Abstract
The possibility of inclusion of agro-industrial by-products in the diet of small ruminants represents both an economical and an environmental strategy for reducing waste management by industries and the cost of feeding as well as the impact of livestock farming. Large amounts of wastes from the cocoa industry are annually produced with a considerable part represented by cocoa bean shells, considered a suitable ingredient to be included in the diet of ruminants within the limits established by European legislation. The aim of this study was to assess the effect of including cocoa bean shells in the diet of dairy sheep on the sensory, volatile, and antioxidant properties of cheese. To this purpose, 20 Comisana lactating ewes were randomly assigned to 2 experimental groups: control (CTRL) and cocoa bean shells (CBS), and received alfalfa hay ad libitum and 800g of conventional (CTRL) or experimental (CBS) concentrate containing 11.7% CBS to partially replace corn and barley of the CTRL concentrate. Bulk milk collected from each group was used to produce a total of 15 cheeses per group, obtained in 5 different days of cheese-making (3 cheeses a day per group). After 60 d of aging, each cheese of each experimental group was sampled for the analyses. The results on chemical composition revealed a greater monounsaturated fatty acids content and an increase in the nutritional indices suggesting a favorable role of cocoa bean shells dietary inclusion on the nutritive value of the cheese. The cheese sensory profile was affected by the cocoa bean shells inclusion, with more pronounced appearance, odor, aroma, and taste attributes in the product. The volatile profile showed only a few significant differences, mainly related to the cheese ripening process, and no differences were found in α-tocopherol contents in cheese fat between the 2 groups. Therefore, the coca bean shells inclusion in the diet of dairy sheep allowed to obtain a good quality cheese, without altering the characteristics associated with the typical profiles of sheep cheese. Furthermore, the use of this by-product could contribute to decrease feed costs and waste management, representing a good practice for increasing the sustainability of dairy products.

Abstract
This study aimed to determine the effect of using different sources of nitrogen to supply part of degradable intake protein needs in lactating goat performance and its effect on excretion of microbial purine derivatives and blood metabolites. Thirty-two lactating Saanen goats (body weight 38.85 ± 2.14 kg and 1979 ± 0.25 g day-1 milk yield) were used in a one-way ANOVA completely randomized design. Goats were assigned to the following treatments for a 10-wk experimental period: 1) Control (canola meal as a nitrogen source); 2) Urea (0.5% urea); 3) Optigen (0.55% Optigen- Alltech. Inc., Lexington, KY) and 4) Polymer-Coated Urea (PCU- international patent number: A01K5/00, 0.7% PCU) based on dry mater intake. Non-protein nitrogen groups had a comparative effect (p > 0.05) between control and other treatments on milk composition, microbial protein synthesis and they affected on blood factors including urea, cholesterol, and ALT. Dry matter intake decreased (p > 0.05) in PCU, Optigen, Urea than Control goats. Synthesis of microbial protein in PCU goats was 22.5 g day-1 and it was greater (p > 0.05) than other treatments. Plasma cholesterol was increased in PCU and Optigen, whereas urea concentration was increased in Urea and Control goats. Milk production was higher in PCU than Urea and Control. Feed conversion ratio was improved (p > 0.05) in PCU and Optigen goats versus other treatments. This study demonstrated that polymer-coated urea can be utilized as a nitrogen source and improve goats milk performance.

Abstract
This study aimed to evaluate the effects of rations containing restaurant food waste (RFW) on nutrient digestibility, milk yield and its composition, and some blood parameters of lactating Zaraibi goats. In the last month of pregnancy, 30 goats (32.8 + 0.91 kg body weight and aged 3-4 years) were chosen and divided into three similar groups (10 goats per group). Each group was randomly assigned to be fed one of the experimental rations. The control group (R1) fed on a ration comprising concentrate feed mixture (CFM1) and berseem as a fresh roughage whereas the second (R2) and the third groups (R3) fed on CFM partially substituted by 15 and 30% of RFW (CFM2 and CFM3, respectively). Nutrient digestibility and feeding values were improved with R3 goats, which had the highest level of RFW (30%) versus R2 and R1 goats. The total volatile fatty acid (TVFA) concentration in the in-rumen liquor was elevated by increasing the level of RFW up to 30% in CFM3 of R3 goats. Actual daily milk yields were significantly (P < 0.05) higher (1269.30 g/h/d) for R3 goats versus R1 and R2 (1037.57 and 1180.70 g/h/d, respectively). The inclusion of RFW in rations had a significant effect on the yield of milk constituents, without significant different among experimental rations regarding some blood constituents and offspring performance. Economic feed efficiency (relative feed cost and relative daily profit) was improved by including RFW in the CFM. Therefore, it can be concluded that the inclusion of up to 30% RFW improved productive performance and economic efficiency in lactating Zaraibi goat rations.

Abstract
Scarce high-quality protein feed resources has limited the development of animal husbandry. In this study, we used a dual-flow continuous culture system to evaluate effects of difference dietary protein sources including soybean meal (SBM), cottonseed meal (CSM), and rapeseed meal (RSM), on nutrient disappearance, rumen fermentation, and microbiota of XiongDong black goats. Dietary proteins of either CSM, RSM or SBM had no effect on nutrient disappearance (P > 0.05). CSM or RSM significantly reduced (P < 0.01) the pH and enhanced (P < 0.01) the ammonia nitrogen (NH3-N) concentration in fermentation liquid compared to SBM. The short-chain fatty acids (SCFAs) contents were greater (P = 0.05) and acetate was lower (P < 0.01) in SBM than those in RSM and CSM, whereas propionate was greater (P < 0.01) in RSM than that in SBM, consequently reducing the acetate to propionate ratio (A/P) in RSM. Bacteroidetes, Firmicutes, and Proteobacteria were detected as the dominant phyla, and the relative abundances of Spirochaetae (P < 0.01) and Chlorobi (P < 0.05) declined in the CSM and RSM groups as compared to those in the SBM group. At the genus level, Prevotella_1 was the dominant genus; as compared to SBM, its relative abundance was greater (P < 0.01) in CSM and RSM. The abundances of Prevotellaceae_Ga6A1 and Christensenellaceae_R7 were lower (P < 0.05) in CSM, whereas Eubacterium_oxidoreducens_group, and Treponema_2 were lower (P < 0.01) in both CSM and RSM, and other genera were not different (P > 0.10). Although the bacterial community changed with different dietary protein sources, the disappearances of nutrients were not affected, suggesting that CSM and RSM could be used by rumen bacteria, as in case with SBM, and are suitable protein sources for ruminant diets.

Abstract
Simple Summary Grape byproducts (grape pomace, seeds and skins) contain a wide range of phenolic compounds with antioxidant properties and thus can become functional ingredients in animal feeds. The dietary inclusion of grape pomace in chicken diets has been shown to increase plasma and meat α-tocopherol content and to mitigate meat lipid oxidation. However, the separate inclusion of the main components of grape pomace (grape seeds and skins) in the diet of chickens has been less studied. In the present research work, the dietary inclusion of grape byproducts did not compromise the growth of chickens nor did it affect ileal protein digestibility. Concerning plasma and meat α-tocopherol concentrations and meat lipid oxidation, the dietary combination of grape seeds and skins provided better results than the individual inclusion of these grape byproducts. Actually, combinations with a proportion of at least 50% of grape skins enabled optimal results of meat oxidative stability. Abstract Grape seeds (GS) and grape skins (GK) are natural sources of polyphenols with antioxidant capacity. An experiment was conducted to investigate in chickens the effect of including GS and GK (40 g/kg), individually or combined in different proportions (20 g/kg GS–20 g/kg GK; 30 g/kg GS–10 g/kg GK; 10 g/kg GS–30 g/kg GK), in a corn-soybean diet on growth performance, ileal and excreta contents of total extractable polyphenols (TEP) and tannins, ileal digestibility of protein, plasma and meat α-tocopherol concentration and lipid oxidation (assessed by measuring the thiobarbituric acid reactive substances, TBARS) of stored thigh meat. Neither growth performance parameters nor ileal digestibility of protein were affected by dietary treatments. As compared with control birds, chickens fed the grape byproduct diets showed higher ileal (p < 0.001) and excreta (p < 0.001) TEP and tannins contents. Dietary inclusion of grape byproducts increased α-tocopherol concentration both in plasma (p < 0.001) and in thigh meat (p < 0.01 at 1 d; p < 0.001 at 7 d), as compared with the control group. The highest plasma α-tocopherol concentrations were reached with the 30 g/kg GS–10 g/kg GK and 20 g/kg GS–20 g/kg GK combinations. On day 1 of meat storage, no differences on meat α-tocopherol concentration were found among the grape byproducts treatments but on day 7 of storage, the 20 g/kg GS–20 g/kg GK and 10 g/kg GS–30 g/kg GK combinations led to the highest α-tocopherol concentrations in chicken thigh meat. After seven days of refrigerated storage of meat, the TBARS value was lower in chickens fed the grape byproducts diets than in control birds (1.27 vs. 2.49 mg MDA/kg, p < 0.001). Moreover, among the different grape byproduct treatments, the lowest MDA values were reached with the diets containing GK at rates from 20 to 40 g/kg. In conclusion, dietary incorporation of 40 g/kg of GS and GK added separately or combined increased the plasma and meat α-tocopherol content. Furthermore, the combinations of GS and GK with a proportion of GK of at least 50% optimised α-tocopherol concentration both in plasma and in thigh meat and mitigated lipid oxidation in 7-day stored meat.

Abstract
Simple Summary Dried orange pulp can conveniently replace cereals in ruminant diets; however, no published reports have considered a similar substitution for the goat diet throughout lactation. Therefore, in this study, we evaluated the effects of cereal replacement (40% and 80%) by dried orange pulp in the diet of Payoya breed goats during the entire lactation period (180 days) on milk yield and composition, blood metabolites and production economics. Also evaluated, in mid-lactation, were the nutrient utilisation and ruminal fermentation of the dried orange pulp diets. Milk production and gross composition did not change in goats fed diets that included dried orange pulp. A decrease in nitrogen availability and retention was observed, while an increase detected in the digestibility of cellulose likely boosted rumen microbial protein synthesis. No pathological effects of dried orange pulp supplementation were detected in blood metabolites. The partial substitution of cereals for dried orange pulp reduced costs and raised economic profits. In conclusion, the partial replacement of cereals by dried orange pulp is a profitable and healthy nutritional strategy in dairy goats that does not compromise their productivity and is suitable for the entire lactation period. Abstract Dried orange pulp (DOP) can be incorporated into ruminant diets, but no reports have considered this strategy during the entire lactation period in goats. Two experiments were performed using lactating Payoya goats. In experiment 1, to study the effect, over 180 days, of DOP on milk yield and composition, blood metabolites and economic values, 44 primiparous goats were allocated into three groups: control diet (concentrate plus lucerne) and DOP40 and DOP80 diets, in which DOP replaced 40% and 80%, respectively, of the cereals. Nutrient digestibility and rumen fermentation were also studied (experiment 2). The DOP diets did not affect milk yield and composition. DOP triggered lower intake and digestibility of ether extract and crude protein. Ruminal fermentation was unaffected by DOP, except for a decrease in butyrate for DOP80. The energy balance was unaltered by diet while the balance and retention of nitrogen decreased. Regarding plasma biochemistry, DOP supplementation caused changes that could indicate an improvement in hepatic function and reduced muscular damage and oxidative muscular stress. Moreover, DOP80 provided a profit increase of EUR 3.27/goat. In conclusion, the partial replacement of cereals by DOP is a profitable and healthy nutritional strategy in dairy goats and is suitable for the entire lactation period without compromising productivity.

Abstract
The objective was to evaluate the use of wet brewery residue (WBR) silage additives on carcass characteristics and sheep meat quality. Thirty-two Santa Inês male sheep uncastrated with initial body weight of 22.61 ± 7.2 kg were allocated to a completely randomized design with four treatments: (1) WBR silage without additive (WBRS), (2) WBR silage with milled corn (WBRS + MC), (3) WBR silage with wheat bran (WBRS + WB), and (4) WBR silage with cassava flour (WBRS + CF) and eight replicates. WBRS + WB resulted in lower cold carcass weight than WBRS + CF; however, this reduction was not sufficient to alter the carcass commercial yield or loin-eye area. The leg cut of animals fed WBRS + WB showed less value than those animals fed with WBRS + CS. The meat lightness of WBRS was higher that of WBRS + MC, WBRS + WB, and WBRS + CF. The cooking loss for WBRS + WB was less than those animals fed with WBRS + CS. However, meat protein, meat cholesterol, and shear force were similar among treatments (17.69%, 42.46 mg/100 g of meat, and 2.48 kgf/cm2, respectively). The use of additives in wet brewery residue silage does not improve carcass characteristics or the quality of sheep meat, and it is therefore recommended to use WBR silage without additives.

Abstract
Simple Summary Inclusion of agro-industrial wastes reduces animal feed costs. However, it is very important to assess the effect this can have on the health and physiological condition of animals, as well as on the production and quality of milk. Therefore, this study was proposed with the objective of evaluating these aspects and verifying the optimal dose to maximize the farmers’ economic margin without affecting animals or their production. Inclusion of 40% tomato pomace does not influence the physiological characteristics of animals, and in turn improves both milk production and composition. Therefore, it can be concluded that formulation of the goats’ diet including 40% tomato pomace is the best option for animal diet. Abstract The aim of this research was to evaluate the effect of including different levels of tomato pomace (TP) on performance, blood biochemical parameters, hormones, production and composition of milk, and economic analysis of Saanen goats reared in confinement. Sixteen multiparous goats (Saanen), 21 days in milk, were randomly distributed in two Latin square 4 × 4 (four periods and four treatments), according to the inclusion levels of dehydrated tomato pomace (0%, 20%, 40%, and 60%) in the diet. This inclusion resulted in differences in the intake of dry and organic matter, as well as ether extract, crude protein, water, neutral detergent fiber, and non-fibrous carbohydrates. The inclusion of 60% TP resulted in a significant decrease of body weight (−4.42 kg) in comparison with initial body weight, while the other three treatments did not affect or increase the animal body weight (between −0.05 and +3.07 kg). The addition of 20% and 40% of TP resulted in higher milk production (around 1.5 kg day−1) than in animals from a control (1.2 kg day−1) and 60% TP (1.04 kg day−1). This increase was approximately 28% in the animals with 40% of TP inclusion. Moreover, the addition of 20% or 40% TP also improved the milk quality, which presented a higher fat amount (4.37% and 4.63% in 20% TP and 40% TP animals, respectively) than in a control (3.7%) and animals feed with 60% TP (4.02%). The feed efficiency and feed conversion did not show differences between diets. Thyroid hormones (T3 and T4) were also significantly affected by the inclusion of TP in the diet. The diet with the highest level of TP (60%) had the lowest cost per kilo among the diets evaluated. However, the use of 40% TP in animal diet presented the highest milk production and intermediate production cost.

Abstract
Simple Summary The high and volatile prices of conventional ingredients for animal feeding has directed the attention of ruminant nutritionists toward local alternative resources such as agroindustrial by-products and fruits wastes. The inclusion of these resources in the diet might contribute to reducing feeding costs and environmental issues associated with both livestock production and by-products and wastes accumulation might be prevented. The global production and consumption of avocado have risen sharply in recent years, partly due to the recognition of its health-promoting potential in humans. The increased consumption of avocado and its derivatives is producing great amounts of wastes and by-products that might be reutilized in ruminant feeding. Our hypothesis was that avocado wastes (a mixture of pulp and peels) could be included in multinutrient blocks for dairy goats and improve the quality of the milk fatty acid profile without negatively affecting milk yield. However, the intake of multinutrient blocks containing 14.8% avocado wastes was low probably due to avocado lipids oxidation and rancidity. No changes were observed in milk production, but feeding blocks with avocado wastes increased milk fat content with only subtle changes in the fatty acid profile of fat milk. Abstract Twelve Murciano-Granadina dairy goats were divided into two homogeneous groups, which were fed either a control diet composed of 40% alfalfa hay and 60% concentrate or a diet based on 40% alfalfa hay, 40% concentrate and 20% multinutrient blocks, including 14.8% avocado pulp and peels (APP). Total dry matter (DM) intake was similar (p = 0.709) for both diets, but APP-fed goats had lower (p = 0.024) concentrate intake and tended (p = 0.063) to have lower fat intake compared with those fed the control diet. The average intake of blocks was low (66.4 g DM/d), which was attributed to avocado lipids oxidation and rancidity. Neither milk yield (p = 0,921) nor the efficiency of energy and nitrogen use were affected (p = 0.909 and 0. 840, respectively) by the diet, but milk fat tended to be greater (p = 0.057) in the APP-fed goats compared with the animals fed the control diet. Other milk components were similar (p ≥ 0.110) for both diets, and only subtle changes in the milk fatty acid profile were observed. In summary, the intake of blocks containing avocado wastes by dairy goats was low probably due to avocado lipids oxidation causing off-flavors and reduced palatability.

Simple Summary In ruminant feeding, the use of diets containing seaweeds could be a valuable alternative to conventional diets. The objective of this work was to investigate the ruminal fermentation, growth rate and methane production in sheep fed a diet including Porphyra sp. compared with diets including clover silage or soybean meal. Including Porphyra sp. had little impact on ruminal fermentation and methane production both in vitro and in vivo. Lambs fed Porphyra sp. had a similar growth rate to those fed a diet including soybean meal, confirming previous in vitro and in situ observations on the high-quality protein of Porphyra sp. in ruminant feed. Abstract The aim of the present work was to investigate the potential of Porphyra sp. as an alternative source of protein to soybean meal in diets for sheep. Our experimental treatments included a control diet (CON) based on grass silage and crushed oats and three diets containing protein supplements, clover silage (CLO), soybean meal (SOY) or Porphyra sp. (POR) to increase dietary crude protein concentrations. We studied its effects on rumen fermentation, growth rate and methane emissions. Ruminal fermentation characteristics, kinetics of gas production and methane production were studied in vitro by using batch cultures inoculated with rumen inoculum from sheep. There were no differences among diets in total volatile fatty acids (VFA) production or in the VFA profile in vitro. Across treatments, we measured no differences in methane production either in vitro or in vivo, and we saw no noticeable antimethanogenic effect of Porphyra sp. The present in vivo trial with lambs showed no differences in average daily weight gain when fed diets including Porphyra sp. or soybean meal diets (250 and 254 g/d, respectively). We conclude that Porphyra sp. has a protein value similar to high-quality protein sources like soybean meal.

Abstract
The use of agroindustrial by-products, such as dried distillers grains with solubles (DDGS) and dried citrus pulp (DCP), has been widely investigated in dairy cows, but information on their effects in dairy goats is limited. The influence of feeding olive cake (a by-product of olive oil production) to dairy goats has been assessed in some studies, but exhausted olive cake (EOC) has been much less investigated. Twelve Murciano-Granadina goats were used in a crossover design trial with 2 periods to assess the effects of including agroindustrial by-products on nutrient digestibility, ruminal fermentation, methane production, urinary excretion of purine derivatives, and milk yield and composition. In each period, 6 goats received daily a control diet comprising 1 kg of alfalfa hay and 1 kg of high-cereal concentrate, and another 6 goats received a diet (BYP) comprising 1 kg of alfalfa hay and 1 kg of a concentrate including corn DDGS, DCP, and EOC in proportions of 180, 180, and 80 g/kg of concentrate (as-fed basis), respectively. Diet had no effect on total dry matter intake, but intake of alfalfa hay, CP, and fat was greater for the BYP group than for the control group. There were no differences between diets in nutrient apparent digestibility, with the exception of fat, which was greater for the BYP diet compared with the control diet. Although fecal N tended to be greater for the BYP diet, there were no differences in N utilization. Compared with the control diet, milk yield tended to be greater and daily production of milk CP, fat, whey protein, and TS as well as milk gross energy were greater for the BYP diet. The concentration of C12:0, C14:0, and C16:0 fatty acids (FA) was or tended to be lower and the concentration of polyunsaturated FA was greater in the milk of BYP-fed goats compared with goats fed the control diet. Diet had no effect on ruminal parameters (pH, volatile FA, and NH3-N concentrations) and methane emissions, but urinary excretion of total purine derivatives tended to be lower in BYP-fed goats than in those fed the control diet. A mixture of corn DDGS (180 g), DCP (180 g), and EOC (80 g) could replace 44% of cereal grains and protein feeds in the concentrate for dairy goats without compromising nutrient utilization, ruminal fermentation, or milk yield and led to a more unsaturated FA profile in milk.

Abstract
Simple Summary Recovery and valorization of residues are key factors for agro-industry to progress towards circular-economy models and more sustainable productions. In the vegetable oils industry, large quantities of spent seed cakes are produced downstream of the oil extraction processes, and their use as animal feedstuffs, mainly as protein supplements for ruminants, is a possible valorization strategy. In this study, we analyzed chemical composition and in vitro digestibility of spent cakes from sunflower, pomegranate, cardoon, tobacco and hemp that are multipurpose cultures emerging in Mediterranean area. The results showed that the cakes of tobacco, cardoon and hemp might be interesting alternative protein feeds for ruminants. The valorization of these cakes may potentially improve economic and environmental sustainability of the emerging vegetable-oil production chains. Abstract Fifteen oilseed cakes from sunflower, pomegranate, cardoon, tobacco and hemp were characterized with regard to chemical composition, Cornell Net Carbohydrate and Protein System (CNCPS) fractionation, in vitro digestibility of dry matter, neutral detergent fiber, and crude protein. All the cakes presented low moisture, rather variable ether extract contents and medium to high levels of crude protein and neutral detergent fiber. The cakes significantly differed in terms of CNCPS partitioning and in vitro digestibility. Tobacco and hemp cakes presented high contents of slow degradable fractions of crude protein and carbohydrate joined to good post-ruminal protein digestibility. Cardoon cakes presented the highest rumen protein degradability. Based on crude protein content and intestinal digestibility of rumen undegraded protein, cakes of tobacco and hemp showed the better potential as alternative protein supplements for ruminants, while pomegranate appears to be the least suitable for ruminant feeding.

Abstract
This study was designed to analyze the chemical composition and in vitro rumen fermentation of eight seaweed species (Brown: Alaria esculenta, Laminaria digitata, Pelvetia canaliculata, Saccharina latissima; Red: Mastocarpus stellatus, Palmaria palmata and Porphyra sp.; Green: Cladophora rupestris) collected in Norway during spring and autumn. Moreover, the in vitro ruminal fermentation of seventeen diets composed of 1:1 oat hay:concentrate, without (control diet) or including seaweeds was studied. The ash and N contents were greater (p < 0.001) in seaweeds collected during spring than in autumn, but autumn-seaweeds had greater total extractable polyphenols. Nitrogen in red and green seaweeds was greater than 2.20 and in brown seaweeds, it was lower than 1.92 g/kg DM. Degradability after 24 h of fermentation was greater in spring seaweeds than in autumn, with Palmaria palmata showing the greatest value and Pelvetia canaliculata the lowest. Seaweeds differed in their fermentation pattern, and autumn Alaria esculenta, Laminaria digitata, Saccharina latissima and Palmaria palmata were similar to high-starch feeds. The inclusion of seaweeds in the concentrate of a diet up to 200 g/kg concentrate produced only subtle effects on in vitro ruminal fermentation.

Abstract
Fifty-four Alpine doelings (initial BW and age of 31.7 ± 0.38 kg and 306 ± 1.9 d, respectively) were allocated to nine treatments individually fed for ad libitum intake of 25% concentrate and 75% forage diets (DM basis). Alfalfa was the forage in the control diet. Other diets contained Sericea lespedeza as the forage, with 1.25% DM of quebracho extract included in the concentrate fraction for a dietary condensed tannin level of 8.4%. Lespedeza treatments were no additive (L) and inclusion of monensin (I) at 22 mg/kg DM (L-I), soybean oil at 3% (L-S), coconut oil at 3% (L-N), I and 3% soybean oil (L-I-S), I and 3% coconut oil (L-I-N), 1.5% soybean oil and 1.5% coconut oil (L-S-N), and I, 1.5% soybean oil, and 1.5% coconut oil (L-I-S-N). The experiment was 12 wk with two 6-wk periods. Gas exchange was determined in weeks 6 and 12, and other measures occurred in weeks 5 and 11. The control diet offered averaged 2.67% nitrogen, 43.8% neutral detergent fiber, and 8.8% acid detergent lignin, and the L diet offered averaged 2.03% nitrogen, 42.8% neutral detergent fiber, and 13.2% acid detergent lignin. There were no treatment × period interactions for digestibilities (P ≥ 0.770) or methane emission (P ≥ 0.324). There were differences (P < 0.001) between the control treatment and diets with lespedeza in intake of DM (1.46, 1.23, 1.30, 1.18, 1.32, 1.10, 1.02, 1.20, and 1.01 kg/d; SEM = 0.059), digestibility of OM (57.4%, 50.9%, 51.8%, 52.7%, 50.3%, 52.1%, 52.1%, 51.9%, and 49.8%; SEM = 1.42), and digestibility of nitrogen (59.1%, 31.2%, 32.5%, 37.1%, 31.6%, 38.3%, 30.4%, 38.4%, and 34.1% for control, L, L-I, L-S, L-N, L-I-S, L-I-N, L-S-N, and L-I-S-N, respectively; SEM = 2.21). Ruminal methane emission was less (P < 0.001) for diets with lespedeza than for the control in MJ/d (1.36, 0.76, 0.84, 0.71, 0.71, 0.66, 0.65, 0.68, and 0.68; SEM = 0.048) and relative to intake of gross energy (5.92%, 3.27%, 3.49%, 3.19%, 2.84%, 2.91%, 3.20%, 3.20%, and 3.27%; SEM = 0.165) and digestible energy (11.19%, 6.98%, 7.40%, 6.38%, 5.90%, 5.69%, 6.37%, 6.38%, and 6.70% for control, L, L-I, L-S, L-N, L-I-S, L-I-N, L-S-N, and L-I-S-N, respectively; SEM = 0.400). In conclusion, the magnitude of effect of condensed tannins from lespedeza and quebracho extract on ruminal methane emission by Alpine doelings did not diminish over time and was not markedly influenced by dietary inclusion of monensin, soybean oil, or coconut oil.

Abstract
The objective of this study was to determine the variability in the chemical composition and in vitro ruminal fermentation of olive cake (OC) by-products. Forty-two OC samples with different storage times (1⁻14 months) and processing (25 crude (COC), 9 exhausted (EOC) and 9 cyclone (CYOC)) were fermented in vitro with sheep ruminal fluid. Exhausted OC samples had a lower ether extract content than COC and CYOC (15.9, 110 and 157 g/kg dry matter (DM), respectively), but greater neutral detergent fiber (NDF; 645, 570 and 441 g/kg DM) and acid insoluble nitrogen (9.76, 8.10 and 8.05 g/kg DM) content. Exhausted OC had the greatest (p < 0.05) average gas production rate (AGPR), whereas the greatest fermented organic matter (FOM) was obtained for EOC and CYOC. The best single predictor of the AGPR was total sugars content (R² = 0.898), whereas NDF was the best one for FOM (R² = 0.767; p < 0.001). Statistical models using storage time as a predictor variable had lower accuracy and R² values than those from the chemical composition. In summary, the nutritive value of OC was highly dependent on its processing, but its ether extract content did not negatively affect ruminal fermentation parameters, which could be estimated from either carbohydrate composition or storage time.

Abstract
The use of agro-industrial by-products for ruminant feed represents both an economical and environmental convenient way for reducing waste discharge and waste management costs for food industries. Large amounts of waste from citrus processing industries are available in Sicily, Italy. In the present study, the effect of dried citrus pulp as sheep dietary supplementation was evaluated on physico-chemical, microbiological and fatty acid composition of resulting milk and cheese. Pelleted feed integrated with molasses and blond orange pulp, replacing cane molasses, beet pulp and part of the maize and sunflower in ration, were administrated to ewes as an experimental treatment The experiment involved sixty Comisana breed sheep divided into two groups and two feeding trials (experimental and control). Ewe's milk and cheese samples were collected from January to April and analyzed for physico-chemical, microbiological and fatty acid profile composition. Results suggested that both the experimental milk and cheese were different from the controls. In particular, an increase of experimental milk yield and fat content were registered whilst the cheese samples exhibited a significant decrease of pH values and an increase in fat and protein contents. In addition, an increase of conjugated linoleic acids as well as of the oxidative stability were observed indicating the beneficial effect of dietary supplementation. Furthermore, among the main microbial groups, the experimental and control samples, no differences were detected. However, with the exception of streptococci, which was found higher in experimental cheeses, and staphylococci, which was significantly reduced by experimental feed. Moreover, the application of culture-independent methods highlighted the dominance of Lactobacillus rhamnosus/casei group in the experimental cheese, suggesting a driving role of the dietary supplementation in the cheese microbiota composition. The present study demonstrated that the inclusion of citrus by-products in the diet of small dairy ruminants is a promising feeding, which could positively affect milk composition and cheese manufacture.

Abstract
Traditional farming practices include the use of local agricultural by-products in the diet of ruminants. Artichoke harvesting and transformation yield high amounts of by-products that, if properly used, may reduce farming costs and the environmental impact of farming. The present study tests the inclusion of silages from artichoke by-products (plant and outer bracts) in the diet of dairy goats (0%, 12.5% and 25% inclusion) on the technological and sensory properties of milk during a five-month study. Milk composition, color, stability, coagulation and fermentation properties remained unaffected by diet changes. Panelists were not able to differentiate among yogurts obtained from those milks by discriminant triangular sensory tests. Silages of artichoke by-products can be included in isoproteic and isoenergetic diets for dairy goats, up to a 25% (feed dry matter), without negatively affecting milk technological and sensory properties whereas reducing feeding costs.
