Sustainability of Four Dairy Farming Scenarios in an Alpine Environment: The Case Study of Toma di Lanzo Cheese

Exploring the impact of biosecurity measures on somatic cell score in mountain dairy farms considering the CLASSYFARM system

Biosecurity plays a crucial role in preventing the introduction of infectious diseases to a herd as well as the spread of diseases within or between animals and herds. In particular, biosecurity measures are crucial for maintaining animal health and reducing the need for the application of antibiotic substances for fighting the rising antibiotic resistance. The object of this cross-sectional study was to investigate the presence of biosecurity measures and their association with milk quality parameters, with a special focus on somatic cell count (SCC) - an indicator for udder health -, in small-scale mountain dairy farms. Therefore, for the very first time, the CLASSYFARM system was considered, which is a computer platform integrated into the Italian national veterinary portal, that processes a significant amount of data from various sources collected in the field or from other information systems (e.g. animal welfare, health status, biosecurity, antimicrobial use, slaughterhouse information). A total of 169 dairy farms were included in the study. Biosecurity measures, based on 15 questions required in the CLASSYFARM welfare assessment protocol, as well as information about husbandry systems, milking systems and pasture practices were gathered and combined with milk yield data, provided by the South Tyrolean dairy association. Farms only scored 44.00 points on average in a scoring system from 0.00 to 100.00 points that was be able to summarize 15 different biosecurity measures in one index. Our results show a clear negative correlation (-0.713) between the biosecurity index and somatic cell score (SCS) indicating that a higher level of biosecurity, which reflects the presence of biosecurity measures within a farm, is associated with lower SCC levels. Furthermore, we found significant correlations between SCS and milk production (-0.629), confirming that udder health is linked to higher milk production. Fat, protein, and the fat-to-protein ratio showed a positive correlation with SCS (0.281, 0.146, 0.106), likely to be caused by a concentration shift effect (dilution effect). Husbandry system, breed, milking system, and pasture practices seem to have an impact as well, but the main factor was the biosecurity score. This study highlights the importance of implementing biosecurity measures for ensuring animal health and thus productivity and quality in milk production, even in small-scale farms, which are characterized by limited structure availability and smaller herds compared to big dairy enterprises in the lowlands.

Socio-demographic and cross-country differences in attention to sustainable certifications and changes in food consumption

Food labeling can influence, sometimes facilitate, changes in consumer diets to support environmental sustainability and in response to climate change. However, a significant impediment to this dietary shift may arise from the consumers' tendency to underestimate the environmental impact of their food choices and from their limited knowledge about sustainable certifications. These aspects are influenced by the characteristics and geographical affiliations of individuals. In such a context, the aim of this research has been to identify the main factors that drive the food purchasing frequency and the changes in food consumption associated with consumers' concerns about climate change and interest in sustainable food certifications by comparing different food products and countries (Italy, France, Germany, Denmark, the USA, and China). A cross-country survey was conducted on 6500 consumers of various food products. The obtained mean scores were then compared, using generalized linear mixed-effect models, to evaluate the associations between the consumers' food purchasing frequency, the importance of sustainable certifications, and changes in food consumption due to climate change concerns. Much of the variation in food consumption, purchasing behaviors, and interest in sustainable certifications was found to depend on such factors as age, gender, and country of origin. Indeed, Chinese consumers exhibited a heightened interest in sustainable food certifications, yet their consumption scores for all food products overall were higher. Conversely, adult and elderly Danish consumers demonstrated a decrease in the consumption of cheeses, meat, fruits, and vegetables, and their interest scores in all sustainable food certifications were lower. Despite the challenges posed by various consumers' interests and minimal changes in food consumption patterns, our findings suggest that sustainable certifications present a promising avenue for straightforward interventions to promote the adoption of sustainable diets and to address climate change.

Analyzing Strawberry Preferences: Best-Worst Scaling Methodology and Purchase Styles

This research has investigated Italian consumers' preferences for and purchasing behaviors of strawberries utilizing the Best-Worst Scaling methodology (BWS). This approach enables the key factors that influence strawberry purchasing decisions to be identified and different choice groups to be characterized. To achieve this goal, a survey was conducted on a sample of 496 respondents living in the metropolitan area of Milan (North Italy). The declared preferences of the individuals for 12 strawberry characteristics, divided into intrinsic, extrinsic, and credence attributes, were first measured. A Latent Class Analysis (LCA) was then performed to identify different clusters of consumers according to the individuals' preferences. Subsequently, the heterogeneity of the clusters was tested, using the Chi-square test, and sociodemographic characteristics and purchasing habits were considered. The results suggest that the most important attribute in the choice of strawberries was appearance, highlighting the importance of preserving it throughout the supply chain, followed by one of the increasingly important aspects of diets, which is health benefits. The attribute considered the least important was the brand. This study demonstrates, from a holistic point of view, that sociodemographic characteristics, food habits, and perceptions of different strawberry attributes influence consumers' preferences and behaviors. Practical implications suggest a new prospective for communication marketing strategies for producers, creating a better brand identity and highlighting in their marketing all of the aspects that consumers would like to know about the fruits they choose as quality certifications.

The role of socio-demographic variables and buying habits in determining milk purchasers' preferences and choices

Emerging new purchasing behaviors have been reflected in the sales trends of dairy products, mainly in cow milk consumption. This study aimed to investigate the preferences of milk purchasers toward different product attributes, by considering both individuals' socio-demographic characteristics (SD) and milk purchasing habits (PH) as independent variables in the milk consumption model definition. To achieve this objective, a questionnaire was administered to a sample of 1,216 residents in Northwest Italy. The application of the Best-Worst scaling (BWS) methodology to define the purchasers' declared preferences toward a set of 12 milk attributes, showed that milk origin and expiry date are the most important attributes for milk choice in the decision-making process. The correlation analysis showed that the SD and milk purchasing habits variables affect the definition of stated preferences heterogeneously between the intrinsic, extrinsic, and credence attributes.

Are Local Dairy Products Better? Using Principal Component Analysis to Investigate Consumers’ Perception towards Quality, Sustainability, and Market Availability

Simple Summary

The perception of the local production concept significantly varies depending on the weight given to each defining component (e.g., quality and sustainability), which in turn depends both on the considered food product and on the consumers’ characteristics. In this research, a survey was conducted to investigate the consumer preferences for milk and cheese quality aspects and their perception of sustainability descriptors of local dairy products. In addition, the effect of socio-demographic variables on consumer preferences and attitudes definition was also explored. From the Principal Component Analysis, four main components were defined (Responsive to quality attributes, Local is better, Local is sustainable, and Availability request), combining the consumer answers about milk and cheese quality preferences and the sustainability and availability opinion. The obtained results highlight the importance of product quality aspects in the considered geographical area (South-East Italy), which is strictly linked to traditional dairy production. Higher availability and visibility of local dairy products on the market were requested by the considered consumer sample. In addition, our results showed that gender, age, place of residence, educational level, and family size significantly affected the local dairy products consumption orientation definition. These findings will support the development of more efficient and transparent communication among dairy producers and consumers in the selected market.

Abstract

Consumers are increasingly aware of the benefits of local foods in terms of quality, sustainability, animal welfare, and safety. This research addresses two main questions: (i) is the perception towards sustainability aspects of local dairy products related to individuals’ preferences for milk and cheese quality aspects? (ii) are these perceptions related to people’s socio-demographic characteristics? For this purpose, a choice experiment was conducted online in Apulia (South-East Italy) involving a sample of 543 respondents. A Principal Component Analysis (PCA) was applied to analyze the consumer opinion related to dairy products’ quality attributes, sustainability, and availability on the market. From the PCA, four main components (accounting the 64.5% of the total explained variance) were defined, highlighting non-overlapping choice styles of consumers, distinguished by attitudes primarily based on quality attributes of dairy products rather than sustainability characteristics or perceived higher quality of local products. Furthermore, the Availability request component described the consumer need for higher availability and/or visibility of local dairy products on the market. The effect of gender, age, and educational status of individuals emerged as significantly important for the resulting component definitions. The obtained results clearly suggest the need to increase the efficiency of communication strategies concerning local dairy products, as well as local dairy products’ availability and visibility on the markets.

Which Factors Drive Consumer Decisions during Milk Purchase? New Individuals' Profiles Considering Fresh Pasteurized and UHT Treated Milk

The cow’s milk market is going through a critical period characterised by a continuous contraction in consumption as a consequence of the lack of competitiveness on the market of the conventional product (commodity) versus numerous specialties. This paper aimed to define the profiles of milk consumers in terms of individual preferences (assessed using the best-worst scaling methodology) and socio-demographic features. A survey was conducted in several stores of large-scale retail, convenience stores, and open-air markets distributed in north-west Italy to collect data from 1216 respondents. For milk shopper purchasing habits, two consumer groups were defined and compared in terms of preferences: the fresh pasteurized milk consumer (FPc) (56% of the total sample) and the ultra-high temperature treated milk consumer (UHT_c) (35%). A series of two-ways multivariate analysis of variance (MANOVA) were conducted to assess the effect of individuals’ socio-demographic characteristics and the type of milk chosen on the consumer preferences, simultaneously. Significant differences in milk purchasing habits and preferences emerged when comparing the two consumer groups (UHT_c and FP_c). Empirical evidence of the study supported the starting hypothesis, suggesting the significance or relevance of the consumer socio-demographic characteristic, as well as their interaction effect with the type of milk on the level of importance given to the considered milk quality attributes. On the contrary, the gender results were not significant for the milk preferences definition. The assessment of consumer preferences, associated with the individuals’ socio-demographic characteristics could have important implications for outlining more effective marketing strategies based on a more targeted communication (i.e., related to the sustainability dimension of the local product, nutritional value and brand), leading the consumer back to the commodity rediscovery concerning individuals’ features and habits.

Can we effectively manage parasites, prions, and pathogens in the global feed industry to achieve One Health?

Prions and certain endoparasites, bacteria, and viruses are internationally recognized as types of disease-causing biological agents that can be transmitted from contaminated feed to animals. Historically, foodborne biological hazards such as prions (transmissible spongiform encephalopathy), endoparasites (Trichinella spiralis, Toxoplasma gondii), and pathogenic bacteria (Salmonella spp., Listeria monocytogenes, Escherichia coli O157, Clostridium spp., and Campylobacter spp.) were major food safety concerns from feeding uncooked or improperly heated animal-derived food waste and by-products. However, implementation of validated thermal processing conditions along with verifiable quality control procedures has been effective in enabling safe use of these feed materials in animal diets. More recently, the occurrence of global Porcine Epidemic Diarrhea Virus and African Swine Fever Virus epidemics, dependence on international feed ingredient supply chains, and the discovery that these viruses can survive in some feed ingredient matrices under environmental conditions of trans-oceanic shipments has created an urgent need to develop and implement rigorous biosecurity protocols that prevent and control animal viruses in feed ingredients. Implementation of verifiable risk-based preventive controls, traceability systems from origin to destination, and effective mitigation procedures is essential to minimize these food security, safety, and sustainability threats. Creating a new biosafety and biosecurity framework will enable convergence of the diverging One Health components involving low environmental impact and functional feed ingredients that are perceived as having elevated biosafety risks when used in animal feeds.

A Typological Classification for Assessing Farm Sustainability in the Italian Bovine Dairy Sector

Italy is among the most important countries in Europe for milk production. The new European policies encourage a transition towards sustainability and are leading European dairy farms to follow new trajectories to increase their economic efficiency, reduce their environmental impact, and ensure social sustainability. Few studies have attempted to classify dairy farms by analyzing the relationships between the structural profiles of farms and the social, environmental, and economic dimensions of sustainability. This work intends to pursue this aim through an exploratory analysis in the Italian production context. The cluster analysis technique made it possible to identify three types of dairy farms, which were characterized on the basis of indicators that represented the three dimensions of sustainability (environmental, social, and economic sustainability) and the emerging structural relationships based on the structural characteristics of the dairy farms. The classification made it possible to describe the state of the art of the Italian dairy sector in terms of sustainability and to understand how different types of farms can respond to the new European trajectories.

Dairy Farms and Life Cycle Assessment (LCA): The Allocation Criterion Useful to Estimate Undesirable Products

In this study, the life cycle assessment (LCA) principle was performed to estimate the environmental impact of three dairy farms that operate using different farming systems, namely, conventional (CON), organic (ORG), and high-quality (HQ) modes. In Italy, the typical style of high-quality (HQ) farming is commonly included in the conventional system but is more strictly regulated by the Decree of the Italian Ministry of Health N° 185/1991. Although the farms are not fully representative of each conduct, they showed intrinsic peculiarities, e.g., the cow-culling rate of each system. This rate requires a quantification as it may be related to loss of income. Allocation criteria were applied to attribute the quantities of pollutants to the co-products: wheat, involved in the congruence and number of cows culled, the latter being undesirable and therefore necessary to quantify. Analysis of variance (ANOVA) highlighted that the no-dairy products significantly mitigated (p < 0.05) some of the impacts’ categories. The allocation of culled cows decreased the impacts of the CON and particularly those of the ORG farms when the mass mode was adopted. HQ showed values similar to the results without allocation. Overall, the objective of identifying a “marker” of undesirable products, estimated by the culling rate, was partially achieved.
