Dairy matrix effect on the transference of rosemary (Rosmarinus officinalis) essential oil compounds during cheese making

BACKGROUND

The use of aromatic plant extracts as ingredients may be compromised owing to low transference and activity lack in food matrixes compared with in vitro trials. Rosemary essential oil (REO) was added to sheep milk to study the transference of its compounds during the cheese-making process and to determine how cheese antimicrobial activity is modified.

RESULTS

The volatile characterization of dairy samples was performed using headspace stir bar sorptive extraction coupled to gas chromatography/mass spectrometry (HS-SBSE/GC/MS) so that fat matrix interferences were reduced. This method detected a decrease in volatile recovery concentration of 19.33% when REO was added to milk. A total recovery volatile yield of 62.51% was measured from the initial quantification of milk to cheese, with hydrocarbon volatiles being transferred in a higher ratio (64.88%) than oxygenated ones (58.74%). No effects were observed for REO in fortified cheese on the counts of native flora necessary for ripening processes, but the total inhibition of Clostridium spp. was provoked

CONCLUSION

The study of active compound transference during cheese elaboration was achieved. The antimicrobial results in fortified cheeses with REO showed a preventive effect in the case of clostridial species, which are responsible for late cheese blowing.

Electronic Nose analysis of milk from cows grazing on two different Alpine vegetation types

The nutritional distinctiveness of pasture-fed dairy products is mainly influenced by the transfer of specific chemical compounds from the grass to the milk and by their effect on rumen microflora and animal metabolism. Thus, the pasture-fed origin has to be objectively proven, using fast and reproducible analytical methods applied to finished products, in order to protect consumers against potential frauds. In this work, Electronic Nose patterns of Alpine milks produced by cows grazing Trifolium alpinum and Festuca nigrescens pasture types have been examined, in order to test the potential use of this device for routine control analyses of the botanical origin of milk and dairy products. The data have been treated with different multivariate analyses (MANOVA, LDA) and chemometrics (MPLS). The results allow a very good classification of the milks, according to the two treatments. Such results demonstrate that this device could be successfully applied to PDO dairy products food chain as a tool for the determination of their dietary origin.

How do the nature of forages and pasture diversity influence the sensory quality of dairy livestock products?

Abstract This review summarizes the recent developments in understanding of the relationships between the diet of animals and the sensory quality of dairy products. Feeding dairy cattle with maize silage by comparison with hay or grass silage leads to whiter and firmer cheeses and butter and sometimes to differences in flavour. Major differences in sensory characteristics were observed between cheeses made with milk produced by cows on winter diets (based on hay and grass silage) or turned out to pasture in the spring. Conversely, preserving grass as silage, by comparison with hay, has no major effect on cheese sensory characteristics, except on colour, the cheese being yellower with grass silage. Several recent experiments have shown a significant effect of grass botanical composition on cheese texture and flavour. These effects are due to the presence in milk of specific molecules directly introduced by feeding (carotenes, terpenes) or produced by the animals (plasmin, fatty acids) under the effect of specific diets.
