Abstract
Pet food production is a fast-growing industry. While extruded dry pet food is the favored pet food due to its convenience of use, it may have poorer palatability than other pet foods such as wet pet foods. However, palatability plays a pivotal role in meeting nutritional requirements or providing therapeutic benefits in cats and dogs, as it ensures food acceptance. Thus, both academics and manufacturers conduct routine palatability tests to assess acceptance and preference of products among pets, alongside sensory analyses involving human panels. Palatability is greatly influenced by species-specific and environmental factors in cats and dogs. The review will hence present the current knowledge on palatability assessment and animal food perception; it will then aim to explore strategies for effectively managing palatability in dry pet food by examining the impact of key ingredients and process parameters on the finished product's palatability. Moreover, the demands and needs for sustainable and healthier products as well as supply constraints present novel challenges and opportunities for academics and manufacturers.

Abstract
The use of fruit fibres as a way of reusing industrial waste is attractive and necessary, increasing the efficiency and reducing the environmental impact of the industry. This study characterized guava fibre as a fibrous ingredient and evaluated its effects when included in extruded diets for dogs on nutrient digestibility, faecal traits, fermentation products, gastrointestinal transit time and palatability. Four diets were formulated: CO (control diet, no fibrous ingredients added), GF3 (3% guava fibre), GF6 (6% guava fibre) and GF12 (12% guava fibre). The guava fibre was added to diets in replacement of maize, with small adjustments in the other ingredients to ensure similar contents of protein and fat. The diets were fed to 24 adult Beagle dogs (6 per diet) during 15 days for adaptation followed by 15 days for assessment of digestibility, fermentation end products and gastrointestinal transit time. The palatability of G6 and G12 treatments was evaluated against the CO by the two-pan test. Results were compared by analysis of variance and polynomial contrasts according to the guava fibre inclusion level (p < 0.05). The addition of guava fibre did not change nutrient intake except for the increase on dietary fibre (p < 0.001). Fibre inclusion resulted in a quadratic reduction in total tract apparent digestibility for dry matter, organic matter, crude protein and crude energy (p < 0.001), and on the metabolizable energy content of the foods (p < 0.001). Guava fibre addition did not change the faecal concentration of ammonia, lactic acid, faecal pH and branched chain fatty acids but it decreased acetic and propionic acids concentration (p < 0.01). The inclusion of 12% guava fibre did result in a faster transit time (p = 0.046) compared to the control diet. Guava fibre can be characterized as a novel insoluble non-fermentable fibre source that could be safely used in levels up to 12% in canine extruded diets.

Abstract
Fat has high energy density and is considered one of the primary energy sources for dogs, however, increasing fat level in dry dog food has been challenging due to the lubrication and limitation of the coating system. The objective was to determine the effect of whole soybeans (WSB) on nutrient digestibility, stool quality, and palatability by dogs. The corn gluten meal, chicken fat, and brewers rice were replaced by WSB at 10, 20, and 30% (WSB10, WSB20, and WSB30, respectively) in the base diet (WSB0). Twelve beagles were randomly assigned. The digestibility trial was duplicated 4 × 4 Latin square design where dogs were allowed a 9-d adaptation followed by a 5-d total fecal collection for each period. Least-square means were analyzed with a single degree of freedom contrasts and significance at α = 0.05. Palatability was determined with a 2-bowl test by 20 beagles for 2 d with each WSB diet compared to the WSB0. First choice preference between two diets and total food consumption were recorded. Individual intake ratios (IR) were calculated (intake of each diet/total intake) for each dog. First choice (FC) was analyzed by a Chi-square probability, and the diet consumption was compared by a Wilcoxon signed rank test and a 2-way analysis of variance. Fecal moisture, output, and defecation frequency increased linearly (P < 0.05) as WSB increased. Apparent total tract digestibility of dry matter, organic matter, crude protein, fat, and gross energy decreased linearly (P < 0.05) as dogs fed the increased level of WSB. The fresh fecal pH in dogs decreased linearly (P < 0.05) as WSB content increased. The acetate, propionate, and the total short-chain fatty acid concentration increased linearly (P < 0.05) while the total branched-chain fatty acid concentration decreased linearly (P < 0.05) as WSB increased. Dogs had greater (P < 0.05) FC for WSB diets than WSB0, but there was no difference among treatments for diet consumption and IR. In conclusion, additional thermal processing before extrusion may improve nutrient digestibility of WSB. The stool quality and palatability were not affected, and fermentation in hindgut increased by WSB by dogs.

Abstract
Fiber supplemented extruded foods are produced by pet food companies to help with several specific health conditions. The fiber material, however, is difficult to incorporate efficiently into dry kibble diets for dogs. The aim of the study was to evaluate the influence of citrus pulp pellet (CPP), the solid waste part of the production of orange juice characterized by a good proportion of soluble and fermentable fiber, on extrusion traits, kibble macrostructure, starch gelatinization and in vitro digestibility of dog foods. A control formula (CO) was developed for dogs. CPP was added to CO at different inclusion levels: 5%, 10%, 15% and 20%. Foods were extruded in a single screw extruder using two different die diameters (dd): 5 mm and 7 mm. CPP inclusion with 5 mm dd did not affect bulk and piece density and resulted in a lower impact on kibble expansion; It also resulted in greater starch gelatinization and kibble expansion compared to the 7 mm dd configuration (p < 0.01). In addition to the nutritional implications, recycling and proper uses of this material exemplified in the present study by the exploration of CPP as a fiber source to dogs, this method can improve sustainable agriculture by transforming low-quality materials into high-quality foods.

Abstract
In order to enhance the health and welfare of obese dogs and to facilitate the required loss of body weight, commercial diets are produced with fibrous ingredients. Cellulose is a common dietary fiber used mainly in powdered form. However, other processing forms and fibers are available as fibrous additives. This work aimed to test the effects of different fiber sources on apparent total tract digestibility and fecal quality in dogs. Four diets were fed to eight dogs (experimental design: 4 × 4 Latin square) for a 14-day period each. In addition to a basal diet (CO), three experimental diets varying in fiber sources were used: powdered cellulose (CE), granulated cellulose (GC), and lignocellulose (LC). Dogs fed the CO had lower crude fiber digestibility than those fed the other experimental diets (p < 0.0033). Dogs fed diets supplemented with fiber sources had lower gross energy digestibility (range: 76.2-77.3%) compared with those fed the CO (84.4%). In all groups, the fecal score (consistency and shape) ranged within the optimal values; solely wet fecal output was increased for the fiber groups compared with those on the CO. This study demonstrated that various sources of fiber such as GC and LC can be used as alternatives to CE without restrictions.

Abstract
The inclusion of yeast in pet food can provide health benefits and increase palatability. Corn fermented protein is a co-product from ethanol production which contains approximately 20% to 25% yeast. The objective of this study was to determine the effects of the yeast in CFP on diet production and utilization when fed to healthy adult cats. The four experimental diets included a control with 15% soybean meal (CON) and diets containing either 3.5% brewer's dried yeast (BDY), 2.5% brewer's dried yeast plus 17.5% distillers dried grains with solubles (BDY+DDGS), or 17.5% corn fermented protein (CFP). All treatments except CON were formulated to contain 3.5% yeast. Experimental diets were fed to adult cats (n = 11) in an incomplete 4 × 4 replicated Latin square design. Cats were adapted to diet for 9 d followed by a 5-d total fecal collection. Titanium dioxide (0.4%) was added to all diets as an external marker to estimate digestibility. Data were analyzed using a mixed model in SAS (version 9.4, SAS Institute, Inc., Cary, NC) with treatment as a fixed effect and cat and period as random effects. Preconditioner discharge temperature was greater (P < 0.05) for CON and BDY (average, 96 °C) compared to BDY + DDGS and CFP (average, 91 °C). Extruder screw speed, die temperature, kibble toughness, and kibble hardness were greatest (P < 0.05) for CFP. The bulk density of BDY + DDGS at 392 g/L was greater (P < 0.05) than BDY and CFP (average, 342 g/L). The sectional expansion index of kibble for CFP was greater (P < 0.05) than BDY + DDGS and smaller (P < 0.05) than CON but similar to BDY. Fecal output was greatest (P < 0.05) for cats fed BDY + DDGS. Nutrient digestibility was lowest (P < 0.05) for BDY + DDGS. The concentrations of short-chain and branched-chain fatty acids in fecal samples were not altered (P > 0.05) by dietary treatment. Cats had no preference (P > 0.05) when comparing CON to BDY or BDY + DDGS. However, cats consumed significantly less CFP compared to CON. The significant differences for bulk density, fecal output, and nutrient digestibility among dietary treatments are likely due to a greater fiber effect of DDGS compared to CFP. Therefore, the yeast component in CFP may provide greater kibble expansion and nutrient utilization compared to DDGS when fed to cats.

Abstract
The objective of this work was to evaluate the use of a Torula yeast (TY) on diet processing, palatability, and total tract nutrient digestibility in extruded feline diets. Four dietary treatments were compared, differing by protein source: TY, pea protein concentrate (PP), soybean meal (SM), and chicken meal (CM). Diets were produced using a single-screw extruder under similar processing conditions. Palatability assessment was conducted as a split plate design where both first choice and intake ratio (IR) were determined. Apparent total tract digestibility (ATTD) of nutrients was estimated using Titanium dioxide as an indigestible marker. During diet production, specific mechanical energy of TY and SM (average of 187 kJ/kg) was greater (P < 0.05) than for PP (138 kJ/kg); however, CM was similar to all treatments (167 kJ/kg). Kibble diameter, piece volume, and sectional expansion ratio were greatest for TY (P < 0.05). Additionally, both bulk and piece density were lowest (P < 0.05) for TY. Kibble hardness was lower for TY and SM (P < 0.05; average of 2.10 Newtons) compared to CM and PP (average of 2.90 Newtons). During the palatability trial, TY was chosen first a greater number of times than CM (P < 0.05; 36 vs. 4, respectively), but differences were not found between TY and PP (25 vs. 15, respectively) or TY and SM (24 vs. 16, respectively). Cats had a greater IR (P < 0.05) of TY compared to CM and PP (0.88 and 0.73, respectively). However, there was no difference in preference between TY and SM. ATTD of dry matter (DM) and organic matter (OM) was greater (P < 0.05) for CM (87.43% and 91.34%, respectively) than other treatments. Both DM and OM ATTD of TY were similar (P < 0.05) to PP and SM (average of 86.20% and average of 89.76%, respectively). Ash ATTD was greater (P < 0.05) for cats fed TY and SM (average of 37.42%), intermediate for PP (32.79%), and lowest for CM (23.97%). Crude protein (CP) ATTD of TY was similar to all other treatments (average of 89.97%), but fat ATTD was lower (P < 0.05; 92.52%) than other treatments (93.76% to 94.82%). Gross energy ATTD was greater (P < 0.05) for CM than TY (90.97% vs. 90.18%, respectively); however, TY was similar to PP and SM (average of 90.22%). Total dietary fiber ATTD was similar between TY and CM (average of 66.20%) and greater (P < 0.05) than PP and SM (average of 58.70%). The TY used in this study facilitated diet formation, increased diet preference, and was highly digestible when fed to cats.

Abstract
Lignocellulose (LC) might be used as a substitute fiber source for dogs as a strategy to decrease energy density and enhance gastrointestinal functionality. The objective of the present study was to compare the effects of including different levels of LC on apparent nutrient digestibility and fecal parameters (dry matter (DM), fecal score, and daily fecal output), as well as fecal fatty acid concentrations. Four diets were tested: control diet (no supplementation of LC; LC0), and three control diets diluted with increasing levels of LC: 1, 2, and 4% (LC1, LC2, and LC4). Six Beagle dogs (BW 17.1 kg ± 1.22) participated in a crossover experimental design. Before each experimental period, five days were used as a wash-out period. The fecal consistency was scored based on a 5-point scale (1 = very hard; 2 = solid, well-formed “optimum”; 3 = soft, still formed; 4 = pasty, slushy; and 5 = watery diarrhea). The results demonstrated that the organic matter apparent digestibility (p = 0.01) and nitrogen-free extract (NFE) (p < 0.01) was significantly lower for dogs fed LC4 compared to those fed LC0. Dogs fed LC2 and LC4 had a lower fecal consistency score (2.39 and 2.18, respectively; p < 0.05). The fecal DM was significantly the highest (p < 0.01), and the daily fecal output on fresh matter was lower (p < 0.05) when dogs were fed the LC4 diet compared with the LC0 diet. Including LC at 1% in the diet resulted in significantly higher fecal acidic pH levels. However, no differences among treatments were noted regarding fecal fatty acid concentrations.

Abstract
Simple Summary The majority of pet food currently on the market is represented by dry food thanks to its practicality and long shelf life. Dry pet food production consists of several processes that can have different effects on nutrient bioavailability and digestibility. The aim of this study was to analyze the nutritional quality of three different chicken-based formulations, consisting of fresh meats, meat meals, or a mix of these two from a protein, lipid, and in vitro digestibility point of view. The results show that the fresh chicken-meat-based formulation appears to be the preferable choice when proteins, lipids, and in vitro digestibility are taken into account. Moreover, the soluble protein content estimated by the Bradford assay is found to correlate well with the total protein content and in vitro digestibility. Abstract Dry pet food, made of fresh meats and especially meat meals, represents one of the main types of complete food available on the market by virtue of its practicality and long shelf life. The kibble production process includes mixed thermal and mechanical treatments that help to improve the palatability and durability of the final product but may have undesirable effects on nutrient bioavailability and digestibility. An analysis of the protein and lipid content of different dry pet food formulations, together with an in vitro digestibility analysis, can reveal which formulation can provide a more nourishing diet for pets. In this study, a quantitative and qualitative analysis was performed on three different formulations of chicken-based dry pet food, consisting of fresh meats, meat meals, or a mix of these two. The soluble protein concentration was determined by the Bradford assay, while the crude protein content was assessed through the Kjeldahl method. Quadrupole time-of-flight liquid chromatography/mass spectrometry (Q-TOF LC/MS) was used to analyze the amino acid (AA) and lipid compositions. Finally, a gastric and small intestinal digestion simulation was used to determine the in vitro digestibility. The results show that dry pet food consisting only of chicken fresh meats has the highest content of soluble protein; it also contains more Essential AAs, Branched-Chain AAs, and Taurine, as well as a greater quantity of monounsaturated and polyunsaturated fatty acids. In addition, its in vitro digestibility was the highest, exceeding 90% of its dry weight, in agreement with the soluble protein content. These findings thus make the fresh-meat-based formulation a preferable choice as dry pet food.

Abstract
Corn is one of the largest cereal crops worldwide and plays an important role in the U.S. economy. The pet food market is growing every year, and although corn is well utilized by dogs, some marketing claims have attributed a negative image to this cereal. Thus, the objective of this work was to review the literature regarding corn and its co-products, as well as describe the processing of these ingredients as they pertain to pet foods. Corn is well digested by both dogs and cats and provides nutrients. The processing of corn generates co-products such as corn gluten meal and distillers dried grains with solubles that retain quality protein, and fibrous components that dilute dietary energy. Further, corn has much functionality in extrusion processing. It may yield resistant starch under certain processing conditions, promoting colonic health. Carotenoids in corn may enhance immune support in companion animals if concentrated. Mycotoxin contamination in grains represent a health hazard but are well controlled by safety measures. Genetically modified (GM) corn is still controversial regarding its long-term potential for mutagenicity or carcinogenicity, thus more long-term studies are needed. In conclusion, the negative perception by some in the pet food market may not be warranted in pet foods using corn and its co-products.

Abstract
Cellulose and beet pulp have been commonly used in the pet food industry to increase the dietary fiber content of cat foods. However, pet food companies seek alternatives to these so-called byproducts. Miscanthus grass is grown for its fiber content and may serve as an alternative to traditional fibrous ingredients. The objectives of this study were to determine the effects of fiber sources on extrusion processing and kibble structure of cat foods. Three replicate batches of a complete and balanced foods for adult cats at maintenance each containing 10% of Miscanthus grass, cellulose, or beet pulp was mixed and kibbles were produced on a single-screw extruder. Feed rate, preconditioner water and steam, extruder screw speed, extruder water and steam addition, and knife speed were adjusted to achieve a wet bulk density of 330 g/L. After extrusion, kibbles were dried at 115.5 ºC to less than 10% moisture. Dried kibbles were coated with chicken fat and flavor enhancer. No effects due to fiber source were reported for extrusion parameters or kibble measurements (P > 0.05) with the exception of compression energy, wherein kibbles produced with cellulose required more energy to compress than those containing beet pulp (6,917 N mm vs. 3,591 N mm, respectively). In conclusion, tested fiber sources had no impact on extrusion parameters and most kibble characteristics. Kibbles containing cellulose required more energy to compress than kibbles containing beet pulp. Miscanthus grass could be used as an alternative to traditional fiber sources used to produce cat foods.

Abstract
The aim of this study was to (i) gain an overview of the protocols of food preference tests in cats through a systematic review, (ii) assess the effects of test duration, time of day, and sex, and (iii) propose a statistical approach based on power analysis to determine sample size and analyze the results. The manuscripts included in this review had marked variations in the number of days (2-56), sample size (9-60 cats), feeding times (2.5-1440 min), and number of meals per day (1-2) during the test. Additionally to the literature review, three palatability tests (lasting 10 days each) were conducted with 40 cats (22 males and 18 females, 1.8 ± 0.16 years, 3.73 ± 0.90 kg) to assess the effects of test duration, time of day, and gender on the results. From the second day of the test, the sensitivity of the results was higher, because on the first day the results in one of the tests differed from the others (p = .0058). There was no difference (p > .05) between times of day (morning vs afternoon) or gender (males vs females) on the results of the feed intake ratio. For a SD of 0.20, p < .05, and delta of 0.10, the minimum number of cats for two-bowl assays is 23 (test power higher than 0.75).The sample size and test duration are critical factors in the decision making by the investigators about the design of food preference tests in cats. The use of a power test is recommended upon planning a food preference test protocol in cats.

Abstract
Dogs can benefit from dietary fibers. Traditionally, cellulose (CE) and beet pulp (BP) have been used by pet food companies as insoluble and soluble fiber sources. Miscanthus grass (MG) is a novel fiber ingredient made from Miscanthus giganteus, a C4 grass produced for its fiber content, but it has not been evaluated for dogs. The objectives of this study were to determine the effects of different fiber sources on nutrient utilization and stool consistency by dogs. Twelve Beagle dogs were fed 3 dietary treatments varying in their fiber sources (BP, CE, MG). Diets were fed for a 14-d period (9 d adaptation), fecal samples were collected (5 d total fecal collection) and scored. Nutrient digestibility was estimated using total fecal collection (TFC). Dogs fed BP diet had softer stools than dogs fed CE and MG (3.15 vs. 3.68 and 3.64, respectively). Wet fecal output was higher for dogs fed CE compared to MG, with dogs fed BP having the lowest values (254.3 g vs. 241.6 g vs. 208.5 g, respectively). Dogs fed CE and MG had lower DM digestibility than dogs fed BP (P < 0.05), dogs fed BP had lower CP digestibility compared with dogs fed MG and CE (81.4% vs. 85.5% and 85.8%, respectively). In conclusion, MG could be used as an alternative fiber source to CE.

Abstract
RESUMO Objetivou-se avaliar três períodos de adaptação, cinco, 10 e 15 dias, a dietas com baixa ou alta fibra sobre a digestibilidade e características fecais. Foram utilizadas duas dietas, uma contendo 0% de casca de soja (0%CS) e outra com 15% de casca de soja (15%CS), fornecidas a 12 cães adultos. Ao final de cada período, houve coleta total de fezes para avaliação dos coeficientes de digestibilidade aparente (CDA), energia metabolizável (EM) e características fecais. Além disso, foi avaliada a palatabilidade das dietas. Como resultado, não houve efeito do período de adaptação sobre a digestibilidade das dietas (P>0,05). A dieta 15%CS apresentou menor CDA da matéria seca (MS) e EM, em relação à dieta 0%CS (P<0,05). A consistência fecal dos cães não diferiu entre as dietas e os períodos (P>0,05). Houve redução no pH e na amônia fecal dos cães alimentados com a dieta 15%CS (P<0,05), após 10 dias de alimentação. Não houve diferença na palatabilidade das dietas (P>0,05). Períodos de adaptação à dieta superiores a cinco dias não alteram a digestibilidade e a maioria das características fecais de cães, exceto a amônia fecal. A inclusão de 15%CS na dieta reduz a digestibilidade da MS e a EM, bem como o pH e a amônia fecal.

Simple Summary The present work aimed to explore the response of dog owners to the appearance of pet foods. The objective of this study was to understand the impact of the visual characteristics of dry dog food on the human consumers’ acceptance and beliefs they associate with the products. The acceptability of the appearance of dry dog foods by consumers is influenced by the number of different kibbles present, color(s), shape(s), and size(s) in the product. The results indicated that dry dog food manufacturers should take special consideration with the appearance of the kibbles to enhance the acceptability of their products. These findings can help dry dog food manufacturers meet the consumers’ needs with increasing benefits to the pet food and commodity industries. Abstract Sensory analysis of pet foods has been emerging as an important field of study for the pet food industry over the last few decades. Few studies have been conducted on understanding the pet owners’ perception of pet foods. The objective of this study is to gain a deeper understanding on the perception of the visual characteristics of dry dog foods by dog owners in different consumer segments. A total of 120 consumers evaluated the appearance of 30 dry dog food samples with varying visual characteristics. The consumers rated the acceptance of the samples and associated each one with a list of positive and negative beliefs. Cluster Analysis, ANOVA and Correspondence Analysis were used to analyze the consumer responses. The acceptability of the appearance of dry dog foods was affected by the number of different kibbles present, color(s), shape(s), and size(s) of the kibbles in the product. Three consumer clusters were identified. Consumers rated highest single-kibble samples of medium sizes, traditional shapes, and brown colors. Participants disliked extra-small or extra-large kibble sizes, shapes with high-dimensional contrast, and kibbles of light brown color. These findings can help dry dog food manufacturers to meet consumers’ needs with increasing benefits to the pet food and commodity industries.

Abstract
Soya bean protein concentrate (SPC) with two particle sizes were evaluated on extrusion parameters, kibble formation, digestibility and palatability of dog foods. Eight diets were extruded: PBM-control diet based on poultry by-product meal (PBM); GM-a diet in which corn gluten meal (GM) replaced 45% of the diet protein; cSPC15%, cSPC30% and cSPC45%-diets in which SPC of coarse particle size (600 μm) replaced 15%, 30% and 45% of the diet protein; and sSPC15%, sSPC30% and sSPC45%-diets in which SPC of small particle size (200 μm) replaced 15%, 30% and 45% of the diet protein. The digestibility of nutrients was evaluated for the PBM, GM, cSPC45% and sSPC45% diets, using six dogs per food. The PBM, GM and cSPC45% diets were compared for palatability. Data were submitted for analysis of variance, and the means were compared by polynomial contrasts or Tukey's test (p < .05). The cSPC increased the specific mechanical energy (SME) application, extrusion temperature and pressure linearly, resulting in lower kibble density and higher expansion and starch gelatinization (SG) (p < .01). When comparing the PBM, GM, cSPC45% and sSPC45% diets, higher SME, extrusion temperature and pressure, SG and kibble expansion were verified for the cSPC45% diet (p < .05). The DM, fat and crude protein digestibility were similar among diets. Faecal pH, ammonia and lactate did not differ, demonstrating that the removal of oligosaccharides and soluble non-starch polysaccharides of SPC produces an ingredient with mostly non-fermentable fibre. Dogs preferred the PBM to the GM diet (p < .05), but consumed the PBM and cSPC45% foods equally. In conclusion, SPC exhibited good extrusion functionality, favouring kibble expansion and SG, with high digestibility, similar to that of PBM. The removal of soluble compounds from soya beans resulted in an ingredient with low fermentable fibre content, which did not alter faecal formation or characteristics.

Abstract
Simple Summary Sensory analysis was used to determine the changes due to the storage time on extruded pet food prepared from two different rendered protein meals: (i) beef meat and bone meal (BMBM); (ii) chicken byproduct meal (CPBM). Extrusion is a process where feed is pressed through a die in order to create shapes and increase digestibility. Descriptive sensory analysis using a human panel found an increase in undesirable sensory attributes (e.g., oxidized oil, rancid) in extruded pet food over storage time, especially the one prepared from chicken by product meal without antioxidants. The small increase in oxidized and rancid aromas of BMBM samples did not affect pet owners’ acceptability of the products. CPBM samples without antioxidants showed a notable increase in oxidized and rancid aroma over storage time and, thus, affected product acceptability negatively. This finding indicated that human sensory analysis can be used as a tool to track the changes of pet food characteristics due to storage, as well as estimate the shelf-life of the products. Abstract Pet foods are expected to have a shelf-life for 12 months or more. Sensory analysis can be used to determine changes in products and to estimate products’ shelf-life. The objectives of this study were to (1) investigate how increasing levels of oxidation in rendered protein meals used to produce extruded pet food affected the sensory properties and (2) determine the effect of shelf-life on pet owners’ acceptability of extruded pet food diet formulated without the use of preservative. Pet food diets contained beef meat bone meal (BMBM) and chicken byproduct meal (CBPM) in which the oxidation was retarded with ethoxyquin, mixed tocopherols, or none at all, and then extruded into dry pet foods. These samples represented low, medium, and high oxidation levels, respectively. Samples were stored for 0, 3, 6, 9, and 12 months at ambient temperature. Each time point, samples were evaluated by six highly trained descriptive panelists for sensory attributes related to oxidation. Samples without preservatives were chosen for the acceptability test, since the differences in sensory characteristics over storage time were more distinguishable in those samples. Pet owners evaluated samples for aroma, appearance and overall liking. Descriptive sensory analysis detected significant changes in oxidized-related sensory characteristics over storage time. However, the differences for CBPM samples were more pronounced and directional. The consumer study showed no differences in pet owners’ acceptability for BMBM samples. However, the noticeable increase in aroma characteristics (rancid aroma 0.33–4.21) in CBPM samples over storage time did have a negative effect on consumer’s liking (overall liking 5.52–4.95).
