and 2020. Two equations relating shrunk body weight (SBW) to empty body weight (EBW), and 8 equations relating EBW and hot carcass weight (HCW) were found in the literature and evaluated using the developed dataset. Three sets of equations relating empty body chemical components, 4 sets of equations relating carcass chemical components, and 2 sets of equations relating carcass with empty body chemical components were found in the literature and evaluated using the dataset. Precision and accuracy of the equations were evaluated by simple linear regression of observed on predicted values, mean bias (MB), and concordance correlation coefficient (CCC). Additionally, the fixed effects of publication year, sex, and breed type on the deviation from observed values were evaluated using a general linear model. Both equations relating SBW to EBW and all equations relating EBW to HCW had high precision, but accuracy varied from -3.22 to -0.11% and -9.35 to -3.73% MB, respectively, and all the equations were affected by sex and breed type with 8 out of the 10 equations affected by publication year. For prediction of empty body chemical composition assuming empty body water is known, the 3 sets of equations varied in precision for protein (0.18 to 0.46), but not for fat (0.88 to 0.96) or ash (0.06 to 0.13) based on CCC, although the precision of prediction of protein and ash were poor. Accuracy of the 3 sets of equations varied for predicting empty body fat, protein, and ash with MB of -19.73 to -3.81, 1.67 to 15.91, and -0.16 to 15.75%, respectively. All 3 sets of equations were affected by publication year and breed type for predicting empty body fat, protein, and ash, and by sex for ash. For prediction of carcass chemical components assuming carcass water is known, the precision was similar among the 4 sets of equations for predicting fat (0.92 to 0.95), protein (0.34 to 0.40), and ash (-0.02 to -0.01) based on CCC, although precision was poor for protein and ash, but accuracy varied for prediction of carcass fat, protein and ash with MB of -11.20 to -2.52, 2.72 to 8.92, and -4.66 to 20.12%, respectively. Publication year and breed type affected the prediction of carcass fat and protein, and publication year, sex, and breed type affected the prediction of carcass ash for all 4 sets of equations. The precision of predicting empty body chemical components assuming carcass chemical components are known was high for water (0.96 and 0.98), fat (0.97 and 0.98), protein (0.97 and 0.97), and ash (0.98 and 0.96) and similar between the 2 sets of equations based on CCC. The accuracy of predicting empty body water (-1.68 and -0.33%), fat (6.38 and 2.70%), protein (0.85 and -0.54%), and ash (-0.65 and -4.54%) was moderate to high, but differed between sets of equations for fat and ash. Publication year influenced the prediction of empty body water for both sets of equations and ash for one of the equations, whereas, breed type influenced the prediction of water, protein, and ash, but not fat for both equations. Overall, existing equations may have major limitations to predicting empty body protein and ash unless carcass protein and ash are known. Additionally, all the equations were affected by some combination of publication year, sex, and breed type for one or more chemical components. Thus, a more robust set of equations should be developed to account for sex, breed type, and more recent cattle genetics and management systems.

Abstract
Variation in nutrition is a key determinant of growth, body composition, and the ability of animals to perform to their genetic potential. Depending on the quality of feed available, animals may be able to overcome negative effects of prior nutritional restriction, increasing intake and rates of tissue gain, but full compensation may not occur. A 2 × 3 × 4 factorial serial slaughter study was conducted to examine the effects of prior nutritional restriction, dietary energy density, and supplemental rumen undegradable protein (RUP) on intake, growth, and body composition of lambs. After an initial slaughter (n = 8), 124 4-mo-old Merino cross wethers (28.4 ± 1.8 kg) were assigned to either restricted (LO, 500 g/d) or unrestricted (HI, 1500 g/d) intake of lucerne and oat pellets. After 8 wk, eight lambs/group were slaughtered and tissue weights and chemical composition were measured. Remaining lambs were randomly assigned to a factorial combination of dietary energy density (7.8, 9.2, and 10.7 MJ/kg DM) and supplemental RUP (0, 30, 60, and 90 g/d) and fed ad libitum for a 12- to 13-wk experimental period before slaughter and analysis. By week 3 of the experimental period, lambs fed the same level of energy had similar DMI (g/d) and MEI (MJ/d) (P > 0.05), regardless of prior level of nutrition. Restricted-refed (LO) lambs had higher rates of fat and protein gain than HI lambs (P < 0.05) but had similar visceral masses (P > 0.05). However, LO lambs were lighter and leaner at slaughter, with proportionally larger rumens and livers (P < 0.05). Tissue masses increased with increasing dietary energy density, as did DMI, energy and nitrogen (N) retention (% intake), and rates of protein and fat gain (P < 0.05). The liver increased proportionally with increasing dietary energy density and RUP (P < 0.05), but rumen size decreased relative to the empty body as dietary energy density increased (P < 0.05) and did not respond to RUP (P > 0.05). Fat deposition was greatest in lambs fed 60 g/d supplemental RUP (P < 0.05). However, lambs fed 90 g/d were as lean as lambs that did not receive supplement (P0, P > 0.05), with poorer nitrogen retention and proportionally heavier livers than P0 lambs (P < 0.05). In general, visceral protein was the first tissue to respond to increased intake during refeeding, followed by non-visceral protein and fat, highlighting the influence of differences in tissue response over time on animal performance and body composition.

Abstract
This study determined the energy requirement for maintenance of purebred Nellore cattle and its crossbreds using data from a comparative slaughter trial in which animals were raised under the same plane of nutrition from birth through slaughter and born from a single commercial Nellore cow herd. Seventy-nine castrated steers (361 ± 54 kg initial BW) were used in a completely randomized design by age (22 months ± 23 days of age) with four genetic groups (GG): Nellore (NL), ½ Angus x ½ Nellore (AN), ½ Canchim x ½ Nellore (CN), and ½ Simmental x ½ Nellore (SN). The experimental design provided ranges in ME intake, BW, and ADG needed to develop regression equations to predict NEm requirements. Four steers of each GG were slaughtered to determine the initial body composition. The remaining 63 steers were assigned to different nutritional treatments (NT) by GG; ad libitum or limit-fed treatments (receiving 70% of the daily feed of the ad libitum treatment of the same GG). Full BW was recorded at birth, weaning, 12, 18, and 22 months. In the feedlot, steers were fed for 101 days a diet containing (DM basis) 60% corn silage and 40% concentrate. No difference of age at weaning (P = 0.534) and slaughter (P = 0.179 and P = 0.896, for GG and NT, respectively) were observed. AN steers were heavier at weaning weight, yearling weight and had higher EBW (P = 0.007, P = 0.014 and P < 0.001, respectively) in comparison to NL, CN, and SN. There were no interactions (P > 0.05) between GG and NT for any variable evaluated. When fed ad libitum, AN steers had higher daily MEI (Mcal/d; P < 0.001) in comparison to NL, CN, and SN. On a constant age basis, differences were observed on body composition (P < 0.05) between GG. The slope (P = 0.600) and intercept (P = 0.702) of the regression of log HP on MEI were similar among GG. Evaluating at the same age and the same frame size, there were no differences in NEm requirement between Nellore and AN (P = 0.528), CN (P = 0.671), and SN (P = 0.706). The combined data indicated a NEm requirement of 86.8 kcal/d/kg 0.75 EBW and a MEm requirement had a common value of 137.53 kcal/d/kg 0.75 EBW. The km and kg values were similar among GG (P > 0.05 and P > 0.05, respectively) and were on average 63.2 and 26.0%, respectively. However, although not statistically different, the NEm values from NL showed a decrease in NEm of 5.76% compared to AN steers.

Abstract
This study aimed to establish the quantitative relationship between metabolisable energy intake (MEI) and growth performance, carcass tissue composition and internal fat, taking into consideration animal precocity, maturity and tail nature. Data from 67 publications were used in the meta-analysis. Diets were characterized and three classes were identified (low medium and high energy density diets). Breeds were characterized according to tail nature, precocity and maturity stage. Average daily gain (ADG) responded to MEI in all animals weighing less than 60% of their adult weight regardless their precocity or their tail nature. At the same level of MEI, the higher the diet energy density, the higher the ADG. In animals weighing less than 42% of adult weight and receiving a high starch diet, carcass muscle and internal fat responded to MEI. Whereas, for animals that weighed between 43% and 75% of adult weight, increases in MEI influenced carcass adipose tissue.

Abstract
Data on chemical body composition of cattle serve as a basis for recommendations on energy and nutrient requirements. Relevant data of growing dual-purpose Fleckvieh (German Simmental) bulls are scarce and originate from old trials, covering low rates of gain and live weights. Hence, the aim of the study was to analyze the body tissue distribution, chemical composition, and composition of body weight gain of growing Fleckvieh bulls within a 120–780 kg live weight range. Results showed that body composition changed during growth but was not affected by dietary energy concentration. Changes in body composition were characterized by increasing shares of fat tissue and ether extract. Body tissues as blood, organs, gastrointestinal tract, and bone proportionately decreased during growth, while muscle and tendon proportions remained constant. The bulls featured enhanced growth potential and high muscle and protein gain throughout the described weight range. The requirements for metabolizable protein in relation to energy decrease with increasing live weight of the animals.

Abstract
Simple Summary The accurate estimation of energy requirements for present-day genotypes under current feeding conditions is crucial for improving profitability and reducing the environmental impact of the beef industry. Equations for predicting energy requirements of beef cattle according to the Agricultural and Food Research Council (AFRC) are outdated and require an urgent update. The results from literature review confirmed previous reports on the under prediction of energy requirements for maintenance by the AFRC, especially for growing animals. This may have consequences on the efficiency of use of the dietary energy on productive functions. Although much less research has been conducted over the last decade on energy metabolism for suckler cows, the existing data appears to be relevant as a valid reference for updating AFRC recommendations. The present review also revealed the lack of data on the contribution of both animal and diet-related factors influencing on energy requirements for beef cattle and thus conclusions on this regard are difficult to draw. Abstract The present review compared features of the UK system for predicting energy requirements in beef cattle with a number of feeding systems developed from research institutes consortiums around the world. In addition, energy requirements for maintenance calculated from studies conducted at the Agri-Food and Biosciences Institute (AFBI) in Northern Ireland since the 1990s were compared with compiled data from recent peer-review papers published over the last decade (2009–2020). The mean metabolisable energy requirement for the maintenance (MEm) of growing cattle was 0.672 MJ/kg0.75 according to values obtained from calorimetry studies conducted at AFBI. This value is respectively 8.2 and 19.5% greater than the MEm values obtained by the Agricultural and Food Research Council (AFRC), and the National Academies of Sciences, Engineering and Medicine (NASEM) equations, but it is in close agreement with the Institut National de la Recherche Agronomique (INRA) approach, when assuming a Bos taurus bull (300 kg LW) and an efficiency for converting energy for maintenance (km) of 0.65. Most of the literature data on energy requirements for the maintenance for this animal category were obtained from studies conducted with Bos indicus animals and their crossbreds in Brazilian conditions with this confirming lower requirements of these animals when compared to pure Bos taurus cattle. A simulation of the total ME requirements calculated for an Angus × Friesian steer (LW = 416 kg) offered good quality grass silage, indicated that both AFRC and NASEM systems overestimate (38.5 and 20.5%, respectively) the observed efficiency of converting ME for growth (kg). When the total ME requirements (maintenance + growth) were assessed, both systems underpredicted total ME requirement in 15.8 and 22.1 MJ/d. The mean MEm requirements for suckler cows obtained from the literature (0.596 MJ/kg0.75) is on average 19.1% greater than predictions given by both AFRC and INRA (lactation) equations when considering a 550 kg cow and a km value of 0.72. Although no differences in net energy requirements for maintenance (NEm) were detected between dry and lactating suckler cows, as expected the later displayed greater variation as a result of differences in milk production. On this regard, the INRA model recognise increased NEm requirements for lactating animals compared to dry cows. The re-evaluation of the concept of diet metabolisability and the analysis of existing data on compensatory growth responses are recommended for future updates of the British system (AFRC) having in to account the particularities of grass-based systems in the UK.

Abstract
This study investigated the effects of growth rates and compensatory growth on puberty attainment in Nellore heifers. Nellore heifers (n = 120), weaned at 8 ± 0.75 mo of age, were blocked by sire and BW (180 ± 8.6 kg) and assigned randomly to receive 1 of 4 treatments over a 10-mo period. Treatments included ad libitum feeding (high gain, HG), feed intake to gain 0.6 kg/d (medium gain, MG), restricted feeding (0.2 kg/d) for 4 mo followed by ad libitum feeding for 6 mo (compensatory gain, CG), and alternating periods of ad libitum and restricted feeding for 2 mo each throughout the trial (alternated CG, ACG). Puberty was assessed weekly by transrectal ultrasonography. Blood samples were collected at 8, 11, and 18 mo of age and at puberty to determine circulating concentrations of leptin. At 18 mo of age, nonpubertal heifers were treated with a puberty induction protocol using an intravaginal progestin device. There was no treatment effect (P = 0.17) on the percentage of heifers pubertal by 18 mo of age (HG: 66, MG: 40, CG: 58, and ACG: 52%), BW at puberty, and age at puberty. However, HG heifers had higher ADG (P < 0.01), dry matter intake (P < 0.01), and leptin concentrations (P = 0.03) than heifers from other groups. The response to the puberty induction protocol was similar (P = 0.90) among treatments. Regarding sire effects (genetic effects), there was an effect (P = 0.03) on the percentage of heifers pubertal by 18 mo of age and a tendency (P = 0.07) of sire effect in response to the puberty induction protocol. Compensatory growth appears to be an effective managerial approach to decrease feeding costs and stimulate puberty in Nellore heifers.

Abstract
The use of additional supplement can affect ruminant performance by increasing the animal weight gain and maximizing profits from the activity. Thus, the objective of this study was to evaluate the influence of protein-energy supplementation on microbial synthesis, animal performance, nutrient digestibility, and body composition of Brangus x Zebu steers on pasture. The experiment lasted 160 days and included 36 animals divided into two groups; 18 steers received protein-energy supplementation (PES), and the other 18 received non-supplementation (NPES). Individual pasture intake and nutrient digestibility were estimated using the double indicator technique-chromium oxide and lignin in potassium permanganate. Spot urine samples were collected from 36 animals to determine creatinine, allantoin, and uric acid concentrations. All animals were slaughtered at the end of the experiment to evaluate body composition. There was increase in intake (P < 0.001) and dry matter digestibility (P = 0.01); it resulted in higher animal weight gain (P < 0.001) receiving supplementation. However, there was no difference (P > 0.05) in pasture nutrient intake between treatments. Supplementation increased microbial nitrogen (P < 0.001). For body composition, the model identity test that was applied showed no difference (P > 0.05) between the models, so it was adopted a common equation for both treatments. There was no difference (P > 0.05) for body composition between treatments. Therefore, the use of protein-energy supplementation for steers on pasture allowed higher microbial protein synthesis and better utilization of nutrients, which resulted in better animal performance. The use of protein-energy supplementation at 0.6% BW did not alter the carcass composition of Brangus x Zebu steers. However, it recommends protein-energy supplementation in pasture systems during the rainy period or using an irrigation system.

Abstract
The study evaluated the effect of gain rates during the growing phase and the possible interaction with finishing phase forage allowance in beef cattle. In Exp. 1, eighty Nellore cattle (386 ± 7.90 kg; divided into 16 paddocks) were used in a randomized block design in a 2 × 2 factorial arrangement of treatments: (1) gain rate during the growing phase (low and high); (2) forage allowance during the finishing phase (low and high). In Exp. 2, twelve cannulated animals were used to evaluate ruminal parameters at the finishing phase. The animals were supplemented (2% of body weight [BW]) during 112 days. The average forage mass was 6507 and 2712 kg DM/ha, resulting in a forage allowance of 2.91 and 1.31 kg DM/kg BW, respectively, for high and low supply. In Exp. 1, there was interaction among factors (P = 0.01) for average daily gain (ADG): low gain rate animals that were finished on high forage allowance had an ADG 0.203 kg/day greater than average of other treatments (0.917 kg/day). Animals with a high gain rate in the growing phase started the finishing phase 51.5 kg heavier than low gain rate animals; this difference dropped to 35.5 kg in final BW (P < 0.01). In terms of the carcass, this difference was 27 kg at the beginning and dropped to 25 kg at the final carcass weight (P < 0.01). In Exp. 2, the acetate concentration at the end was higher for animals fed high forage allowance compared to low. However, propionate concentration was higher for animals fed low forage allowance compared to high (P = 0.01). Our results showed that the growing phase influences performance during the finishing phase; however, forage allowance with high supplementation at the finishing phase had negligible effects under these experimental conditions.

Abstract The objectives were to determine the effects of restricted-feeding strategies on blood concentrations of hormones, metabolites, and minerals in Holstein × Zebu finishing steers. Twenty steers (body weight = 319 ± 16.2 kg; age = 19 ± 1 months) were randomly allotted in 4 groups of 5 steers, which were restricted to 85% ad libitum feed intake for either 0 (R0; n = 5), 28 (R28; n = 5), 42 (R42; n = 5) or 84 (R84; n = 5) days of an 84-d finishing period. Steers were individually housed and considered the experimental unit. Blood samples were collected on d 0, 21, 42, 63, and 84, and were assayed for insulin-like growth factor 1 (IGF-1), thyroid hormones (T3 and T4), albumin, creatinine, urea, total protein, glucose, triglycerides, calcium, and phosphorus. Steers had increasing IGF-1 concentrations until d 42 when restricted-fed. Steers fed R84 had the greatest IGF-1 concentrations on d 84. Urea concentrations were greatest in steers fed R0 and least in steers fed R28; steers fed R42 and R84 were intermediate and not different from one another. Concentrations of IGF-1, urea, albumin, and calcium, but not T3, T4, glucose, triglycerides, creatinine, total protein, and phosphorus were affected by restricted-feeding strategies in Holstein × Zebu finishing steers.

Abstract
Restricted-feeding may be a useful management tool available to reduce environmental impact in feedlots. Therefore, the objectives of the present study were to determine the effects of the duration of restricted-feeding on nitrogen (N) and phosphorus (P) excretion, growth performance and carcass characteristics of finishing steers. Twenty-five Holstein × Zebu steers (average initial bodyweight (BW) = 319 ± 16.2 kg; age = 19 ± 1 months) were used. Five steers were slaughtered to provide baseline empty BW (EBW) and empty body composition at Day 0. The remaining steers were randomly allotted to four groups of five steers, which were restricted to 85% ad libitum feed intake for either 0 (R0), 28 (R28), 42 (R42) or 84 (R84) days of an 84-day finishing period. All steers were fed a diet of 40% corn silage and 60% concentrate (DM basis) for 84 days. Total excretion of faeces and urine were collected during two periods: Days 25 to 27 (period 1) and Days 73 to 75 (period 2). The DM intake, average daily gain (ADG) and gain-to-feed ratio (G:F) were evaluated in three blocks, Days 0 to 28, Days 28 to 42 and Days 42 to 84. As expected, DM, N and P intakes were greater (P < 0.05) for R0 steers than R28, R42 and R84 steers when steers in R28, R42 and R84 treatments were restricted. When transitioned to ad libitum feeding, R28 and R42 steers had similar (P > 0.05) DM, N and P intakes compared with R0 steers. Faecal N and urinary P excretions did not differ (P ≥ 0.40) among restricted and ad libitum-fed steers in either period evaluated. However, greater (P < 0.05) faecal P excretions were observed in steers fed ad libitum intake in period 2 (R0). Phosphorus retention in period 2, and whole-body N retention were greatest (P < 0.05) in steers fed R28 and least (P < 0.05) in steers fed R84, steers fed R0 and steers fed R42 were intermediate and not different (P > 0.05). Final BW, overall ADG, G:F and carcass characteristics were not affected (P ≥ 0.11) by treatments. Restricted-feeding Holstein × Zebu steers to 85% of ad libitum intake for 84 days in the feedlot reduced DM intake and P excretion, without impairing steer growth performance or carcass characteristics. Nevertheless, it is important to highlight that the small sample size was one limitation of this present experiment.

Abstract
Stimuli experienced in utero can have a lasting impact on livestock growth, reproduction, and performance. Variations in environment, production system, and management strategies lead to discrepancies in the literature regarding how specific treatments influence animal performance. Studies comparing the influence of maternal undernutrition to well-fed counterparts typically result in decreased productivity of offspring. Via adaptation to nutritional or environmental stressors, dams may develop mechanisms to ensure proper nutrient supply to the fetus. It appears nutrient deprivation must be severe for consistent results. Potential mechanisms for altered performance in grazing systems and overnutrition settings are discussed.

Abstract
This study was conducted to investigate the effect of the total digestible
nutrients (TDN) level of commercial concentrates on growth performance, carcass
characteristics, and meat composition of late fattening Hanwoo steers. A total
of 28 steers were randomly assigned to one of four dietary groups; T1
(73.30% TDN), T2 (74.50% TDN), T3 (76.40% TDN), and T4
(77.10% TDN). Average daily gain (ADG) was slightly but not significantly
higher in the T2 than in the other treatments. Dry matter intake (DMI) and feed
conversion ratio (FCR) were higher in the T2 than in the other treatments;
however, the differences were not statistically significant. Carcass back fat
thickness was thicker in the T4 and marbling score was higher in the T2 than in
the other treatments; however, the differences were not statistically
significant. The TDN level of concentrates had no effect on the physicochemical
characteristics and fatty acid composition of the longissimus
muscle. The finding of this study indicate that less than 74% or greater
than 75% TDN in the commercial concentrate did not contribute to improve
ADG, FCR, marbling score; therefore, in the present study, the recommendable TDN
level in the commercial concentrate for late fattening period was 74% to
75% in terms of growth performance and marbling score of Hanwoo
steer.

Abstract
The quantitative feed restriction of lactating cows has been used in intensive production systems as a strategy to reduce production costs. However, the effects of this restriction in F1 Holstein/Zebu cows are unclear. The objective of this work was to evaluate the effect of quantitative feed restriction on nutrient intake and digestibility, nitrogen balance, feed efficiency, feed behavior, and productive performance in F1 Holstein/Zebu cows during early lactation. Sixty F1 Holstein × Zebu cows were used at the stage of initial lactation (50 ± 13 days of lactation), and they had an initial body weight (BW) of 482 ± 43 kg. The experimental arrangement adopted was a completely randomized design, with five feed restriction levels (3.39, 2.75, 2.50, 2.25, and 2.00% of BW) and 12 cows in each treatment group. In the short term (63 days), there were reductions of 45.9% and 47.2% in dry matter intake (P < 0.01) and crude protein (P < 0.01), respectively, when the diet supply was limited from 3.39% BW to 2.00% of BW. There were declines in intake of ether extract (P < 0.01) and nonfibrous carbohydrates (P < 0.01), but there was no change in daily milk production (P = 0.44) nor the daily milk production corrected to 3.5% fat (P = 0.12); the averages were 14.01 kg/day and 13.25 kg/day, respectively. Considering the lower body weight loss, feed restriction is recommended up to 2.5% of the BW.

Abstract
We investigated the effect of a system for fattening steers combining grazing with feeding rice whole-crop silage (rWCS) on growth performance, meat characteristics, and the expression of genes involved in skeletal muscle growth. Steers were randomly assigned to grazing or concentrate-fed groups (CT). The grazing group (GZ) was fed rWCS after grazing until 16 months of age. The final body weight was the same in the two groups, but the dressed weight was lower in the GZ than in the CT. The beef color standard was higher in the GZ than in the CT. Although beef marbling did not differ between the two groups, there was less intramuscular fat and subcutaneous fat in the GZ than in the CT. The α-tocopherol and β-carotene contents in the muscle were higher in the GZ than in the CT. The GZ showed a lower daily gain (DG) during the grazing period, which may have resulted from decelerating skeletal muscle growth caused by the increased expression of genes encoding myostatin and atrogin-1. However, the DG and feed efficiency of the GZ increased after grazing. The two groups exhibited a similar level of beef productivity.

Abstract
A trial was conducted to examine live growth efficiency, harvest yields, and carcass grading performance of steers fed at maintenance (M) or at ad libitum (A) level of intake during zilpaterol hydrochloride (Z) supplementation. Single-sired, beef steers (n = 56; start of trial BW 590 ± 36 kg) blocked (n = 2) by weight and terminal implant were sorted into pairs (n = 14 per block) by weight. Pairs of steers were initially assigned to 0, 28, or 56 d of feeding. Within 28 or 56 d, pairs were assigned to M or A intake. Steers within a pair assigned to 56 d of feeding were randomly assigned to either 20 d of Z supplementation (90 mg/d per steer) with a 4 d withdrawal period prior to slaughter or to no ZH supplementation (C). Steers were housed and fed in individual pens. Weights of all non-carcass and carcass components were recorded at slaughter; carcasses were graded 24-h postmortem. Data were analyzed via a mixed model; the fixed effect was treatment combination with random effects of block and pair. Live growth data used harvest day as the repeated measure and animal as the subject. Single df contrasts were constructed for day 0 vs. day 28, day 0 vs. day 56, day 28 vs. day 56, M vs. A, and C vs. Z. Treatment impacted (P ≤ 0.05) live ADG; contrasts indicated A (1.33) was greater than M (0.14 kg), and Z (1.12) was greater than C (0.82 kg). Similarly, carcass ADG differences (P < 0.01) indicated A (1.04) was greater than M (0.36 kg), and Z (1.35) was greater than C (0.71 kg). Intake level altered BW and empty body weight (EBW); M cattle had reduced BW and EBW (P < 0.01, 585 and 540 kg) than A cattle (647 and 597 kg). Cattle fed at M had less carcass and internal cavity mass (P < 0.01, 359 and 79.4 kg) than A cattle (394 and 93.5 kg). Liver mass was reduced by M feeding (P < 0.01; M-5.03, A-6.69 kg) and Z treatment (P < 0.01; Z-5.64, C-6.06 kg). Moreover, mass of total splanchnic tissue was less (P < 0.01) for M cattle than A cattle (59.8 vs. 72.5 kg). Dressed carcass yield was greater (P < 0.01) for Z than C cattle (63.5 vs. 61.6%). Cattle fed at M had less 12th rib s.c. fat, lower numerical U.S. yield grades (P < 0.01; M-1.71 cm and 3.3, A-2.46 cm and 4.3) and lower numerical Canadian yield grades (P < 0.01; 51.9 vs. 53.9% for M and A, respectively) than A cattle. Results indicate that energy intake level and Z supplementation influence live and carcass growth, carcass transfer, kill yields, and carcass characteristics across time.

Abstract
Despite the recent advances in transcriptomics, gene expression studies addressing cattle´s skeletal muscle adaptations in response to compensatory growth are warranted, particularly regarding lipid metabolism due to its impact in meat sensory and nutritional traits. In the present study, in comparison to ad libitum feeding, a period of feed restriction was used in order to understand the changes in bull´s lipid metabolism and gene expression of the adipogenic and lipogenic pathways after re-alimentation. Thus, 40 young Alentejana bulls were either fed ad libitum (CG group) from 9 to 18 months of age or subjected to food restriction from 9 to 15 months of age, and fed ad libitum until 24 months of age (DG group). The intramuscular fat (IMF) and total fatty acids (FA) contents were similar between groups. The major FA (>2%) contents were similar (16:0, 16:1c9, 18:1c9 and 18:2n-6) between treatments with the exception of 18:0 content that was 15% lower in DG than in CG and 20:4n-6 that tended to be greater on DG bulls. Regarding minor FA (<2%), the DG group presented greater proportions (P<0.01) of 17:1c9, 18:1t9, 18:1t10 (, 18:1c11), 18:1c13, 18:3n-6, 22:0, 22:4n-6 and 22:6n-3 and lower (P<0.05) proportions of 20:0, 18:1t16+c14, and branched chain FA (iso-15:0, anteiso-15:0, iso-16:0 and anteiso-17:0) than the CG group. Delta-9 desaturase activity indices were consistently greater (P<0.05) in DG, when compared to the CG group. Regarding microarray analysis, differentially expressed genes between CG and DG bulls were grouped in 5 main biological functions: lipid and nucleic acid metabolisms, small molecule biochemistry, molecular transport and translational modification. Discontinuous growth down-regulated the expression of ACACB (FC (fold-change) = 1.32), FABP3 (FC = 1.45), HADHA (FC = 1.41) and SLC37A4 (FC = 1.40) genes, when compared to the CG system (FDR<0.05). In contrast, in the CG bulls, the expression of ELOVL5 (FC = 1.58) and FASN (FC = 1.71) was down-regulated when compared to DG bulls. These results were confirmed to be significant (P<0.05) in the case of ELOVL5, FASN and SLC37A4, and almost significant for FABP3 by qRT-PCR analysis. The SCD1 and SCD5 gene expressions were not found to be affected by growth path. These results contribute to the still scarce knowledge about the mechanisms involved in fatty acid metabolism during compensatory growth which have decisive role on meat quality produced in Mediterranean areas.

Abstract
Compensatory growth (CG), an accelerated growth phenomenon which occurs following a period of dietary restriction is utilised worldwide in animal production systems as a management practise to lower feed costs. The objective of this study was to evaluate the contribution of jejunal epithelial to CG in cattle through transcriptional profiling following a period of dietary restriction as well as subsequent re-alimentation induced CG. Sixty Holstein Friesian bulls were separated into two groups; RES and ADLIB, with 30 animals in each. RES animals were offered a restricted diet for 125 days (Period 1) followed by ad libitum feeding for 55 days (Period 2). ADLIB animals had ad libitum access to feed across both periods 1 and 2. At the end of each period, 15 animals from each treatment group were slaughtered, jejunal epithelium collected and RNAseq analysis performed. Animals that were previously diet restricted underwent CG, gaining 1.8 times the rate of their non-restricted counterparts. Twenty-four genes were differentially expressed in RES compared to ADLIB animals at the end of Period 1, with only one gene, GSTA1, differentially expressed between the two groups at the end of Period 2. When analysed within treatment (RES, Period 2 v Period 1), 31 genes were differentially expressed between diet restricted and animals undergoing CG. Dietary restriction and subsequent re-alimentation were associated with altered expression of genes involved in digestion and metabolism as well as those involved in cellular division and growth. Compensatory growth was also associated with greater expression of genes involved in cellular protection and detoxification in jejunal epithelium. This study highlights some of the molecular mechanisms regulating the response to dietary restriction and subsequent re-alimentation induced CG in cattle; however the gene expression results suggest that most of the CG in jejunal epithelium had occurred by day 55 of re-alimentation.

Abstract
This study evaluated the nutritional interrelationship between the growing and finishing phases of crossbred cattle in determining their performance. One hundred and eight animals were used (8 months old, body weight [BW] 211 ± 20 kg). During the dry season, the animals received one of the following supplements: a mineral plus urea supplement (ad libitum, MSD), a protein supplement (1 g/kg BW per day, PR1), or a protein-energy supplement (5 g/kg BW per day, PE). During the rainy season, the animals received one of the following supplements: a mineral without urea supplement (ad libitum, MSR), a protein supplement (1 g/kg BW per day, PR2), or PE (5 g/kg BW per day). The experimental design was completely randomized using a 3 × 3 factorial scheme (for the rainy season) and a 3 × 3 × 2 factorial scheme (for the finishing phase). The supplementation and finishing systems were considered to be the treatments, and the animals were considered to be the experimental units. Dry season supplementation did not affect the average daily gain (ADG) during the rainy season (P = 0.12) or the finishing phase (P = 0.73). An increase in the level of rainy season supplementation reduced ADG by 12% during the finishing phase (P < 0.06). Providing PE during the dry and rainy seasons led to the animals being slaughtered 17 (P = 0.06) and 30 (P < 0.01) days earlier, respectively. Our results indicate that supplementation during the dry season (under poor-quality pasture conditions) does not affect the performance during the rainy season or the finishing phase. Furthermore, while providing PE during the rainy season can reduce ADG during finishing, the higher BW at the beginning of the finishing phase is sufficient to reduce the time of the finishing period.

Abstract
AbstractFifty double-muscled Belgian Blue bulls were divided into five groups. The first group (control, CG) was given, on an ad libitum basis, a fattening diet based on sugar-beet pulp. In G2 and G3, fattening was interrupted 103 and 187 days, respectively after the beginning of the experiment, by approximately a 2-month period of food restriction during which the animals received a maintenance ration. The last two groups, namely G4 and G5, received for about 4 months a limited amount of the restriction diet to support growth of 0·5 and 0 kg/day, respectively, before being fattened as CG. The average daily gain was 1·48 kg/day in CG v. 1·33, 1·30, 1·43 and 1·61 kg/day during the period of ad libitum feeding in G2, G3, G4 and G5. Higher nitrogen (N) balance during compensatory growth in G2, G4 and G5 (78·8, 81·0 and 74·6 v. 53·3 g N per day in CG, P < 0·001) resulted mainly from a higher efficiency of N retention. In G3, however, compensatory growth was characterized by lower N digestibility and efficiency of N retention. Muscle proportion in the carcass was higher in G3 while fat plus connective tissue proportion was lower (P < 0·05). Muscle pH values in CG were lower than in the other groups (P < 0·01) but ether extract values were higher. The intramuscular fat of G2 and G3 was characterized by higher proportions of polyunsaturated fatty acids.

Abstract
AbstractThis experiment investigated the effect of feeding grass silage alone or supplemented with additional energy and/or protein on the partitioning of nutrients between fat and lean deposition in cattle grown from approximately 140 to 550 kg. The distribution of total body fat between the main fat depots was also assessed. Ninety-two Hereford ✕ Friesian steers (140±18•8 kg initial live weight) were allocated to one of four dietary treatments; grass silage offered either alone (diet S) or supplemented with fish meal (diet FM; 150 g/kg silage dry matter (DM) intake but offered at equal estimated metabolizable energy (ME) intake to silage) or forage-concentrate diets of silage and a barley/soya (80: 20) concentrate at ratios of 70: 30 or 30: 70 on a DM basis (diets 30C and 70C, respectively). Eight animals were slaughtered at the start of the trial to determine initial carcass composition. Of the remaining 21 animals per diet, three were slaughtered at each of seven live weights ranging between 250 and 550 kg, at 50-kg intervals. Animals were given food individually and diets were offered ad libitum (except for FM) along with 100 g/day of a commercial vitamin/mineral pre-mix. At slaughter, half carcasses were minced for the determination of fat and protein content and visceral fat depots, perirenal, mesenteric and omental were removed and weighed. The relationships between chemical composition and empty body weight (EBW) at slaughter were assessed using allometric equations (loge y = loge a + b loge EBW). The composition of the silage was 271•9 g/kg toluene DM with a total nitrogen and estimated ME of 26•5 g/kg DM and 11•8 MJ/kg DM, respectively. DM intakes increased (P < 0•001) with increasing level of concentrate and this generated the expected differences in both energy and protein intake. Live-weight gains increased by proportionately about 0•1, 0•18 and 0•34 on the FM, 30C and 70C treatments, respectively, compared with the S alone. Carcass protein deposition (kg) was relatively linear across the slaughter weights 250 to 550 kg, except for the 70C treatment where the slope (shape or curvature parameter, b) was lower compared with S (P = 0•007). Carcass fat (kg) was similar between S and FM. However, at 350 kg EBW and above, the carcasses of animals given concentrate contained more fat (P < 0•01) compared with those on silage. Carcass fat deposition (kg) showed significant curvature between 200 and 500 EBW (kg) and this was most pronounced for the concentrate treatments with the slopes of the 30C and 70C (P = 0•072, P = 0•003 respectively) differing from the silage. Similar responses were observed for the visceral fat depots. Feeding concentrates resulted in a lower proportion of the total fat being deposited as carcass fat (and hence more as non-carcass fat), proportions averaging 0•65 and 0•61 for S and 70C, respectively; P = 0•066). The proportion of mesenteric fat decreased substantially with increasing total fat (P < 0•001). The relative contribution of intramuscular fat (g/kg total fat) in the longissimus dorsi muscle increased with total fat (P = 0•007) and this was particularly apparent for the S, FM and 30C and less so for 70C. It is concluded that good quality grass silage will support high levels of performance without the need for additional concentrate supplementation. The latter may contribute towards increased fat deposition within the animal.

AbstractThe effects of different sequences of food restriction and fattening have been studied on plasma metabolites and hormones in double-muscled Belgian Blue bulls. Twenty animals were divided into five groups. The first group (control, CG) was given,ad libitum, a fattening diet based on sugar-beet pulp. In G2 and G3, fattening was interrupted after 103 and 187 days, respectively, by a period of food restriction lasting about 2 months during which the animals received a maintenance ration. They were finished with the same diet as CG. The last two groups, G4 and G5, received a limited amount of the restriction diet to support 0·5 and 0 kg gain per day, respectively, for 4 months, before being fattened as CG. Plasma glucose, alpha-amino nitrogen, non-esterified fatty acids, urea, creatinine, thyroxine (T4), 3, 3’, 5’-tri-iodothyroxine (T3), and insulin-like growth factor-1 (IGF-1) were measured in blood samples taken every 2 weeks. Plasma GH and insulin profiles were measured in serial blood samples obtained at three different times during growth. Animals that showed compensatory growth had lower plasma urea, associated with high levels of T3, T4 and IGF–1. Animals from G2 and G3 failed to show compensatory growth. In Belgian Blue bulls, compensatory growth is markedly affected when food restriction is severe or fattening interrupted.

Abstract
Previous research indicates that metabolism and fiber type of skeletal muscle is related to intramuscular lipid content. It is hypothesized that changes in skeletal muscle gene expression influence adipose tissue development. The objective of this study was to determine differences in the metabolism and intercellular signaling of skeletal muscle fibers within the same muscle group that could be responsible for the initiation of intramuscular adipose tissue development and differentiation. Longissimus dorsi muscle samples were collected from steers ( = 12; 385 d of age; 378 kg BW) grazing wheat pasture. Longissimus muscle samples were dissected under magnification and sorted into 3 categories based on visual stage of adipose tissue development: immature intramuscular adipose tissue (MM), intermediate intramuscular adipose tissue (ME), and mature intramuscular adipose tissue (MA). Additionally, muscle fibers lying adjacent to each intramuscular adipose tissue (IM) category and those not associated with IM tissue were collected and stored separately. Quantitative real-time PCR was used to determine relative fold change in genes involved in metabolism, angiogenesis, formation of extracellular matrix, and intercellular signaling pathways in both LM and IM samples. Gene expression data were analyzed using a GLM that included the fixed effect of tissue. Pearson correlation coefficients were also computed between gene expression in LM and IM tissue samples that were at the same stage of development. and γ mRNA expression were 3.56- and 1.97-fold greater ( < 0.05) in ME and MA IM compared with MM IM whereas mRNA expression was 1.43-fold less ( < 0.01) in MA IM compared with MM IM, indicating successful separation into different development categories. Genes associated with metabolism and angiogenesis in LM tissue showed no differences among stages of development. Myostatin expression did not change in LM tissue; however, expression of and mRNA decreased ( < 0.01) as IM matured. and mRNA expression were 2.5- and 1.32-fold greater in LM associated with MM IM than in LM associated with ME IM. Angiogenic growth factors in MM IM tissue had a strong positive correlation ( ≥ 0.69) with angiogenic growth factors in LM associated with MM IM; however, no correlation was observed in ME or MA IM. These data indicate a coordinated effort between LM and IM in early stages of IM development.

Abstract
Background Compensatory growth (CG) is an accelerated growth phenomenon observed in animals upon re-alimentation following a period of dietary restriction. It is typically utilised in livestock systems to reduce feed costs during periods of reduced feed availability. The biochemical mechanisms controlling this phenomenon, however, are yet to be elucidated. This study aimed to uncover the molecular mechanisms regulating the hepatic expression of CG in cattle, utilising RNAseq. RNAseq was performed on hepatic tissue of bulls following 125 days of dietary restriction (RES) and again following 55 days of subsequent re-alimentation during which the animals exhibited significant CG. The data were compared with those of control animals offered the same diet on an ad libitum basis throughout (ADLIB). Elucidation of the molecular control of CG may yield critical information on genes and pathways which could be targeted as putative molecular biomarkers for the selection of animals with improved CG potential. Results Following a period of differential feeding, body-weight and liver weight were 161 and 4 kg higher, respectively, for ADLIB compared with RES animals. At this time RNAseq analysis of liver tissue revealed 1352 significantly differentially expressed genes (DEG) between the two treatments. DEGs indicated down-regulation of processes including nutrient transport, cell division and proliferation in RES. In addition, protein synthesis genes were up-regulated in RES following a period of restricted feeding. The subsequent 55 days of ad libitum feeding for both groups resulted in the body-weight difference reduced to 84 kg, with no difference in liver weight between treatment groups. At the end of 55 days of unrestricted feeding, 49 genes were differentially expressed between animals undergoing CG and their continuously fed counterparts. In particular, hepatic expression of cell proliferation and growth genes were greater in animals undergoing CG. Conclusions Greater expression of cell cycle and cell proliferation genes during CG was associated with a 100 % recovery of liver weight during re-alimentation. Additionally, an apparent up-regulation in capacity for cellular protein synthesis during restricted feeding may contribute to and sustain CG during re-alimentation. DEGs identified are potential candidate genes for the identification of biomarkers for CG, which may be incorporated into future breeding programmes. Abstract
Compensatory growth (CG), an accelerated growth phenomenon which occurs following a period of dietary restriction is exploited worldwide in animal production systems as a method to lower feed costs. However the molecular mechanisms regulated CG expression remain to be elucidated fully. This study aimed to uncover the underlying biology regulating CG in cattle, through an examination of skeletal muscle transcriptional profiles utilising next generation mRNA sequencing technology. Twenty Holstein Friesian bulls were fed either a restricted diet for 125 days, with a target growth rate of 0.6 kg/day (Period 1), following which they were allowed feed ad libitum for a further 55 days (Period 2) or fed ad libitum for the entirety of the trial. M. longissimus dorsi biopsies were harvested from all bulls on days 120 and 15 of periods 1 and 2 respectively and RNAseq analysis was performed. During re-alimentation in Period 2, previously restricted animals displayed CG, growing at 1.8 times the rate of the ad libitum control animals. Compensating animals were also more feed efficient during re-alimentation and compensated for 48% of their previous dietary restriction. 1,430 and 940 genes were identified as significantly differentially expressed (Benjamini Hochberg adjusted P < 0.1) in periods 1 and 2 respectively. Additionally, 2,237 genes were differentially expressed in animals undergoing CG relative to dietary restriction. Dietary restriction in Period 1 was associated with altered expression of genes involved in lipid metabolism and energy production. CG expression in Period 2 occurred in association with greater expression of genes involved in cellular function and organisation. This study highlights some of the molecular mechanisms regulating CG in cattle. Differentially expressed genes identified are potential candidate genes for the identification of biomarkers for CG and feed efficiency, which may be incorporated into future breeding programmes.

Abstract
The objectives of this study were to examine systemic insulin response to a glucose tolerance test (GTT) and transcript abundance of genes of the insulin signaling pathway in skeletal muscle, during both dietary restriction and re-alimentation-induced compensatory growth. Holstein Friesian bulls were blocked to one of two groups: 1) restricted feed allowance for 125 days (period 1) (RES, n = 15) followed by ad libitum feeding for 55 days (period 2) or 2) ad libitum access to feed throughout (periods 1 and 2) (ADLIB, n = 15). On days 90 and 36 of periods 1 and 2, respectively, a GTT was performed. M. longissimus dorsi biopsies were harvested from all bulls on days 120 and 15 of periods 1 and 2, respectively, and RNA-Seq analysis was performed. RES displayed a lower growth rate during period 1 (RES: 0.6 kg/day, ADLIB: 1.9 kg/day; P < 0.001), subsequently gaining more during re-alimentation (RES: 2.5 kg/day, ADLIB: 1.4 kg/day; P < 0.001). Systemic insulin response to glucose administration was lower in RES in period 1 (P < 0.001) with no difference observed during period 2. The insulin signaling pathway in M. longissimus dorsi was enriched (P < 0.05) in response to dietary restriction but not during re-alimentation (P > 0.05). Genes differentially expressed in the insulin signaling pathway suggested a greater sensitivity to insulin in skeletal muscle, with pleiotropic effects of insulin signaling interrupted during dietary restriction. Collectively, these results indicate increased sensitivity to glucose clearance and skeletal muscle insulin signaling during dietary restriction; however, no overall role for insulin was apparent in expressing compensatory growth.

Abstract
The aim of this study was to evaluate the carcass and meat characteristics of eight muscles from bulls with distinct growth paths. A total of 40 Alentejana male calves were allocated to two distinct feeding regimes. In the continuous growth (CG) system, the animals were fed concentrates plus hay and were slaughtered at 18 months of age. On the other hand, in the discontinuous growth (DG) system, the animals were fed hay until 15 months of age; the cattle were then fed the same diet provided to the CG group from 15 to 24 months of age. The DG reduced hot carcass weight, fatness and dressing %, but the proportions of fat, bone and muscle tissues in the leg were not affected. In contrast, there was a positive impact of compensatory growth on supraspinatus, triceps brachii, semitendinosus, biceps femoris muscle tenderness, overcoming the negative effects of age at slaughter. The reasons for such improvement in meat tenderness were not related to intra-muscular fat content or myofibrillar protein degradation values. An association between tenderness and muscle collagen properties was not established. The results indicate that the compensatory growth has a muscle-dependent effect.

Crossbred steers (n=272) weaned from early (EC) and late (LC) calving systems (CS) were used to evaluate the impact of two feeding systems (FS) on postweaning performance and carcass characteristics. The steers were randomly assigned to either a rapid-gain feeding (RF) or a slow-gain feeding (SF) system. The RF steers were managed to have body weight (BW) gain of 1 kg d−1 on a silage-hay diet during the backgrounding period prior to finishing, while the SF steers were first backgrounded on a hay diet (gain of 0.7 kg d−1), then grazed alfalfa–meadow bromegrass pasture and annual cereal swaths prior to finishing. All treatment groups received a conventional diet during finishing until the steers attained a target backfat thickness or BW or both. There was no difference (P=0.48) between the two FS for the average age of the steers at the beginning of the experiment. There was a CS×FS effect (P<0.01) on the age at slaughter, where the steers in the EC-RF, EC-SF, LC-RF and LC-SF were 426, 659, 504 and 606 d, respectively. The longer time on feed for LC-RF steers compared with EC-RF suggests the potential effect of summer ambient temperatures at finishing. The EC-RF group had the least carcass fat thickness (P<0.01), but there was no main or interaction effect (P>0.08) on dressing percentage or lean meat yield. There was a FS effect (P<0.05) on meat colour and marbling texture where SF steers had more desirable meat colour and marbling texture. Beef producers adopting EC-RF would finish their calves earlier but at a lighter weight.

Abstract
Two experiments were conducted to examine the effect of rate of BW gain during the stocker phase on visceral organ mass and body composition of growing-finishing cattle that had grazed dormant native range (DNR) or winter wheat pasture (WP). In each experiment, fall-weaned steers were allotted randomly to 1 of these stocker production programs: 1) control, 1.02 kg · steer(-1) · d(-1) of a 40% CP cottonseed meal-based supplement during grazing of DNR (CON); 2) corn/soybean meal-based supplement fed at 1% of BW during grazing of DNR (CORN); 3) grazing WP at a high stocking rate to achieve a reduced rate of BW gain (LGWP); and 4) grazing WP at a low stocking rate to achieve an increased rate of BW gain (HGWP). In Exp. 1, 3 steers per treatment were harvested after winter grazing (138 d). The remaining WP steers were transitioned into a finishing phase and DNR steers were allowed to graze the same pastures for another 115 d before entering a feedyard. In Exp. 2, steers grazed respective pastures until each treatment reached an estimated HCW of 200 kg (262, 180, 142, and 74 d, respectively, for CON, CORN, LGWP, and HGWP treatments), at which time 4 steers per treatment were randomly selected for intermediate harvest before finishing. At the end of the finishing period, 4 additional steers from each treatment were randomly selected for final carcass measurements. All steers were fed to a common 12th rib fat thickness of 1.27 cm. After winter grazing in Exp. 1, HGWP steers had the greatest (P < 0.01) mesenteric/omental fat, total viscera, total splanchnic tissue mass, and carcass and empty body fat, compared with the other treatments. In Exp. 2 at intermediate harvest, WP steers had greater (P < 0.03) mesenteric/omental fat, total viscera, and total splanchnic tissue mass, compared with CORN steers, with CON steers being intermediate. Also, the WP steers had greater (P < 0.02) carcass and empty body fat, compared with CORN steers, with CON steers being intermediate. At final harvest in Exp. 2, LGWP steers had the least total viscera and total splanchnic tissue mass, compared with the other treatments. However, there were no differences (P > 0.53) among treatments for carcass or empty body fat. Stocker systems using WP or DNR result in cattle with differences in body fat and visceral organ mass before finishing; this may influence feedlot efficiency, even though there were no differences in body fat and visceral organ mass at the end of the finishing period.

Abstract
Objectives were to investigate effects of nutritional plane and Se supply during gestation on visceral organ mass and intestinal growth and vascularization in ewes at parturition and during early lactation. Primiparous Rambouillet ewes (n = 84) were allocated to 2 × 3 × 2 factorial arrangement of treatments. Factors included dietary Se [adequate Se (ASe, 11.5 μg/kg BW) or high Se (HSe, 77.0 μg/kg BW)], nutritional plane [60% (restricted; RES), 100% (control; CON), or 140% (high; HIH)], and physiological stage at necropsy (parturition or d 20 of lactation). At parturition, lambs were removed and 42 ewes (7 per treatment) were necropsied. Remaining ewes were transitioned to a common diet which met lactation requirements and mechanically milked for 20 d. In the absence of interactions (P > 0.10), main effects are reported. At parturition, stomach complex and liver masses were greatest for HIH, intermediate for CON, and least for RES (P < 0.02). Small intestinal mass was greater (P ≤ 0.002) for HIH than RES and CON, and greater (P < 0.01) for ASe than HSe. During early lactation, RES and CON gastrointestinal masses increased disproportionally to BW (P < 0.05). At parturition, jejunal mucosal density was less (P ≤ 0.01) for RES than CON and HIH, whereas CON had greater (P < 0.003) jejunal mucosal RNA concentration and RNA:DNA than RES and HIH. Although there were no differences (P > 0.17) at parturition, jejunal cell percent proliferation was greatest in RES, intermediate in CON, and least in HIH (P ≤ 0.09) at d 20 lactation. At both stages, RES had less (P = 0.01) jejunal capillary area density than HIH and less (P ≤ 0.03) capillary surface density than CON and HIH. During lactation, jejunal capillary size was greater (P = 0.04) for ewes previously fed HSe compared with ASe. At parturition, ASe-HIH had greater (P < 0.02) jejunal mucosal endothelial nitric oxide synthase 3 mRNA than all other treatments and greater (P = 0.10) vascular endothelial growth factor (VEGF) than all treatments, except ASe-RES. In addition, CON had less (P ≤ 0.08) jejunal VEGF receptor-1 (FLT1) mRNA compared with RES and HIH, and ASe had greater (P = 0.003) FLT1 than HSe at parturition. Ewes fed HIH had greater (P = 0.04) jejunal VEGF receptor-2 mRNA compared with RES. Results indicate that maternal intestinal growth and vascularization are responsive to nutritional plane and dietary Se during gestation and undergo changes postpartum when under similar lactational management.

Abstract
The present study investigates the effects of backgrounding and finishing growth rates of Bos taurus steers grown out on three post-weaning growth pathways, across 4 years (1995–1998) on fat deposition. Scanned P8 fat at backgrounding exit (SP8exit), scanned P8 fat before slaughter (SP8sla) and carcass intramuscular fat (IMF, %) were evaluated. Four equations to predict SP8sla and four equations to predict carcass IMF across years were developed. Three post-weaning growth pathways (GPs) generated by different nutritional treatments across years were used in the study. Growth pathways were created by backgrounding steers on pasture with no supplementation (GP1), pasture plus supplementary feeding formulated pellets (GP2) or pasture with access to a forage crop (GP3). The steers were then finished in a feedlot or on pasture to slaughter weights of 520 kg (Korean market specification) or 600 kg (Japanese market specification). Cubic smoothing splines were fitted to the liveweight of all animals from the start of backgrounding until slaughter. Backgrounding growth rates were interpolated off the GP curves and the mean average daily gain (ADG, kg/day) at Day 100 (D100, Days 100–91 before relocation to the finishing phase), and Day 150 (D150, Days 150–141 before relocation to the finishing phase) were calculated. Significant (P < 0.01) differences between SP8exit and backgrounding ADG (BADG) were detected in all years except GP2 v. GP3 in 1997. GP1 steers had the lowest BADG across all years, ranging from 0.39 to 0.88 kg/day. At backgrounding exit, the mean SP8exit for the different GPs was ranked, with GP1 < GP3 for all years, with significant (P < 0.01) differences among GP1, GP2 and GP3 in all years except 1996. At the end of finishing, the mean carcass IMF over all years and finish (pasture and feedlot) (P < 0.05) was 4.71% for GP1 v. 5.09% for GP3 for Korean market steers and the mean SP8sla (P < 0.01) was 14.59 mm for GP1 v. 16.04 mm for GP3 and the mean carcass IMF (P < 0.01) was 5.54% for GP1 v. 6.27% for GP3 for Japanese market steers. The residual correlation of the multivariate response variables, namely, D100, D150 and BADG v. SP8exit (n = 1054), SP8sla (n = 1049) and carcass IMF (n = 1002), indicated that the highest correlations, all significant (P < 0.01), were 0.33, 0.20 and 0.12 for BADG v. SP8exit, SP8sla and carcass IMF, respectively. The residual variances (mm2) of the four SP8sla equations were 6.14, 7.44, 8.72 and 10.73 for 1995, 1996, 1997 and 1998, respectively, and the residual variances (%2) for the four carcass IMF equations were 2.51, 2.26, 1.75 and 0.84, for 1995, 1996, 1997 and 1998, respectively.

Abstract
AbstractA comparison was made between fattening systems with Belgian Blue bulls of the double-muscle type, in order to assess the reponse in terms of compensatory growth when the bulls were grazed at a high stocking rate. Two groups of eight bulls were grazed on Lolium perenne and Trifolium repens pasture during an initial period of 135 days (period I). One group grazed at a stocking rate of six animals per ha allowing for normal growth at pasture (NGP); the other group grazed at stocking rate of 10 animals per ha (low growth at pasture, LGP). Both groups were then finished indoors (period II) with a concentrate based on dried sugar-beet pulp. Eight control bulls were also fattened indoors on the concentrate diet during periods I and II (CG). The bulls were slaughtered according to similar finishing fattening state. Live-weight gains were 1·47, 1·10 and 0·52 kg/day (P < 0·002) during period I in CG, NGP and LGP groups respectively. Corresponding live-weight gains during period II were 1·22, 1·37 and 1·50 kg/day (P > 0·05). The LGP group had lower food conversion ratios, slaughter weights (P < 0·05) and dressing proportions (P < 0·01). The meat from the grazed bulls had lower cooking losses (P < 0·05) and tended to have lower drip losses (P > 0·05) and higher tenderness (P > 0·05). It also had a higher cholesterol (P < 0·05) content. Large differences were observed in the fatty acid composition according to fat location (subcutaneous, intermuscular or intramuscular). The proportions of mono and polyunsaturated acids were increased in the fats of the animals previously grazed (P > 0·05, P < 0·05).

Abstract
The purpose of this experiment was to investigate the effects of winter growing program on organ mass, composition, and oxygen consumption in beef steers. A total of 46 steers were used for the experiment. Four steers were randomly selected as an initial slaughter group. Remaining steers were randomly allotted to 1 of 4 treatment groups: 1) fed a high-concentrate diet for ad libitum intake (CF); 2) grazed on wheat pasture (WP); 3) fed a sorghum silage-based growing diet (SF); or 4) program fed a high-concentrate diet (PF). Steers in the WP, SF, and PF groups were managed to achieve approximately equal rates of BW gain during the growing phase. After the growing phase (112 d), steers in the WP, SF, and PF treatments were adapted to a high-concentrate diet for finishing. Steers from all treatments were slaughtered at a fat thickness of 1.27 cm as estimated by ultrasound. In addition, 6 steers from each treatment were randomly selected for slaughter at the end of the growing phase. Weights of all individual organs were measured and tissue samples of duodenum and liver collected. At the end of the growing phase, WP steers had greater (P < 0.05) small intestine, liver, and kidney mass than SF and PF steers. In contrast, mesenteric fat mass and total visceral fat content were greatest (P < 0.01) for PF, intermediate for SF, and least for WP steers. Mass of total viscera and total splanchnic tissues (TST) did not differ (P > 0.10) among treatments. At final slaughter, mass of mesenteric fat, total viscera, and TST were similar among treatments, but liver weights remained greatest (g/kg of empty BW; P < 0.01) for WP steers. There were no differences in oxygen consumption of duodenum or liver tissue on an equal weight basis (microL.min(-1.)g(-1)) at the end of either period. Growing program affected mass of components of the TST at the end of the growing phase, which contributed to differences in rate of splanchnic organ growth during finishing. We conclude that program feeding a high-concentrate diet during the growing phase may result in greater ADG and G:F during the subsequent finishing period compared with forage-based diets due to less accretion of visceral organ mass resulting in reduced maintenance energy requirements during finishing.
