Assessing the carbon footprint across the supply chain: Cow milk vs soy drink

Since livestock product consumption could have a significant effect on tackling climate change, in the few last years, there has been an increasing consumer demand for non-dairy alternatives. Despite plant-based beverages being considered crucial to foster the transition towards sustainable diet models, no studies have yet compared the level of emissions of plant-based beverages with animal-based ones. The present study aims at computing the carbon footprint of cow milk and that of soy drink and evaluating the carbon footprint results in the light of the substitutability of cow's milk with soy drink, analyzing the potential environmental, economic and nutritional trade-offs between the two products. Results highlight that, considering the environmental perspective, soy drink could be a valid substitute of cow milk: its production has a lower carbon footprint, allowing for the achievement of food security objectives. However, focusing on the economic and nutritional perspectives, the high average consumer price of soy drink is associated with an overall lower nutritional level. In order to reach the same nutritional value as 1 L of cow milk in terms of protein intake, the consumption of soy drink should be increased by 13%. Furthermore, soy drink consumption implies paying 66% more than for cow milk, when considering the same protein content.

A Study on the Relationship between Income Change and the Water Footprint of Food Consumption in Urban China

We use a threshold model to analyze the relationship between per capita income and the per capita water footprint of food consumption in the urban Guangdong Province of China, and further simulate the effect of changes in income distribution on the per capita water footprint of food consumption. The income growth of urban residents has a significant positive effect on the per capita water footprint of food consumption, where the effect varies by income stratum. The income elasticity of the per capita water footprint of food consumption for the total sample is 0.45, where the income elasticity of the low-income group (0.75) is greater than that of the high-income group (0.23), indicating that a change of income in the low-income group has a greater effect on water resources. The simulation results show that increasing the income of residents, especially that of the low-income group, significantly increases the water footprint due to food consumption for the whole society. At present, China is in a period of rapid economic growth and urbanization, comprising a period of profound change and sensitive response to the income level of urban and rural residents. Therefore, in order to reduce the effect of food consumption on the environment, sustainable food consumption management strategies should consider group differences. We should correctly guide all kinds of groups to carry out sustainable consumption, advocate healthy and reasonable diet models, reduce animal food consumption, avoid the excessive consumption of food, and strengthen the management of food waste.

Value-Creating Strategies in Dairy Farm Entrepreneurship: A Case Study in Northern Spain

This paper explores different value-creating strategies (VCS) used by dairy farmers engaged in on-farm diversification ventures. In order to explicitly identify the informal strategies followed by 49 farmers in their value-added ventures, we applied a theoretically informed business model framework combining three dimensions: value proposition linked to local food, customer engagement via quality schemes and shorter supply chains, and the key capabilities of the entrepreneur. Using cluster analysis, four different types of VCS were identified and labelled as 'Ecological', 'Single-product', 'Innovative', and 'Traditional'. Whilst we found that these strategies are influenced by contextual factors and the owner's entrepreneurial skills, in general, we did not observe significant differences in performance between them. The results suggest that farmers respond entrepreneurially to sectorial changes adopting those VCS that tend to align with their entrepreneurial capabilities and context, thus enabling them to succeed with any of the strategies pursued. Hence, our work contributes towards clarifying the relationship between VCS, entrepreneurial capabilities, and context. This is important for farmers and policymakers because it reveals the diversity of farm management and the resilience of farm systems. As a result, the potential challenges for Single-product VCS and Traditional VCS are discussed.
