Impact of prolonged storage on quality assessment properties and constituents of honey: A systematic review

This systematic review paper aims to discuss the trend in quality assessment properties and constituents of honey at different storage conditions and confer the possible whys and wherefores associated with the significant changes. Initially, a literature search was conducted through Google Scholar, ScienceDirect, PubMed, and Scopus databases. In total, 43 manuscripts published between 2001 and 2023 that met the inclusion and exclusion criteria were chosen for the review. As an outcome of this review, prolonged honey storage could deteriorate sensory, nutritional, and antioxidant properties and promote fermentation, granulation, microbial growth, carcinogenicity, organotoxicity, and nephrotoxicity. This systematic review also recognized that diastase activity, invertase activity, 5-hydroxymethylfurfural content, proline content, sugar content, amino acids, and vitamins could be used as indicators to distinguish fresh and stored honey based on the significant test (p-value) in the reported studies. However, all the reported studies used the simplest approach (one-way ANOVA) to identify the significant differences in the analyzed parameter during the storage period and none of them reported an approach to identify the most influential parameter at different storage conditions. In conclusion, orthogonal partial least squares discriminant analysis (supervised multivariate statistical tool) has to be employed in future studies to find the most influential parameter and could be used to potent chemical markers to distinguish fresh and stored honey because this analysis is incorporated with S-plot, variable importance of projection, and one-way ANOVA, which can produce the most accurate and precise results rather solely depending on one-way ANOVA.

Bioelectrochemical synthesis of gluconate by glucose oxidase immobilized in a ferrocene based redox hydrogel

The integration of redox enzymes on electrode surfaces enables the use of renewable energy for highly specific bioelectrochemical synthesis. Herein, we investigate the oxidation of glucose to gluconic acid on a bioanode, combining electrochemical and enzymatic components. Gluconic acid is a valuable chemical widely used in the industry. The bioanode consists of a redox hydrogel film of polyethylenimine (PEI) containing ferrocene (Fc) as a mediator, glycerol diglycidyl ether (GDGE) as a cross-linker, and the enzyme glucose oxidase (GOx). Optimization of the enzyme and cross-linker loading in the redox film led to faradaic efficiencies up to 96 ± 5 % for gluconate. The oxygen-free setup was highly stable for quantitative electrosynthesis, yielding gluconate concentrations of 6.4 ± 0.25 mmol L^-1. Moreover, this catalase-free anaerobic system showed no production of H₂O₂ within 24 h, thereby eliminating the deactivation of the GOx caused by H₂O₂ and a high enzyme performance, with a turnover frequency (TOF) of 5 x10^-3 s^-1. This is the first quantitative bioelectrosynthesis of gluconate in an entirely anaerobic environment with electrode stability of at least 8 h.

Mini-Review: Recent Technologies of Electrode and System in the Enzymatic Biofuel Cell (EBFC)

Enzymatic biofuel cells (EBFCs) is one of the branches of fuel cells that can provide high potential for various applications. However, EBFC has challenges in improving the performance power output. Exploring electrode materials is one way to increase enzyme utilization and lead to a high conversion rate so that efficient enzyme loading on the electrode surface can function correctly. This paper briefly presents recent technologies developed to improve bio-catalytic properties, biocompatibility, biodegradability, implantability, and mechanical flexibility in EBFCs. Among the combinations of materials that can be studied and are interesting because of their properties, there are various nanoparticles, carbon-based materials, and conductive polymers; all three have the advantages of chemical stability and enhanced electron transfer. The methods to immobilize enzymes, and support and substrate issues are also covered in this paper. In addition, the EBFC system is also explored and developed as suitable for applications such as self-pumping and microfluidic EBFC.
