Abstract
A trial was carried out to study the effect of type of castration and diet on pigs destined for Teruel ham production, which is a Spanish protected designation of origin for dry-cured ham. A total of 144 Duroc × (Landrace × Large White) male pigs were used. Half of them were surgically castrated and the other half were immunocastrated with three doses at approximately 25, 58 and 79 kg of body weight. Furthermore, three diets (control vs. high energy vs. low crude protein-CP- and amino acids-AA) were tested from 80 to 137 kg of body weight. Growth performance, serum sex hormones and metabolites, and carcass quality were evaluated. Immunocastrated males grew faster and had better feed conversion ratio than surgically castrated males, but presented lower carcass fatness. Pigs fed the high-energy diet and the low-CP and -AA diet were more efficient at transforming feed into gain than those fed the control diet, but no effect was detected on carcass quality. In conclusion, surgically castrated males are preferable than immunocastrated males for Teruel dry-cured ham elaboration. Besides, a high-energy diet or a low-CP and -AA diet might improve productive performances, but does not provide any benefit in terms of carcass quality.

Abstract
Two experiments were carried out; one with female pigs and the other with male pigs destined for Teruel dry-cured ham production, to evaluate the effect of immunocastration (entire gilts-EG vs. immunocastrated gilts-IG and surgically castrated males vs. immunocastrated males-IM) and diet (control vs. high energy vs. low crude protein and amino acids) on meat quality and fat composition. Fifteen meat samples and eight fat samples of each treatment were analyzed in both experiments. In the case of males, six fat samples per treatment were analyzed to determine boar taint. Immunocastration is a good strategy in gilts intended for dry-cured ham production because improves meat composition; however, in males, immunocastration impairs the results of pork chemical composition compared with surgical castration. The IG presented a lower polyunsaturated/saturated fatty acids ratio than EG, improving fat technological quality. Diets had little effect on pork or fat quality in gilts, but a high-energy level using oilseeds and a low-crude-protein and -amino-acids diet from 80 to 137 kg of body weight could be interesting in IM to maintain or increase fat consistency, respectively. Moreover, in general, immunocastration is effective in avoiding boar taint in males.

Abstract
Immunocastrated pigs (IC) exhibit intensive fat deposition after immunisation, but the underlying mechanisms of intensified fat metabolism and deposition are not yet fully understood. Moreover, there is also a lack of comparative studies performed on IC, entire males (EM) and surgical castrates (SC). The main objective of our research was, therefore, to characterise the adipose tissue from the quantitative, histo-morphological and biochemical perspectives in IC 5 weeks after their immunisation in comparison to EM and SC. Immunocastrated pigs had an intermediate position in carcass fatness traits between EM (the leanest) and SC (the fattest). The histo-morphological traits of the subcutaneous adipose tissue of IC were similar to those of SC and differed from those of EM; i.e., they exhibited larger adipocytes in the outer backfat and a larger lobulus surface area in both backfat layers than EM. Intensive fat tissue development in IC was corroborated with higher activities of lipogenic enzymes (i.e., fatty acid synthase, malic enzyme, glucose 6-phosphate dehydrogenase, citrate cleavage enzyme), which was especially pronounced in the subcutaneous adipose tissue of IC (1.5- to 2.7-fold higher activity than in EM or SC). The fatty acid composition of the backfat in IC was similar to that in EM pigs. Both IC and EM exhibited less saturated and more polyunsaturated fatty acids than SC. In contrast, the fatty acid composition of the intramuscular fat of longissimus dorsi muscle in IC pigs was more similar to SC than to EM (higher monounsaturated and lower polyunsaturated fatty acid content in IC and SC than EM). In this study, it was demonstrated that immunocastration notably influenced lipid metabolism. This was shown by increased quantity of lipid depots and with changes in adipose tissue cellularity compared to EM, with changes in the fatty acid composition of the intramuscular fat and enhanced lipogenic activity compared to both EM and SC. These results provide new insights into the specificity of adipose tissue development and deposition in IC compared to EM and SC.

Abstract
Due to the strong public initiative in Europe and increased regulator focus to mitigate pain, surgical castration of pigs is being gradually abandoned, while the importance of other sex categories like entire males (EM) and immunocastrates (IC) increases. Although beneficial for animal welfare and economics, their use also brings forward several quality problems. Besides the occurrence of boar taint in EM, these include excessive carcass leanness, softer fat, meat color and pH deviations, inferior water holding capacity and increased meat toughness. In this paper, the raw material differences between the male sex categories and their influence on product quality are reviewed, and possible solutions are presented. Using EM for dried or thermally processed products may result in lower processing yields and inferior sensory quality, which may partially be prevented by applying specific processing adaptations. Immunocastration is a viable solution, especially when prolonging the vaccination to slaughter interval. Low to medium levels of boar taint can be effectively managed in most of the meat products, applying procedures like cooking, microbial inoculation or masking (by spices and especially smoking), while highly tainted material can be valorized only by combining various methods and/or with dilution of the tainted meat.

Abstract
Background Castration is a husbandry practice raising important questions on the welfare and physiological status of farm animals. Searching for effective castration methods that minimally compromise the body physiology is worthy of attention. Therefore, this study aimed to evaluate the differential response of biological systems in donkeys to surgical castration versus the chemical one by CaCl2 with special emphasis on stress, lipid profile, and oxidative stress biomarkers. Donkeys were divided randomly and equally into two groups; the chemical (Ch) and surgical (S) groups (n = 6). The Ch group was chemically castrated by intratesticular injection of 20% CaCl2 dissolved in absolute ethanol. Blood samples were collected prior to castration and at 15, 30, 45, and 60 days after the beginning of experiment. Results Surprisingly, the Ch group at the end of the experiment was characterized by significantly higher cortisol level compared to the S group. TC and LDL-C levels in the S group significantly decreased at day 45, while TG levels significantly increased at days 45 and 60 in comparison with day 0. HDL-C levels at days 30 and 60 in the Ch group significantly increased in comparison with day 0. At day 30 post-castration, HDL-C was significantly higher and LDL-C was significantly lower in the Ch group than the S group. A significant elevation in TC and LDL-C was observed at day 45 and in HDL-C at the end of experimental duration in the Ch group when compared with the S group. TPX level was significantly lower and TAC was significantly higher in the Ch group at day 45 than the S group. Conclusion Surgical castration evoked less stress and minor changes in lipid profile and oxidant/antioxidant balance relative to chemical castration by intratesticular 20% CaCl2 dissolved in absolute ethanol.

Abstract
The feed restriction of pigs aims to improve the nutrient utilization of the diet, reduce carcass fat and increase lean meat. Immunocastration is a painless, reversible technique that improves animal welfare, decreases boar taint in meat, leading to lower fat deposition and increases lean meat. This study aimed at evaluating either feeding (restricted) programs (FP) and castration categories (surgically castrated × immunocastration) in terms of pig performance, carcass traits and meat quality. Castration category and FP did not influence marbling, initial pH and drip loss in loin and ham. However, immunocastrated pigs presented lighter loins and hams with lower ultimate pH, compared to the surgically castrated pigs. The FP with lower feed volume resulted in higher ultimate pH. Immunocastrated males had a higher live weight than those surgically castrated. Also, the more the feed supply decreased, the better the feed conversion. Immunocastrates had lower carcass yields, however these pigs had their backfat thickness decreased and lean meat increased in the carcass, without affecting the loin depth.

Abstract
Entire male (EM) pigs (152; ∼30 kg body weight) were used to examine immunocastration using Improvest and feeding ractopamine on growth performance, carcass and meat quality, and fatty acid composition. Timing for administering second dose of Improvest compared dosing at 4 and 8 wk pre-slaughter. A factorial arrangement evaluated two genotypes [Large Whites and Duroc crossbreds (Durocs)] by five management regimens (EM fed control diet, EM fed ractopamine, second dose Improvest 4 wk pre-slaughter, second dose Improvest 8 wk pre-slaughter, second dose Improvest 4 wk pre-slaughter plus ractopamine). Average daily gain and gain to feed (G:F) were generally greater (P ≤ 0.01) in Durocs. Immunocastration increased (P < 0.01) dry matter intake (DMI); feeding ractopamine decreased (P < 0.02) DMI and increased (P < 0.03) G:F. Immunocastration decreased (P < 0.04) carcass and lean yields; feeding ractopamine increased (P < 0.04) carcass weights, lean yield, muscling, and longissimus shear force while decreasing (P < 0.01) backfats. Immunocastration did not affect loin pH, color, drip loss, and shear force. Timing for second Improvest dose did not affect most growth performance, carcass, and meat quality traits except for greater (P < 0.02) backfats when administering dose 8 wk pre-slaughter. Effects of immunocastration and (or) feeding ractopamine were relatively consistent in both genotypes evaluated.

Abstract
Effects of dried distillers grains with solubles (DDGS) feeding strategies (a corn-soybean meal (CS) fed continously; CS+40% DDGS fed continously; CS+40, 30, 20, or 10% DDGS in 4 phases, respectively; or CS+40% DDGS in phases 1 to 3 and CS in phase 4 before slaughter) on belly and pork fat quality of immunologically castrated (n=192) pigs were evaluated. All pigs received the first Improvest dose at 11week of age, and the second dose at 9, 7, or 5week before slaughter at 24week of age. Increasing the time interval of the second Improvest dose before slaughter reduced IV in all fat depots and increased belly thickness. Gradually decreasing dietary DDGS and DDGS withdrawal feeding strategies reduced IV in all fat depots. Calculated IV were greater using the Meadus et al. (2010) equation compared with using the AOCS (1998) equation because it includes more long-chain unsaturated fatty acids.

Abstract
Pigs (192 total) were blocked by age and stratified by initial BW (25.75 ± 2.29 kg) into pens (2 barrows and 2 gilts per pen). Within blocks, pens were randomly allotted to treatments in a 2 × 2 factorial arrangement, with 2 diet forms (meal vs. pellet) and 2 distillers' dried grains with solubles (DDGS) inclusion levels (0 vs. 30%). Pigs were weighed at the beginning of the experiment and at the end of each feeding phase (d 35, 70, and 91) and daily feed allotments were recorded. Pigs were slaughtered at the end of the 91-d experiment, and full gastrointestinal (GI) tract and GI tract component weights were recorded immediately following evisceration. Carcass characteristics and meat quality were determined after a 24-h chill. Overall ADG was increased ( < 0.01) 3.2% when pigs were fed pelleted diets rather than meal diets, but there was no effect ( = 0.46) of DDGS inclusion on overall ADG. Overall ADFI of meal-fed pigs fed 30% DDGS was 4.7% greater ( < 0.01) than that of pigs fed 0% DDGS in meal form, but overall ADFI did not differ ( ≥ 0.19) between DDGS inclusion level in pellet-fed pigs (diet form × DDGS inclusion, < 0.01). When fed meal diets, pigs fed 0% DDGS had 2.7% greater ( = 0.02) overall G:F than pigs fed 30% DDGS; however, there was no difference ( = 0.42) in overall G:F between DDGS inclusion levels in pigs fed pelleted diets (diet form × DDGS inclusion, < 0.03). Pigs fed pelleted diets had 2.9% heavier HCW ( = 0.01), 10.4% greater 10th-rib back fat ( = 0.01), and 1.8 percentage units less estimated lean percentage ( = 0.04) than meal-fed pigs. Full GI tracts of pigs fed pelleted diets were 0.33 percentage units less ( = 0.03) of the ending live weight than that of meal-fed pigs due to decreased ( < 0.01) GI tract contents. Inclusion of DDGS increased ( = 0.03) full GI tract weight, large intestine weight ( < 0.01), and GI tract contents ( = 0.02). Severity of parakeratosis of the pars esophagea was greater ( < 0.01) in pellet-fed pigs than in meal-fed pigs, but the magnitude of the difference was likely not great enough to negatively affect drop credit of stomachs. In conclusion, feeding pelleted diets improved growth performance and increased carcass weight and fatness without causing the development of gastric lesions that would reduce the value of the stomach to packers. Furthermore, inclusion of DDGS in diets reduced HCW and dressing percent and increased GI tract and GI tract contents weight but had no effect on gastric lesion development or LM quality.

Abstract
The pig industry uses a variety of fat sources (FS) and fat levels (FL) in diets to increase energy content. The objective was to investigate the impact of FS and FL on rate and efficiency of gain, apparent total tract digestibility of dietary fat, and pork fat composition and test dietary predictors of carcass iodine value (IV). A total of 1,213 pigs (PIC 280 × PIC Camborough 42; PIC, Inc., Hendersonville, TN) with an initial BW of 32.0 ± 0.4 kg were randomly allotted to 1 of 6 dietary treatments on d 0. Treatments were arranged as a 2 × 3 factorial, with 2 FS, choice white grease (CWG; IV = 66.8) and corn oil (COIL; IV = 123.2), and 3 FL, 2, 4, or 6%. Ten pens of approximately 20 pigs each (0.70 m/pig) were randomly assigned to each of the 6 treatments. All pigs were on trial for 105 d. Pigs were harvested in 1 of 3 marketing pulls, to achieve an ideal market BW across differing rates of gain, at which time belly fat samples were collected (d 105 [457 pigs], 117 [309 pigs], or 134 [432 pigs]). Diet and belly fat samples were analyzed for fatty acid profile. Daily rate of gain was not impacted by FS or FL ( ≤ 0.325). Increasing FL and dietary energy concentration increased G:F ( < 0.001). No difference was evident for G:F between FS ( = 0.107). Increasing FL of CWG resulted in greater daily intake of SFA and MUFA than increasing FL of COIL ( < 0.001). Increasing levels of COIL resulted in greater daily intake of PUFA than increasing levels of CWG ( ≤ 0.012). Feeding CWG tended to result in great caloric efficiency adjusted for carcass yield than feeding COIL ( = 0.074). The inclusion of COIL instead of CWG tended to increase true total tract digestion of acid hydrolyzed ether extract on d 39 ( = 0.066) but not on d 104 ( = 0.402). Increasing COIL increased carcass IV at a greater magnitude than increasing CWG, resulting in a FS × FL interaction on d 105, 117, and 134 ( < 0.001). Dietary linoleic acid concentration and daily intake had a stronger linear relationship than IV product (IVP; = 0.95 vs. = 0.94 vs. = 0.85, respectively). In conclusion, limiting linoleic acid dietary concentration and intake is key to lowering carcass IV. To meet a carcass IV standard of 74 g/100 g, linoleic acid concentration had to be <3.4% and intake had to be <88 g/d. Dietary linoleic acid is a superior predictor of carcass IV compared with IVP, especially when high-fat diets are used.

Abstract
Effects of dried distillers grains with solubles (DDGS) feeding strategies on carcass composition, primal cutout, and lean quality of immunologically castrated (IC; n=863) pigs were evaluated, and consisted of: 1) corn-soybean meal (CS) diet (PCon); 2) CS+40% DDGS (NCon); 3) CS+40, 30, 20, or 10% DDGS fed in phases 1 to 4, respectively (SD); or 4) CS+40% DDGS fed in phase 1 to 3 and CS in phase 4 (WD). All pigs received the first dose of Improvest® at 11weeks. of age, and the second dose was administered at either 9, 7, or 5weeks. before slaughter at 24weeks. of age. The SD and WD improved carcass dressing percentage and resulted in intermediate primal cut yields and pork loin quality compared with pigs fed PCon and NCon. Increasing the time interval between second dose of Improvest® and slaughter increased adipose tissue accretion but did not affect lean quality of pork.

Abstract
Growth performance of immunologically castrated (IC) pigs (863 total) was determined at increasing time intervals between the second Improvest (gonadotropin releasing factor analog-diphtheria toxoid conjugate; Zoetis Inc., Florham Park, NJ) dose and slaughter (TD) and with 4 different dried distillers grains with solubles (DDGS) feeding strategies (FS) in a 4 × 3 factorial arrangement of treatments. The feeding period was divided into 4 separate diet phases. Dietary treatments included 1) corn-soybean meal control diets (PCon), 2) a gradual decrease of dietary DDGS inclusion rate from 40%, 30%, 20%, and 10% in phases 1 to 4 (GD), respectively, 3) feeding 40% DDGS diets in phases 1 to 3 and removal of DDGS from the phase 4 diet (WD), and 4) feeding 40% DDGS diets in all 4 phases (NCon). Pigs received the second Improvest dose at 9 (TD9), 7 (TD7), or 5 (TD5) wk before slaughter. In each group, all pigs were slaughtered on the same day. There were no 3-way interactions among FS, TD, and week of feeding period for any measure of growth performance. Pigs fed PCon and WD had greater ( < 0.05) overall ADFI than pigs fed NCon, especially when slaughtered 9 wk after the second Improvest dose (2.45 and 2.44 vs. 2.31 ± 0.08 kg/d, respectively). This response was partly due to withdrawing DDGS from the diet at 19 wk of age (WD), which led to a tendency ( < 0.10) for increased ADFI from the wk 19 to 21 interval to the wk 21 to 24 interval (3.26 vs. 3.51 ± 0.09 kg/d, respectively). During the same time period, ADFI was unchanged ( > 0.05) in pigs fed PCon, GD, and NCon. Overall G:F was improved ( < 0.05) in TD5 pigs compared with TD9 pigs and tended ( < 0.10) to be improved compared with TD7 pigs. Final BW was similar among pigs fed GD, WD, and PCon (123.1, 122.3, and 125.3 kg, respectively), but pigs fed PCon and GD had greater ( < 0.05) BW than pigs fed NCon (120.0 kg). Throughout the growing-finishing period, BW was similar among TD treatments. The GD FS was more effective than the WD FS in maintaining overall G:F (0.424 and 0.414 ± 0.005, respectively) and ADG (0.94 and 0.93 ± 0.03 kg/d, respectively), which were similar ( > 0.05) to those of pigs fed PCon (0.427 ± 0.005 and 0.96 ± 0.03 kg/d, respectively). Growth performance of pigs fed GD more closely reflected that of pigs fed PCon than that of pigs fed WD. Delaying the second dose of Improvest from 9 to 5 wk before slaughter resulted in improved growth performance.

Abstract
The main objective was to determine the nitrogen and P retention and energy digestibility of immunological castrates (IC), entire males (EM), physical castrates (PC), and gilts (G) during 3 growth phases. A second objective was to compare growth performance among the sexes. The final objective was to determine the carcass iodine value (IV) among the sexes. Twelve individually housed pigs (PIC 337 × C22/29) of each sex with an initial mean BW of 35.7 ± 0.6 kg and a final BW of 145.0 ± 1.3 kg were evaluated. Anti-gonadotropin-releasing factor injections were administered at d 23 and 15 for groups 1 and 2, respectively. The second injection was given on d 56 of the 98-d experiment. Nitrogen, P, and energy digestibility were measured the last 3 d of the 10-d metabolism period starting at mean BW of 39.5 ± 0.6, 73.7 ± 0.8, and 105.5 ± 0.9 kg for periods 1, 2, and 3, respectively. The third collection started 14 d after the second injection. Entire males and IC had superior overall ADG compared to PC and G ( < 0.05). Entire males and G had the lowest overall ADFI, and PC had the greatest, with IC being intermediate ( < 0.05). Entire males were overall the most efficient, followed by IC, with PC and G being the least efficient ( < 0.05). Immunological castrates and EM had similar nitrogen retention (g/d) for the first 2 collection periods ( > 0.05). In the third collection period, nitrogen retention of IC was similar to that of both EM and PC ( < 0.05). Phosphorus retained (g/d) was not different among the sexes in the first collection; during the second collection, EM retained the greatest amount of P, G and PC retained the lowest, with IC being similar to all sexes. For the third collection, IC had P retention similar to that of EM, EM had retention similar to that of PC, and PC had retention similar to that of G ( > 0.05). However, G retained less P than EM or IC ( < 0.05). Apparent total tract digestibility of DM and GE and the DE of the diet did not differ among the sexes in any of the collection periods ( > 0.05). The jowl IV was the lowest in IC and PC and highest in EM, with G being similar to all sexes ( < 0.05). For the belly, EM had the highest IV, with the other 3 sexes being similar. In conclusion, 2 wk after the second injection, IC transition to become more similar to PC in terms of nitrogen utilization but are still similar to EM in P utilization. These data suggest a feeding program for IC that is intermediate between EM and PC is required to meet their nutritional requirements.

Abstract
In this work, different equations were compared as for their effectiveness in predicting the iodine value (IV), based on fatty acid (FA) composition of subcutaneous adipose tissue of Italian heavy pigs. In particular, six equations were tested: AOCS (1); modified AOCS (2), including all unsaturated FA (UFA); regression models obtained using the stepwise regression procedure as variable selection method, calculated considering only UFA (3) or all the FA (4); regression models obtained using the backward elimination procedure, calculated considering only UFA (5) or all the FA (6). The comparison of the equations performance, estimated using an external test set, showed that the use of regression models led to significant enhancements of prediction accuracy with respect to the AOCS equations. Using both equations 4 and 6, the average paired differences between experimental and predicted IV values were not statistically significant. Therefore, it is possible to use these equations for IV estimation of the subcutaneous adipose tissue of Italian heavy pigs.

Abstract
The inclusion of unsaturated fats in pig diets has raised issues related to pork carcass fat quality. The objective of this experiment was to understand how withdrawal from the diet of unsaturated dietary fat before slaughter impacts the composition of jowl fat during the growth cycle and at market. Fifty individually housed pigs (PIC 337 × C22/29; initial BW = 59.3 ± 0.55 kg) were allotted based on sex and initial BW to 10 treatments for an 82-d experiment as follows: 3 dietary fat withdrawal times before slaughter (21, 42, or 63 d) by 3 dietary fat unsaturation loads (DFUL), which includea high intake of unsaturated fatty acids supplied through an inclusion of 5% corn oil (HIGH), a high intake of a mixture of saturated and unsaturated fatty acids supplied through an inclusion of 5% animal-vegetable blend (MED), and a moderate intake of unsaturated fatty acids supplied through an inclusion of 2.5% corn oil (LOW). Pigs were weighed and jowl adipose samples were collected on d 0, 21, 42, and 63 and at harvest on d 82. Data were analyzed using PROC MIXED with treatment and sex as fixed effects. At market (d 82), increasing the withdrawal of dietary fat further away from market increased 18:1 (P = 0.045) and tended to increase 14:0 concentrations (P = 0.054). It also significantly decreased 18:2 (P < 0.001) and tended to decrease 18:3 concentrations (P = 0.081). A HIGH DFUL resulted in the greatest 18:2 concentrations in jowl fat followed by LOW; MED resulted in the lowest 18:2 levels (P < 0.001). Dietary fat withdrawal before market significantly reduced carcass iodine value (IV) measured at d 82 (P = 0.006). In conclusion, elevated 18:2 intake makes lowering carcass IV in the depot fat very difficult and may take as long as 61 d. The withdrawal of unsaturated dietary fat apparently altered the fat depot to be more reflective of fat synthesized de novo, resulting in a more saturated depot fat. Importantly, this alteration of deposited fat composition did not translate into improved belly firmness, depth, weight, or fat color.

Abstract
Two studies were conducted to evaluate the quality characteristics of fresh sausage manufactured from immunologically castrated (IC) pigs, an emerging technology in the pork industry. Study 1: Fresh sausage patties from ground Boston butts fabricated from PC (physically castrated) pigs fed 0.55% SID (standard illeal digestible) lysine, IC pigs fed 0.55% SID lysine, and IC pigs fed 0.65% SID lysine were made and not standardized to a similar content of fat content. Study 2: fat and lean trim obtained from IC and PC pigs was made into fresh sausage patties, targeting 25% lipid. Patties (1.25 cm) were placed on trays and assigned to 0, 4, or 12 weeks frozen storage and then, after frozen storage, placed in simulated retail display conditions for 5 days. Patties were evaluated for color stability, sensory and textural properties, and lipid oxidation. Data were analyzed as a one way ANOVA with repeated measures where appropriate. In both studies, sausage discolored with both increased time in frozen storage and with increased time in retail display (P < 0.01). However, within each week of frozen storage, all treatments were equally discolored in both studies. Treatment did not affect the sensory characteristics or textural properties of fresh sausage in either study. Lipid oxidation did not differ by treatment in study 1. In study 2, lipid oxidation was reduced (P < 0.05) in IC compared to PC by approximately 0.1 mg malonaldehyde/kg meat, but there were no differences within each storage week. Increasing frozen storage time increased lipid oxidation an off‐flavor scores in both studies (P < 0.05). Overall, immunological castration had no detrimental effects on color stability, sensory characteristics, or textural properties of fresh pork sausage.

Several factors can affect pork belly quality and, subsequently, bacon quality. Going by the recent trends in the bacon market and bearing in mind the more choosy nature of the consuming populace, it is imperative to consider the factors that can affect or improve bacon quality, thereby sustaining the current market surge. In as much as both genetic and environmental factors have been identified as largely affecting muscle food quality, nutritional interventions also seem to be a very viable tool to improve the quality of meat and its products. Processing and storage methods can also affect bacon quality, including microbial quality, physicochemical attributes and palatability. Both objective and subjective measures have been explored in assessing belly quality, most of which use belly softness and fatty acid profile as yardsticks, whereas bacon quality has been widely assessed only subjectively in terms of fat quality and slice integrity. Although consumers’ and producers’ quality perceptions seem to be in conflict, it is the responsibility of all stakeholders in the bacon industries to come together in ensuring a balanced approach to satisfy both parties along the production chain.

Abstract
The objectives were to compare slice characteristics and sensory attributes of bacon from immunologically castrated (IC) barrows with bacon from other sexes using a trained sensory panel. Bacon was obtained for sensory evaluation from 3 experiments. In Exp. 1, trimmed and squared bellies (n=180) of IC barrows, IC barrows fed ractopamine hydrochloride (IC+RAC), physically castrated (PC) barrows, intact males (IM), and gilts were used. Data were analyzed as a general linear mixed model and pen (n=48) served as the experimental unit. Treatment (sex or diet) was a fixed effect in all 3 experiments. In Exp. 2, untrimmed, natural fall bellies (n=96) from IC and PC barrows fed 0 or 30% or a withdrawal distillers dried grains with solubles (DDGS) program when slaughtered at 5 wk after the second dose (25 wk of age) were used. In Exp. 3, untrimmed, natural fall bellies (n=96) from IC and PC barrows fed the same experimental diets as in experiment 2 but slaughtered at 7 wk after the second dose (27 wk of age) were used. Data from Exp. 2 and 3 were analyzed as a 2×3 factorial arrangement in a randomized complete block design and pen was the experimental unit. Bellies from all 3 experiments were processed using the same protocols. In Exp. 1, IM had the greatest (P<0.0001) boar aroma and flavor scores among all treatments. No differences were detected among the other treatment groups for boar aroma or flavor. Intact males had the least (P<0.0001) desirable cured bacon aroma and flavor among all treatments. No differences were detected among the other treatment groups for bacon aroma or flavor. There were no differences in bacon aroma or off-flavor between IC and PC barrows slaughtered at 5 wk after the second dose regardless of DDGS feeding program. Bacon from PC barrows was saltier (P<0.01) than bacon from IC barrows when slaughtered at 5 wk after the second dose. There were no differences in bacon aroma, off-aroma, bacon flavor, or saltiness between IC and PC barrows slaughtered at 7 wk after the second dose regardless of DDGS feeding program. Total slice area of bacon slices from IC barrows slaughtered at 5 wk after the second dose were less (P<0.01) than PC barrows, but the differences diminished (P=0.16) when slaughtered at 7 wk after the second dose. Overall, panelists successfully detected boar odor and flavor in Exp. 1. Immunological castration was as effective as physical castration at eliminating boar aroma and boar flavor in bacon even when feeding differing DDGS feeding programs or when slaughtered at 5 or 7 wk after the second dose.
