Abstract
Ruminant livestock play a key role in global society through the conversion of lignocellulolytic plant matter into high-quality sources of protein for human consumption. However, as a consequence of the digestive physiology of ruminant species, methane (CH4), which originates as a byproduct of enteric fermentation, is accountable for 40% of global agriculture's carbon footprint and ~6% of global greenhouse gas (GHG) emissions. Therefore, meeting the increasing demand for animal protein associated with a growing global population while reducing the GHG intensity of ruminant production will be a challenge for both the livestock industry and the research community. In recent decades, numerous strategies have been identified as having the potential to reduce the methanogenic output of livestock. Dietary supplementation with antimethanogenic compounds, targeting members of the rumen methanogen community and/or suppressing the availability of methanogenesis substrates (mainly H2 and CO2), may have the potential to reduce the methanogenic output of housed livestock. However, reducing the environmental impact of pasture-based beef cattle may be a challenge, but it can be achieved by enhancing the nutritional quality of grazed forage in an effort to improve animal growth rates and ultimately reduce lifetime emissions. In addition, the genetic selection of low-CH4-emitting and/or faster-growing animals will likely benefit all beef cattle production systems by reducing the methanogenic potential of future generations of livestock. Similarly, the development of other mitigation technologies requiring minimal intervention and labor for their application, such as anti-methanogen vaccines, would likely appeal to livestock producers, with high uptake among farmers if proven effective. Therefore, the objective of this review is to give a detailed overview of the CH4 mitigation solutions, both currently available and under development, for temperate pasture-based beef cattle production systems. A description of ruminal methanogenesis and the technologies used to estimate enteric emissions at pastures are also presented.

Abstract
Yeast α-mannan (YM) is a densely branched N-linked glycan that decorates the surface of yeast cell walls. Owing to the high degree of branching, cleavage of the backbone of YM appears to rely on the coupled action of side-chain-cleaving enzymes. Upon examining the genome sequences of bovine-adapted Bacteroides thetaiotaomicron strains, isolated for their ability to degrade YM, we have identified a tandem pair of genes inserted into an orphan pathway predicted to be involved in YM metabolism. Here, we investigated the activity of one of these enzymes, a predicted endo-mannanase from glycoside hydrolase (GH) family 76 (BtGH76-MD40). Purified recombinant BtGH76-MD40 displayed activity on structurally distinct YMs from Saccharomyces cerevisiae and Schizosaccharomyces pombe. Linkage analysis of released oligosaccharide products from S. cerevisiae and S. pombe mannan determined BtGH76-MD40 targets a specific linkage that is conserved in structurally diverse YM substrates. In addition, using two differential derivatization methods, we have shown that there is an absolute requirement for undecorated d-mannopyranose in the -1 subsite. Determination of the BtGH76-MD40 X-ray crystal structure and structural superimposition and molecular docking of a branched alpha-mannopentatose substrate supported these findings. In contrast, BtGH76-MD40 can accommodate extended side chains in the +1 and -2 subsites, highlighting that a single alpha-1,6-mannosyl residue is a prerequisite for activity, and cleavage occurs at the reducing end of the undecorated monosaccharide. Collectively these results demonstrate how acquisition of new enzymes within extant pathways contributes to the functional abilities of saccharolytic bacteria persisting in complex digestive ecosystems.

Abstract
Research was conducted to determine the effect of feeding de-oiled wet distillers grains plus solubles (WDGS) on beef fatty acid profile, retail shelf life and development of oxidation products during retail display (RD). A total of 336 crossbred yearling steers (initial BW = 351.08 ± 19.05 kg) were fed 1 of 7 dietary treatments: an all corn control (1:1 blend of dry rolled and high moisture corn), 35%, 50%, or 65% inclusion of WDGS, either full-fat or de-oiled. Within each treatment 15 Choice carcasses were randomly selected ( = 105), strip loins were obtained, aged 7 and 21 d, and representative steaks from each strip loin were placed in RD conditions for 7 d. Fatty acid profiles were determined (mg/100 g tissue basis) and differences ( ≤ 0.05) were found in the C16:1, C18:1T, C18:2 and total polyunsaturated fatty acids (PUFA) among dietary treatments. Palmitoleic acid (C16:1) was predominant ( < 0.0001) in the corn control group, intermediate in the 35% de-oiled WDGS group, but no differences ( > 0.05) were observed between all other diets. Elaidic acid (C18:1T) was greater ( = 0.01) in the 65% full-fat WDGS group, least for the corn control group, and intermediate for all other diets. Linoleic acid (C18:2) was greater ( = 0.0001) in all 3 full-fat WDGS groups and 65% de-oiled WDGS group (290.98 mg/100 g, on average), intermediate in the 50% and 35% de-oiled WDGS groups (231.08 and 227.16 mg/100 g, respectively) and least for the corn control group (177.70 mg/100 g). The PUFA content was greater ( < 0.01) in all 3 full-fat WDGS groups and 65% de-oiled WDGS group (337.13 mg/100 g, on average), intermediate in the 50% and 35% de-oiled WGDS groups (274.77 and 273.84 mg/100 g, respectively) and least for the corn control group (223.98 mg/100 g). Dietary treatment did not alter discoloration ( = 0.30) or lipid oxidation ( = 0.36). Shear force decreased with age and RD ( < 0.0001) but dietary treatment had no effect on shear force ( = 0.93). In general, feeding 35% and 50% de-oiled WDGS had intermediate PUFA content relative to a corn control or full-fat WDGS diet. Feeding de-oiled WDGS did not seem to increase beef shelf life and does not negatively alter beef quality parameters in relation to full-fat WDGS.

Abstract
Two experiments evaluated the effects on animal performance of traditional wet distillers grains (T-WDG) compared to cellulosic wet distillers grains (C-WDG) from a new process converting corn kernel fiber into cellulosic ethanol. The resulting coproduct has greater CP and decreased starch and ether extract (EE) concentrations (34.0% CP, 1.6% starch, 7.3% EE) compared to T-WDG (32.5% CP, 5.1% starch, 7.7% EE). In Exp. 1, 10 wethers (34.1 ± 2.35 kg, SD) were used in a replicated 5 × 5 Latin square to evaluate digestibility of DM, fiber, EE, and N. Diets including a corn-based control with 7.5% T-WDG and 7.5% C-WDG (CORN); 30% or 45% inclusion of T-WDG; and 30% or 45% inclusion of C-WDG. Between CORN, 30% T-WDG, 45% T-WDG, or 45% C-WDG, DMI was not different (P ≥ 0.11), but lambs fed 30% C-WDG had decreased (P ≤ 0.05) DMI compared to other diets. Compared to CORN and 30% T-WDG, DM digestibility was lesser ( P< 0.05) for 45% T-WDG or 30% C-WDG, while 45% C-WDG has lesser (P ≤ 0.05) DM digestibility than all other treatments. Digestibility of NDF was not affected by treatment (P= 0.13), and ADF digestibility was not different ( 0.21) between CORN, 30% T-WDG, 30% C-WDG, or 45% C-WDG. However, digestibility of ADF tended to differ (P = 0.06) between 30% T-WDG and 45% C-WDG and was greater (P ≤ 0.05) in lambs fed 45% T-WDG compared to other treatments. In Exp. 2, 168 steers (421 ± 23.9 kg, SD) were used in a randomized complete block design to determine the impact of C-WDG or T-WDG on growth performance and carcass characteristics. Diets included a corn-based control (CON), 30% T-WDG (TRAD), 30% C-WDG (CEL), and 18% C-WDG and 12% condensed corn distillers solubles (CEL+CCDS; = 7 pens of 6 steers/pen). Steers fed TRAD had improved (P ≤ 0.01) ADG, G:F, and HCW compared to steers fed the CON diet. No differences (P ≥ 0.16) in ADG and HCW were noted for steers fed CEL compared to TRAD; however, steers fed CEL had decreased (P = 0.01) G:F due to increased (P = 0.02) DMI compared to TRAD-fed steers. Steers fed CEL or CEL+CCDS did not differ (P = 0.50) in G:F, but CEL+CCDS-fed steers had lesser (P ≤ 0.01) DMI and ADG likely due to greater S content of the CEL+CCDS diet. Overall, while DM digestibility of lambs fed 30% C-WDG was lesser than 30% T-WDG, performance of steers finished on C-WDG was similar to those fed T-WDG. However, WDG from the secondary fermentation appeared to have lesser energy than T-WDG, while maintaining similar cattle performance to corn-fed controls.

Abstract
Eight Holstein and 8 Jersey multiparous, lactating cows were used to complete 56 energy balances to determine the energy content of reduced-fat dried distillers grains with solubles (RFDDGS). A repeated switchback design was used to compare treatments with and without RFDDGS. Diets consisted of 24.2% corn silage, 18.4% alfalfa hay, 6.94% brome hay with either 22.9% rolled corn or 14.8% soybean meal (control), or 8.95% rolled corn, 28.8% RFDDGS, and 0% soybean meal [Co-P; dry-matter (DM) basis]. The inclusion of RFDDGS did not affect DM intake, averaging 21.4 ± 0.53 kg of DM for all cows, but milk production tended to increase from 29.8 to 30.9 ± 1.46 kg/d for control and Co-P treatments, respectively. Milk fat percentage and energy-corrected milk did not differ between treatments, averaging 4.33 ± 0.14% and 34.1 kg/d, respectively. Milk protein was significantly decreased by the Co-P treatment (3.56 and 3.41 ± 0.08% for control and Co-P treatments), but protein yield was not affected. Milk energies were 1.40 Mcal/d greater with Co-P. Energy lost as methane was reduced by 0.31 Mcal/d with the addition of RFDDGS to the diet. Heat loss averaged 29.9 ± 0.55 Mcal/d and was not different between diets. Average energy retained as tissue energy was -2.99 ± 0.93 Mcal/d and did not differ between treatments. Intake of digestible and metabolizable energy were not different between the control and Co-P treatments, averaging 2.68 and 2.31 Mcal/kg of DM, respectively. The net energy of lactation values of control and Co-P diets were calculated to be 1.43 and 1.47 Mcal/kg of DM, respectively. These energy estimates suggest greater energy content of diets containing RFDDGS than diets containing a mixture of corn and soybean meal in lactating dairy cows.

Abstract
Four male lambs (Katahdin; average live weight 25.9±2.9 kg) with “T” type cannulas in the rumen and proximal duodenum were used in a 4×4 Latin square experiment to evaluate the influence of supplemental dry distillers grain with solubles (DDGS) levels (0, 10, 20 and 30%, dry matter basis) in substitution for dry-rolled (DR) corn on characteristics of digestive function and digestible energy (DE) of diet. Treatments did not influence ruminal pH. Substitution of DR corn with DDGS increased ruminal neutral detergent fiber (NDF) digestion (quadratic effect, p<0.01), but decreased ruminal organic matter (OM) digestion (linear effect, p<0.01). Replacing corn with DDGS increased (linear, p≤0.02) duodenal flow of lipids, NDF and feed N. But there were no treatment effects on flow to the small intestine of microbial nitrogen (MN) or microbial N efficiency. The estimated UIP value of DDGS was 44%. Postruminal digestion of OM, starch, lipids and nitrogen (N) were not affected by treatments. Total tract digestion of N increased (linear, p = 0.04) as the DDGS level increased, but DDGS substitution tended to decrease total tract digestion of OM (p = 0.06) and digestion of gross energy (p = 0.08). However, it did not affect the dietary digestible energy (DE, MJ/kg), reflecting the greater gross energy content of DDGS versus DR corn in the replacements. The comparative DE value of DDGS may be considered similar to the DE value of the DR corn it replaced up to 30% in the finishing diets fed to lambs.

Abstract
In recent years there has been renewed interest in the development of novel grain classification methods that could complement traditional empirical tests. A speckle pattern occurs when a laser beam illuminates an optically rough surface that flickers when the object is active and is called biospeckle. In this work, we use laser biospeckle to classify maize (Zea mays L.) kernel hardness. A series of grains of three types of maize were cut and illuminated by a laser. A series of images were then registered, stored, and processed. These were compared with results obtained by floating test. The laser speckle technique was effective in discriminating the grains based on the presence of floury or vitreous endosperm and could be considered a feasible alternative to traditional floating methods. The results indicate that this methodology can distinguish floury and vitreous grains. Moreover, the assay showed higher discrimination capability than traditional tests. It could be potentially useful for maize classification and to increase the efficiency of processing dry milling corn.

The rise of the grain-ethanol industry has resulted in a dramatic increase in the availability of feed co-products namely, distillers’ grains with solubles (DG). The cost of feeds that have traditionally been used for energy continues to increase and there is a need to understand the potential impact of replacing these feeds with DG on milk yield and composition. Using the Dairy National Research Council (2001) model and data from a total of 25 published studies (81 observations), we used a meta-analytical procedure to evaluate the impact of feeding corn milling co-products on lactating dairy cows. Based on our model, the inclusion of DG did not affect dry matter intake (P=0.35) but a trend for an increase in milk yield was observed (P=0. 10). Additionally, the percentages of milk fat and protein in the milk were not affected (P=0.24 and 0.25, respectively). The modeled daily rumen outflow of Lys in grams was significantly (P<0.01) reduced and Met was not affected (P=0.79) when DG were included. The error associated with net energy of lactation allowable milk averaged 5.0±1.0 kg d−1and was not affected by DG (P=0.79) but the error associated with metabolizable protein allowable milk tended (P=0.10) to be higher for cows consuming DG by 1.4±1.2 kg d−1.

Abstract
Sustainable practices meet the needs of the present without compromising the ability of future generations to meet their needs. Applying these concepts to food and feed production, nutritional sustainability is the ability of a food system to provide sufficient energy and essential nutrients required to maintain good health in a population without compromising the ability of future generations to meet their nutritional needs. Ecological, social, and economic aspects must be balanced to support the sustainability of the overall food system. The nutritional sustainability of a food system can be influenced by several factors, including the ingredient selection, nutrient composition, digestibility, and consumption rates of a diet. Carbon and water footprints vary greatly among plant- and animal-based ingredients, production strategy, and geographical location. Because the pet food industry is based largely on by-products and is tightly interlinked with livestock production and the human food system, however, it is quite unique with regard to sustainability. Often based on consumer demand rather than nutritional requirements, many commercial pet foods are formulated to provide nutrients in excess of current minimum recommendations, use ingredients that compete directly with the human food system, or are overconsumed by pets, resulting in food wastage and obesity. Pet food professionals have the opportunity to address these challenges and influence the sustainability of pet ownership through product design, manufacturing processes, public education, and policy change. A coordinated effort across the industry that includes ingredient buyers, formulators, and nutritionists may result in a more sustainable pet food system.

Abstract
To investigate the effects of maternal selenium (Se) supplementation and nutritional intake during gestation on hormone changes, percentage body weight (BW) change, and organ mass in neonatal lambs, ewes were allocated to differing Se levels (adequate Se (ASe, 11.5 μg/kg BW) or high Se (HSe, 77.0 μg/kg BW)) initiated at breeding and nutritional intake (60% (RES), 100% (CON), or 140% (HIGH) of NRC requirements) initiated at day 40 of gestation. At parturition, all lambs were removed from dams, fed common diets, and BW and blood samples were collected until day 19. There was a Se×nutritional intake×day interaction for percentage BW change from birth. Lambs born to ASe-HIGH ewes tended to have decreased BW change compared with ASe-CON and ASe-RES groups on day 7. Lambs from HSe-HIGH ewes tended to have increased BW change compared with HSe-RES and HSe-CON groups from days 7 to 19. At birth, there was a Se×sex of offspring interaction, in which male lambs from HSe ewes had decreased cortisol concentrations compared with all other lambs. By 24 h, lambs from RES ewes had decreased cortisol compared with those from HIGH ewes, with lambs from CON ewes being intermediate. Lambs from RES- and CON-fed ewes had greater thyroxine than HIGH ewes at 24 h. Organ masses on day 19 were mainly impacted by maternal nutritional intake and sex of the offspring. Birth weight alone did not predict growth performance during neonatal life. Moreover, despite a similar postnatal diet, maternal nutritional plane and Se status did impact neonatal endocrine profiles. Exact mechanisms of how neonatal endocrine status can influence later growth and development need to be determined.
