Mercury as undesirable substance in animal feed - Scientific opinion of the Panel on Contaminants in the Food Chain

The levels, single and multiple health risk assessment of 23 metals in enteral nutrition formulas

Enteral nutrition formulas are products that provide macro and micronutrients to patients who cannot receive their nutrition orally. In this study, the levels of 23 metals known to have potential health risks were determined by inductively coupled plasma mass spectrometry in a total of 28 enteral nutrition formula. Metal exposure was calculated according to three different daily energy intake scenarios (Scenario 1 = 50% oral nutrition + 50% enteral nutrition formula, Scenario 2 = 25% oral nutrition + 75% enteral nutrition formula and Scenario 3 = 100% enteral nutrition formula) and evaluated in terms of non-carcinogenic health risks. The mean levels of Fe, Co, Ni, Cu, Zn, Mo, Se, Li, Be, V, As, Sr, Ag, Cd, Sb, Ba, La, Hg and Pb in the samples analyzed were determined 12,000 ± 3300, 64 ± 1.6, 10 ± 13, 1300 ± 400, 8500 ± 2500, 75 ± 30, 61 ± 21, 0.34 ± 0.36, 0.05 ± 0.08, 7.3 ± 2, 1.6 ± 0.6, 457 ± 166, 0.02 ± 0.1, 0.14 ± 0.12, 0.01 ± 0.1, 74 ± 103, 0.63 ± 0.4, 0.05 ± 0.03 and 0.14 ± 0.7 μg/L. These metals were considered safe in terms of non-carcinogenic health risks when analyzed individually. However, when the target hazard quotient values of all metals were evaluated together, hazard index values were higher than the reference value of 1, for both men and women, indicating potential health risks.

Occurrence of Toxic Metals and Metalloids in Muscle and Liver of Italian Heavy Pigs and Potential Health Risk Associated with Dietary Exposure

Muscle and liver tissues from Italian heavy pigs were analyzed to investigate whether the chronic consumption of these products by local consumers could represent a health risk in relation to the contamination by some toxic metals and metalloids (TMMs). The concentrations of Al, As, Cd, Cr, Cu, Fe, Ni, Pb, Sn, U, and Zn were measured with an inductively coupled plasma-mass spectrometer, while Hg analysis was performed by using a mercury analyzer. Fe, Zn, and Cu were the most abundant elements in both tissues, while U was detected only at ultra-trace levels. As, Cd, Cu, Fe, Hg, Pb, U, and Zn showed significantly higher concentrations in livers compared to muscles (p ≤ 0.01), with Cd and Cu being 60- and 9-fold more concentrated in the hepatic tissue. Despite this, concentrations of all TMMs were found to be very low in all the samples to the point that the resulting estimated dietary intakes did not suggest any food safety concern. Indeed, intakes were all below the toxicological health-based guidance values or resulted in low margins of exposure. Nevertheless, in the calculation of the worst-case exposure scenario, the children's estimated intake of Cd, Fe, and Zn through the sole consumption of pig liver contributed to more than 23, 38, and 39% of the tolerable weekly intakes of these elements, while the combined consumption of pig liver and pig muscle to more than 24, 46, and 76%. These findings alert about the probability of exceeding the toxicological guidance values of Cd, Fe, and Zn though the whole diet, suggesting long-term negative health effects for the younger population.

Status and trends of mercury pollution of the atmosphere and terrestrial ecosystems in Poland

The goal of this paper is to assess the current status and trends of total mercury (THg) contamination of the atmosphere and terrestrial ecosystems in Poland. The study shows that the reduced domestic and worldwide atmospheric emission of Hg resulted in decreased THg level in the terrestrial biotope and biosphere. Considering that Poland is one of the main Hg emitters in Europe, the THg concentrations in its abiotic environment are still elevated. However, the THg level in terrestrial organisms is relatively low, which is because a large proportion of Hg deposited on land is accumulated in organic-rich soils. Regarding the THg concentration, consumption of wildlife and livestock from Poland is safe for humans. Nevertheless, the authors indicate the need for effective environmental monitoring, based on selected bioindicators, which is crucial considering the slowing reduction of Hg emission combined with the consequences of the changing climate.

Potential contaminants and hazards in alternative chicken bedding materials and proposed guidance levels: a review

Bedding material or litter is an important requirement of meat chicken production which can influence bird welfare, health, and food safety. A substantial increase in demand and cost of chicken bedding has stimulated interest in alternative bedding sources worldwide. However, risks arising from the use of alternative bedding materials for raising meat chickens are currently unknown. Organic chemicals, elemental, and biological contaminants, as well as physical and management hazards need to be managed in litter to protect the health of chickens and consequently that of human consumers. This requires access to information on the transfer of contaminants from litter to food to inform risk profiles and assessments to guide litter risk management. In this review, contaminants and hazards of known and potential concern in alternative bedding are described and compared with existing standards for feed. The contaminants considered in this review include organic chemical contaminants (e.g., pesticides), elemental contaminants (e.g., arsenic, cadmium, and lead), biological contaminants (phytotoxins, mycotoxins, and microorganisms), physical hazards, and management hazards. Reference is made to scientific literature for acceptable levels of the above contaminants in chicken feed that can be used for guidance by those involved in selecting and using bedding materials.

Total mercury levels in the muscle and liver of livestock and game animals in Poland, 2009-2018

The bioaccumulation of mercury (Hg) in the food chain may pose a threat to human health. The risk of dietary Hg intake is mostly caused by the consumption of fish and seafood, therefore the knowledge on the exposure from land animal products is limited. In our article, we summarized the results of analyses of Hg in muscle tissue and liver of different livestock and game animals obtained during ten years of official monitoring that was carried out in Poland from 2009 to 2018. The majority of the results in muscle tissue were below the limits of quantification (LOQs). The mean Hg concentrations in muscle tissue ranged from 0.6 to 5.6 μg kg^-1 of wet weight and the mean liver Hg concentrations were within the range of 0.8-16.4 μg kg^-1 of wet weight, with lowest levels in chickens and highest in wild boars. The results revealed decreasing trends in liver Hg in cattle and cervids over the years, which was congruous with decreasing emission of Hg in Europe. Our results showed that the consumption of meat and liver of livestock and game animals in Poland may be considered to be safe for human health, which was confirmed by the low number of noncompliant samples relative to the applicable legal limits, as well as by estimated dietary exposure.

Fermented food waste for culturing jade perch and Nile tilapia: Growth performance and health risk assessment based on metal/loids

Food waste is a low-cost and nutritious source of feed which could be beneficial to the fishery industry. The objective of this study was to use fermented food wastes as major sources of protein to replace the fish meal used in fish feeds for culturing jade perch (Scortum barcoo) and Nile tilapia (Oreochromis niloticus). Two experiments (a laboratory and a field trial) were conducted to test the suitability of the fish feeds for the two fish species. In the laboratory trial, six out of seven formulations (six food waste-based formulations and one commercial diet as control) were tested on jade perch whereas four out of the seven formulations were tested on Nile tilapia to study the effects of the diets on the growth performance and serum immunological parameters of fish. The formulations (Diet F and Diet A) with the best growth performance (feed conversion ratio (FCR) of jade perch (1.98) and Nile tilapia (1.28)) while having the lowest amount of fish meal (5%) were selected for field scale feeding trial. In addition, the percentage of fermented food waste ingredient in fish feed (Diet A and Diet F) was about 50% without causing significant effects on the immunity (P < 0.05) of the two fish species when compared with control diet. In the field scale feeding trial, FCR values of jade perch and Nile tilapia fed with Diet F and A were 1.06 and 1.16, respectively, which were similar to the control diet (P > 0.05). Metal/loids concentrations in fish tissue showed that both fish species fed with food waste-based pellets (Nile tilapia) Diet A: As (0.028 mg/kg), Cd (0.011 mg/kg), Cr (0.163 mg/kg), Cu (0.851 mg/kg), Hg (0.141 mg/kg), Pb (0.081 mg/kg) and Zn (30.8 mg/kg)) and jade perch Diet F: As (0.709 mg/kg), Cd (0.026 mg/kg), Cr (0.300 mg/kg), Cu (2.49 mg/kg), Hg (0.318 mg/kg), Pb (1.745 mg/kg) and Zn (40.9 mg/kg) were all below the maximum permissible levels of the local standard (As (AS₂O₃) = 6 mg/kg; Cd = 2 mg/kg; Cr = 1 mg/kg; Pb = 6 mg/kg; Hg = 0.5 mg/kg), while no permissible levels of Cu and Pb are stipulated by the standard. The results of the human health risk assessment indicated that the fish cultured with food waste-based diets were generally safe for human consumption (Hazard Index values: 0.075-0.054; cancer risk range: 2.14-8.15 × 10^-6). The present study revealed that fermented food waste could serve as protein substitute in fish feed for the culture of quality jade perch and Nile tilapia for human consumption.
