Abstract
As goat milk has a higher economic value compared to cow milk, the phenomenon of adulterating goat milk with cow milk appears in the market. In this study, the potential of Raman spectroscopy along with chemometrics was investigated for the authentication and quantitation of liquid goat milk adulterated with cow milk. First, the results of principal component analysis (PCA) showed that there were differences between the Raman spectra of cow and goat milk, which made quantitative experiments possible. For quantification, three different brands of cow milk and goat milk were selected randomly and adulterated goat milk with cow milk at the proportion of 5-95%. 342 samples were used for the construction of the partial least squares regression (PLSR) model with 80% for the calibration set and 20% for the prediction set. The PLSR model showed excellent performance in quantifying the level of adulteration, for the prediction set, with a coefficient of determination (R2) of 0.9781, root mean square error (RMSE) of 3.82%, and a ratio of prediction to deviation (RPD) of 6.8. The results demonstrated the potential of Raman spectroscopy as a rapid, low cost and non-destructive analytical tool for detecting adulteration in goat milk.

Abstract
To achieve rapid on-site identification of raw milk adulteration and simultaneously quantify the levels of various adulterants, we combined Raman spectroscopy with chemometrics to detect 3 of the most common adulterants. Raw milk was artificially adulterated with maltodextrin (0.5-15.0%; wt/wt), sodium carbonate (10-100 mg/kg), or whey (1.0-20.0%; wt/wt). Partial least square discriminant analysis (PLS-DA) classification and a partial least square (PLS) regression model were established using Raman spectra of 144 samples, among which 108 samples were used for training and 36 were used for validation. A model with excellent performance was obtained by spectral preprocessing with first derivative, and variable selection optimization with variable importance in the projection. The classification accuracy of the PLS-DA model was 95.83% for maltodextrin, 100% for sodium carbonate, 95.84% for whey, and 92.25% for pure raw milk. The PLS model had a detection limit of 1.46% for maltodextrin, 4.38 mg/kg for sodium carbonate, and 2.64% for whey. These results suggested that Raman spectroscopy combined with PLS-DA and PLS model can rapidly and efficiently detect adulterants of maltodextrin, sodium carbonate, and whey in raw milk.

Abstract
In this work, the photochemical treatment of a real municipal wastewater using a persulfate-driven photo-Fenton-like process was studied. The wastewater treatment efficiency was evaluated in terms of total carbon (TC), total organic carbon (TOC) and total nitrogen (TN) removal. Response surface methodology (RSM) in conjunction Box-Behnken design (BBD) and multilayer artificial neural network (ANN) have been utilized for the optimization of the treatment process. The effects of four independent factors such as reaction time, pH, K2S2O8 concentration and K2S2O8/Fe2+ molar ratio on the TC, TOC and TN removal have been investigated. The process significant factors have been determined implementing Analysis of Variance (ANOVA). Both RSM and ANN accurately found the optimum conditions for the maximum removal of TOC (100% and 98.7%, theoretically), which resulted in complete mineralization of TOC at the reaction time of 106.06 min, pH of 7.7, persulfate concentration of 30 mM and K2S2O8/Fe2+ molar ratio of 7.5 for RSM and at the reaction time of 104.93 min, pH of 7.7, persulfate concentration of 30 mM and K2S2O8/Fe2+ molar ratio of 9.57 for ANN. On the contrary, the attempts to find the optimal conditions for the maximum TC and TN removal using statistical, and neural network models were not successful.

Abstract
Milk products obtained from cow, goat, buffalo, sheep, and camel as well as fermented forms such as cheese, yogurt, kefir, and butter are in a category of the most nutritious foods due to their high contents of high protein contributing to total daily energy intake. For certain reasons, high price milk products may be adulterated with low-quality ones or with foreign substances such as melamine and formalin which are added into them; therefore, a comprehensive review on analytical methods capable of detecting milk adulteration is needed. The objective of this narrative review is to highlight the use of vibrational spectroscopies (near infrared, mid infrared, and Raman) combined with multivariate analysis for authentication of milk products. Articles, conference reports, and abstracts from several databases including Scopus, PubMed, Web of Science, and Google Scholar were used in this review. By selecting the correct conditions (spectral treatment, normal versus derivative spectra at wavenumbers region, and chemometrics techniques), vibrational spectroscopy is a rapid and powerful analytical technique for detection of milk adulteration. This review can give comprehensive information for selecting vibrational spectroscopic methods combined with chemometrics techniques for screening the adulteration practice of milk products.

Abstract
There is an ever-expanding number of high protein dietary supplements marketed as beneficial to athletes, body builders, infant formulas, elder care, and animal feed. Consumers will pay more for products with high protein per serving data on their nutritional labels, making the accurate reporting of protein content critical to customer confidence. The Kjeldahl method (KM) is the industry standard to quantitate dairy proteins, but the result is based on nitrogen content, which is an approximation of nitrogen attributable to protein in milk. Product tampering by third-party manufacturers is an issue, due to the lack of United States Food and Drug Administration regulation of nutraceutical products, permitting formulators to add low-cost nitrogen-containing components to artificially inflate the KM approximated protein content in products. Optical spectroscopy is commonly used for quality control measurements and has been identified as having the potential to complement the KM as a more nuanced testing measure of dairy protein. Mid-infrared (MIR) spectroscopy spectra of eight protein standards provided qualitative characterization of each protein by amide I and amide II peak absorbance wavenumber. Protein doping experiments revealed that as protein amounts were increased, the amide I/II peak shape changed from the broad protein powder peaks to the narrower peaks characteristic of the individual protein. Amino acid doping experiments with lysine, glutamic acid, and glycine, determined the limit of detection by MIR spectroscopy as 25%, suggesting that MIR spectroscopy can provide product quality assurance complementary to dairy protein measurement by the KM.

Abstract
In recent years, several researchers and practitioners applied machine learning algorithms in the dairy farm context and discussed several solutions to predict various variables of interest, most of which were related to incipient diseases. The objective of this article is to identify, assess, and synthesize the papers that discuss the application of machine learning in the dairy farm management context. Using a systematic literature review (SLR) protocol, we retrieved 427 papers, of which 38 papers were determined as primary studies and thus were analysed in detail. More than half of the papers (55 %) addressed disease detection. The other two categories of problems addressed were milk production and milk quality. Seventy-one independent variables were identified and grouped into seven categories. The two prominent categories that were used in more than half of the papers were milking parameters and milk properties. The other categories of independent variables were milk content, pregnancy/calving information, cow characteristics, lactation, and farm characteristics. Twenty-three algorithms were identified, which we grouped into four categories. Decision tree-based algorithms are by far the most used followed by artificial neural network-based algorithms. Regression-based algorithms and other algorithms that do not belong to the previous categories were used in 13 papers. Twenty-three evaluation parameters were identified of which 7 were used 3 or more times. The three evaluation parameters that were used by more than half of the papers are sensitivity, specificity, RMSE. The challenges most encountered were feature selection and unbalanced data and together with problem size, overfitting/estimating, and parameter tuning account for three-quarters of the challenges identified. To the best of our knowledge, this is the first SLR study on the use of machine learning to improve dairy farm management, and to this end, this study will be valuable not only for researchers but also practitioners in dairy farms.

Abstract
Online detection of product defects using fast spectroscopic measurements is beneficial for producers in the dairy industry since it allows readjustment of product characteristics or redirection of product streams during production. Raman spectroscopy has great potential for such application due to the fast and simple measurement. Its suitability as online sensor for process control was investigated at typical control points in consumer milk production being raw milk storage, standardization, and heat treatment. Additionally, the appropriateness of Raman spectroscopy to act as indicator for product application parameters was investigated using the example of barista foam. To assess the suitability of a pure online system, the merit of Raman spectra was evaluated by a principal component analysis (PCA). Thereby, proteolytic spoilage due to the presence of extracellular enzymes of Pseudomonas sp. was detected and samples based on the applied heat treatment (extended shelf life (ESL) and ultra-high temperature (UHT)) could be separated. A correlation of the content of free fatty acids and foam stability with spectra of the respective milk samples was found, allowing a prediction of the technofunctional quality criterion “Barista” suitability of a UHT milk. The results underlined the suitability of Raman spectroscopy for the detection of deviations from a defined product standard of consumer milk.

Abstract
Food analysis is a challenging analytical problem, often addressed using sophisticated laboratory methods that produce large data sets. Linear and non-linear multivariate methods can be used to process these types of datasets and to answer questions such as whether product origin is accurately labeled or whether a product is safe to eat. In this review, we present the application of non-linear methods such as artificial neural networks, support vector machines, self-organizing maps, and multi-layer artificial neural networks in the field of chemometrics related to food analysis. We discuss criteria to determine when non-linear methods are better suited for use instead of traditional methods. The principles of algorithms are described, and examples are presented for solving the problems of exploratory analysis, classification, and prediction.

Abstract
Background Fraudulent milk adulteration is a dangerous practice in the dairy industry that is harmful to consumers since milk is one of the most consumed food products. Milk quality can be assessed by Fourier Transformed Infrared Spectroscopy (FTIR), a simple and fast method for obtaining its compositional information. The spectral data produced by this technique can be explored using machine learning methods, such as neural networks and decision trees, in order to create models that represent the characteristics of pure and adulterated milk samples. Results Thousands of milk samples were collected, some of them were manually adulterated with five different substances and subjected to infrared spectroscopy. This technique produced spectral data from the milk samples composition, which were used for training different machine learning algorithms, such as deep and ensemble decision tree learners. The proposed method is used to predict the presence of adulterants in a binary classification problem and also the specific assessment of which of five adulterants was found through multiclass classification. In deep learning, we propose a Convolutional Neural Network architecture that needs no preprocessing on spectral data. Classifiers evaluated show promising results, with classification accuracies up to 98.76%, outperforming commonly used classical learning methods. Conclusions The proposed methodology uses machine learning techniques on milk spectral data. It is able to predict common adulterations that occur in the dairy industry. Both deep and ensemble tree learners were evaluated considering binary and multiclass classifications and the results were compared. The proposed neural network architecture is able to outperform the composition recognition made by the FTIR equipment and by commonly used methods in the dairy industry. Abstract
Milk is a complete nutrient source for humans. The quality and safety of milk are critical for both producers and consumers, thereby the dairy industry requires rapid and nondestructive methods to ensure milk quality and safety. However, conventional methods are time-consuming and laborious, and require complicated preparation procedures. Therefore, the exploration of new milk analytical methods is essential. This current review introduces the principles of Raman spectroscopy and presents recent advances since 2012 of Raman spectroscopic techniques mainly involving surface-enhanced Raman spectroscopy (SERS), fourier-transform (FT) Raman spectroscopy, near-infrared (NIR) Raman spectroscopy, and micro-Raman spectroscopy for milk analysis including milk compositions, microorganisms and antibiotic residues in milk, as well as milk adulterants. Additionally, some challenges and future outlooks are proposed. The current review shows that Raman spectroscopic techniques have the promising potential for providing rapid and nondestructive detection of milk parameters. However, the application of Raman spectroscopy on milk analysis is not common yet since some limitations of Raman spectroscopy need to be overcome before making it a routine tool for the dairy industry.

Abstract
As a fast information acquisition technique, Raman spectroscopy can be used to control the quality of dairy products. Feature extraction is a necessary processing step to improve the efficiency of Raman spectral data. Principal component analysis is a traditional method that can effectively extract the features and reduce the dimension of spectral data. However, it is difficult to analyze the chemical information of the extracted feature, thus limiting its practical application. In this work, Raman spectral chemical feature extraction was carried out. The quality control of Dingxin dairy products (a famous dairy brand in China; purchased from Heilongjiang Zhaodong Tianlong Dairy Co. Ltd., Heilongjiang, China) was used as an example. Raman peak intensity, peak area, and peak ratio were extracted as chemical features and further investigated using Euclidean distance and the quality fluctuation control chart. The potential quality discrimination ability of the Raman feature extraction methods was demonstrated. The results showed that the Puzhen dairy products (purchased from Inner Mongolia Yinuo Halal Food Co. Ltd., Inner Mongolia, China) and Xueyuan dairy products (used as a control; purchased from Inner Mongolia Wulanchabu City Jining Xueyuan Dairy Co. Ltd., Inner Mongolia, China) could be distinguished from Dingxin dairy products when the Raman chemical features special peak intensity, peak area, and peak ratio were used, and their discriminatory ability increased in sequence. Hence, it was shown that Raman chemical feature extraction can achieve quality control and discriminant analysis of dairy products and that the spectral information is clear.
