Abstract
An ingenious and universal design of fluorescent/electrochemical dual-signal mode sensing platform was constructed for the sensitive, selective and accurate detection of tetracycline (TET). Apt-functionalized nano-magnetic beads (Fe3O4-Apt) as capture probe, Apt-complementary short-chain functionalized fluorescent MOF loaded with methylene blue (MB) (cDNA-MOF-MB) as dual-signal tag were prepared. The sensing platform (Fe3O4-Apt/cDNA-MOF-MB) was formed based on the base complementary pairing of Apt and cDNA. With the help of Apt for target recognition, together with magnetic separation technology, a dual-signal mode biosensor was constructed. The dual-signal mode biosensor exhibited a wide linear concentration range from 1.00 × 10-9 g/mL to 1.00 × 10-4 g/mL with a low limit of detection (LOD) of 1.69 × 10-10 g/mL (fluorescence mode assay) and 1.15 × 10-10 g/mL (electrochemical mode assay). The proposed biosensor had been successfully applied to the determination of TET content in real samples with satisfactory recoveries (94.99-101.30%).

Abstract
With the widespread use of uranium in the nuclear industry, achieving rapid and sensitive detection of uranium contaminants is critical for reducing environmental pollution. Surface-enhanced Raman scattering (SERS), with its high sensitivity and unique fingerprint properties, has been used for the analysis of uranyl. However, the weak affinity of Au for uranyl remains a challenge in the development of spherical Au-based SERS substrates. The metal-organic framework (MOF) material ZIF-8 exhibits excellent adsorption capacity for uranyl and could overcome this limitation. In this study, ZIF-8 porous structures were modified on a magnetic SERS substrate, Fe3O4@SiO2@Au (FA), for the rapid and sensitive detection and analysis of the uranyl species. Uranyl was adsorbed by ZIF-8, allowing ready access to the hot spots in the interstices of Au nanoparticles (AuNPs). Symmetrically stretched vibrating bonds of O═U═O were detected at 829 cm-1 as the characteristic peak of uranyl by surface plasmon resonance between the AuNPs. The ZIF-8 coating had minimal influence on target detection as the detection limit for 4-MPY was only half an order of magnitude lower than before modification. The enhancement factor for uranyl reached 106. The substrate showed excellent sensing performance in a neutral or alkaline environment. It was used to detect uranyl in tap water and river water; rapid separation of the species from the water samples was achieved using an external magnet to extract radioactive waste. The proposed substrate offers a route for monitoring and detecting uranyl contamination and an approach for achieving rapid on-site detection, providing a promising application for environmental contaminant detection.

Abstract
Food quality, safety, and the regulatory metabolism of food nutrients in cells are primary factors in determining human health. However, residues of undesirable or hazardous compounds in food products and dysregulation in the nutrient metabolism inevitably occur occasionally. For years, chromatography-mass spectrometry technology has been recognized as an essential research tool in food analysis and nutrient metabolism research, and it is more accurate and robust when coupled with stable isotopes. In this study, we summarize the applications of stable isotope technology in the quantification of contaminant residues (pesticides, veterinary drugs, mycotoxins, polycyclic aromatic hydrocarbons, and other hazardous compounds) in foods and in the nutrients (glucose, lipids, amino acids and proteins) metabolism research. The aim of this review was to serve as a reference for providing effective analysis techniques for protecting food quality and human health, and to pave the way for the broader application of stable isotope technology.

Abstract
Herein, by employing a novel synthesized ligand H2L, a flower-like luminescent metal-organic framework IRMOF-3-L was constructed for developing a triple-mode sensor for glyphosate (Glyp) detection. The ligand H2L was designed to contain three functional parts, which endowed the resulted IRMOF-3-L with peroxidase-like activity and unique fluorescence property, as well as specific combining capacity for Cu2+ to quench its fluorescence. The quenched fluorescence of IRMOF-3-L/Cu2+ could be recovered by Glyp to realize fluorescence detection of Glyp. Besides, the peroxidase activity of IRMOF-3-L/Cu2+ could also be inhibited by Glyp, and result in the decrease of catalysate oxTMB, concurrently reducing the changes of colorimetric and SERS signal. Therefore, the fluorescent/colorimetric/SERS triple-mode based detection of Glyp was favorably realized, and the detection limits were calculated as low as 0.738, 2.26 and 0.186 nM, respectively. Furthermore, a portable test strips-smartphone sensing platform was constructed for point of care testing of Glyp in food samples.

Abstract
A novel metal-organic framework (MOF)/covalent-organic framework (COF) heterostructure hybrid composite (NH2-UiO-66/TpPa-1-COF) with excellent photoactivity was developed, which further acted as the photoelectrochemical sensitized layer of a molecularly imprinted photoelectrochemical (MIP-PEC) sensor for extremely sensitive and selective determination of dibutyl phthalate (DBP). The NH2-UiO-66/TpPa-1-COF was synthesized using a simple one-step solvothermal method, which showed improved photocurrent response owing to heterojunction formation, favorable energy-band configuration and strong light absorption capacity. To improve the sensing performance, molecularly imprinted polymer (MIP) was developed by sol-gel polymerization method as the recognition component of PEC sensor. The specific binding of imprinting sites towards DBP could block the electron transfer, causing decreased photocurrent response of the MIP-PEC sensor. The MIP-PEC sensor showed a wide detection range from 0.1 nmol L-1 to 100 μmol L-1 with a limit of detection of 3.0 × 10-11 mol L-1 under optimal conditions. Meanwhile, the proposed MIP-PEC sensor showed good stability, selectivity, reproducibility, and applicability in real samples. This is the first attempt to apply MOF/COF heterostructure hybrid composite for MIP-PEC sensor construction, providing new insight into the potential applications of microporous crystalline framework heterostructure hybrid composite in the sensing field.

Abstract
Mycotoxins in food are hazardous for animal and human health, resulting in food waste and exacerbating the critical global food security situation. In addition, they affect commerce, particularly the incomes of rural farmers. The grave consequences of these contaminants require a comprehensive strategy for their elimination to preserve consumer safety and regulatory compliance. Therefore, developing a policy framework and control strategy for these contaminants is essential to improve food safety. In this context, sensing approaches based on metal-organic frameworks (MOF) offer a unique tool for the quick and effective detection of pathogenic microorganisms, heavy metals, prohibited food additives, persistent organic pollutants (POPs), toxins, veterinary medications, and pesticide residues. This review focuses on the rapid screening of MOF-based sensors to examine food safety by describing the main features and characteristics of MOF-based nanocomposites. In addition, the main prospects of MOF-based sensors are highlighted in this paper. MOF-based sensing approaches can be advantageous for assessing food safety owing to their mobility, affordability, dependability, sensitivity, and stability. We believe this report will assist readers in comprehending the impacts of food jeopardy exposure, the implications on health, and the usage of metal-organic frameworks for detecting and sensing nourishment risks.

Abstract
A novel, operational, reliable, flexible gas sensor based on silk fibroin fibers (SFFs) as a substrate was proposed for detecting the freshness of pork. Silk is one of the earliest animal fibers utilized by humans, and SFFs exposed many biological micromolecules on the surface. Thus, the gas sensor was fabricated through polyaniline (PANI) and silver nanowires (AgNWs) and deposited on SFFs by in-suit polymerization. With trimethylamine (TMA) as a model gas, the sensing properties of the PANI/AgNWs/silk composites were examined at room temperature, and the linear correlativity was very prominent between these sensing measures and the TMA measures in the range of 3.33 μg/L-1200 μg/L. When the pork sample is detected by the sensor, it can be classified into fresh or stale pork with the total volatile basic nitrogen (TVB-N) as an index. The result indicated that the gas sensor was effective and showed great potential for applications to detect the freshness of pork.

Abstract
Amino acids are important building blocks of proteins in the human body, which are involved in many metabolic pathways. Patients with metabolic diseases such as phenylketonuria, tyrosinemia, and hepatic encephalopathy are genetically defective and cannot metabolize aromatic amino acids (AAA) in food; hence, a regular diet may lead to permanent physiological damage. For this reason, it is necessary to restrict the intake of AAA in their daily diet by limiting natural protein intake, while ensuring normal intake of low protein foods and supplementation with low-AAA protein equivalents. Sources of low-AAA protein equivalents currently rely on free amino acid complex mixtures and low-AAA peptides (also known as high-Fischer-ratio peptides), which have better absorption availability and palatability. AAA separation and analysis techniques are essential for the preparation and detection of low-AAA peptides. Researchers in this field have explored a variety of efficient adsorption materials to selectively remove AAA from complex protein hydrolysates and thus prepare low-AAA peptide foods, or to establish analysis strategies for AAA. Covering more than 70 publications on AAA removal and separation in the last decade from Web of Science Core Collection and China National Knowledge Infrastructure, this review analyzes the structural characteristics and physicochemical properties of AAA, and summarizes the technological progress of AAA removal based on adsorbents such as activated carbon and resin. The applications of two-dimensional nanomaterials, molecular imprinting, cyclodextrins, and metal-organic frameworks in AAA adsorption and analysis from three dimensions, i. e., sample pretreatment, chiral separation and adsorption sensing, are also reviewed. The mainstream adsorbents for AAA removal, such as activated carbon, still suffer from poor specificity and cause environmental pollution during post-use treatment. Existing AAA separating materials show impressive selective adsorption capability in food samples and chiral mixtures as well as high sensitivity in adsorption sensing. The development of an efficient detection technology for AAA may help in detecting trace AAA in food and in evaluating chiral AAA adulteration in food samples. By exploring the advantages and disadvantages of each type of technology, we provide support for the advancement of the removal and analysis techniques for AAA.

Abstract
A versatile fluorescence scaffold was constructed by connecting a G-triplex sequence (G31) with G-rich DNA (aptamer of kanamycin) and using thioflavin T (ThT) as the fluorescent molecule. With the assistance of an aptamer, the G-quadruplex DNA structure was fabricated using G31 as three strands and the aptamer as the fourth strand. Due to the parallel planar morphology of the final products, which was favorable for ThT binding and which restricted the rotation of the aromatic rings of ThT, the fluorescence signal intensity of ThT was significantly enhanced. Because of the specific interaction of aptamer and kanamycin, in addition to the greater ability for kanamycin to bind with G-triplex than ThT, the conformation of G-quadruplex DNA was changed; in addition, ThT was dissociated from the aptamer-G31, and therefore a 'turn-on' to 'turn-off' detection principle was applied for kanamycin detection, which yielded reasonable sensitivity and selectivity. The detection range was 50-2000 nM, with a limit of detection of 1.05 nM. Our proposed method was thus successfully applied for kanamycin determination in pork, chicken, and beef samples, and satisfactory results were obtained.
