Abstract
Dahi as well as date fruits are considered very important in our diet due to the presence of nutritional and medicinal properties. The objective of this study was to evaluate the antioxidant potential and angiotensin-I-converting enzyme (ACE) inhibitory activity of date paste added to indigenous dahi during storage (0-8 days, 5°C). The prepared dahi was also evaluated for its physico-chemical characteristics and microbiological and sensorial quality during the storage period. The freshly prepared dahi supplemented (prepared from both cow's and buffalo's milk) with different date fruit pastes showed less syneresis, improved water holding capacity as well as sensorial quality compared to the control. The freshly prepared buffalo's milk dahi supplemented with different date fruit pastes performed the best with regard to TP contents (0.54-0.89 mg gallic acid equivalent/g), TF contents (163.43-243.42 mg quercetin equivalent/100 g), FRAP (733.11-898.66 μg ascorbic acid equivalent/g), and TAC (164.30-254.10 mg ascorbic acid equivalent/100 g) compared to the control. Regarding ACE inhibition, the freshly prepared buffalo's milk dahi supplemented with date paste showed higher values (61.36%-72.43%) than the control (49.03%). The dahi prepared from buffalo's milk exhibited improved physico-chemical characteristics, antioxidant as well as ACE inhibition (%) than those of cow's milk dahi. It was concluded that dahi supplemented with date pastes from different varieties exhibited improved physico-chemical characteristics, antioxidant activity as well as ACE inhibition (%) than those of control dahi.

Abstract
Introduction Hypertension is a significant public health concern. Several relevant risk factors have been identified. However, since it is a complex condition with broad variability and strong dependence on environmental and lifestyle factors, current risk factors only account for a fraction of the observed prevalence. This study aims to investigate the emerging early-onset hypertension risk factors using a data-driven approach by implementing machine learning models within a well-established cohort in Mexico City, comprising initially 2,500 healthy adults aged 18 to 50 years. Methods Hypertensive individuals were newly diagnosed during 6,000 person-years, and normotensive individuals were those who, during the same time, remained without exceeding 140 mm Hg in systolic blood pressure and/or diastolic blood pressure of 90 mm Hg. Data on sociodemographic, lifestyle, anthropometric, clinical, and biochemical variables were collected through standardized questionnaires as well as clinical and laboratory assessments. Extreme Gradient Boosting (XGBoost), Logistic Regression (LG) and Support Vector Machines (SVM) were employed to evaluate the relationship between these factors and hypertension risk. Results The Random Forest (RF) Importance Percent was calculated to assess the structural relevance of each variable in the model, while Shapley Additive Explanations (SHAP) analysis quantified both the average impact and direction of each feature on individual predictions. Additionally, odds ratios were calculated to express the size and direction of influence for each variable, and a sex-stratified analysis was conducted to identify any gender-specific risk factors. Discussion This nested study provides evidence that sleep disorders, a sedentary lifestyle, consumption of high-fat foods, and energy drinks are potentially modifiable risk factors for hypertension in a Mexico City cohort of young and relatively healthy adults. These findings underscore the importance of addressing these factors in hypertension prevention and management strategies.

Abstract
Named after the Greek term for "hard fat", stearic acid has gradually entered people's field of vision. As an important component of various physiological cellular functions, stearic acid plays a regulatory role in diverse aspects of energy metabolism and signal transduction. Its applications range from serving as a bodily energy source to participating in endogenous biosynthesis. Similar to palmitate, stearic acid serves as a primary substrate for the stearoyl coenzyme A desaturase, which catalyzes the conversion of stearate to oleate and is involved in the synthesis of triglyceride and other complex lipids. Additionally, stearic acid functions as a vital signaling molecule in pathological processes such as cardiovascular diseases, diabetes development, liver injury and even nervous system disorders. Therefore, we conduct a comprehensive review of stearic acid, summarizing its role in various diseases and attempting to provide a systematic overview of its homeostasis, physiological functions, and pathological process. From a medical standpoint, we also explore potential applications and discuss stearic acid as a potential therapeutic target for the treatment of human diseases.

Abstract
The coexistence of SAH with T2DM is a common comorbidity. In this study, we investigated the link between altered plasma antioxidant trace elements (ATE: manganese, selenium, zinc, and copper) and fatty acids ratio (FAR: polyunsaturated/saturated) imbalance as transition biomarkers between vascular pathology (SAH) to metabolic pathology (T2DM). Our data revealed strong correlation between plasma ATE and FAR profile, which is modified during SAH-T2DM association compared to the healthy group. This relationship is mediated by lipotoxicity (simultaneously prominent visceral adipose tissue lipolysis, significant flow of non-esterified free fatty acids release, TG-Chol-dyslipidemia, high association of total SFA, palmitic acid, arachidonic acid, and PUFA ω6/PUFA ω3; drop in tandem of PUFA/SFA and EPA + DHA); oxidative stress (lipid peroxidation confirmed by TAS depletion and MDA rise, concurrent drop of Zn/Cu-SOD, GPx, GSH, Se, Zn, Se/Mn, Zn/Cu; concomitant enhancement of Cu, Mn, and Fe); endothelial dysfunction (endotheline-1 increase); athero-thrombogenesis risk (concomitant rise of ApoB100/ApoA1, Ox-LDL, tHcy, and Lp(a)), and inflammation (higher of Hs-CRP, fibrinogen and ferritin). Our study opens to new therapeutic targets and to better dietary management, such as to establishing dietary ATE and PUFA ω6/PUFA ω3 or PUFA/SFA reference values for atherosclerotic risk prevention in hypertensive/diabetic patients.

Abstract
BACKGROUND Inflammation is an important causative factor of obesity. This study aimed to explore the possible association between the systemic immune-inflammatory index, a novel indicator of inflammation, and obesity. METHODS Data were collected from 4395 participants of the National Health and Nutrition Examination Survey 2017-2018 aged ≥ 20 years. The systemic immune-inflammatory index was calculated by multiplying the platelet count by the neutrophil-to-lymphocyte ratio. Obesity was defined as a body mass index ≥ 30 kg/m2. RESULTS A significant positive correlation was observed between the systemic immune-inflammatory index and body mass index following multivariate linear regression analysis (β = 1.75; 95% confidence interval = 1.16-2.33), which was greatest in adults aged < 60 years without hypertension and diabetes. Smoothed curve fitting and threshold effect analysis were used to characterize the nonlinear association between the systemic immune-inflammatory index and body mass index, and the inflection point was found to be 729.3. CONCLUSIONS The systemic immune-inflammatory index is positively associated with body mass index among adults in the United States and has the potential to enhance efforts to prevent adult obesity.

Abstract
PURPOSE OF REVIEW Hypertension results in significant morbidity, mortality, and healthcare expenditures. Fortunately, it is largely preventable and treatable by implementing dietary interventions, though these remain underutilized. Here, we aim to explore the role of healthy dietary patterns in hypertension management and describe approaches for busy clinicians to address nutrition effectively and efficiently with patients. RECENT FINDINGS DASH, Mediterranean, vegetarian, and vegan diets that include minimally processed, plant-based foods as core elements have consistently shown positive effects on hypertension. Recommendations that distill the most healthful components of these diets can significantly impact patient outcomes. Clinicians can harness evidence-based dietary assessment and counseling tools to implement and support behavioral changes, even during brief office visits. Healthful plant-based dietary patterns can often effectively prevent and treat hypertension. Clinicians may help improve patient outcomes by discussing evidence-based nutrition with their patients. Future work to promote infrastructural change that supports incorporating evidence-based nutrition into medical education, clinical care, and society at large can support these efforts.

Abstract
Little is known about the longitudinal association between dietary patterns (DPs) and metabolic disorders in people living at high altitude areas, such as Tibetans. We constructed the first open cohort, with 1832 Tibetans, and collected data in 2018 and in 2022. The metabolic syndrome (MetS) prevalence was 30.1% (32.3% in men and 28.3% in women). Three different DPs were identified: modern DP (pulses, poultry, offal, and processed meat), urban DP (vegetables, refined grain, beef/mutton, and eggs), and pastoral DP (Tibetan cheese, tsamba, butter/milk tea, and desserts). Participants within the third tertile of the urban DP had a 3.42-fold (95% CI 1.65-7.10) higher risk of MetS than those with the first tertile. Modern DP was positively associated with elevated blood pressure (BP) and elevated triglycerides (TAG), while it was inversely associated with low HDL-C. The urban DP was associated with a higher risk of low HDL-C, but a lower risk of impaired fasting blood glucose (FBG). The pastoral DP was a risk factor for impaired FBG, but protective for central obesity and elevated BP. Associations of modern DP with elevated BP, and pastoral DP with low HDL-C, were modified by altitude. In conclusion, among Tibetan adults, DPs were associated with MetS and its components, and the associations were modified by altitude among Tibetans.
