Abstract
In the context of climate change, strategies aimed at enhancing trees' resistance to biotic and abiotic stress are particularly relevant. We applied an electromagnetic field (EMF) seed treatment to observe changes in the establishment and content of biochemical compounds in silver birch seedlings induced by a short (1 min) seed exposure to a physical stressor. The impact of EMF treatment was evaluated on seedling emergence and growth of one-year-old and two-year-old seedlings from seven half-sib families of silver birch. The effects on numerous biochemical parameters in seedling leaves, such as total phenolic content (TPC), total flavonoid content (TFC), amounts of photosynthetic pigments, total soluble sugars (TSS), level of lipid peroxidation level, antioxidant activity and activity of antioxidant enzymes, were compared using spectrophotometric methods. The results indicated that, in one-year-old seedlings, two of seven (60th and 73rd) half-sib families exhibited a positive response to seed treatment with EMFs in nearly all analyzed parameters. For example, in the 60th family, seed treatment with EMFs increased the percentage of emergence by 3 times, one-year-old seedling height by 71%, leaf TPC by 47%, antioxidant activity by 2 times and amount of chlorophyll a by 4.6 times. Meanwhile, the other two (86th and 179th) families exhibited a more obvious positive response to EMF in two-year-old seedlings as compared to one-year-old seedling controls. The results revealed that short-term EMF treatment of silver birch seeds can potentially be used to improve seedling emergence and growth and increase the content of secondary metabolites, antioxidant capacity and photosynthetic pigments. Understanding of the impact of EMFs as well as the influence of genetic differences on tree responses can be significant for practical applications in forestry. Genetic selection of plant genotypes that exhibit positive response trends can open the way to improve the quality of forest stands.

Abstract
BACKGROUND Birch is a tree with a common occurrence in the environment and its organs are used in the form of herbal material. An important aspect of this study is birch pollen, which is a problem for allergy sufferers, and due to a variety of environmental conditions, its allergenicity may increase. Among the organs studied, inflorescences deserve attention, which, as seen from an overview of the literature, are analysed for the content of heavy metals for the first time in this study. RESULTS This paper investigated the relationship between antioxidant properties and the content of heavy metals (Cu, Zn, Cd, Pb, Ni and Cr) as the plant's response to stress, taking into account both the vegetative and generative organs of the tree Betula pendula. While studying the accumulation of elements in individual organs, the research was extended to include the aspect of different environmental conditions, reflected in two soil types of differing physicochemical properties: sandy and silty soils. In order to thoroughly analyse the transport of the studied heavy metals from the soil to individual organs (leaves, inflorescences and pollen), ecotoxicological indicators were used. A modified translocation factor (TF) index into sTF (sap translocation factor) was presented as a novelty in research, calculated based on the content of selected heavy metals in the sap flowing to individual birch organs. This allowed for a more complete description of the transport of elements in the aerial parts of plants, indicating the accumulation of zinc and cadmium, especially in leaves. Among the studied environmental conditions which may affect the accumulation of heavy metals, sandy soil is of particular significance, conditioning lower pH values, among other things. However, analysis of the reaction of birch to the conditions of the soil environment and the content of heavy metals, based on antioxidant properties, demonstrated an evident reaction to stress, but without an unambiguous response among the studied vegetative and generative organs. CONCLUSIONS As birch is a plant with wide utility values, monitoring studies are advisable to exclude the risk of accumulation of heavy metals in its organs, and for this purpose it may be useful to use the sTF indicator and assess the antioxidant potential.

Abstract
Avena sativa (A. sativa) oats have recently made a comeback as suitable alternative raw materials for dairy substitutes due to their functional properties. Amylolytic and cellulolytic enzyme-assisted modifications of oats produce new products that are more appealing to consumers. However, the biochemical and functional alteration of products and extracts requires careful selection of raw materials, enzyme cocktails, and technological aspects. This study compares the biochemical composition of different A. sativa enzyme-assisted water extracts and evaluates their microbial growth using spontaneous fermentation and the antimicrobial properties of the ferment extracts. Fibre content, total phenolic content, and antioxidant activity were evaluated using traditional methodologies. The degradation of A. sativa flour was captured using scanning electron microscopy (SEM); moreover, sugar and oligosaccharide alteration were identified using HPLC and HPLC-SEC after INFOGEST in vitro digestion (IVD). Additionally, taste differentiation was performed using an electronic tongue with principal component analysis. The oat liquid extracts were continuously fermented using two ancient fermentation starters, birch sap and Tibetan kefir grains. Both starters contain lactic acid bacteria (LAB), which has major potential for use in bio-preservation. In fermented extracts, antimicrobial properties against Gram-positive Staphylococcus aureus and group A streptococci as well as Gram-negative opportunistic bacteria such as Escherichia coli and Pseudomonas aeruginosa were also determined. SEM images confirmed the successful incorporation of enzymes into the oat flour. The results indicate that using enzyme-assisted extraction significantly increased TPC and antioxidant activity in both the extract and residues. Additionally, carbohydrates with a molecular mass (MM) of over 70,000 kDa were reduced to 7000 kDa and lower after the incorporation of amylolytic and cellulolytic enzymes. The MM impacted the variation in microbial fermentation, which demonstrated favourable antimicrobial properties. The results demonstrated promising applications for developing functional products and components using bioprocessing as an innovative tool.

Abstract
Studies have shown that ozone is a good oxidizer and a strong disinfectant. There are many uses for ozone in the food industry, but there is relatively little information about the influence of ozone on biochemical composition and the capacity to reduce the number of microorganisms in birch sap. In this study, sap was ozonated at different intervals for 5 min (O3: 0.087 ± 0.009 mg L−1), 10 min, 15 min, 20 min, 25 min, or 30 min (O3: 0.99 ± 0.09 mg L−1). The parameters of the birch sap were studied immediately after the ozone treatment as well as during storage for seven days at 2 °C and for five days at 20 °C. The parameters of ozonated birch sap were compared with the parameters of fresh sap (control). The microbiological analysis included total bacterial count, lactic acid bacterial count, and yeast and mold count. Birch sap color, pH, titratable acidity, and ºBrix values were also determined. Evaluation of monosaccharides, sucrose, total sugars, and ascorbic acid was carried out in fresh sap as well as sap ozonated for 30 min, immediately after ozonation. The results show the statistical significance of the inactivation of microorganisms after treatment in most cases. The microorganism counts gradually reduced with increasing intervals of ozone treatment. The best results were obtained after 25 and 30 min of ozonation. Ozone treatment did not significantly influence the pH, titratable acidity, or °Brix statistically. Values of monosaccharides, sucrose, total sugars, and ascorbic acid were influenced within the margin of error. Ozone had a significant influence on the chroma and hue angle.

Abstract
The aim of this study was to determine the effect of the age of trees, daily sap volume as well as the term of tapping birch sap collected in the forest environment on the content of selected minerals (zinc, copper and manganese) and heavy metals (lead, nickel, chromium and cadmium). The study was performed on material taken from two stands (aged 34 and 84 years) in a moist broadleaved forest habitat with a dominant share of silver birch (Betula pendula Roth). The research results confirmed the presence of both nutritional essential minerals and hazardous heavy metals in the birch sap. At the same time, the content of minerals and heavy metals was found to be very variable and the differences between their concentrations, recorded on the same day of collecting in several trees of the same age group, can be even several dozen times higher. Depending on the examined elements, the factors influencing their content vary. The age of the trees determines only the manganese content; daily sap volume significantly affects the content of manganese and copper, and date of collection differentiates the content of zinc, lead, nickel and cadmium. The results may be interesting in the context of developing procedures for collecting birch sap for the purpose of obtaining raw material with beneficial nutritional values and a high level of health safety. For this reason, our recommendation for guaranteeing the health safety and high nutritional value of birch sap is to combine batches of raw material taken from as many trees as possible, and at the same time to publicize the fact that collecting birch sap from just one single tree may result in a raw material that is both dangerous and has no nutritional benefits.
